Ingredients:

1 Beetroot - Fresh and Ready Cooked
1 handful Spinach Fresh
1 Tomato Medium
2 sprigs Parsley Fresh
40 g Haricot Beans -Ready Cooked
1/4 Juice of a Lemon
20 ml Creme Fraiche - Low Fat
100 g Chicken Breast- Ready Cooked

Method:

Put the creme fraiche, chopped parsley and lemon juice in a bowl and whisk together.
Chop the cooked beetroot and tomatoes into a bowl and mix in the drained and rinsed beans gently.
Place the spinach onto plates and spoon the bean mixture.
Top with the sliced chicken and drizzle with the yoghurt dressing and serve.

80 g Lean Chicken Breast
1/2 Pepper
1 Spring Onion
20 g Peas - Frozen or Fresh
2 sprigs Coriander Fresh
40 g Couscous
40 ml Coconut Milk - Low Fat
1 tsp Jerk Spice

			<description><![CDATA[The perfect soup to spring into Summer - perfect just for one serving size.

1/4 cloves Garlic
1/4 Onion Medium Raw
1 Fennel Medium
50 g Peas - Frozen or Fresh
1 sprigs Parsley Fresh
1/2 Vegetable Stock Cube - Low Salt
160 ml Water
1 slice Wholemeal Bread

Directions:

Heat a splash of oil in a pan and add in the diced onion and minced garlic. Fry until golden over a medium heat.
Add in the sliced fennel and fry for another 2 minutes.
Then add in the water, stock cube and peas and bring to the boil.
Once boiled simmer for 10 minutes and blend until smooth.
