After we took the two older kids I nanny for to school this morning, my littlest munchkin and I decided to make some yummy breakfast. We decided on Pumpkin Pancakes (Or Cake-Cakes as he calls them). I had found the recipe on this BLOG a few weeks ago when I couldn't find canned pumpkin ANYWHERE! We tried it out today and it got rave reviews! The 2 year old I take care of ate 3 Huge pancakes and was asking for more 10 minutes later!

We tripled the recipe and made extras to freeze for the rest of the week!

Here's the recipe:

Light and Fluffy Pumpkin Pancakes

1 1/4 cups all-purpose flour

2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 pinch clove
1 1/4 cup low-fat milk
1/3 cup canned pumpkin puree
2 tablespoons melted butter
1 egg

Whisk flour, sugar, baking powder, spices and salt in a bowl. In a separate bowl whisk together milk, pumpkin, melted butter, and egg. Fold mixture into dry ingredients. Spray or grease a skillet and heat over medium heat: pour in 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side. This recipe makes six 6-inch pancakes.

Side Note- This can easily be doubled and frozen or stored in the refrigerator for a great breakfast later in the week.

I have been feeling baby move since about 15 weeks... not always everyday, but at least every couple of days. That is until this week. This week our little Squishy has turned into a tap dancing, somersault doing, karate chopping fool! Now I'm not just feeling it when I'm sitting still, I'm feeling it when I'm up and moving around!

My favorite though is when my sweet Matthew gets off work and comes home... As soon as he starts talking, I get a quick jab, then more tap dancing! It brings tears to my eyes just thinking about it! Our little one already knows it Daddy's voice (Probably because Daddy has been yelling in my bellybutton since I was about 6 weeks along.. way before Squishy could even hear!) I'm thrilled that our baby gets so excited about its daddy! This is gonna be one lucky kid! Squishy already has the best daddy in the world!

So, my wonderful, amazing, lovely friend Maggie works nights as an OB nurse here in town. When she offered in the beginning of my pregnancy to do an ultrasound for us just for fun I thought it sounded like a great idea! So Friday night about 11:00 pm... (that's right I can stay up past 9:00!) we headed to the hospital for a peek at our little squishy!

It was so fun to see the it rolling around and looking at us! We got to see it's perfect little head and spine, it so crazy to be able to see what is going on inside of you! Our goal was to finally be able to know if we were having a girl or a boy! Well, of course, this baby has to be just as stubborn as it's daddy! It did not want to show us it's stuff! We tried and tried to figure it out and by the time we were done, we were about 70-80% sure of the gender... but we have decided to wait to announce it until we have our big ultrasound with the Dr in a few weeks just to be sure... Guess you'll have to wait in suspense till then!

Thanks again Maggie for letting us come "play" and for letting us see our little one again! You are the best!

18 weeks....

The last 18 weeks have flown by... maybe because life has been so crazy busy, maybe because I've been so tired, or maybe I just don't remember how long they have been... could be any of those things I guess! I can't believe we are almost half way to meeting our little squishy! I am feeling it move more and more everyday... Just last night while sitting at some friends house at a party, I felt it kick 4-5 times very hard on the side that it doesn't usually kick on! It is so fun to feel those little kicks and summersaults! They happen more and more frequently, and are getting stronger every day! Its funny because at times I almost forget that our baby is in there... accept that none of my clothes fit... and just about the time I forget, I get kicked!

We are getting settled back into our house after the tornado that hit in May. It has been a long process, but we are SO VERY GLAD to be back HOME! If I can get all the boxes unpacked, maybe I can get the nursery started! I feel like I'm running out of time! Only 22 weeks left to get everything ready! YIKES!

We can't wait to know what we are having! Matt is convinced it is a boy... I'm still not sure. I wish I was one of those moms that just KNEW from the beginning! I can't wait to start calling baby by its name instead of little squishy! But our Dr doesn't do the big ultrasound until 22 weeks.. so we have a ways to go before we know. I'm just praying it goes fast!

So, I know it's been a LONG time since I kept up with this blog thing... I really gonna try and do better... I'm sure I'll have lots to blog about in the next few months... and lots of pictures to go with it!

It is time...

I have decided it is time for me to return to the blogging world. I have too many thoughts that I need to write down somewhere and I've learned that paper is no good. You see, what you put on the internet stays there till you take it down... what you write on paper can disappear in a second. And if it isn't blown away by the tornado that hits your house, it gets packed up and taken to storage until your house is fixed.... Sigh

Enough about that...even though I really need to blog about the night our house was hit by a tornado I don't have the energy to do it tonight...

Here is what I have been learning in the last few weeks:

1- Nothing in life is 100% certain with one exception- God and His amazing love for us

2- I was correct in believing that I have the BEST husband in the whole universe!

3- Chocolate does NOT solve all problems, it just makes you forget about the problems you have for a short while

4- We have the best friends and family imaginable.

5- Sometimes, even if it is hard, you have to stand up for yourself even if it means being a little bit rude.

6- Even though life doesn't always make sense, and sometimes it is hard, and sometimes it just down right sucks, God is still in control, He still has a plan, and He still provides all we need.

Matt & I took a little vacation this week
to go see some friends in Gentry Arkansas!
We had a blast!
I have tons of pictures and video to upload,
but here is a sneak peak!
We spent a few hours Wednesday afternoon
at a drive through Safari! It was so much fun!
The highlight of our day
(other than the white buffalo using our car as a scratching post!)
was this little girl!
She was so cute!

Isn't she adorable!

She may be little, but look at those claws!

Matt was in LOVE!

I thought she was pretty cute too!

Sorry to leave you hanging.... Life for us has been kinda crazy lately!

In the middle of May I found out that on May 27th I would no longer have a job. I had been a nanny for "my boys" for 2 1/2 years. This came out of nowhere! I had no idea that this was going to happen. So, we took it all in and then started praying and trying to figure out what I needed to do.

I interviewed for another nanny position that week, but it just didn't work out. So, I am currently unemployed!

I am currently looking for a job, but staying busy with life... I have been baby sittings some, decorating cakes, having garage sales, and picking blueberries!

I have been trying and trying to figure out what to do since May. I have applied for some jobs, but have nothing yet.

So, after much persuading from my wonderful husband and some great friends, I bit the bullet and got some business cards printed last week. That's right, I'm starting a photography business! I've got mixed feelings about it. I am excited, don't get me wrong. I guess I just am nervous. I have always loved to take pictures, but as with anything, I'm worried about how everything will play out.

This weekend my whole family went to Branson for a little vacation.
We had so much fun spending time together and exploring
Silver Dollar City.
It has been years since I have been there.
We had a blast!
At the end of the day, we were all so very tired,
especially my sweet nephew and niece.
Nothing more precious than a child snuggling with his papa.
I love those eyes!

Two years ago today,
I stood nervously in a beautiful church
waiting for my groom to turn around...
I was waiting for him to see me
for the first time in my wedding dress!
When he did, there were tears rolling down his face,
and time stood still for me.
I looked at the man I was about to marry
and thought I could not possibly love anyone
more than I loved him at that moment!

Two years ago today,
I stood by his side while we vowed
to love each other for the rest of our lives.
We vowed that no matter our circumstances,
no matter the cost,
we would cling to one another and serve God together.

Two years ago today,
we were prayed for by four dear pastors,
one amazing sister in Christ,
and many other family members and friends.
They prayed that our relationship would grow,
that we would follow Christ,
and that we would love each other more each day.

Two years ago today
I celebrated one of the most incredible days of my life
with lots of family and friend surrounding us.
Two years ago today we started a new endeavor,
and we didn't look back!

Today, I look at this amazing man I married,
the man who has given me everything for the past two years.
The man that has been by my side though everything.
The man who has worked full time,
taught a college class,
and took classes full time and still made time for me.
The man that has been with me as we looked for
and bought our first house together.
The man who trusted me enough to buy
the house I loved even when he couldn't "see" my vision for it.
The man who I tell all of my secrets too,
who knows me better than any other person on this earth.
The man that buried his grandpa just minutes
after we found out my grandpa had passed away.
The man who always knows what I need,
whether it's chocolate, or a foot rub,
or just a sweet kiss on the forehead,
he always seems to know exactly what I need in that moment.
The man that has held me when I've been sick,
who has loved me when I've been an emotional mess,
the man who has celebrated silly milestones,
the man who defends me, protects me and keeps me safe...

As I look at this man,
I can't believe that I could love him more today than I did yesterday,
but I do.
You see, some how,
this love I have for him just keep growing.

Matthew,
God sent me the most precious gift when he sent you to me.
I can't imagine my life without you.
Thank you for ALL that you do!
You are so very special to me!
Thank you for being by my side for the last two years.
I am looking forward to many, many more!
I love you!

Today is my amazing sister's birthday.
Since I can't be with you today Christi,

My Must have item.....

I have had many ideas for this post. My initial thought (and my husbands) was my camera. Sure it goes with me EVERYWHERE and I use it ALL THE TIME, but when I thought about it, I thought it was too obvious. I guess you know that my camera goes with me everywhere, most of my blog post have at least 1 picture!
So I though some more... Music was the next thing I thought of. I love listening to music! I had some really good ideas for pictures for that "must have item", but the longer I thought about it, The more I realized that neither of those were my must have items!
If you know me very well, you know that in my purse there is ALWAYS a book (right now there are 3, but who is counting). Those books go with me EVERYWHERE! You never know when you will have time to sit down and read a good book! I have ALWAYS Loved books! The highlight of my week in grade school was getting a book order. I would spend hours reading the descriptions and deciding which ones I HAD TO HAVE! Going to a books store was even better! I could actually pick them up and look at the books there! I have spent so much money on books over the years! So, here is my must have item... well, items.

Where I relax...

This chair may not look like much, it may not match my living room where it currently lives, but I LOVE it!
For many, many years, this chair sat in the home of my aunt. Any time I was at her house, I would sit in it, curl up and read, sleep, or snuggle one of my cousins. I have always LOVED this chair!
I once told her many years ago if she was going to get rid of it to let me know, because I would love to have it. Well, just a few weeks ago, my dreams came true! I was happy to rearrange my living room to make space for this chair! This is is where I sit at home now, to chill, watch tv, blog, read, and especially relax!

And what chair would be complete without a very soft snugly blanket? This was a wedding gift and probably one of our most used! It is a must have when relaxing at my house!

Today's theme is "Something that irritates you". When Talking about this weeks photo project with my husband Matthew, I named off all of the themes to which he named what he thought I should photograph. Funny thing was, he named himself for all 5 days! I must admit, he could have been the subject for all of the themes, including today's. ;-) I guess he is pictured in the photo below, but not for the reason you might think......

This is my alarm going off at 6:00 this morning...
I am so not a morning person,
so the sound of it screeching and vibrating
against my nightstand is very irritating!

...and when I get up to get ready for work,
I have to leave this behind!
That irritates me too!
I would rather be snuggled up right by his side!

My new friend Jenny started a photo project this week. Today's theme is "Something that inspires or motivates you". I thought a lot about what inspires and motivates me. There are lots of things, but not a lot of things I had pictures of or could take pictures of at this time. So, here is what has motivated me this week!

This is my new Stove!
After being without a working one since December 5th,
I was so excited when Sears finally made thing right and replaced it!

Not only does it work,
but it has 2 adjustable burners AND a warming zone!

So here is what my new stove has inspired!
For a long time I have been wanting to make
cinnamon rolls from scratch.
This is something I have never tried before.

Ooey Gooey Goodness!

And who wouldn't be inspired to make yummy food for this guy!
My husband eats ANYTHING I make even if it isn't good!
