<p>12 Slider Rolls</p>

<p>6 slices Provolone cheese</p>
<p>2 tablespoons horseradish</p>
<p>3/4 cup light mayonnaise</p>
<p>For the Sauce:</p>
<p>2 tablespoons dijon mustard</p>
<p>6 tablespoons butter, melted</p>
<p>1 Tablespoon finely minced onion</p>
<p>2 teaspoons Worcestershire sauce</p>
<p>Kosher Salt</p>
<p><strong>Preparation:</strong></p>
<p>Preheat oven to 350 degrees.</p>
<p>Split buns and lay out on a baking sheet.  Mix together horseradish and mayonnaise and spread on one side of each bun.  Add roast beef.  Cut each slice of cheese in half and place one piece on each sandwich.  Place top of bun on each.</p>
<p>Whisk together all ingredients for the sauce except for salt.  Spoon over each sandwich.  Sprinkle salt over each.  Cover with foil and bake for 10 minutes.  Remove foil and bake uncovered 5 more minutes.  Serve warm.</p>

<li>1 (14-ounce) can fat-free, less-sodium beef broth</li>
<li>1 bay leaf</li>
<li>4 large carrots, peeled and cut diagonally into 1-inch pieces</li>
<li>2 pounds Yukon gold potatoes, peeled and cut into 2-inch pieces</li>
<li>Fresh thyme leaves (optional)</li>
</ul>
<h3>Preparation</h3>
<p>Preheat oven to 350º.</p>
<p>Heat olive oil in a large Dutch oven over medium-high heat. Sprinkle chuck roast with salt and pepper. Add roast to pan; cook 5 minutes, turning to brown on all sides. Remove roast from pan. Add onion to pan; sauté 8 minutes or until tender.</p>
<p>Return browned roast to pan. Add the red wine, thyme sprigs, chopped garlic, beef broth, and bay leaf to pan; bring to a simmer. Cover pan and bake at 350° for 1 1/2 hours or until the roast is almost tender.</p>
<p>Add carrots and potatoes to pan. Cover and bake an additional 1 hour or until vegetables are tender. Remove thyme sprigs and bay leaf from pan; discard. Shred meat with 2 forks. Serve roast with vegetable mixture and cooking liquid. Garnish with thyme leaves, if desired.</p>

<p>1-1/2 – Ranchline All Natural Lamb Stew Meat</p>
<p>2 cups less-sodium chicken broth</p>
<p>2 cups dry white wine</p>
<p>1 pound red onions, trimmed and cut into narrow wedges</p>
<p>1-1/2 pounds yams, pared and cubed</p>
<p>1 tablespoon grated orange peel</p>
<p>1 cup dried figs, stemmed and halved</p>
<p>1/4 cup flour, mixed with 1/2 cup white wine</p>
<p>1/2 cup minced parsley (optional)</p>
<p>Salt and pepper</p>
<p>Preparation time: 10 minutes</p>
<p>Cook time: 6 to 8 hours</p>
<p>In a 5 or 6-quart slow cooker, combine lamb, broth, wine, onions, yams and orange peel. Cover and cook on low for 6 to 8 hours or until lamb is tender. Stir in figs and flour-wine mixture; cook 45 minutes longer.</p>

<p>I love football season.  Not because I know much, if anything, about the sport, I LOVE the food!  Give me a plate of nachos and a pile of buffalo wings and I will gladly hoot and cheer at the TV.  I do however, like the Broncos.  I got to go to Denver for a game last year and boy was that a good time.  That Tim Tebow is really something else!</p>
<p><strong>Super Bowl Nachos with a Kick and a Zip</strong> I used flank steaks from Ranchline All Natural. They package it and send it frozen right to my door. They have impeccable service and shipping. The steaks were so tender and really had a great flavor and texture. I really like knowing exactly where the meat came from and that the company is really proud of their product.</p>

<p><strong>Chipolte Lime Steak</strong></p>
<ul>
<li>2 limes, juiced</li>
<li>1/3 cup olive oil</li>
<li>4 cloves garlic</li>
<li>4 whole chipotle peppers (from the can) and a little of the sauce</li>
<li>2 steaks (I used flank steaks from Ranchline All Natural)</li>
<li>Green Bell Pepper</li>
<li>1/2 Onion, sliced in rings</li>
<li>Tortilla chips</li>
<li>2 cups shredded cheese</li>
<li>Black Olives</li>
<li>Tomatoes</li>
<li>Jalapeños</li>
<li>GuacamoleTostitos Nacho Cheese (yes, the kind in the jar)</li>
<li>Sour Cream</li>
</ul>
<p>1.  Combine the Chipotle peppers and sauce, olive oil, garlic, and lime juice in a food processor and blend until well combined.</p>
<p>2. Marinate trimmed steaks for 12-36 hours in the refrigerator.  36 hours will give you the most flavor</p>
<p>3. Grill steaks until rare (blood pink in the middle).  Slice in small bite sized strips.  Place back in sauté pan and toss with bell pepper and onion.  Cook until meat is medium and veggies are crisp, yet tender.</p>
<p>4. On an oven safe plate, arrange tortilla chips and top with 2 cups cheese.  Warm in the oven until cheese is starting to melt.  DO NOT BROWN THE CHIPS.  They will taste burnt even if they don’t look it.</p>
<p>5. Remove pan and add the steak and veggies.  Pop back in the oven for 3 more minutes.</p>
<p>6. Serve gooey and hot with lots of toppings.  See the ingredient list for ideas.  You will be licking your plate clean and trying to scrounge steak bits of your nearest friend or husband.  Ask nicely and don’t drool.</p>
<p><strong>This is my first time eating Ranchline beef.  And wow.  I am impressed. </strong> The beef is raised  in Montana, and their lamb is raised in New Mexico. I am really looking forward to trying the lamb. Take a look and their website and drool. It is really worth it. And, here is a huge plus for me. It can be a challenge to get to the grocery store with two kiddos and really do some detailed shopping. It was so wonderful to know that I could have it delivered to my door and such a healthy product.  This is an amazing company!  Wow.</p>

<p>A delicious, classic chili with beans, herbs, spices, and beef. Serves 10.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients:</strong></span></p>
<p>2 lbs<a href="http://www.ranchlineallnatural.com" target="_blank">. Ranchline All Natural</a> ground beef</p>
<p>46 oz. tomato juice</p>
<p>30 oz. tomato sauce</p>
<p>1 1/2 cups diced onion</p>
<p>1/2 cup diced celery</p>
<p>1/4 cup diced bell pepper</p>
<p>1/4 cup ground chili powder</p>
<p>2 teaspoons ground cumin</p>
<p>1 1/2 teaspoons ground garlic powder</p>
<p>1 teaspoon salt</p>
<p>1/2 teaspoon ground black pepper</p>
<p>1/2 teaspoon dried oregano</p>
<p>1/2 teaspoon white sugar</p>
<p>1/8 teaspoon ground cayenne</p>
<p>2 cups red beans, without liquid</p>

<li>Cook meat over medium-high until evenly browned. Drain and put aside.</li>

<p># 11 Nebraska v. Minnesota &#8211; The Cornhuskers rushed for 346 yards in a 41-14 win against the Gophers.</p>
<p>No. 21 Illinois v. Purdue &#8211; Caleb TerBush passed for 178 yards and two touchdowns to help Purdue upset No. 21 Illinois 21-14.</p>
<p>No. 22 Penn State v. Northwestern &#8211; Silas Redd and Matt McGloin combined for three touchdowns as the Nittany Lions beat the Wildcats 34-24.</p>
<p>Indiana at Iowa &#8211; Marvin McNutt caught six passes for 184 yards and three touchdowns, as Iowa romped over Indiana 45-24.</p>
