<p><span style="text-decoration: underline;">Serves 2 as a main course, 4 as a starter</span> </p>
<p>1 large head of romaine lettuce or other favourite lettuce<br />2 small handfuls of watercress<br />1 cup mixed seedless grapes, cut in half<br />1 apple, diced<br />2 sticks celery, finely diced<br />1 cup walnuts, roughly broken up*<br />1 small handful of fresh flat-leaf parsley<br />Optional: A few good chunks of macadamia cheese**</p>
<p>&nbsp;</p>
<p>*As an optional step with the walnuts, you can soak them for 20 minutes, then drain and rinse, followed by a toss in 1 teaspoon garlic powder, 1 tablespoon onion powder and 1/2 teaspoon fine Himalayan salt. Then dehydrate at 115 degrees for 12 hours. When they are completely dried, roughly break them up by hand.</p>

<p><strong>For the dressing</strong></p>
<p>1/2 teaspoon mustard powder<br />2 tablespoons apple cider vinegar<br />1/3 cup olive oil<br />1/3 cup water<br />1/4 cup cashews (soaked for 20 minutes), or 1/4 cup almond butter<br />1/2 teaspoon Himalayan salt<br />3 or 4 turns of black pepper</p>
<p>&nbsp;</p>
<p>- Tear the lettuce and watercress by hand and transfer to a bowl with your grapes and celery.</p>
<p>- Chop the tough stalks off the parsley and then finely chop the leaves, adding them to your bowl.</p>
<p>- Put all the dressing ingredients, along with the parsley stalks into a blender and blend until smooth.</p>
<p>- Put enough dressing into the bowl, so that all the leaves are lightly covered. When tossed together, add the walnuts and toss the salad lightly again.</p>
<p>- Transfer to your serving plates and then finish with a little of the macadamia blue cheese. If you don’t have the macadamia blue cheese, a quick macadamia Parmesan recipe can be made by grating 1/2 cup unsoaked macadamias on a Microplane and mixing in 2 teaspoons nutritional yeast and 1/2 teaspoon salt, which looks great sprinkled over the top.</p>

<p>I like to keep this drink in a mason jar in the fridge and drink it throughout the day. It&#8217;ll need shaking every time before you drink it too, which is why the mason jar is so perfect. If you find the wheatgrass taste too overpowering just start with 1/2oz of it in the juice first, then work up to it. Or when you drink this juice do it as a shot, so it&#8217;s gone quickly!</p>

<p>Great news! If you have access to Netflix streaming, which it seems most people do these days, you can head over there right now and watch Forks Over Knives; an engaging and highly informative documentary about the benefits of eating a plant-based diet.</p>
<p>The film primarily features the work of two doctors: T. Colin Campbell, Ph.D. and Caldwell B. Esselstyn, Jr., M.D.</p>
<p>These two men got to a point in their careers where they had to do some soul searching about what they were doing as doctors, and change their opinions on where their work would take them. They now prefer to work with plant foods as a preventative measure in dealing with disease.</p>
<p>This is just one of the most recent in a line of food documentaries focussing on the benefits of plant based foods, and how the food system we&#8217;ve all played a part in setting up for our convenience is wreaking havoc on our bodies, our planet and our connection to every other living thing.</p>

<p>2 heads butter lettuce<br />1 avocado<br />2 nori sheets<br />1/4 cup pine nuts<br />1/2 cup baby tomatoes</p>
<p><strong>Dressing</strong></p>
<p>1 cup cashews, soaked 20 minutes<br />1/2 cup water<br />1 clove garlic<br />1 teaspoon onion powder<br />2 teaspoons lemon juice<br />1/2 teaspoon lemon zest<br />1/2 teaspoon salt<br />2 teaspoons nutritional yeast (optional)</p>
<p>- Blend all ingredients together in a high-speed blender.</p>
<p>- Chill until ready to use.</p>
<p><strong>Quick Parmesan Cheese</strong></p>
<p>1/4 cup macadamias<br />2 tablespoons nutritional yeast<br />1/4 teaspoon salt</p>
<p>- Use a Microplane to grate the macadamias into a bowl.</p>
<p>- Add the nutritional yeast and salt, and then mix thoroughly.</p>
<p><strong>Assembly</strong></p>
<p>- Cut the leaves from the stalk of the butter lettuce.</p>
<p>- Toss in the desired amount of dressing and then rearrange the leaves on the plate so they go from biggest to smallest, as they did when they were part of the original lettuce.</p>
<p>- Cut half of an avocado into a fan and place on the plate just to the side of the butter lettuce.</p>
<p>- Crush a dry nori sheet with your hands and sprinkle the lettuce with it.</p>
<p>- Quarter the baby tomatoes and sprinkle the salad with them, finishing up with a sprinkle of the quick parmesan cheese and the pine nuts.</p>
