</p><p>This easy, nutritious and utterly delicious vegetable side dish goes with so many entrees. It&#8217;s very quick, too!</p>
<p><strong>Buttered Broccoli with Lemon</strong><br />
by Amy Love, Real Food Whole Health</p>
<p>1 head organic broccoli, washed and florets trimmed from stems<br />
2 TBL grassfed butter<br />
Organic garlic clove, grated or granulated garlic (optional)<br />
Unrefined sea salt &amp; freshly ground black pepper<br />
Juice and zest of one half organic lemon</p>
<p>In a saucepan over medium heat, simply melt butter and add broccoli florets. Add garlic if using, or season with salt and pepper and granulated garlic (if using). Toss broccoli to coat with butter and cook until broccoli is slightly tender and bright green. Don&#8217;t overcook. Squeeze lemon juice over broccoli and top with zest.</p>
<p>Check for seasonings and serve.</p>

</p><p>This lovely chicken dish is elegant enough to serve for company, but easy enough for a quick weeknight meal. Savory chicken topped with a silky sauce dotted with salty capers and brightened with fresh lemons, this dish is sure to please any palate. <p><strong><br />
Gluten-Free Chicken Piccata<br />
</strong>by Amy Love, Real Food Whole Health<strong><br />
</strong></p>
<p>2 skinless, boneless organic, pasture-raised chicken breasts<br />
Unrefined sea salt &amp; freshly ground black pepper<br />
Arrowroot powder, tapioca starch or organic (non-gmo) cornstarch, for dredging<br />
4 TBL grass-fed butter or ghee<br />
2 cloves garlic, smashed and minced (or grated)<br />
3 TBL brined capers<br />
¼ cup white wine or homemade chicken stock<br />
¼ cup organic crème fraiche (or organic cream)<br />
Juice and zest of one organic lemon<br />
Handful fresh organic parsley, chopped for garnish (optional)</p>
<p>Place chicken breasts between two pieces of wax paper or parchment, or in a plastic zip top bag. With a mallet, pound breasts evenly to ¼ inch to ½ inch thickness.</p>
<p>Season chicken with salt and pepper.</p>
<p>Dredge chicken in arrowroot powder and shake off excess.</p>
<p>In a large skillet over medium high heat, melt butter (or ghee). When melted and starting to sizzle, add chicken and cook for 3-4 minutes, or until browned. Lower heat to avoid butter browning too much. When chicken is browned, flip and cook other side for another 3-4 minutes.</p>
<p>Remove chicken and transfer to plate.</p>
<p>Into the pan add the garlic and cook until fragrant, about 1 minute. Add capers and stir. Add the wine (or stock) and crème fraiche (or cream) and simmer for 3-4 minutes to reduce slightly. Add lemon juice and zest and remove from heat. Check for seasoning, adding salt if needed.</p>
<p>Pour sauce over chicken and garnish with parsley if desired.</p>

</p><p>I met Scott Grzybek, founder of Zukay Live Foods, several years ago at a Weston Price conference. I was so impressed by Zukay&#8217;s resolve to sourcing local, organic foods and their commitment to utilizing ancient and traditional preparation methods to create quality foods!</p>
<p>I recently got the opportunity to try several of Zukay&#8217;s organic, live, raw, traditionally prepared, probiotic rich beverages called <strong>kvass</strong>.</p>
<p>What&#8217;s <em>kvass</em>, you ask?</p>
<p>Kvass is a fermented (cultured) beverage teeming with vitamins, minerals, enzymes and probiotics. Probiotics are beneficial bacteria and other micro-organisms that are critical for a healthy gut (and therefore, a healthy body!) Kvass is also a gentle detoxifier- and it tastes great!</p>
<p>Zukay makes several varieties of kvass:</p>

<li>Super Root Kvass</li>
<li>Vegetable Medley Kvass</li>
<li>Super Green Kvass</li>
<li>Beet Ginger Kvass</li>

<p>Here are the ones we tried:</p>
<p><strong>Super Root</strong><br />
It was tart, earthy, refreshing, not overpowering and quite smooth. The sarsaparilla flavor comes through.</p>
<p><strong>Super Green</strong><br />
This one was fresh tasting, tart, tasted of greens with a lemony brightness and a slight vegetal/herbal finish.</p>
<p><strong>Beet<br />
</strong> This was fresh, earthy and slightly sweet- definitely the sweetest of the bunch. This clean flavor is easy to drink, isn&#8217;t very sour and is a little bit salty. It&#8217;s a toss-up if I like the Beet or the Super Root the best!</p>
<p><strong>Veggie Medley</strong><br />
I really picked up on a fresh cucumber/pickle-type flavor in this one. It was kind of sweet and had a vegetal flavor, but wasn&#8217;t overpowering. I didn&#8217;t specifically pick up on the cabbage or tomato, which I appreciated.</p>
