At the weekend we catered at Field Place in Worthing. The occasion was a wedding for Andy and Karen who had a wonderful day… see next blog!

Richard one of our event managers took to the green whilst we were waiting for the guest to arrive and thought he would try his hand at bowls…. yes bowls! he forgot 2 vital things… firstly I had my camera and secondly the bowls!

The trio of ladies sitting on the bench enjoying a peaceful afternoon found it very amusing and commented on his action…. what do you think?

Here at Red Anywhere we are busy putting together our pack for Christmas 2009! We will be staging various party nights at our flagship venue Eastlands Estate near Billingshurst…

We will be able to cater for up to 100 guests per night and this can be sold as tables of 10 or of you are looking to hire the venue for the evening then that is not a problem at all.

We were thrilled and honoured when told last week that we would be catering for 350 guests including a very special royal visitor at a garden party on the 9th September 2009…!

Castles, Canapés AND the Anglo Zulu War of 1879!
South African Long Neck wine and a delicious canapé choice where the perfect accompaniment to a fabulous talk on Zulu war battles by a very passionate Rob Caskie, the renowned and colourful story teller- a master at reliving the event in full detail!

The Game and Wildlife Conservation Trust are privileged to be hosting a series of these nationwide lectures and the team at Red Anywhere truly honoured to be invited to cater the first event in the presence of the Duke of Norfolk at his magnificent abode – Arundel Castle.
Red Anywhere staff ‘attacked’ from all angles armed with wonderful canapés; guests trying to fight off these food temptations from the left and from the right spoilt for choice – the asparagus soldiers with hollandaise sauce, the crispy lamb with mint risotto and the homemade banoffee pie true victors in this mini battle!
The human endeavor highlighted by the battles at Rorke’s Drift and Isandlwana will live on forever.
Red Anywhere’s visit to Arundel Castle armed with a canapé artillery will be an occasion of which we as caterers remain proud!

Treble Winning Weekend!

What a weekend for Red Anywhere… We catered for 2 events on Saturday and Manchester United won the premier league for a record 18th time!

Dan, Chef owner of Red is a red through and throughout not only is his company called Red Anywhere and his favourite colour is Red, He and his 3 young children all follow the real Red Army…. Man Utd!

This weekend Dan was cooking at an event so he could not watch the match (pure dedication to my job) but was keen to get the score update when possible, he was delighted to find out that Man Utd drew with Arsenal which meant we had retained the title for the 3rd year running! even more special is that Dan’s sous chef Willy is a Chelsea fan… oh well looks like another year of winning nothing Willy! (Everton will beat them in the FA Cup)

So this coupled with 2 successful events, one in Hurstpier Point with a Moroccan Theme and the second in Felpham near Bognor Regis, It was a good weekend all round

By the way the diary is blocked out for the evening of the 27th! (Champions League Final)

Open weekend at Eastlands a sucess!!

Menu Tastings Galore…

Here at Red we are busy, busy, busy with Bride & Grooms booking for this year and next. As the wedding season approaches at top speed I have the responsibility of ensuring that everything is in place, from the timings of the day to the shape and colour of the plate used for dessert!

I am currently occupied with a lot of menu tastings, Red Anywhere offer these complimentary once the couple have booked us and give the Bride & Groom and sometimes parents, a chance to sample their chosen food and make some decisions before the big day. Bride & Grooms have found this very helpful as they often find it hard to choose what starter or main course to have but once they’ve come to our premises and tried them all they (more times than not) come to an agreement and leave with a smile upon their face, looking forward to their wedding day.
Dan Clarke, Red’s Creative Chef & Owner, also recommends wines that compliment the chosen dishes and these are also made available on the day of the tasting for the wedding party to try with their food. We also create bespoke Cocktails for the couples looking for something different, fun and funky instead of the usual ‘Champagne Reception’, Dan asks the couple what their favourite flavours and spirits are and tries to create something unique and bespoke for the couple, they get to sample these and they can be tailored to the couples personal tastes and likes there and then.
Our Bride & Grooms have commented that this has been really useful and has helped to put their minds at rest. They always leave feeling reassured and excited about the menu they’ve chosen that will make their day unforgettable.

Another Master Chef Experience Successfully Excecuted in Chandlers Ford

A great night of Sublime Creative Food, refreshing non-alcoholic cocktails created for Mr and Mrs Steel and six guests at their home in Chandlers Ford, Hampshire.
They all enjoyed a small selection of delicious Canapes cooked by myself and of course the master chef himself Daniel Clarke, consisting of Seared Foie Gras, Rhubarb Compote - Mini Thai Fish Cakes, and finally Pesto & Poppy Seed Goats Cheese tart, all accompanied by a choice of a glass of Kir Royale, Raspberry fizz, and Nojito (Mojito without the Rum), created by Dan and prepared by a new member of the team Marcellus!

They then sat down around the beautifully laid up dining table - Well Done Andy Boyd!

(FYI Boydy the big white box we put our food in is called and IGLOO not a HESKEY,I think Heskey is a footballer!)

The Four Course dinner consisted of Confit Duck Leg, Asianslaw, Oriental Sauce, followed by Braised Turbot, seared Scallop, summer veg, basil cream sauce, Main course was Breast of organic Chicken, Parmesan Mash poached Asparagus and Parmesan crackling.To finish the night Dan Presented the guests with his famous and I must say very very delicious plate of mini desserts including, Mini Lemon Tart, Banoffee Pie in a glass, Crème Brulee and home made Raspberry Sorbet.
This really created the wow factor for our guests.
A wonderful night had by all - Well done

Friday Feeling Cocktail - Nojito

I am just about to leave our HQ in Littlehampton to go and cook dinner for some clients in Chandlers Ford. When preparing their cocktail ingredients for tonight I thought ah… why not tell everyone else about this lovely non alcoholic cocktail… sorry for you hardcore drinkers… Alcohol in next weeks cocktail of the week.

Ok here we go…

The cocktail is called a Nojito. Its basically a Mojito (famous cocktail made with rum) without the Rum. Its very refreshing, full of Lime and Mint and has a Fizz to it which cleans the pallet leaving you wanting more… and perhaps a little Rum if you have some.

The recipes goes like this…

Juice of 1 Lime

12 x Mint Leaves

2oz Apple Juice (preferably pressed)

a little sugar

topped up with Lemonade or Soda

you should serve this in a High Ball or Long Glass with cubed ice and build the drink in the glass and stir.

hopefully you will love it!

Wedding Season off to a Flyer…

Wedding Season off to a Flyer..

Red Anwhere – the clue is in the name, ‘Anywhere’.
We had a trio of weddings over the weekend each one individual in menu choice, food style and location!

The 3 brides were all delighted with the Red Team and all suitably impressed with the delivery of each event.
We looked after Jan and Hazel who had a civil ceremony in the sunshine on a 200 country estate complete with lake backdrop, croquet lawn and delicious menu consisting of locally sourced ingredients formally executed; then there was Beth and Mick who enjoyed an informal bbq in a beautiful nature reserve in Hampshire offering an array of salads complete with giant paella stand and an ice cream stall were our home made ice creams proved a huge success, especially the cinnamon and sultana flavour!
Then of course there was Jacqueline and Martin to complete the trilogy. This couple had a fabulous hog roast at their home were guests gathered on their patio for drinks, the aromas of the hog wafting through the mid afternoon calm – a relaxed wedding breakfast where everyone felt comfortably indulged.

Red delivered – Everyone happy!

Linda Linda Linda… Where’s My Crab!

Linda, Linda, Linda, Linda… Where’s My Crab!

Well what a final, Was Ad ever going to win against the Queen of Dynasty Linda Evans….? I think the public warmed to Linda from the very start and even she said that Ad was the better cook…. but we all love Linda, Linda, Linda!

I personally was rooting for Bruce. I watched him closely and was very impressed from what I saw. He was a team player, hard working, loyal, passionate and never grumbled or moaned! I honestly thought he was going to win until he dropped the shock of the show by wanting to go home and see his wife. I think also the added fact that the Hillsborough Memorial was clearly in his thoughts… as Marco said he left as a winner and can hold his head high!

Well what next? Will Ad open a restaurant in America with Linda serving Crab, Crab, Crab and Veal… we can only wait and see.

Will Grant and Anthea open a restaurant called “Simply Grant Bovey”

And we could see Danielle better known as Daniel open a restaurant called “what’s my surname”

All in all it was a great show and Marco is a true legend in the world of cooking and my Chefs Hat goes off to the big man…. Well Done Marco!

Just remember….. A tree without roots is just a piece of wood!

Sous Chef Visits Braunton Farm with a spring in his step!!

What a fantastic time of year, for new season produce, local meats, and fresh vegetables.

Lucky for me my girlfriend’s parents own a farm in the small village of Isfield, Lewes, where they rear a small holding of Sheep and Pigs.

As a chef I feel it is very important and also exciting on a personal and professional level, to understand and see where our produce comes from, how it is reared, and the process it goes through before ending up as a delicious dish on our plates.

I took a walk around the farm this weekend, to see how the sheep were getting on, the Ram was let loose a few weeks ago, and as a result 7 of the sheep are in holding ready to give birth to new seasons lamb in just a couple of weeks time.

I took some time also to see the pigs, which again are ready to be taken to a local Abattoir - Tottingworth Farms in Heathfield, in just a couple of weeks time, I will be getting my butchers apron on and going along to see the process as it happens!!

After a game of Frisbee and a beer in the sun with my girlfriend, I was even given some freshly laid duck eggs to take home. Lovely!!

Masters, Ryder Cup, The Open…. No “The Red Charity Golf Day”

….. and Tiger would not win this one!

Its great news so far for the 4th Red Charity Golf Day this year to be held on the wonderful Water Fall course at Manning’s Heath Golf Club!

We only have 6 places left to fill, If we achieve this it will be the best supported day we have ever had…. now that’s a great achievement in the current climate!

Groovy Red Team Visit RSVP

The Red Team visited RSVP a trade show for the events industry in London last week and found some interesting and creative people!

The show was not as big as usual probably due to the current climate which in my opinion was not a bad thing as I came to the conclusion that the people that were there were the crème de le crème of the industry and I was not wrong!

We met some like minded passionate and creative people with all kinds of new ideas and creativity. I was particularly impressed with a a company called the “Creative Lounge” the lady who owned the company was passionate about dressing the room and table in a very different ways…. no flowers or glitter which makes a change but handmade jewels and wrought iron, mirrors and even the colours and finishes were different….. I think we will be promoting them!

Also we watched a great performance from a modern string band called “String Fever” these guys play all over the world and have played for just about everyone, at 4k for 30 minutes I can see why they appeal to the celebrity market!

Anyway we finished off the show by having our photo taken in a “Groovy Booth” which is a new idea where the company come and set up a booth for your event and you dress up and have your photo taken… good fun as you will see!

The day was finished off with a beer and a burger in Chelsea and then off home!

Red Protege Wins Gold!

Rebecca Mackie recently competed at Bournemouth Salon Culinaire and was awarded a Gold Medal and if that was not enough she then went on to win “Best Junior in Show” an award that I won many years ago!

Beck’s has been working with us for a year now and is training to be a Chef at Westminster College in London. Strange thing is though that this medal was for making cocktails not cooking! Becks came to me and asked for some guidance. This was not a problem as we specialise in cocktail bars for events, also making a cocktail is like developing a new dish… its about taste and marrying flavours that work or complement each other.

Anyway Well Done to Becks we are all very proud of you at Red Anywhere… remember though you are a Chef not a Cocktail Girl!

The Tithe Barn & Red Anywhere…

Corporate Team Building - Fresh Egg step into Hell’s Kitchen

Many of us have seen Gordon Ramsey ranting and raging on ITV’s Hells Kitchen. Red have developed our own version of the much loved programme to appeal to Corporate Companies who want to use it for Motivation and Team Building!

Last Fridays lucky Company where Fresh Egg a Web Design and Marketing company based in Worthing. They were celebrating their 9th year in business and also the arrival of a new chairman… no less than James Caan!

Adam Stafford MD of Fresh Egg wanted to create something that was different but would involve all of his 22 employees. On arrival they were given a welcome drink and nibbles followed by a tour of the kitchen. I then demonstrated some quick dishes that hopefully inspired the group!

We then showed them there mystery ingredients. The task started with all teams having to write a 3 course menu for 4 covers in 15 minutes using the mystery ingredients. After submitting the menus all teams were given 1 hour and 30 minutes to produce their menus!

I am glad to say that all teams served on time, the energy, concentration, and rivalry was fantastic. There were some real foodies taking part who wanted to produce great food. We even had an ex Chef in one team who naturally led his team…. they went on to win by a very close margin!

The teams then sat down and had a 2 course supper and a well deserved glass of wine!

Andy has over 25 years experience in Events from Selling, Managing and most importantly Delivering. His passion and enthusiasm for the industry is rarely seen and I know with our vision and support he can grow and develop into an integral part of the Red Army!
