&lt;p&gt;El bife de chorizo es el segundo corte más pedido en las Parrillas Argentinas, después del asado de Tira. Aquí todos sus secretos&lt;/p&gt;

&lt;h3&gt;Preparación&lt;/h3&gt;
&lt;ol&gt;
&lt;li&gt;&lt;p&gt;Compre 2 bifes de chorizo de novillo liviano, de 400 gramos cada uno.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Prepare las brasas y caliente muy bien la parilla. Asegurese de tener buen calor. Coloque la mano cerca de los hierros de la parrilla y cuente. Si está a punto, a los seis segundos trendrá que retirar la mano.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Saque la carne de la heladera 30 minutos antes de cocinarla. Sale con hojuelas de sal marina, quedará luego una capita crocante deliciosa&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Coloque la carne sobre la parrilla caliente, con mucha brasa debajo y cocínela 9 minutos. Para saber cuándo dar vuelta el bife, esté atento al momento en que suelta el jugo. Gírela con una pinza y espere a que vuelva a soltar el jugo hacia arriba; serán otros 9 minutos.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Cuando el bife esté casi listo, caliente sobre la parrilla dos sartencitas de hierro (tienen que ser bien gruesas). Espere a que tomen buena temperatura. En ese momento agregue 1 cucharadita de aceite de oliva en cada una. Casque 1 huevo de granja por persona en un platito y deslice uno en cada sartén. Cocínelos hasta que las claras estén de color blanco. Sálelos con sal marina.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Retire los bifes de la parrilla. Saque las sartenes con cuidado. Lleve a la mesa los bifes en platos y los huevos en la sartén. Y no se olvide el pan, infaltable para acompañar el plato.&lt;/p&gt;&lt;/li&gt;
&lt;/ol&gt;

&lt;p&gt;&lt;strong&gt;Bife de chorizo:&lt;/strong&gt; es el nombre con que se conoce en Argentina el corte correspondiente al bife angosto, pero deshuesado. Está en el cuarto trasero del animal.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Huevo de Campo:&lt;/strong&gt; es más grande, por eso es suficiente uno por persona. Y es mucha más rico. Las gallinas ponedoras están sueltas en el campo, sin estrés y comen alimentos naturales. Tienen una yema de color naranja intenso casi rojo, y muy buena clara&lt;/p&gt;

&lt;p&gt;Vinagre de alcohol 1 taza&lt;/p&gt;

&lt;h3&gt;Pasos para la preparación&lt;/h3&gt;
&lt;ol&gt;
&lt;li&gt;&lt;p&gt;Mezclar en un bol el pimentón dulce con el ají molido, el orégano y el tomillo secos. Sumar de a poco el agua caliente. Mezclar y dejar reposar de 10 a 15 minutos para que se hidrate.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Agregar la sal marina, la pimienta negra molida en el momento y el vinagre de vino blanco. Volver a mezclar. Incorporar el de alcohol.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Lavar el perejil, secarlo muy bien y picar las hojas. Pelar los ajos, abrirlos al medio, extraer los brotes del centro y picarlos. Cortar el chile al medio, eliminar las semillas y picarlo bien fino.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Incorporar al bol el perejil, el ajo y el chile. Sumar el aceite de oliva y el aceite de girasol y mezclar.&lt;/p&gt;&lt;/li&gt;
&lt;li&gt;&lt;p&gt;Envasar el chimichurri en una botella y taparla con cierre hermético. Llevar a la heladera y esperar por lo menos un día antes de consumirlo.&lt;/p&gt;&lt;/li&gt;
&lt;/ol&gt;
&lt;h4&gt;Tips&lt;/h4&gt;
&lt;p&gt;&lt;strong&gt;El chimichurri se puede conservar un mes, siempre en la heladera y bien tapado para que el olor no impregne a otros alimentos.&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Si lo prepara con hierbas frescas debe usarse enseguida. En este caso no se puede conservar más de 5 días porque se estropea.&lt;/strong&gt;&lt;/p&gt;

Preparacion&lt;/h2&gt;
Retirá las espinas y la piel de las piezas de salmón. Colocá los filetes en una fuente de vidrio, rocialos con aceite de oliva y espolvorealos con la cáscara de naranja. Tapálos y dejalos en la heladera.&lt;br /&gt;
Ahora cortá todas las verduras en juliana de 5 cm de largo por 1/2 cm de ancho (mas o menos). Calentá un wok con un poquito de aceite de oliva. Salteá a fuego fuerte los vegetales recien cortados empezando por los más firmes como: zanahoria, berenjena, calabaza, cebolla y morron; luego los tomates y por último los brotes de soja. Deben quedar tiernos pero firmes&lt;br /&gt;
En una sartén grande dorá de los dos lados los filetes de salmón (que dejaste en la heladera) con el aceite de oliva y las cascaras de naranja que tenian. Cuando esten a punto (no cocinar de más) rocialos con una salsa armada con el jugo de la naranja y los trocitos de manteca. Serví las verduras y sobre éstas el salmón con la salsa y por encima la ciboulette y la pimienta.&lt;br /&gt;

TIP:&lt;/h3&gt;
