&lt;p&gt;Add the zest from a small lemon to burgers for a great taste, you’ll never want to make burgers without it again. Promise. When you’re preparing the meat to make the patties, just be sure to mix well.&lt;/p&gt;
&lt;p&gt;Zest is the outermost rind of citrus fruits (usually lemons and oranges). The white portion of the peel under the zest is unpleasantly bitter and generally avoided by limiting the peeling depth.&lt;/p&gt;
&lt;p&gt;To remove the zest from the lemon, you can use a utensil called a zester (if you have one), a sharp paring knife or vegetable peeler. I don’t own a ‘zester’ so I actually used a small hand cheese grater with thin holes to grate off the yellow portion of the rind. (See picture above).&lt;/p&gt;

&lt;p&gt;I felt like making wraps for dinner so I took some of my favorite ingredients and put them together with some shredded chicken, turns out it was a fantastic flavoring and took under 20 minutes to do.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS &lt;/strong&gt;&lt;em&gt;(Serves 4)&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;3-4 Small Chicken Breast&lt;/li&gt;
&lt;li&gt;Southwest seasoning or chipotle seasoning&lt;/li&gt;
&lt;li&gt;10 Slices of Bacon&lt;/li&gt;
&lt;li&gt;2 Avocados&lt;/li&gt;
&lt;li&gt;1 1/2 Cup Feta Cheese&lt;/li&gt;
&lt;li&gt;2 Cups Shredded Cabbage&lt;/li&gt;
&lt;li&gt;2 Cups Tomato Salsa&lt;/li&gt;
&lt;li&gt;Package of Tomato Basil or Tomato Herb Wraps&lt;/li&gt;
&lt;li&gt;1 TSP Olive Oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;THE METHOD&lt;/strong&gt;&lt;em&gt; &lt;/em&gt;&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Grill plain chicken breast with a little olive oil&lt;/li&gt;
&lt;li&gt;Once you’ve got the grill going, start your bacon. When it gets nice and crispy, set aside to drain on a paper towel.&lt;/li&gt;
&lt;li&gt;When the chicken has been cooked, toss in a frying pan with your seasoning and some water for about 3-4 minutes to finish. (check the seasoning package for measurements)&lt;/li&gt;
&lt;li&gt;Put the feta, avocado, cabbage, salsa, and bacon together on the wrap with your chicken and serve!&lt;/li&gt;
&lt;/ol&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Tip: &lt;/strong&gt;Throw the wraps on the grill for a minute or two to get them a little crispy before serving. &lt;p&gt;This meal is not light by any means, but in moderation makes for a tasty dinner. The recipe makes 4 large rice balls or 8 small ones. Accompanying the arancini with a side salad definitely balances out the starches. Great for a nice Sunday meal or served up as appetizers to be shared.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;PAIRS WELL WITH&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Side Salad w/Oil &amp; Vinegar&lt;/li&gt;
&lt;li&gt;A Dry White or Red Wine&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt; &lt;em&gt;(Serves 3-4)&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 TBSP Olive Oil&lt;/li&gt;
&lt;li&gt;1 TBSP Finely Chopped Fresh Thyme&lt;/li&gt;
&lt;li&gt;6-7 Fresh Basil Leaves Finely Chopped&lt;/li&gt;
&lt;li&gt;Salt and Pepper to taste&lt;/li&gt;
&lt;li&gt;1 Small Onion, Finely Chopped&lt;/li&gt;
&lt;li&gt;1 Clove Garlic, Crushed&lt;/li&gt;
&lt;li&gt;1 Cup Uncooked Arborio Rice&lt;/li&gt;
&lt;li&gt;1/2 Cup Dry White Wine&lt;/li&gt;
&lt;li&gt;3 1/2 to 4 cups Boiling Chicken or Vegetable Stock (I used vegetable)&lt;/li&gt;
&lt;li&gt;2 ounces Cubed Prosciutto &lt;/li&gt;
&lt;li&gt;1/2 cup Finely Grated Parmesan Cheese&lt;/li&gt;
&lt;li&gt;1 Egg, Beaten&lt;/li&gt;
&lt;li&gt;1 TBSP Milk&lt;/li&gt;
&lt;li&gt;4 Ounces Mozzarella Cheese, cut into 3/4 inch cubes&lt;/li&gt;
&lt;li&gt;1/2 Cup All-Purpose Flour&lt;/li&gt;
&lt;li&gt;1 Cup Dry Bread Crumbs&lt;/li&gt;
&lt;li&gt;1 Cup Vegetable Oil for Deep Frying&lt;/li&gt;
&lt;li&gt;*2 Cups Red Sauce&lt;/li&gt;
&lt;li&gt;**1 Cup Basil Pesto Sauce&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;THE METHOD&lt;/strong&gt; &lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Heat the olive oil in a large saucepan over medium heat. Add onion and garlic, and cook, stirring until onion is soft but not browned. Pour in the rice, and cook stirring for 2 minutes, then stir in the white wine, and continue cooking and stirring until the liquid has evaporated. Add hot chicken or vegetable stock to the rice 1/2 cup at a time, stirring and cooking until the liquid has evaporated before adding more.&lt;/li&gt;
&lt;li&gt;When the stock has all been added, and the liquid has evaporated, stir in the prosciutto. Season with salt and pepper. Remove from the heat, and stir in the parmesan cheese, basil and thyme. Transfer the risotto to a bowl, and allow to cool. &lt;em&gt;TIP: I suggest making the risotto the night before and allow to cool in the fridge overnight, this will make it easier to form the rice balls. Alternatively you can put the risotto in the freezer for 30 minutes if you are making the same day.&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;In a small bowl, whisk together the remaining egg and milk with a fork. Roll 2 tablespoons of the risotto into a ball. Press a piece of the mozzarella cheese into the center, and roll to enclose. Coat lightly with flour, dip into the milk/egg mixture, then roll in bread crumbs to coat.           &lt;/li&gt;
&lt;li&gt;Heat oil for frying in a deep-fryer or large deep saucepan to 350 degrees. Fry the balls in small batches until evenly golden, turning as needed. Drain on paper towels. Keep warm in a low oven while the rest are frying. Top with red sauce and basil pesto.&lt;/li&gt;

&lt;p&gt;&lt;strong&gt;INGREDIENTS&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;4 Cups Mashed Potatoes&lt;/li&gt;
&lt;li&gt;4 Eggs&lt;/li&gt;
&lt;li&gt;1/4 TSP Minced Fresh Garlic&lt;/li&gt;
&lt;li&gt;2 Whole Cloves Fresh Garlic&lt;/li&gt;
&lt;li&gt;1/4 TSP Minced Fresh Thyme&lt;/li&gt;
&lt;li&gt;1/4 TSP Minced Fresh Rosemary&lt;/li&gt;
&lt;li&gt;1 TBSP Freshly Grated Parmesan&lt;/li&gt;
&lt;li&gt;2 TBSP Milk&lt;/li&gt;
&lt;li&gt;1 TBSP Unsalted Butter&lt;/li&gt;
&lt;li&gt;Kosher Salt and Black Pepper&lt;/li&gt;
&lt;li&gt;Toasted Brioche or 12 Grain Bread, for serving&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;THE METHOD&lt;/strong&gt; &lt;em&gt;(serves 2)&lt;/em&gt;&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Preheat oven at 375 degrees.&lt;/li&gt;
&lt;li&gt;In a small pan, heat the olive oil over medium heat and add in the 2 whole garlic cloves (crush the garlic slightly). Saute until the garlic starts to brown. Remove garlic cloves and pour oil into a small cup. Set aside until the egg dish is ready to serve.&lt;/li&gt;
&lt;li&gt;Combine the minced garlic, thyme, rosemary, and parmesan and set aside. &lt;/li&gt;
&lt;li&gt;Place mashed potatoes into a small baking dish and spread evenly across the dish. &lt;/li&gt;
&lt;li&gt;Place 2 tablespoons of milk and 1 tablespoon of butter across the dish and place in the oven for about 6-7 minutes, until hot and bubbly. &lt;/li&gt;
&lt;li&gt;Carefully crack 4 eggs (without breaking the yolks) across the dish and sprinkle evenly with the herb mixture, then sprinkle with salt and pepper. Place back in oven for about 15 minutes, until the whites of the eggs are almost cooked. (Rotate the baking sheet once if they aren’t cooking evenly.) The eggs will continue to cook after you take them out of the oven. Allow to set for 60 seconds, pour garlic oil across the dish and serve hot with toasted bread.&lt;/li&gt;

&lt;ul&gt;&lt;li&gt;1/2 Pound Wheat Pasta&lt;/li&gt;
&lt;li&gt;1 Red Pepper, Sliced&lt;/li&gt;

&lt;li&gt;1 Small White Onion, Sliced&lt;/li&gt;
&lt;li&gt;3 Cloves of Garlic, Minced&lt;/li&gt;

&lt;li&gt;Olive Oil&lt;/li&gt;
&lt;li&gt;4 Cups Spinach&lt;/li&gt;
&lt;li&gt;1-2 TSP Red Pepper Flakes (or to taste)&lt;/li&gt;
&lt;li&gt;A leaf or two of fresh basil for garnish&lt;/li&gt;
&lt;li&gt;Salt/Pepper to taste&lt;/li&gt;
&lt;li&gt;Parmesan Cheese&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;THE METHOD&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Put the water on to boil for the pasta. Add the wheat pasta when the water comes to a boil and cook about 10 minutes or until al dente. &lt;/p&gt;
&lt;p&gt;Add some olive oil to a hot pan and saute garlic over medium heat. After a minute or two (don’t let the garlic burn!) add in the sliced onions and peppers. Cook until semi-tender. &lt;/p&gt;
&lt;p&gt;Add a little salt and pepper along with the red pepper flakes to the pan. Once the veggies are ready, lower heat to simmer and add in the roasted tomatoes. &lt;em&gt;*If you bought roasted tomatoes in oil, drain the oil before adding to the pan, it would make your dish too salty! &lt;/em&gt;About 2-3 minutes before you plan to serve add the spinach to the pan and saute together.&lt;/p&gt;
&lt;p&gt;Drain pasta and put it back in the pot. Add ingredients from the pan, mix together and add in some extra olive oil.&lt;/p&gt;
&lt;p&gt;Garnish each bowl with parmesan cheese and chopped basil. Nothing can come close to getting out of the house and grabbing some coffee and oatmeal at your local store but now there’s an alternative.&lt;/span&gt;&lt;/p&gt;

&lt;ol class="ol1"&gt;&lt;li class="li1"&gt;Take an even amount of Pecans, Almonds and Walnuts and chop them up using a chopper or grinder. You can store the mix in a plastic tub for many days of eating oatmeal :)&lt;/li&gt;
&lt;li class="li1"&gt;Once the water is boiling, take 3/4 cup and pour over 1/2 cup dry quick oats.&lt;/li&gt;
&lt;li class="li1"&gt;Stir then let sit for 1-2 minutes&lt;/li&gt;

&lt;p&gt;&lt;strong&gt;THE METHOD&lt;/strong&gt;&lt;/p&gt;
&lt;ul class="ul1"&gt;&lt;li class="li1"&gt;Rinse the paper filter with hot water&lt;/li&gt;
&lt;li class="li1"&gt;2 scoops of Illy (scoop from the kit) *I used Illy’s espresso dark blend (fine grind) and plan to experiment with Lavazza. I enjoy both brands of beans.&lt;/li&gt;
&lt;li class="li1"&gt;180 degree water &lt;/li&gt;
&lt;li class="li1"&gt;fill water to #3&lt;/li&gt;
&lt;li class="li1"&gt;stir vigorously for 10 seconds&lt;/li&gt;
&lt;li class="li1"&gt;press down slowly until you hear air (about 8 seconds)&lt;/li&gt;
&lt;li class="li1"&gt;drink/repeat! Add more hot water if it’s too strong for your taste.&lt;/li&gt;

&lt;li&gt;Toast the bread. Place the cheese on one side of the bread (you can melt in a pan or throw in a toaster oven).&lt;/li&gt;
&lt;li&gt;Spread mayo on the other slice of bread, then top with bacon, avocado, tomato, and field greens. &lt;/li&gt;
&lt;li&gt;In a skillet, melt butter over medium heat. Fry egg, turning over for about 30 seconds after the bottom is set (over-easy egg)&lt;/li&gt;

&lt;ul&gt;&lt;li&gt;1 tablespoon plus 1 1/2 teaspoons active dry yeast (two 1/4-ounce envelopes)&lt;/li&gt;
&lt;li&gt;2 1/4 cups plus 2 tablespoons warm water (110 degrees)&lt;/li&gt;
&lt;li&gt;3 tablespoons plus 2 teaspoons honey&lt;/li&gt;
&lt;li&gt;4 tablespoons unsalted butter, melted, plus more for bowl and pans&lt;/li&gt;
&lt;li&gt;2 1/2 cups all-purpose flour, plus more for surface and dusting&lt;/li&gt;
&lt;li&gt;2 3/4 cups whole-wheat flour&lt;/li&gt;
&lt;li&gt;1 cup rye flour&lt;/li&gt;
&lt;li&gt;2 tablespoons coarse salt&lt;/li&gt;
&lt;li&gt;1 1/3 cups cooked wheat berries&lt;/li&gt;
&lt;li&gt;1/2 cup rolled oats, plus 2 tablespoons for topping&lt;/li&gt;
&lt;li&gt;1/2 cup flaxseed, plus 1 tablespoon for topping&lt;/li&gt;
&lt;li&gt;1/3 cup sunflower seeds plus, 2 tablespoons for topping&lt;/li&gt;
&lt;li&gt;1 large egg white&lt;/li&gt;
&lt;li&gt;Nonstick cooking spray&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;DIRECTIONS&lt;/strong&gt;&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;In a small bowl or liquid measuring cup, sprinkle yeast over 1/2 cup water. Add 2 teaspoons honey. Whisk until yeast dissolves. Let stand until foamy, about 5 minutes&lt;/li&gt;
&lt;li&gt;Transfer to the bowl of a mixer fitted with the dough hook. Add butter and remaining 1 3/4 cups plus 2 tablespoons water and 3 tablespoons honey. Whisk together all-purpose, whole-wheat, and rye flours with salt; add 3 cups to yeast mixture. Mix on low speed until smooth. Add remaining 3 1/4 cups flour mixture, 1 cup at a time. Add wheat berries, bulgur, 1/2 cup oats, 1/2 cup flaxseed, and 1/3 cup sunflower seeds; mix on low to combine. Continue mixing until dough comes away from sides of bowl and forms a ragged, slightly sticky ball.&lt;/li&gt;
&lt;li&gt;Butter a large bowl. Knead dough on a floured surface until smooth and elastic but still slightly tacky, about 5 minutes. Shape into a ball. Transfer to prepared bowl; cover with plastic wrap.&lt;/li&gt;
&lt;li&gt;Let dough stand in a warm place until it doubled in volume (it should not spring back when pressed), about 1 hour. Butter two 4 1/2-by-8 1/2-inch loaf pans. Punch down dough and divide in half.&lt;/li&gt;
&lt;li&gt;Working with one piece of dough at a time, shape into a 7-by-7-inch square. Fold dough into thirds; press seam to adhere and pinch ends to seal. Place seam side down in loaf pan. Repeat process with remaining piece of dough.&lt;/li&gt;
&lt;li&gt;In a small bowl, mix egg white with 1 teaspoon water and brush mixture over tops of loaves; sprinkle with remaining 2 tablespoons rolled oats, remaining 1 tablespoon flaxseeds, and remaining 2 tablespoons sunflower seeds.&lt;/li&gt;
&lt;li&gt;Spray two pieces of plastic wrap with nonstick cooking spray; drape loaves with prepared plastic wrap and let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour.&lt;/li&gt;
&lt;li&gt;Uncover loaves and transfer to oven. Pre-heat to 375. Bake, rotating pans after 20 minutes, until tops are golden brown and internal temperature reaches 205 degrees on an instant-read thermometer, about 45 minutes total. Transfer to wire racks. Let cool slightly; turn out loaves. Let cool completely before slicing.&lt;/li&gt;

COFFEE RUBBED PORK ROAST

&lt;p&gt;2-3 lbs - pork roast @ 375 degrees oven for 1 hour or 140 degrees center of meat (whichever comes first)&lt;/p&gt;
&lt;p&gt;Ingredients, mix together in a bowl then rub over pork, feel free to cover it completely in the rub.&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;3 Tbsp - Coffee Beans (ground for espresso)&lt;/li&gt;
&lt;li&gt;1/2 cup - Brown Sugar&lt;/li&gt;
&lt;li&gt;1/2 Tbsp - Cayenne pepper&lt;/li&gt;
&lt;li&gt;1/2 Tbsp - Salt&lt;/li&gt;
&lt;li&gt;1/2 Tbsp - Black pepper&lt;/li&gt;
&lt;li&gt;2-3 Cloves Garlic / Minced&lt;/li&gt;
&lt;li&gt;1/2 Tsp - Smoked Paprika&lt;/li&gt;
