Nothing says summer quite like S’mores, right? Right. Today I am excited to be sharing a fun little recipe that’s a real winner with the kids! And when I say winner I am really saying, “Hey, this recipe features miniature food and a hands-on experience for your little chef that will totally suck up an afternoon. Not to mention you will seem like the awesomest parent ever…marshmallow on chocolate topped with graham cracker and more chocolate?”

Before we delve into this post much further, I need to reveal the full truth. If you follow me on Instagram, you may have seen the behind-the-scenes on this one. Our S’mores adventure turned out to be a bit (or a lot) messy, but the delightfully delicious taste made up for the fact that marshmallow fluff may have stuck to everyone in the house. I am going to share a “fix” for that little issue a bit later, but for right now let’s just stick to the “how to” portion of this post mmmkay?

S’mores Mini Donut Recipe

I have admitted before that sometimes I am a bit more Sandra Lee than Martha Stewart. If you’re not up for the chocolate donut recipe I am sharing, you can totally use a chocolate box cake mix. It provides a bit of a different consistency, but will totally work in a pinch!

Chocolate Donut Ingredients

• 1 cup all purpose flour
• ¼ cup + 2 tablespoons granulated sugar
• ¼ cup unsweetened cocoa powder
• ½ teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¼ cup + 3 tablespoons milk
• 1 egg
• ½ teaspoon vanilla extract
• 1 tablespoon butter, melted

Chocolate Donut Instructions

We used our mini donut maker (AWESOME!), but you can also bake these in the oven using a mini donut pan. If you’re using a pan, you will need to pre-heat oven to 325 degrees F and spray your pan with non-stick cooking spray (personally, I might add a bit of flour too).

Mix dry ingredients in a mixing bowl. Add milk, egg, vanilla and butter into the dry mixture and beat until smooth.

Fill each donut cavity with batter (all of the way in the donut maker, half way in the pan). Bake as directed, or 12-14 minutes in the oven.

Donut Glaze Ingredients

• 1/2 stick butter
• 1 7 oz. jar marshmallow cream
• 1 tsp. vanilla
• 1/2 package powdered sugar (add more as needed)
• 1-2 tblsp. milk

Donut Glaze Instructions

Melt butter, marshmallow cream and vanilla in a double boiler (if you don’t have a double boiler use a heat safe mixing bowl over an inch of boiling water). Gradually add sugar and then milk for desired consistency.

I cannot tell a lie. We made this little glaze creation up. It was SUPER sweet and REALLY sticky, but the kids LOVED it. Were I to do it over, I would use this Martha Stewart marshmallow frosting recipe and broil the tops for a more realistic S’mores look. 

We garnished our little donuts with crushed graham crackers and mini chocolate chips.

So there you have it. Super-sweet, delicious (if a touch sticky) S’mores Mini Donuts. Perfect for summer. Be sure to try these “grown-up S’mores” too.

I just recently made these pretty paper medallions and used them for a couple of parties I was helping with – a bridal shower and a birthday party.

I wanted to share how to make paper medallions with you because 1. they’re super cute, 2. they’re super easy, and 3. they’re super cheap but make a great impact at any event!

Supplies

2 pieces of 12×12 cardstock per medallion

Decorative edge paper punch

Ribbon

Coordinating paper (for center circle)

Glue gun

Scoring board (optional)

Instructions

1. Cut each piece of your 12×12 cardstock in half

2. To make 4 pieces of 6×12 paper

3. Punch the 12″ edge of each piece of paper

4. 4 pieces of decorated 6×12 paper

5. Score each piece of 6×12 paper at 1 inch increments. Fancy edge will be at the bottom.

6. Fold your paper accordion style along scored lines. If you don’t have a scorer, simply fold your paper accordion style every 1 inch.

7. Fold all 4 pieces of paper in the same manner.

8. Use hot glue to glue all 4 folded pieces together, end to end.

9. Glue 2 ends of paper chain together to form a circle.

10. Gather the circle together in the center.

11. Press down on center of circle

12. Until medallion is flat on your work surface.

13. Punch (or cut) 2″ circle for the center of your fan.

14. Put a generous amount of hot glue in the center of your medallion to hold it together.

15. Place 2″ circle on hot glue.

16. Hot glue ribbon onto your medallion and hang!

Tip: I usually use white thumbtacks to hang from the ceiling. Hanging the medallions over the dessert or food table will really wow your guests!

It’s summer and it’s not just the 90+ degree weather we’ve been experiencing in Utah, it’s all of the lovely lemon & lime recipes and project ideas that have been popping up all over the internet. I love every single one and today, I am sharing six of my favorite lemon/lime posts that were linked up last week.

I really, really need to be eating healthier. Every year around SNAP! I provide myself with a “hall pass” to unhealthy eating…Trying to overcome those terrible eating habits now and I think I really need to try this lemon wilted spinach and chicken dish shared by Rae Gun Ramblings.

I don’t drink alcohol, so I’d be looking for a copy of this copy, but I have to say this Copycat Lime-A-Rita from That’s What Che Said looks fantastic!

My mom used to make these mini cheese cake tarts every summer, usually around July. She used to top them with cherries and blueberries (patriotic cheesecakes). Yum!

It’s spring so I changed it up a bit…You’ve got to try it out!

Mini Cheesecake Recipe

Ingredients:
1/2 box of Nilla Wafers
2 (8 oz.) packages cream cheese
1/2 cup sugar
2 eggs
1 tsp. vanilla
fruit/chocolate topping

Directions
Heat oven to 350. Line mini muffin pan with paper liners (if you can find aluminum mini cups, they are strong enough to stand up on a cookie sheet and fit the Nilla Wafers a little better too). Place Nilla Wafers rounded side down in the paper liners.

Beat cream cheese and sugar together until light and fluffy. Add eggs one at a time and mix thoroughly. Add in vanilla.

Spoon cream cheese into paper liners on top of the Nilla Wafer. Fill 3/4 full.

Bake at 350 degrees for 15 minutes or until top edge firms up and just starts to brown.

Cool mini cheesecake cups and chill. Add topping.

I used fresh strawberries and melted chocolate on my mini cheesecake desserts, but canned pie filling would work to.

I love mini desserts. You can always get away with eating more than one. Plus? They’re just cute!

Each time I run out of business cards, I hem and haw over the purchase of new ones until I’ve missed the deadline to order anything truly brilliant and am just doing my best to get something, anything, in hand. It’s a vicious cycle really, because I don’t want to order “too many” cards in hopes that the next ones will be amazing so I frequently find myself in need of new business cards.

What’s the big deal? Well, I want creative business cards. I want cards that are beautiful, unique and leave an impression all at the same time.

I suppose that part of the pressure comes from having encountered so many pretty ones. You can see all of the unique business cards I’ve pinned…

But, today I thought I would share some of the cards I picked up at SNAP!

I definitely found myself drawn to bold colors like Lani’s card, the happy hello on Abbey’s card,  glitter, the crayon on Ann Marie’s card and {sigh} the heavy weight of both Kirsten and Heather’s cards…

I love how well some bloggers brought together fun and great branding…Jamielyn always has a cute handout, but these little ice cream cones were so fitting. I love that Sara passed out pirate’s treasure. If your name is Burlap and Denim, I don’t know that you could possible go wrong with a card made of burlap and denim! Last, but certainly not least, check out Lindi’s awesome kit of goodness…

There were some cards packaged up with little gifts…

I am itching to buy some of Jessica’s awesome stamped home decor pieces after receiving this one…
