Don’t be afraid to put “big” items on your registry too!  This allows for friends or family who want to go together on a gift to do so while getting you what you want. You can research your more expensive items, and you won’t be stuck with a cheap and less safe alternative just because someone wanted to get you something and didn’t know where to start.

Multigenerational Trip to Disney World:

Many people overlook Walt Disney World when it comes to multigenerational trips, but it is actually a fantastic location! You can meet every person’s needs easily once you arrive on property.

We just stayed at Saratoga Springs in a Villa, and I highly recommend it for multigenerational families. For this trip, most of our party actually decided to do NO parks! However, what is nice about Disney World is that every person can decide. My brother and his wife actually decided to do a park day, while the rest of us did not. This is always an option.

Now, when it comes to Disney World, my parents do NOT want to go inside a park. You can still get the Disney Experience, even if you don’t step foot in a park! By selecting Disney Character meals at resorts, visiting Disney Springs, Disney Boardwalk and playing the Disney mini golf course you can enjoy all that the resorts have to offer. Another awesome idea is to take a Walt Disney World Fishing Excursion.

Gluten Free Beignets Disney World:

You can revel in the romance and pageantry of New Orleans’s historic French Quarter at this Moderate Resort hotel. Enjoy the cobblestone streets, gas lamps, wrought-iron balconies and fragrant magnolia blossoms, along with colorful Mardi Gras characters and the sounds of jazz.

There is so much to see and enjoy at this resort but of course for me the gluten free deliciousness is top on my list! I will always try to take the time to visit this resort when I make the trip. The perfect way to end a trip when you have extra time before your flight home.

This is the gluten filled Mickey Beignets.

They are at Port Orleans Resort French Quarter, in Scat Cat’s Club Cafe or Scat Cat’s Lounge. You can order them from the cafe all day long or for adults you can purchase them in the lounge in the evenings.

Gluten Free Beignets. They are to die for! So worth the trek from Disney Springs via the ferry to enjoy! They taste AMAZING! I can’t believe how light and fluffy and while they aren’t Micky Shaped like the gluten filled version, they are simply delicious. Priced at $3.99 each, this is an amazing treat!

Disney World No Parks Trip:

I called Disney and spent several hours on the phone with them weighing out our pros and cons of where to stay. I settled with Saratoga Springs in a 2-bedroom Villa. For this trip, we need some extra space so that my daughter would have room to get ready for her special day and that since this was a multi-generational trip, we decided it was best to have a 2-bedroom villa. It was a real treat!

Her reception was held at Disney Springs at the Boathouse so we wanted to stay in a property that would allow us transportation back and forth easily. I did pay for transportation back and forth to the venue but otherwise we had built in transportation available to us.

Now, a trip to Disney World isn’t a trip to Disney World if you don’t see some characters. I planned an amazing Disney Dining Tour and we enjoyed all of the following Disney Dining Options during our stay. Take time when you don’t visit the parks to enjoy the amenities that the resort offers. Visit the pool, check out the scheduled activities available at the resorts, go to Disney Boardwalk and Disney Springs. Eat your way around the resorts! Trust me, there is plenty to do!!!

Day One:

• Check in at Saratoga Springs Resort
• Dinner at Grand Floridian – 1900 Park Fare, Character Meal

Day Two:

• Breakfast at Riviera Resort – Topolino’s Terrace – Flavors of the Riviera, Character Meal take Skyliner to Epcot and Back to resort
• Snack at Beaches & Cream to Go – Gluten Free Brownie Sundae
• Play free round of mini golf
• Snack at Port Orleans Resort French Quarter – Gluten Free Beignets

When I am at Disney World, it is usually go, go and go! This was a very relaxing time and I enjoyed it! I may actually plan another to come back without going into the parks again soon!

Of course, I have to share a picture of my girl on her wedding day with you. She was absolutely gorgeous in her black dress! I have never seen a more beautiful bride. When she said, black dress? I said, YES. I could not imagine anything else on her and it was perfect! I love her endlessly.

Disney Worlds Beaches and Cream Soda Shop to Go:

On my bucket list has always been to eat at Disney Beaches and Cream Soda Shop. We found ourselves “stranded” on our last trip to Disney World. The Skyliner shut down for an extended period of time and our closest walking distance was the Beach Club Resort. So, we walked the short distance and found ourselves passing by Beaches and Creams. Though we were really hungry for a meal, a sweet treat did sound like a great idea!

I spoke to the allergen specialist and quickly ordered a gluten free brownie sundae with mint chocolate chip ice-cream and hot fudge, whipped cream and a cherry on top, and it was AMAZING!!!

A to-go menu of ice cream and beverages is available, and you can even enjoy your goodies at a poolside table outside, overlooking Stormalong Bay. We had no problem finding a shady spot to enjoy our sweet treat.

They even offer adult beverages and adult hard floats and shakes! My SIL enjoyed the Stout Float and it looked delicious! I am so glad that I was able to add this destination to my travel bucket list! Next time I will make plans to enjoy the Mini Mickey Sink! It looked AMAZING! Best of all you could avoid reservations and still enjoy this treat! I would 10/10 recommend it and thankful for the detour!

Disney World 1900 Park Fare Dining

Wishing for something delicious? Your wishes can come true at 1900 Park Fare, featuring an all-you-care-to-enjoy buffet at breakfast and dinner—with visits from some favorite Disney Characters. This is the BEST tasting buffet I have ever been to at Disney World.

Now, the characters and decor has been completely revamped so you will no longer find Cinderella’s Stepsisters, Stepmother or Prince Charming any longer.

There are so many amazing dishes! Some inspired by Disney wish-makers, like Aladdin and Tiana. At dinner, get a taste of New Orleans when you try Tiana’s Gumbo. Some flavorful favorites await you at breakfast and dinner alike including the famous Grand Floridian Strawberry Soup and a carving station full of savory selections.

The menu also features kid-friendly options—like Mickey waffles at breakfast, as well as chicken, pizza and macaroni-and-cheese at dinner.

You will meet Characters from classic Disney films, as well as newer favorites like Encanto and The Princess and the Frog. Each Character is known for making a wish… and making their wish come true. They will ask you to make a wish at the table when they visit.

The decor and artistic touches abound. 1900 Park Fare is delightfully designed to take you back in time to the early 20th century with carousel theming, whimsical décor and impressionist style Disney artwork. It really is a beautifully well-done venue.

We were thrilled with all of the gluten free options! When we entered, they handed us a guide which told us every allergy. In addition, the chef took special precautions and prepared some items for us including gluten free desserts and rolls. It was a delicious dinner and we all left stuffed!

I do want to add because this a large buffet venue the noise level was really loud. Just to prepare you before your dining experience. I personally hadn’t been to a buffet since pre-covid days, so it was a little of a shock, but the food and character interactions made up for the noise level. We are all still talking about the food!

Be sure to look for Big Bertha, a turn-of-the-century organ from France that has been at Disney’s Grand Floridian Resort & Spa since 1988!

Here is the allergen guide that they gave us when we entered. None of us got sick and we felt safe by using the guide. If there was any concern, we spoke to the chef, and they brought us items. Like the strawberry soup from the back.

The Best Disney Character Breakfast

Located at the Riveria Resort enjoy Breakfast à la Art with Mickey & Friends. Start your morning with breakfast at this beautiful rooftop restaurant offering an exclusive storybook dining experience. The prix-fixe menu offers delicious choices to please everyone in the family including those with food allergies!

I was skeptical but had heard amazing things about the gluten free options and I was pleasantly surprised to find the most delicious gluten free Mickey waffle with Chantilly cream on the menu!

AND, you can order POG juice here! If you know you know! It was delicious! In my personal opinion it tastes like sunshine in a glass!

While enjoying breakfast and the bird’s-eye views, meet some of your favorite Disney friends for a perfect photo and autograph opportunity! You will find yourself mingling with Mickey Mouse, Minnie Mouse, Donald Duck and Daisy Duck—stylishly dressed from head to toe in outfits unique to Topolino’s Terrace! They are so cute and the interaction time with every character was a 10/10! They will take photos with you, sign autographs and entertain you!

When you make your reservation be sure to ask for a window seat and after your meal be sure to visit the Terrace for photo opps!

Breakfast begins with fresh pastries and bread (special accommodations are made for allergies). Your choice of entrées includes Quiche Gruyère with house-made pancetta, Sour Cream Waffle, Smoked Salmon, Two Eggs Any Style, and more. Whichever you select, breakfast in this charming café is an enchanting way to start your day.

When I say this is the best character breakfast, I mean it! Location, atmosphere, good quality, service and vibe. ALL a 10/10. I would book this breakfast again!

This was a meal that ALL of our party enjoyed! Just an FYI, when using the Disney Dining Plan for dinner at this location, 2 Table-Service meals will be redeemed from the dining plan for each person dining.

Disney World Saratoga Springs Resort

Inspired by historic Saratoga Springs—a late-1800s’ New York retreat famous for its spas and horse racing—this charming, Victorian-style Resort hotel is nestled between rolling golf course greens and the shimmering Lake Buena Vista. Being a Kentucky girl, it made me feel just like I was at home!

What we loved most was that we stayed in a two-bedroom Villa. We had so much space and it was perfect for our multi-generational trip! They also offer studios, gorgeous pools and a spa.

This is my second time staying in a Villa at Walt Disney World, but first time at Saratoga Springs and it is my favorite way to stay! You have so much room and if you are traveling with a group, I highly recommend it!

A Disney Deluxe Villa offers so many just-like-home amenities including a kitchen, washer, dryer and separate bedrooms. So nice to have when you are at Disney World for an extended period of time or with a large group. These outstanding accommodations go beyond the traditional hotel room. Designed with comfort in mind, you are going to fall in love!

You can choose from a 1- and 2-Bedroom Villa as well as a 3-Bedroom Treehouse Villla. It includes a full kitchen, so you can prepare meals and snacks from the comfort of your villa and spacious living and dining areas where your family can share quality time together.

What I loved most was the separate bedrooms that offer space, privacy and tranquility – so it’s easy to rest, relax and recharge your spirit after each vacation day. This was perfect for our larger group as we were able to each find our own space and relax.

One of my favorite features is a washer and dryer, so you can pack lightly and avoid airline baggage fees! I always wash all of my clothes, so I return with no laundry!

Unfortunately, the Treehouse Villas were already booked but they feature private decks and charcoal grills. These unique accommodations are elevated 10 feet off the ground and nestled amid the trees, so you’ll be surrounded by the beauty of nature. Another great option is the Deluxe Studio, which includes a kitchenette and sleeper sofa which a great option for smaller travel parties and shorter stays.

They also offer 2 exciting feature pools—plus waterslides, whirlpool spas, aqua-play areas and more! You can also explore 3 additional, all-ages leisure pools—each with a whirlpool spa. We didn’t have time on this trip, but they were gorgeous, and I would love to stay there again! All of the dining options and gift shop were very convenient too!

Be a Bird Launcher:

That didn’t really resonate with me because I don’t feel empty at all. So, I started thinking about it and I read somewhere that instead of calling yourself an empty nester, to consider being a bird launcher and that is exactly what we are!

I am still actively involved in my son’s life. He is a college freshman athlete, playing soccer so I am still a soccer mom. I am at every game and cheering him on as his biggest fan. He still needs me, maybe even a little more now. Balancing college, sports and life for a freshman is tough. He needs my support. I have never missed a college game, I meet him on a random Tuesday for dinner when a practice ends early, when he can’t come home for weeks on end due to practice and games, we meet him on Sunday for breakfast or dinner to fit around his schedule.

It is my job as a mother to raise my children so that they can fly the nest and survive. So, it makes me happy to know that he is capable of adulting. He has been doing his own laundry, took himself to urgent care when he got sick and picks up his own health and personal care items and groceries at the store when he needs them.

Is he on his own? No, absolutely not. He still needs my support and love. However, as he starts to fly the nest, I am here to cheer him on. Not to make him feel guilty, to cry or wish things were the way they used to be when he lived here or to sit and wallow in the empty nest. Instead, I am so happy for him, I am here to give advice when he asks for it (and he has), and I am happy to meet him ANY day of the week when he asks to see me, I am available.

For spring break, I asked him what he wanted to do. I offered a trip to Florida, and he said, my only request is that I can sleep in my own bed every night of spring break and take a shower in my own bathroom, and you cook dinners. Wow! I have never been happier. We spent the week doing a lot of nothing. We watched movies, hung out, went shopping, attended a concert and I cooked all of his favorite meals.

If you find yourself entering the next chapter and when people ask you how you are handling empty nest life, the answer for me is, I am not an empty nester, I am a bird launcher. It really is all about perspective!

A mother’s love is unmeasurable:

If you want to watch the coolest thing on the internet this, is it! A live feed of an eagle “couple” who are trying to bring a set of chicks into the world in Big Bear, CA. Their names are Jackie and Shadow, and they are such good parents. Jackie is the true definition of the word mother. She loves these chicks and has sat for up to 60+ hours in one stretch with no breaks! Shadow comes and relieves her for a few hours at a time, when she will leave and brings her fresh fish and nesting to add for protection of the chicks (there are three of them).

Watching this eagle sit on her nest protecting her chicks in the freezing snow brings me to tears.

Norwegian Cruise Line Encore Review

The Norwegian Encore is a Breakaway Plus-class cruise ship operated by Norwegian Cruise Line (NCL). She is the fourth Breakaway Plus-class ship in the fleet, following her sister ships Norwegian Bliss, Norwegian Escape, and Norwegian Joy, and debuted in November 2019.

We personally enjoyed the size of the Norwegian Encore. This class of ship has a large variety of dining options, entertainment options, bars and amenities. The ship was clean, and the staff was friendly.

It is one of the larger ships that NCL sails with almost 4,000 guests and 1700 crew. However, the design of the ship isn’t overwhelming and even though our cruise was at full capacity we never felt overcrowded and never waited for a table or long for a drink.

The encore sails from Miami to the Caribbean or from Seattle to Alaska. We chose the Caribbean route, but I would love to take the Alaska cruise next. That is a bucket list trip for me!

There are so many activities for all ages. You can watch the ocean blur by as you zoom around curves suspended 13 feet over the side of the ship on Norwegian Speedway, the largest racetrack at sea. You can play laser tag in the lost city of Atlantis, and enjoy Step into the high-tech, virtual world of the Galaxy Pavilion.

One of the highlights was the Broadway show where you can rock along to classic hits in a British pub at The Choir of Man. And you can’t not mention the food options! We were huge fans of free at sea concept. Where you don’t have to make a reservation and you don’t have to dress up to go to dinner.

We did enjoy two specialty dining options, Cagney’s and Le Bistro where we did dress up a little more than the other nights where we ate in the dining room but the simplicity and casual ability to just walk up when you are ready to dine won us over.

I have to mention the spa. The best kept secret on any NCL is the thermal spa. Our room was a spa balcony, so it included the thermal spa for all three of us. We spent HOURS every day enjoying the thermal spa located inside the Mandara Spa.

We would unwind in the Thermal Suite with a steam or a dip in the Vitality Pool. We enjoyed the Salt Room, a dramatic grotto surrounded with layers of body-cleansing salt crystals but my favorite next to the vitality pool was the thermal stone beds. The views were to die for and the relaxation it provided was exactly what my body needed.

I highly recommend the Norwegian Encore. It is a fantastic way to take a multi-generational trip. There is so much to do on this ship for all ages. From Bingo to eating to the shows to the spa. We all found something we loved and enjoyed our time together.
