Watching the news yesterday as the tornado wreaked havoc and leveled a town to debris, I couldn't even process in my head what was going on there.

I like doing that just the same but... I love eating croutons with fish!

Weird combination? Perhaps. But I just love what the warm tilapia does to the croutons. Kinda crunchy, but kinda moist. Just perfect.

I used that today as a base for a recipe test run to see how they would turn out as "cookie cups". They are basically cookies, but more presentable and fun.

The only change I pretty much made to that recipe was instead of using a cup of milk chocolate chips, I used a combination of chocolate chip and peanut butter morsels. Yum!

I've made them several time since, and they are one of my favorite dessert bars for sure. They are easy to make, absolutely delicious, and for sure satisfy your sweet tooth!

What I used:

9 graham crackers, crushed into crumbs (or an equivalent amount of graham cracker crumbs)

Started off by making the pizza dough in the afternoon. You can, of course, just use store-bought pizza dough. I do that plenty of times when I'm making Pizza at home. I just decided to make this on a moment's whim and had none at home to work with.

Today, I had extra large shrimp (26-30 count) at home. A couple hours ahead of time, I marinated my shrimp with: black pepper, garlic powder, paprika, cayenne pepper, rosemary leaves, basil leaves, and lemon juice.

The end result? Chewy on the outside, moist on the inside... and you couldn't exactly tell there was peanut butter in it for the picky eaters.
