The peach saga continues.&lt;br /&gt;
&lt;br /&gt;
There are some really yummy, and some really different (ahem) peach recipes out there. &amp;nbsp;In searching for ways to use our tsunami of peaches, I have come across recipes for peach salsa, peach barbeque sauce, peach pie, peach cobbler, peach jam, peach clafoutis, peach rice pudding, cold peach soup, peach ice cream, peach muffins, peach buttercream icing and peach bread, just to name a few. &amp;nbsp;I'm not a fan of cold soups generally, but all of the others sound great.&lt;br /&gt;

Unfortunately, I chose to gather buckets of peaches at a time when I won't have time to actually make many peach recipes. &amp;nbsp;So many peaches, so little time to cook (or eat) them all.&lt;br /&gt;
&lt;br /&gt;
I wish I could be more of a farmer-mama or pioneer gal, who whips out her freshly-canned peaches or home made peach icecream for the folks and impresses everyone with her creativity. &amp;nbsp;I am not quite that gal, although sometimes I would like to be.&lt;br /&gt;

On the other hand, I'm also not&amp;nbsp;that briefcase-toting woman who manages to juggle kids and a career and a home without blinking an eye. &amp;nbsp;Maybe in some alternate reality, I was destined to be her, but that reality train left the station long ago and has never returned.&lt;br /&gt;

Instead, I turned out to be a lawyer who hates law, and a writer with a kid who homeschools, and a crafty-gal who is not really very good with crafts but enjoys them. &amp;nbsp;At least I have a husband who is handier than I am (other than, perhaps, in the kitchen).&lt;br /&gt;
&lt;br /&gt;
So, here we are. &amp;nbsp;Now you can understand why I chose this morning's recipes: Oven Roasted Peach Butter (because it was easy, and I was intrigued by the creative "oven-roasted" part) and freezing peaches (also easy, but not a bit creative).&lt;br /&gt;
&lt;br /&gt;
Let me pause here to add a little something that I learned this week about peaches: there are two kinds, &amp;nbsp;capstone and freestone. &amp;nbsp;(If you already know the difference, pat yourself on the back and carry on.) &amp;nbsp;Freestone peaches are the ones where the pit easily separates from the flesh. &amp;nbsp;They ripen in July and August.&lt;br /&gt;

Capstone peaches are, well, the other ones. &amp;nbsp;They're ripe...now. &lt;br /&gt;
&lt;br /&gt;
You know where this is going, right? &amp;nbsp;Right. &amp;nbsp;It seems that I picked capstone peaches. &amp;nbsp;I've managed to separate one half of just a few of them from the pit, but out of 50 or so peaches, that's only 3. &amp;nbsp;The rest I've had to quite literally wrestle to get that rotten little pit out.&lt;br /&gt;
&lt;br /&gt;
Ain't nobody got time for that.&lt;br /&gt;
&lt;br /&gt;
Anyway, this morning I wrestled the pits out of the remaining peaches -- upwards of thirty, perhaps -- ending up with quite a bit of juicy flesh in ragged slices and halves. (And some mashed bits. &amp;nbsp;Sue me. &amp;nbsp;I have a good lawyer.)&lt;br /&gt;

I decided to make peach butter with about half of them, while freezing the remainder (sprinkled with a bit of sugar, in freezer-safe bags) to enjoy next month, when we are ready to eat more peaches and I actually may have some time to cook.&lt;br /&gt;
&lt;br /&gt;
The peach butter recipe below is modified from one found on NOLA.com (see below for link). &amp;nbsp;It's easy to follow and so simple it's scary...but I was NOT able to easily remove the skins after 30 minutes of roasting. &amp;nbsp;(Darn capstone peaches.) &amp;nbsp;I will have to fish the skins out later, or macerate them enough that we don't mind eating them.&lt;br /&gt;

&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;3 pounds yellow peaches&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;1 to 2 cups granulated sugar, or as needed&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;1 tablespoon of butter&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;b&gt;&lt;i&gt;1 teaspoon vanilla&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;b&gt;&lt;i&gt;1/2 teaspon almond extract&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;b&gt;&lt;i&gt;1/4 teaspoon ground cinnamon&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;1. Preheat oven to 350 degrees. Cut peaches in half and remove pits. Arrange cut-side-down in a single layer in a nonreactive baking dish (glass or ceramic is best). Roast 30 minutes, or until skins are loose.*&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;2. Remove dish from the oven and (carefully) remove skins from peach halves. Discard skins. With a fork, mash softened peaches in the baking dish. Reduce oven temperature to 250 degrees. Return to oven and bake an additional 2 to 3 hours, checking often to stir and prevent burning, until all wateriness is gone and peaches are dark in color.&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;3. When peaches have broken down sufficiently, taste the fruit and stir in 1 cup sugar. Taste and add more sugar to taste. When sufficiently sweet, stir in butter, vanilla and almond extracts, and cinnamon. &amp;nbsp;Return to oven for 15 minutes.&amp;nbsp;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;
&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;4. Transfer to a tight-sealing jar and refrigerate.&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Verdana, sans-serif; font-size: x-small;"&gt;&lt;i&gt;&lt;b&gt;*It's not 'necessary' to remove the skins, but more a matter of preference. &amp;nbsp;We like the rustic feel to the finished peach butter when the skins are left on: they are quite soft and not at all stringy.&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;

&lt;br /&gt;
The farm wasn't huge, but there was a couple of acres of peach trees in full harvest. &lt;br /&gt;

The peaches were small, but beautifully red and orange, just like a peach should be. &amp;nbsp;At $10 per bucket -- about 7.5 pounds -- I planned to buy one bucket for my family, and one for my neighbor.&lt;br /&gt;

&amp;nbsp;Alas, I forgot about Matthew, who picked nearly three buckets of peaches all by himself. &amp;nbsp;The colors are so beautiful that it can be very tempting to pick and pick and pick...and he picked until two buckets overflowed so much that I had to put some of them in my bucket.&lt;br /&gt;

sliced peaches (skin and all), a little agave and a little honey, sauteed just a few minutes to soften the peaches, then topped with a crumb mixture made by combining equal parts butter and sugar, and then cutting in enough flour to make it crumbly. &amp;nbsp;(Sorry, I winged it too, so no recipe.) &amp;nbsp;Bake in the oven 30 minutes at 350 degrees, and voila! &amp;nbsp;Yumminess.&lt;br /&gt;

Today, I decided to make a Chipotle Peach Barbeque Sauce. &amp;nbsp;I followed&amp;nbsp;&lt;a href="http://www.heathersdish.com/1/chipotle-peach-barbeque-sauce/" target="_blank"&gt;this recipe by Heathers Dish&lt;/a&gt;, though I eliminated the coffee powder and added a bit of honey (since my peaches weren't as ripe as hers). &amp;nbsp;This is the end result:&lt;br /&gt;

&lt;br /&gt;
With homeschool co-op ending this week (boohoo), I am planning our summer schedule. &amp;nbsp;Although past summers - including our one and only homeschool summer - have been relatively school-free, this summer I'm changing things up a bit, in part to limit the amount of video games and electronics Matthew uses. &amp;nbsp;He already knows that he'll be working on science and math this summer, and he's agreed to take an online Beginner Photography course through Florida Virtual School starting June 3! &amp;nbsp;It's his first online class, and his first organized class at all (other than co-op classes) since we left public school more than a year ago. &amp;nbsp;I'm nervous, but he's looking forward to it.&lt;br /&gt;
&lt;br /&gt;
We're eating a bit healthier these days too. &amp;nbsp;While the GFCF diet has never showed much promise for solving Matthew's particular challenges, we are significantly reducing our processed wheat and sugar intake for healthy eating purposes, and adding more veggies and good proteins. &amp;nbsp;I've found some really awesome recipes on Pinterest that I'm excited to try, that even Matthew may eat. &amp;nbsp;I'll let you know how that goes.&lt;br /&gt;

This week, though, I wanted to share an incredibly delicious-looking, really-bad-for-you recipe that I found that I think you will love. &amp;nbsp;(So much for healthy eating!)&lt;br /&gt;

Cooking Time: 45 min&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
3 (8-ounce) packages cream cheese, softened&lt;br /&gt;
3 eggs&lt;br /&gt;
3/4 cup sugar&lt;br /&gt;
1 teaspoon vanilla extract&lt;br /&gt;
2 (16.5-ounce) rolls refrigerator chocolate chip cookie dough&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;What To Do:&lt;/b&gt;&lt;br /&gt;
Preheat oven to 350 degrees F.&lt;br /&gt;
&lt;br /&gt;
In a large bowl, beat together cream cheese, eggs, sugar, and vanilla extract until well mixed; set aside.&lt;br /&gt;
&lt;br /&gt;
Slice cookie dough rolls into 1/4-inch slices. Arrange slices from one roll on bottom of a greased 9- x 13-inch glass baking dish; press together so there are no holes in dough. Spoon cream cheese mixture evenly over dough; top with remaining slices of cookie dough.&lt;br /&gt;
&lt;br /&gt;
Bake 45 to 50 minutes, or until golden and center is slightly firm.&lt;br /&gt;
&lt;br /&gt;
Remove from oven, let cool, then refrigerate. Cut into slices when well chilled.&lt;br /&gt;
