看知名部落客寫個做菜都要講好長, 我實在寫不出來, 貼一堆找到的資料也沒意思,&lt;br /&gt;
來, 單刀直入, 正拳對決!&lt;br /&gt;

冬天有烏魚, 所以過年才有烏魚子可以吃. 烏魚子取出之後的魚肉叫做烏魚殼, 很便宜而且很好吃, 200塊錢可以買一條30公分長的烏魚殼.&lt;br /&gt;
個人最愛的烏魚吃法之一, 就是烏魚米粉. (以下省略500 字感想和懷念 , 還有一千多字的烏魚資料)&lt;br /&gt;
&lt;br /&gt;
材料:&lt;br /&gt;
- 烏魚殼一付 (魚販頂多幫你去鱗斬塊, 要片肉請自行處理)&lt;br /&gt;
- 老薑, 一塊, 大約一個手掌大&lt;br /&gt;
- 麻油, 適量, 要能夠讓所有的薑片都 稍微泡到&lt;br /&gt;
- 青蒜, 兩根&lt;br /&gt;
- 米粉, 適量, 愛吃多少弄多少&lt;br /&gt;
- 油蔥酥, 少許, 可省略&lt;br /&gt;
- 米酒,  適量&lt;br /&gt;
- 白胡椒, 鹽巴 適量&lt;br /&gt;
&lt;br /&gt;

&lt;li&gt;魚骨和頭用油煎到金黃, 加入清水,  幾片薑片, 一根青蒜切段和米酒, 熬成烏魚高湯, 過濾之後備用&lt;/li&gt;

&lt;li&gt;冷鍋倒入麻油和薑片,  開最小火開始慢炸薑片, 炸到金黃乾縮起鍋&lt;/li&gt;

原因有很多種, 大燈表面材質老化, 或是洗車的殘臘留在燈殼上面, 高溫加熱之後固化在 大燈上面, 這已經不是用阿桐伯明目地黃丸可以解決的.&lt;br /&gt;

&lt;li&gt; 砂紙泡清水, 確定有浸透&lt;/li&gt;
&lt;li&gt;#1000砂紙, 大燈噴濕, 開始水平打磨, 這時候會看到磨出很多白色粉末, 記得不斷噴水&lt;/li&gt;
&lt;li&gt;#1200砂紙, 垂直打磨,  這時應該會發現燈殼透明度增加了.&lt;/li&gt;
&lt;li&gt;#1500 砂紙, 水平打磨 , 一樣持續噴水保持濕潤&lt;/li&gt;
&lt;li&gt; 粗磨結束之後, 再洗一次大燈, 如果髒東西都有磨掉的話, 大燈表面應該是平整的, 如果還摸的到粗粗的表面, 回到步驟4重作一次 , 最後洗淨大燈磨下來的粉末&lt;/li&gt;

&lt;li&gt;海綿上汽車臘, 圓形塗抹到大燈, 然後用打蠟布 下臘&lt;/li&gt;
&lt;li&gt;最後  噴上封體劑, 用乾淨的布擦拭.&amp;nbsp;&lt;/li&gt;

&lt;li&gt;砂紙和燈殼不管打磨或是拋光都要全程保持濕潤&lt;/li&gt;
&lt;li&gt;打磨和拋光 每次方向都要不同, 確保磨痕會被消除&lt;/li&gt;
&lt;li&gt;處理完的大燈,   之後洗車打蠟不要打到大燈, 可以維持久一點&lt;/li&gt;

想要到烤肉爐旁邊表現一下, 除了油煙太重以外, 還不一定烤的好,&lt;br /&gt;
遇到心機重的朋友淨是拿一些逆天的食材來整你 (豆干甜不辣雞腿, 超難烤的好!)&lt;br /&gt;

莎莎醬? 這不是好市多兩罐才賣 150? 這不是墨西哥菜才吃的? 這不是配玉米脆片的?&lt;br /&gt;
都對, BUT! 莎莎醬拿來配烤肉 , 絕對會讓你變成烤肉的亮點!&lt;br /&gt;
&lt;br /&gt;
回想一下中秋節烤肉的基本味道, 除了煙燻, 就是重口味.&lt;br /&gt;
大家開始找一些清口的飲料, 啤酒之類的,  心思細膩一點的就配個生菜沙拉之類的,&lt;br /&gt;
莎莎醬絕妙的地方就是, 清爽但是不會無味, 不管單吃, 配烤肉, 或是烤前烤後弄點啤酒小菜和零食都可以一起服用. 正所謂, &lt;strike&gt;一醬功成萬穀哭啊~~~&lt;/strike&gt;&lt;br /&gt;
&lt;strike&gt;&lt;br /&gt;&lt;/strike&gt;
&lt;strike&gt; &lt;/strike&gt;莎莎醬簡單好作, 味道豐富多變化, 如果有一道
食材在整個烤肉過程都會被追捧, 你會不紅嗎? 喔呵呵呵呵........&lt;br /&gt;
&lt;strike&gt;&lt;br /&gt;&lt;/strike&gt;
製作時不用太在意份量多寡, 不要太離譜就好.&lt;br /&gt;
器材:&lt;br /&gt;
刀, 一把 (可以另外選配刨絲刀一把)&lt;br /&gt;
鍋子, 一個&lt;br /&gt;
&lt;br /&gt;
材料:&lt;br /&gt;
香菜(芫荽)  , 50g, 或是超市直接買兩盒&lt;br /&gt;
牛番茄 (中型), 4顆&lt;br /&gt;
蕃茄糊, 一瓶(400g左右), 不是番茄醬&lt;br /&gt;
洋蔥(中型 ), 4顆, 紅白不拘, 混合更好&lt;br /&gt;
甜椒(中型), 4顆, 紅黃各半&lt;br /&gt;
芒果( 中型), 一個, 推薦使用凱特芒果, 原因見後續.  不要用太軟熟的芒果&lt;br /&gt;
檸檬, 4顆&lt;br /&gt;
大蒜, 半球&lt;br /&gt;
辣椒, 三根, 怕太辣的可以去籽&lt;br /&gt;
墨西哥醃辣椒, 半瓶(瀝乾)&lt;br /&gt;
橄欖油, 4匙&lt;br /&gt;
砂糖, 少量 &lt;br /&gt;
鹽巴, 適量,  海鹽或是粗顆粒的鹽巴 , 不是粗鹽!&lt;br /&gt;
黑胡椒, 適量, 現磨的最好,  以上兩個不可以用胡椒鹽!!&lt;br /&gt;
&lt;br /&gt;
簡單作法:&lt;br /&gt;
切切切切切切切~~~~~~~~~然後混在一起, 放置4小時以上, 收工.&lt;br /&gt;
&lt;br /&gt;
詳細作法:&lt;br /&gt;
香菜洗乾淨, 切去根部(黃色的部分),  握住整把香菜的莖, 菜刀和莖垂直, 往前刮下香菜葉子.  刮下大部分的葉子之後,  粗略的切一下葉子但是不用剁碎.  香菜的莖切碎, 有多碎切多碎, 用調理機打也可以 (可以跟去皮的蒜頭一起打碎).&lt;br /&gt;
&lt;br /&gt;
牛番茄 洗乾淨去蒂頭, 切丁, 約 3-5mm見方, 刮除 蕃茄的籽放到旁邊, 等一下控制醬的水分&lt;br /&gt;
洋蔥去蒂頭切丁, 跟蕃茄一樣大, 別哭, 快做好了. (可以參考 &lt;a href=&quot;https://www.youtube.com/watch?v=TwGBt3V0yvc&quot; target=&quot;_blank&quot;&gt;Gordan Ramsay的作法&lt;/a&gt;&amp;nbsp;)&lt;br /&gt;
甜椒去蒂頭去籽切丁, 跟蕃茄一樣大&lt;br /&gt;
辣椒去蒂頭切碎, 大蒜去皮切碎(或是跟香菜的莖一起打)&lt;br /&gt;
&lt;br /&gt;
先講芒果, 去皮取肉切丁.&lt;br /&gt;
為何選凱特芒果? 台灣芒果好吃在於香氣充足, 軟熟甜美, 著名代表就是愛文芒果( 蘋果檨 ) , 但是果肉太軟了, 攪拌莎莎醬之後會變成芒果糊, 口感不好.  另一個原因就是太甜了, 甜味在這個版本的莎莎醬裡面只是配角,  而我們要的只是芒果的香氣 , 凱特肉質硬, 酸味較明顯, 甜味略低, 果肉反而很容易跟其他材料混合在一起.&lt;br /&gt;
&lt;br /&gt;
墨西哥醃辣椒, 略切, 不用太碎.&lt;br /&gt;
正統的莎莎醬用的是新鮮的墨西哥辣椒jalapeño, 但是這個太難買了, 只好用一般辣椒當底, 買醃漬版的來平衡一下 .  一般紅辣椒通常辣在入口的時候,&amp;nbsp;jalapeño強大的地方在於, 它的後韻 綿長, 所以入口容易, 但是後悔也容易...XD&lt;br /&gt;
&lt;br /&gt;
至於蕃茄糊, 生蕃茄和煮熟的蕃茄風味不一樣, 而且我們需要一個介質讓所有切丁的食材可以混的更均勻.&lt;br /&gt;
&lt;br /&gt;
以上該切的都切好了, 找個鍋子 裝進去混合攪拌,  然後 加入蕃茄糊和橄欖油,&lt;br /&gt;
檸檬直接擠出果汁到材料裡面, 有刨絲刀的話, 搓一顆檸檬的皮 屑進去.&lt;br /&gt;
再拌勻之後,  灑入少許的鹽巴和一撮黑胡椒, 開始調整味道, 你需要的味道是酸/香/辣/微鹹/微甜(甜味 只有在食材上面, 湯汁不應該有太多甜味)&lt;br /&gt;
有酸但是不明顯, 多加點鹽巴 , 有辣但是不明顯, 加一點砂糖&lt;br /&gt;
加完還不夠就是原料不足, 要回去增加原料比例.&lt;br /&gt;
&lt;br /&gt;
全部都弄好了, &amp;nbsp;放到冰箱裡面休息數小時到一整天,  完成!&lt;br /&gt;
&lt;br /&gt;

尤其是母乳媽媽, 水分攝取和母乳量成正比.&lt;br&gt;

茶飲通常很簡單, 也沒有太多需要注意的地方,&lt;br&gt;
就算平常不會下廚, 只要會燒開水, 就會煮茶飲. 這種事情, 不要人家開口要啊...XDDDDDD&lt;br&gt;
&lt;br&gt;
我盡量用平常容易取得的器具當作劑量單位, 反正多煮幾次就上手了.&lt;br&gt;
水的部份就是十人份電鍋內鍋八分滿.&lt;br&gt;
功效的部份不要太在意, 如果真的有需要請自行找中西醫, 喝這個不能治病, 但是也喝不壞身體.&lt;br&gt;

人總是貪心的.&lt;br&gt;
吃慣了&lt;a href=&quot;http://blog.taiker.org/2012/08/no-knead-bread.html&quot;&gt;歐式麵包&lt;/a&gt;, 就會想要換個新口味.&lt;br&gt;
找來找去, 看來就是貝果符合我的要求. 材料變化不大, 更動一下作法就好了.&lt;br&gt;
更重要的是發酵時間更短, 所以可以晚上烤了當明天早餐, 彈性更大.&lt;br&gt;

第一次和第二次試作, 拿捏不好麵團的大小, 烤出中間沒有洞的bagel,&lt;br&gt;

我最喜歡一鍋料理了, 一鍋到底, 吃完再洗鍋子就好了.&lt;br /&gt;
昨天弄了一鍋香菇雞飯, 用了Lodge Logic鑄鐵鍋, 果然有養過的鍋子會越來越好用.&lt;br /&gt;
備料不沾鍋, 煮飯有鍋巴, 吃完不留底.&lt;br /&gt;
&lt;br /&gt;
香菇雞飯可以平常吃, 要補一下的也可以稍微更動一下作法.&lt;br /&gt;
夏天吃不錯, 冬天吃也很舒服. 而且從備料到上桌大概45分鐘, 非常快速.&lt;br /&gt;
&lt;br /&gt;
材料 (兩人份)&lt;br /&gt;
&lt;br /&gt;

&lt;li&gt;乾香菇 數朵. (不愛吃香菇可以不要加, 改用筍片)&lt;/li&gt;

&lt;li&gt;老薑切片. 數片&lt;/li&gt;
&lt;li&gt;米, 兩杯&lt;/li&gt;
&lt;li&gt;麻油/苦茶油, 選配&lt;/li&gt;
&lt;li&gt;蠔油 兩匙&lt;/li&gt;
&lt;li&gt;舞菇/鴻喜菇, 選配&lt;/li&gt;

作法&lt;/div&gt;

&lt;li&gt;香菇泡軟切粗絲, 香菇水留著.&lt;/li&gt;
&lt;li&gt;洗米, 洗完後用香菇水浸米, 一杯米對一杯水.&lt;/li&gt;
&lt;li&gt;麻油/苦茶油 起油鍋, 爆香薑片和香菇. (沙拉油也可以, 不用太多)&lt;/li&gt;
&lt;li&gt;雞腿肉洗淨擦乾切塊. 皮下肉上放入油鍋和薑片香菇同煎.&lt;/li&gt;
&lt;li&gt;雞腿肉會出油. 煎到皮變金黃, 加入蠔油, 翻炒雞肉到變色.&lt;/li&gt;
&lt;li&gt;薑片, 香菇, 雞肉起鍋.&lt;/li&gt;
&lt;li&gt;米和水入鍋, &amp;nbsp;再來程序就跟陶鍋煮飯一樣了. 大火煮滾, 小火續煮15分鐘, 熄火悶10分鐘.&lt;/li&gt;
&lt;li&gt;熄火之前加入舞菇/鴻喜菇.&lt;/li&gt;
&lt;li&gt;小火煮飯的最後一分鐘用大火, 可以得到鍋巴.&lt;/li&gt;

&lt;li&gt;雞腿肉用太白粉略醃.&lt;/li&gt;

一般晚餐最需要時間的大概就是煮白飯.&lt;br&gt;

電鍋或電子鍋煮飯失敗率很低,  但是代價就是要等.&lt;br&gt;
一鍋飯煮好加上悶的時間, 一個小時跑不掉.&lt;br&gt;
有些電鍋因為尺寸的關係, 一次不能煮太少的米(除非換內鍋尺寸),&lt;br&gt;
加上瓦斯的熱效率比電鍋好, 最後, 電鍋煮的飯不難吃, 但是也沒多好吃.&lt;br&gt;

話說當年(2007)我住北角, 也忘記到底是誰帶我去吃的,&lt;br&gt;
它離我的公寓很近, 一吃就上癮, 但是不能常去, 以那時我的收入來說, 真的有點小貴.&lt;br&gt;
台灣的blog很少有人寫到這家店, 有寫的也是在摘星之後才寫.&lt;br&gt;
真的, 我希望它沒有摘過星, 那我可以一星期吃六天, 不用排隊排到昏頭.&lt;br&gt;

跟阿鴻小吃在2009年拿到香港米其林(米芝蓮)一星無關.&lt;br&gt;

身上林林總總少說也有七八個有時間的設備, 但是總是要留下一個,&lt;br /&gt;
一個可以直接顯示台灣時間的東西.&lt;br /&gt;
手機也好, iPod也好, 至少至少, 也要裝一個萬國時間隨時可以看到台灣時間.&lt;br /&gt;
&lt;br /&gt;
我數學不好, 每次算時差都是七零八落的.&lt;br /&gt;
留一個台灣時間, 其實沒有什麼作用. 只是當看到這個時間, 就會覺得安心.&lt;br /&gt;
&lt;br /&gt;

Block House是德國相當有名的連鎖牛排店,&lt;br&gt;
私以為應該跟Outback在美國的程度和等級差不多.&lt;br&gt;
反正中午沒吃飯, 晚上就走到Block House Jungfernstieg去吃一頓.&lt;br&gt;
&lt;br&gt;
因為我討厭很多食記都是圖, 然後才講結論, 不管好不好都要浪費時間讀圖.&lt;br&gt;
時間是金錢, 頻寬也是金錢, 尤其當你人在國外, 臨時要找, 每讀一張圖都是燒錢.&lt;br&gt;
所以先講結論, 要看圖的再load吧.&lt;br&gt;
&lt;br&gt;
結論: 可以順道一吃, 算的上物有所值, 人數不拘, 一個人也能自在地吃.&lt;br&gt;
牛排普通, 麵包好吃, 烤馬鈴薯加上自製酸奶油相當不錯.&lt;br&gt;

今天中午在曼谷轉機, 遇到一對中國的中年夫婦.&lt;br /&gt;
男的用北京話問我, 是不是中國人啊? 不是.&lt;br /&gt;
女的用廣東話問我, 是不是香港人啊? 唔係. 吾係台灣人, 咪係?&lt;br /&gt;

男的就開始用低姿態要我幫一個小小小小的忙, 看在大家都是中國人的份上.&lt;br /&gt;
我說, 剛說了, 我不是中國人. 幫忙要先看是什麼忙.&lt;br /&gt;

兩人開始一搭一唱說他們從西安到清邁, 回程皮夾被扒了. 等一下要從香港轉機.&lt;br /&gt;
我心裡一想, 應該是要借錢的吧?&lt;br /&gt;
果不其然, 兩人說身上還有點錢,但是不夠回西安.&lt;br /&gt;
想跟我借個幾百塊人民幣擋一下.&lt;br /&gt;
幹! 當作台灣人都是盤子嗎?&lt;br /&gt;
連恆春仔都有說, 耳孔清, 心肝軟, 錢咖多攏洪借去玩.&lt;br /&gt;
&lt;br /&gt;
我沒戳破他們, 只問有護照和港澳通行證嗎? 兩個人連忙要掏給我看.&lt;br /&gt;
我揮揮手說免了, 我又不是入境官員,&lt;br /&gt;
有這兩個證件就可以進香港了.進到香港去找阿sir幫忙吧.&lt;br /&gt;
&lt;br /&gt;
兩個人一愣, 然後開始對我曉以大義, 說只是一個舉手之勞,&lt;br /&gt;
他們就可以不用多進香港一趟,&amp;nbsp;直接從機場飛西安了.&lt;br /&gt;
&lt;br /&gt;
我說那簡單啊,&lt;br /&gt;
上飛機就遞張紙條給空服員說你要劫機到西安, 搞不好就從曼谷直飛了.&lt;br /&gt;
&lt;br /&gt;
幾百塊錢能買兩張香港到西安的票?&lt;br /&gt;
又那麼剛好皮夾被扒掉, 證件都在, 只損失幾百塊.&lt;br /&gt;
運氣真的這麼好, 真的要試著傳紙條劫機, 說不定又賺到了.&lt;br /&gt;
&lt;br /&gt;
出門在外, 這種事情遇多了.&lt;br /&gt;
如果真的被扒的一乾二淨回不了家,當地警察, 駐外單位都可以尋求幫忙,&lt;br /&gt;
