Just so you know, Brian is also a contributor (albeit ONCE!) to the Wampus. I know I should be working but when I'm reading my coders' blogs, I read all my blogs at one time, right? Well Mr. Brian had to go and start yet, ANOTHER blog. The best part is that he gave me some link love in there and this is something I have always wanted to do. He beat me to it.

Ya'll go read and come here for your recipes....and please people....stop making Godzilla cakes. It's the most popular search that brings people here, but it's starting to make me feel like ya'll don't like my other stuff....it is all about me after all.....

Go tell Brian where you like to eat in the Riverside / San Bernardino areas and let's see what he thinks about it. Just so ya'll know, I refer to my kids as nicknames because I'm weird and I don't want to put their names up on the internets. I'm sure I've slipped a couple of times, but you'd have to search through the blog to find 'em.

Anyway....I get a lot of traffic from people looking for Chicken Parmesan and Godzilla Cakes. In trying to show someone the cake for my youngest monkey.....I noticed that the photo was no longer available. It was on my wife's photo bucket and she has apparently deleted it from there. Now just for you people that come here looking for a cake and get the big ol' "no longer available" square, here it is.

We had a good time that day. I know there was butter and Sweet Baby Ray's BBQ sauce involved. I think I baked them in butter, Worcestershire, cayenne, salt & pepper, then when they came out, I just poured the BBQ sauce over them and coated the wings. This is why I need to post as soon as I cook....otherwise I forget.....or I should at least write it down. Them was good eatin'!

Now I would be remiss if I did not plug the bracket of choice......mine. I've never done it before, but this is what I made for my wife's birthday dinner when her folks came up from Oceanside.

Now the chicken was a Caddywampus standard of crispy skinned indirect heat BBQ-ing and the corn was also cooked husk on, directly on the grill. The twice baked potatoes...let's take a look on how this was pulled off.

First, I popped the potatoes in the oven for about an hour, pulled them out and cut each one in half, scooping out the meat into a bowl. While those potatoes were baking, I sliced up some ham (didn't have bacon) and browned it in a skillet just to get it crispy, chopped up some green onion and shredded some sha'ap cheddah cheese. Then with some milk and a stick of butter and a couple o' table spoons of sour cream, whipped it all up together and re-filling the potatoes. What came out was pretty dang good for a first try. I topped it off with a bit more cheese, the ham and green onions then popped those bad boys back in the oven for about 20 more minutes (or until the cheese begins to bubble/brown).

Yummy......

Top Chef 4

Why is it that Top Chef has a lesbian with a faux hawk or mohawk hair do? Nissim bugged me from the get go. She was just whiny and anti-social. How do people like that get on the air? It almost makes me think I could be a "top chef". What am I saying? Try some fresh basil, a fried egg, avocado, and a slice of American cheese (although a good Havarti, Gouda, Muenster or Jarlsberg would have done the job, too). It was done on whole wheat bread, but I really like this on Sourdough. (but who can afford two types of bread all the time?)

It has been dubbed a BBLEACT.....the new BLT

Pepperoni Pizza Omelette

Need I say more?

New stuff on the way

Hey my faithful three!

I haven't been spending too much time online the past couple of weeks and just wanted to let you know that I have some interesting recipes coming. I have to declare that I did NOT make the orange chicken from scratch; however, I did prepare it. It's one of those "toss in the oven, microwave the sauce and toss together" meals.

The stir-fry noodles and veggies on the other hand....that was all me (with a little help from some store bought stir-fry sauce). I don't think I really NEED to tell you how I did it...do I? Well I chopped up some of the veggies and put others in whole in a HOT oil in a HOT wok. Next, I added a little (too much...whoops) sauce and mixed well. Then, I put that in a bowl on the side, tossed in some left over angel hair from a couple of nights ago (with a skosh more oil) tossed in a quarter cuppa hot water then added the saucy veggies. Toss and serve. I even garnished it with some orange slices to make it look all purdy and such.

Enjoy!

Chicken in a Balsamic Pear Sauce

This was so good. My wife, Juilie received for Christmas, a subscription to Good Housekeeping and this was in the issue with Dr. Feel and his wahfe. (I will not like that door knob.) Anyway, I did serve couscous, but not the other stuff...I like my julienned veggies better.

Here's what you need:

1T (+ 1t) EVOO

4 sm. boneless, skinless chicken breasts (approx 1 lb.)

2 Bosc pears, unpeeled, cored and 1/8th'ed

1 cup Chicken Broth

3T Balsamic

2t Cornstarch

Here's how you do it:

Heat EVOO in 12" skillet (med. heat), add chicken and cook until done. Transfer to plate

a.Cook pear wedges 3-4 minutes in same skillet (or until lightly browned & tender) 2b. mix balsamic, chicken broth and cornstarch while pears are cooking

Pour balsamic mixture in with pears, bring to a boil, reduce to medium heat for 1 minute (until it begins to thicken).

Return chicken (and any run-off juices from plate) and heat through.

NOTE: cans of chicken broth are 14 oz. what do you do with the other 6 oz? well, you boil that (along with 2oz water) and use that for the couscous. (Honey, I forgot to add the water last night and that may have been why the couscous was a little dry....my bad! It was still an amazing dinner.)

Well there you go.....the good, the bad and the yummy!

New Years Eve

Need I say more?
