TGIF lovebugs! Here are my favorite recipes from the week.

Chocolate Cream Cheese Cupcakes
c/o Table for Two

Ingredients

For the filling:

8 oz. cream cheese, softened

1/3 cup granulated sugar

1 egg

Pinch of salt

1 cup mini semisweet chocolate chips

For the cupcakes:

3 cups all purpose flour

2 cups sugar

2/3 cup cocoa powder

2 tsp. baking soda

1 tsp. salt

2 cups of water

2/3 cups vegetable oil

2 tbsp. white vinegar

2 tsp. vanilla extract

Directions

Preheat oven to 350 degrees. Prepare muffin pan by lining with muffin liners or by spraying with cooking spray.

In the mixing bowl of a stand mixer, beat together the ingredients for the filling (except the chocolate chips) until light and fluffy. Gently fold in the chocolate chips. Set aside.

In a large bowl, mix together flour, sugar, cocoa powder, baking soda, and salt.

Make a well in the middle of the dry ingredients and add in the water, oil, vinegar, and vanilla extract. With a whisk or wooden spoon, mix together the dry with the wet ingredients until well combined.

Fill muffin cups with 2/3 full of batter then spool 1 level tbsp. of filling into the center of each cupcake. Repeat until all batter and filling have been used up.

Bake 20-25 minutes or until cake portion comes out clean with a toothpick. Let cupcakes cool in pan for 5 minutes before removing and transferring to wire rack to cool completely.

Store in airtight container.

Eggplant Pasta Toss

Ingredients
1/2 pound rotini
2 tbsp olive oil
2 cloves garlic, minced
1/2 cup chicken broth
1 tsp Italian seasonings
Salt and pepper
3 breaded eggplant cutlets, cooked, and diced small, kept warm
1 roasted red pepper, diced small
1/4 cup Parmesan cheese, plus additional for serving

Directions

1- Cook the pasta according to packaging directions.
2- Meanwhile, in a large skillet heat the oil. Add the garlic and stir frequently, about 2-3 minutes. Add in the chicken broth, Italian seasonings, and sprinkle generously with salt and pepper.
3- Turn the heat up to medium high and cook for about 5-10 minutes, until the sauce begins to reduce down and slightly thicken.
4- Add the pasta to the skillet, tossing well to coat. Add the diced eggplant, red pepper, and parmesan. Stir until well combined.
5- Serve hot. Sprinkle with additional parmesan cheese to taste.

Chocolate and Pear Tart

Ingredients

1 pre-made pie crust dough
4 pears, peeled and cut in fourths vertically
6 ounces sweetened dark chocolate and 6 ounces of semi-sweet chocolate
2 eggs
1/3 cup sugar
3/4 cup heavy cream
2 teaspoons of vanilla
2 tablespoons sugar

Directions

Fit the pie dough to a tart pan or pie tin and pierce the bottom in several dozen places places with the tines of a fork. Cut the chocolate into bite size chunks and place on the bottom of the tart pan. Place the sliced pears on top of the chocolate.

Beat the eggs with the sugar then add in the cream and vanilla. Pour over the pears. Sprinkle with a the 2 TBSP of sugar and place in a preheated 400 degree oven for 10 minutes. Reduce temperature to 375 and bake another 30 minutes or until the top is nice and golden and the custard is set.

It's Easy Being Green

Hey lovebugs! Happy Monday to you. I hope you had a great weekend. Let's make this week fabulous.

Today I wanted to get specific. Colorblocking is something we've talked about already on this blog, but today I want to focus on one color in particular. Green. So often with colorblocking we see neons and pinks and oranges, let's look at a new punchy color, green.

Oh finally! Foodday! Here are the recipes I'm loving this week.

Honey Terriyaki Chicken with Bacon Fried Rice

Ingredients
For the chicken:

1 pound chicken breasts, cut into thin strips
Salt and pepper to taste
1 cup chicken broth
1 tablespoon freshly grated ginger
1/4 cup honey
1/2 cup teriyaki sauce

For the rice:

1 egg, beaten
1 pound bacon, chopped
1 cup mushrooms, chopped
1 medium onion, chopped
3 cups cooked rice
1 cup fresh bean sprouts
1 cup frozen peas, thawed
1/4 cup soy sauce

Directions
1. For the chicken, heat a small amount of vegetable oil in a large skillet. Season chicken with salt and pepper and cook until browned and cook through. In a separate bowl, combine chicken broth, ginger, honey and teriyaki sauce. Pour over chicken. Reduce heat and simmer until serving.

2. For the bacon, heat vegetable oil in a wok or large skillet. Pour egg into wok. As egg sets, lift edges letting uncooked portion flow underneath. When egg is done, move to plate and set aside.

3. In same wok, cook bacon until crisp. Remove bacon to paper towels. Reserve 2 tablespoons drippings.

4. Saute mushrooms and onions in bacon drippings. Stir in rice, bean sprouts, peas, soy sauce, and bacon. Chop egg into small pieces; stir into wok and heat through.

5. Serve chicken over rice.

Garlic Fries

Ingredients
5 russet potatoes, cut lengthwise, like you see in the above pictures

A good amount of vegetable oil (maybe 1/8 cup total)

5 cloves of garlic, minced

1 handful of parsley, finely minced

Salt and pepper

Directions

Preheat oven to 450 degrees and spray baking sheets with cooking spray. Set aside.

In a large bowl, add the cut potatoes and drizzle oil all over them and toss to coat the potatoes well.

Season with salt and pepper. Divide up the potatoes on two baking sheets and bake for 30 minutes, or until browned and tender.

After 30 or so minutes, increase the oven temperature to 500 degrees and bake for another 5-7 minutes until they’re crisp and brown.

In the meantime, in another bowl, mix together the oil, garlic, and parsley.

Once the fries are done, using tongs, put the hot fries in the bowl with the garlic oil and toss to coat. Season with salt and pepper, to taste.

Cinnamon Chocolate Nachos

Ingredients
4 small flour tortillas
2 tbsp butter
Cinnamon sugar (or mixture of equal parts cinnamon and sugar)
3 tbsp chocolate chips
1 tbsp heavy cream

Directions
1- Preheat the oven to 450.
2- Melt the butter. Brush the butter over both sides of the tortillas.
3- Sprinkle cinnamon sugar to taste on both sides of the tortilla.
4- Cut into fourths. Place on a silicone bake mat or a cookie sheet sprayed with non-stick spray (or parchment paper). Bake 10 minutes, flipping halfway through.
5- Remove chips from the oven. Melt the chocolate and cream together in the microwave.
6- Serve immediately.

Hey lovebugs,

For Christmas this year I got a couple headbands that were really special; they had embellishments with jewels and sequin beads. I really love headbands for everyday, but these shiny ones dress up the everyday.

Happy Monday!

I could've used one more day this weekend, but here we are. Today we're going simple. Button down shirts. Mostly because they are a great staple for any wardrobe and Lands End Canvas is having an amazing sale until midnight.

Skinny Macaroni and Cheese Soup with Broccoli

Ingredients

4 oz dry elbow macaroni (I like Ronzoni Smart Taste)

1 1/2 cups onion, chopped

1 large carrot, chopped

1 celery stalk, chopped

2 cloves garlic, minced

1 tbsp light butter

2 tbsp flour

2 1/2 cups fat free low sodium chicken broth (or vegetable broth)

1 cup fat free milk

pinch nutmeg

1/2 tsp dry mustard

salt and fresh pepper to taste

2 cups (about 10 oz) broccoli florets, chopped into small pieces

1-1/2 cups 2% shredded sharp cheddar

2 tbsp parmesan cheese

Directions
Boil pasta in salted water according to package directions for al dente. Drain and set aside.

Chop onion, carrot, celery, garlic by hand or mini food processor.

In a large soup pot or dutch oven, melt light butter.  Add chopped vegetables and sauté on low heat
until soft, about 5 minutes.

Add flour and fresh pepper to the pot and stir until smooth. Slowly add chicken broth, milk, nutmeg and dry mustard powder; whisking constantly.  Set heat to medium-high until it comes to a boil. Cover and cook on low about 10-15 minutes.

Add broccoli florets, parmesan cheese, and stir well. Adjust salt and pepper to taste.Cook uncovered until broccoli is cooked, about 5 minutes or more to your liking.  Add cheddar, mixing well until cheese melts and immediately remove from heat. Addcooked elbows and mix well, adjust salt and pepper if needed. Eat right away so the pasta doesn't absorb all the broth.

Ham Chipotle and Cheese Scones

Ingredients

2 cups AP flour

1 TBSP baking powder

3 TBSP sugar

1 tsp salt

1/4 tsp pepper

1/4 tsp paprika

1 chipotle chili, minced

1 stick cold butter cut into small pieces

3/4 cup cheddar cheese

3/4 cup chopped ham, drained

1/2 cup heavy cream

2 eggs

Directions

Combine flour, baking powder, paprika, sugar, salt, pepper and dill in a large bowl; cut in butter with a pastry blender or use a food processor and pulse on low until the mixture resembles coarse meal. If using a food processor, transfer the flour mixture to a large bowl and stir in cheese, chipotle chili and ham. Combine milk and eggs, stirring with a whisk. Add to flour mixture, stirring just until moist.
Turn dough out onto a lightly floured surface; knead lightly 4 to 5 times with floured hands. Pat dough into an 8-inch circle on a baking sheet coated with cooking spray. Cut dough into 8 wedges. Bake at 400° for 20 minutes or until lightly browned.

Chicken Corn Chili

Ingredients

3 TBSP Devo Olive Oil

1 onion, diced

2 cloves garlic, minced

2 garlic cloves

1 red bell pepper, diced

1 yellow bell pepper, diced

1 can green chiles

1 tsp cumin

2 cups chicken broth plus 1+ cup water (water based on whether you like it chucky or soupy)

2 cans white beans, drained

1 ½ lbs chicken tenders

1 cup shredded montery jack cheese

1 cup frozen corn

½ cup chopped cilantro

2 tsp Salt and pepper each

1 tsp oregano

1 tsp sugar

1 tsp Cajun seasoning

1 tsp paprika

Directions

Season the chicken tenders with 1 tsp salt and pepper each, paprika, sugar and oregano. Pan-sear the chicken tenders in 1 TBSP of olive oil in a large dutch oven or pot over medium to high heat until cooked. Remove the chicken and set aside.

Saute the onions, bell peppers and garlic in 2 TBSP of olive oil until slightly tender (they will continue to cook throughout the process). Add in the green chiles. Mix in the flour and stir until your veggies and flour are all incorporated (note we are not doing the traditional roux here). Pour in the warm chicken stock and whisk continually until there are no lumps. Season with the remaining salt, pepper and cumin.

Bring to a boil add in the frozen corn and beans.Simmer for 20-30 minutes. Before serving stir in the cilantro and top each individual bowl with shredded cheese.

Going Natural

Happy almost Friday lovebugs! Thank goodness. Although I'm a little bummed that there is no football this weekend! Today we're looking at accessories that are all natural or have the illusion of wood.

It's been a while since we've done a nail polish inspired post. Today I wanted to do a color I'm currently wearing: OPI Suede collection in Russian Navy.

A bow is a great accessory to any outfit, today, let's look at bow tops that you can wear under a suit jacket or wear on the weekend.

This is suit ready, add some translucent drop earrings and you're good to go.

You all know I'm a sucker for bows, but they don't always have to be preppy and girly, pair them with some dark denim or a suit for a new twist.

Hey lovebugs, happy Monday. I hope you had a great weekend. Today I thought we would take a look at one of the bigger trends from the Golden Globes, the bib necklace. While people like Heidi (RIP Heidi and Seal) can rock a blinged out version of this, what about for everyday wear?

We made it. It's Friday! Thank goodness! Here are some of my favorite recipes from this week.

Spinach and Mushroom Mascaraprone Pasts with Chicken

Ingredients

3 cups dried pasta, any shape

4 chicken tenderloins, cut into strips

1 large onion, sliced

8 oz. button mushrooms

1 bag of fresh, pre-washed spinach

8 oz. mascarpone cheese

Salt & pepper to taste

Directions

In a large pot, bring water to boil, season water with salt, and add in your pasta.
In a skillet, saute the chicken with some vegetable oil on medium high heat until sides are browned and chicken is cooked through. Set aside.
In the same skillet, saute the onions and mushrooms until tender. Add the chicken back into the skillet and add in the spinach as well. When it has wilted down, add the mascarpone cheese, stir until melted and well combined.
Your pasta should be done at this point, or close to being done. Drain the pasta well and add it to the skillet. Stir to coat the pasta in the cream sauce.
Serve immediately.

Creamy Peanut Butter Pie

Ingredients

3 cups heavy whipping cream
1/2 cup sugar
8 oz softened cream cheese
1 cup creamy peanut butter
1 cup confectioners sugar
1 pie crust (graham cracker, Nilla wafer, or even chocolate would be good!)
4-6 full sized peanut butter cups, chopped

Directions

1- In a stand mixer whisk together the whipping cream and sugar until it reaches the consistency of whipped cream. Remove from the mixer and set aside.
2- Beat the cream cheese until smooth. Add in the peanut butter and confectioners sugar, beating until well incorporated. Fold in half of the whipped topping.
3- Spoon the peanut butter mixture into the pie crust. Top with the remaining whipped cream. Garnish with the chopped peanut butter cups. Keep refrigerated until serving.

Bacon and Egg Quesadillas

Ingredients

4 medium flour tortillas

Salt and pepper

1/2 pound bacon

4 large eggs

4 ounces pepper jack cheese, shredded (about 1 cup)

Directions

1. Working in batches, in a nonstick skillet, cook the bacon over medium heat until crisp; drain on paper towels. Leave about 2 tablespoons bacon fat in the skillet, reserving the rest of the fat. Cut the bacon strips in half.

2. Working in 2 batches, in the skillet, cook the eggs over easy, seasoning with salt and pepper to taste; transfer to a platter. Reserve the skillet.

3. Lay the tortillas on a work surface. Sprinkle each with 1/4 cup cheese; top with 1 egg and bacon strips, then fold to enclose.

4. In the same skillet, heat 1 tablespoon reserved bacon fat over medium heat, add quesadillas and cook, turning once, until crisp and golden, about 3 minutes.

Who doesn't need a pair of fabulous party heels? Colorblocking is a great way to make an entrance and these shoes, well they need no introduction.

Another color I'm crushing on lately happens to be my favorite color. Purple. But this shade in particular is huge right now, grape. A juicy, deep purple that is so lush you just have to put it on.

TGIF! Here are my favorite recipes from the week!

Peppermint Hot Fudge Sauce

Ingredients
2/3 cup heavy or whipping cream
1/2 cup light corn syrup or golden syrup (see Note above)
1/3 cup packed dark brown sugar
1/4 cup unsweetened cocoa powder, ideally Dutch-processed
Heaping 1/4 teaspoon fine sea salt or level 1/4 teaspoon table salt
6 ounces bittersweet chocolate, chopped (or, about 1 cup bittersweet chocolate chips), divided
2 tablespoons unsalted butter
1/4 teaspoon peppermint extract, or to taste

Directions
In a 1 1/2 to 2-quart heavy saucepan, bring cream, syrup, sugar, cocoa, salt (if you’d like the salt to remain slightly textured, add it with the butter and extract at the end) and half the chocolate to a boil. Reduce to a low simmer and cook for 5 minutes, stirring occasionally. Remove from heat and stir in remaining chocolate, butter and extract and stir until smooth. Cool the sauce to warm before serving it so that it can thicken up. While very hot, it will only slide off the ice cream and pool in the alleys of the bowl and that would be tragic, right?

Cheesy Taco Pasta

Ingredients
1 lb. ground beef {I used 80/20]
1 taco seasoning packet {reduced sodium is a good idea}
1 1/2 cups southwest salsa
1/2 cup water
1/2 lb. pasta
2 cups grated cheddar cheese
1/4 cup cream
salt & pepper, to taste

Directions

Bring water to boil to cook the pasta. Salt it and cook pasta until al dente.

While the pasta is cooking, in a large skillet, cook ground beef, breaking apart as you go. Once thoroughly cooked, drain meat and run under hot water to remove any fat. Wipe out pan with paper towel and place back on heat. Pour cooked beef into hot pan with taco seasoning, salsa and water. Simmer until pasta is finished cooking.

Once pasta is cooked, drain well and pour into skillet. Top with cheese, cream, salt and pepper. Stir until cheese melts and noodles are coated in sauce. Serve immediately.

Recipe Notes: A lot of people have told me that this recipe tends to be very salty because of the taco seasoning. I have found that the brand of taco seasoning does matter! On tv and at home, I tried this with McCormick low sodium taco seasoning and it was perfect. So, try to look for that brand. If you can’t find that, then don’t salt your pasta water or add any additional salt at the end.

Cinnamon Toast Rolls

Ingredients

dozen or so slices of very soft, fresh white bread

melted butter

cinnamon sugar (1 cup sugar plus 3 TBSP cinnamon)

Directions

Preheat the oven to 375 degrees.

Cut the crusts from a slice of bread and roll until very thin. Spread both sides of the bread with melted butter and then sprinkle one side with the cinnamon sugar, making sure to cover very well. Fold each side into the middle and then gently roll up and place in a buttered mini muffin tin. Sprinkle with a little more cinnamon sugar. Alternately, you can fold the bread into a triangle, and then fold into another smaller triangle and place on a parchment-covered baking sheet.

When all of the rolls are made, bake for 15 to 20 minutes, or until they are just starting to turn golden brown and get a little crisp. Remove from the muffin tin to cool slightly before serving.

If desired, drizzle with some icing made with powdered sugar that's been moistened with a little milk.

These freeze really well. To reheat, place briefly in a microwave to thaw and then bake in a low oven (250 or 300 until warm and slightly crisp. Alternately, you can reheat them in foil in the oven.
