So, even though, it&#8217;s April, we&#8217;re going to travel back in time to February. <p>First up, a sweet Valentine&#8217;s Day party at Sam&#8217;s preschool. They sang songs, gave heart mobiles as gifts, and indulged in lots of red and pink treats.</p>

<p>Daddy even got to sneak out of the office for 45 minutes to join us.</p>

<p>That evening we headed to Dover to celebrate the rest of the holiday with Nini and Poppy. My mother didn&#8217;t disappoint with her selection of decadent desserts.</p>

<h4>Soft Sugar Cookies with Buttercream Frosting</h4>
<p><strong>Ingredients for Cookies</strong></p>
<ul>
<li class="ingredient">1 cup butter, room temperature</li>
<li class="ingredient">1 3/4 cup sugar</li>
<li class="ingredient">2 eggs, room temperature</li>
<li class="ingredient">1 tsp vanilla</li>
<li class="ingredient">1 cup sour cream</li>
<li class="ingredient">1/4 tsp almond extract</li>
<li class="ingredient">5 1/2 cup flour</li>
<li class="ingredient">1 tsp baking powder</li>
<li class="ingredient">1 1/2 tsp baking soda</li>
<li class="ingredient">1/2 tsp salt</li>
</ul>
<p><strong>Ingredients for Buttercream Frosting</strong></p>
<ul>
<li class="ingredient">3/4 cup butter, room temperature</li>
<li class="ingredient">3 1/2 cup powdered sugar</li>
<li class="ingredient">3-4 Tbsp heavy cream</li>
<li class="ingredient">1 tsp vanilla</li>
<li class="ingredient">food coloring and sprinkles</li>
</ul>
<p class="h-4 strong"><strong>Directions</strong></p>
<ol>
<li>With an electric mixer, cream together butter and sugar. Add eggs, vanilla, almond extract, and sour cream; mix until combined.</li>
<li>In a separate bowl, mix together flour, baking soda, baking powder, and salt. Slowly add dry ingredients to wet ingredients. Mix until combined.</li>
<li>Split dough into two pieces, and place in saran wrap. Refrigerate dough for 1-2 hours.</li>
<li>Once dough is chilled, roll out dough onto baking mat or parchment paper. Add another 1/4 &#8211; 1/2 cup flour if dough is still sticky. Cut with floured cookie cutter.</li>
<li>Bake at 350 degrees for 8-9 minutes.</li>
<li>For the buttercream frosting: Combine all ingredients, mix with an electric mixer until smooth. Frost on cooled cookies and decorate.</li>

It just means that it&#8217;s hard enough to get dinner on the table with one kid demanding the iPad and another kid hanging on my legs, let alone break out my big camera to snap photos and take notes to share.</p>
<p>But I have had several requests for this quinoa salad recipe since I first made it for <a href="http://theculinarycouple.com/2014/07/15/sunflower-bridal-shower-2/">Laura&#8217;s bridal shower</a>. And so, please don&#8217;t criticize the collage of iPhone photos. I promise this recipe is worth making! It&#8217;s light and refreshing, yet filling, and would be the perfect thing to take to your farewell-to-summer BBQ.</p>

But these homemade Larabars are serious competitors in the cookie arena. And they are incredibly easy to make! Just throw everything into the food processor and mix until the ingredients get all sticky and yummy. Then roll them into balls and refrigerate for at least 30 minutes. (Or eat them with a spoon right out of the food processor, which is Sam&#8217;s preferred method of consumption.)</p>

				<content:encoded><![CDATA[<p>I first learned about <a href="http://whole30.com/">Whole30</a> earlier this year when my girlfriend started the program. It seemed so restrictive and impractical. No cereal and milk or cheese and crackers or pasta and garlic bread? No cream and sugar in my coffee? No chocolate chip cookies after the kids go to bed? Basically, no fun. But then she started to see and feel real changes &#8212; the changes the program claims to deliver. Not just weight loss, but more energy, better sleep, fewer aches and pains, improved focus. She was a believer, and I was intrigued.</p>
<p>I bought the book, <a href="http://whole30.com/itstartswithfood/"><em>It Starts With Food</em></a>, and after just a few pages, I decided this was something Nick needed to do. Why? Because he has an incredibly demanding schedule and eats when he&#8217;s stressed. He doesn&#8217;t have time to exercise or sleep and was drinking far too many cups of coffee every day. Plus he has a family history of high cholesterol and heart disease. I promised to plan his meals and pack his lunches if he promised to stick to the plan for 30 days. And he did! He declined cake at my sister&#8217;s graduation party and beer at our neighbor&#8217;s picnic. And by the end of the 30 days, he had lost 16 pounds and felt healthier and happier.</p>
<p>I was still exclusively breastfeeding Nora at that time and was hesistant to make big changes to my diet. But after (finally) finishing the book and reading testimonials from fellow nursing mommas &#8212; not to mention a summer of weddings and indulgent eating &#8212; I decided I was ready to jump on board. And Nick was more than ready for round 2.</p>
<p>So here we are! Week 1 done. No sugar. No alcohol. No grains. No legumes.</p>
<p>So what have we been eating?</p>

<p>Breakfast always includes some form of eggs. Scrambled with sausage and peppers or spinach; topped with avocado or salsa; or over easy on a plate of roasted potatoes. Also always accompanied by a bowl of fruit and a cup of (black!) coffee.</p>
<p>Yes, mornings are hard. The kids are hungry and whiny. Lucy is begging to go out. Nick is trying to get out the door to work. And, somehow, I have to get breakfast on the table. Cereal and fruit or muffins were always an easy option. But, this week, I&#8217;ve had to prepare a hot meal. And you know what? I think it&#8217;s worth the extra time.</p>
<p>Lunch is typically a salad of hearty mixed greens, shredded chicken or tuna, and lots of fresh fruits and veggies. Apples and avocado typically make an appearance. And our current favorite dressing is a simple basil oil + white balsamic vinaigrette (2:1 ratio).</p>

<p>Late afternoon can be tricky. I&#8217;m usually tired (and sometimes a little bit cranky) from a morning with the kiddos and am ready for a break and a treat in the form of caffeine and/or sugar. The Whole30 plan does not recommend snacking, but because I need to ensure I get enough calories and keep up my milk supply, I do it.</p>
<p>A handful of nuts and raisins usually fits the bill. Or almond butter with celery or a banana or an apple. I also made a pretty tasty and refreshing <strong>Coconut Chia Seed Pudding</strong> (1 can coconut milk + 1/4 cup chia seeds + 1/4 cup unsweetened coconut flakes. Refrigerate overnight. Top with pineapple and sliced banana.)</p>

<p>If mornings are hard and afternoons are tricky, then dinners are <em>fun</em>! Seriously. I have loved experimenting with fresh ingredients, and I do believe I have rediscovered my passion for cooking. This is not to say that it&#8217;s not tough to prepare a wholesome meal for a family of four while simultaneously entertaining a toddler and a baby, but I&#8217;m proud to say I&#8217;ve done it every night so far.</p>
<p><strong>Turkey Burgers</strong> (1 lb lean ground turkey + 1 egg + 1/2 cup almond flour + 2 Tbsp Italian seasoning) topped with sauteed onions and mushrooms. Served with roasted mixed potatoes, homemade dill pickles, and pineapple.</p>

Add 1/4 cup almond flour + 1 egg. Add 1 lb ground chicken + 1 tsp salt + t/2 tsp black pepper. Process until combined. Drop balls onto baking sheet lined with parchment paper. Bake at 350°F for 25-30 minutes.) topped with compliant marinara sauce.</p>

<p>I am happy to report that we both survived the first week &#8220;hangover.&#8221; Surprisingly, I didn&#8217;t experience any headaches, though I felt extreme fatigue during days 2-4 (and my arms and legs felt all tingly and tired). We resisted chocolate peanut butter frozen custard from The Meadows and sweet Lebanon bologna from the local butcher. Though Nick dreamed about pizza, and I dreamed about corn on the cob. I haven&#8217;t had any crazy and uncontrollable cravings, though I do miss my nightly bowl of Cheerios.</p>

And although we have greatly appreciated our freezer stocked full of soups, casseroles, and quick breads, we are ready to get back to whole foods. For us, this still means <em>easy</em> because, let&#8217;s face it, it&#8217;s pretty difficult to get dinner on the table with a toddler and an infant.</p>
<p>Here are two of my new favorite go-to meals, including two really tasty recipes for roasted vegetables.</p>

<p><strong><em>For the cauliflower:</em></strong> Cut cauliflower into florets and spread them onto a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast at 400°F for 30 minutes, until brown and tender. Meanwhile, toss sliced almonds in a skillet with 1 tablespoon of butter, and cook for 5 minutes. Add almonds to cooked cauliflower, along with golden raisins and a drizzle of balsamic vinegar.</p>

And it was the winning dish!</p>
<p>Not only was it full of flavor and perfectly savory, Nick received bonus points for grinding his own meat and making his own pastry. Yes, he was in it to win it this year.</p>
<p>But he assures you it&#8217;s not at all complicated. In fact, he managed to prepare it while sipping multiple glasses of red wine. He&#8217;s such a multi-tasker. Enjoy!</p>

<h4>Chipotle Pork Quichelettes</h4>

<p><em>Makes 20 quichelettes.</em></p>
<p><strong>For the Tart Crust:</strong></p>
<ul>
<li>1 1/4 cups all-purpose flour, sifted</li>
<li>11 tablespoons (5.5 ounces) butter, softened</li>
<li>1 egg</li>
<li>1/2 teaspoon salt</li>
</ul>
<p><strong>For the Filling:</strong></p>
<ul>
<li>6 ounces lean ground pork</li>
<li>1/4 – 1/2 teaspoon ground chipotle chili powder</li>
<li>1/2 teaspoon table salt</li>
<li>1/2 cup finely shredded cheddar cheese</li>
<li>1 tablespoon minced chives</li>
<li>2 eggs</li>
<li>1 cup half-and-half cream</li>
</ul>
<p>1. <strong>For the Tart Crust: </strong>In a large mixing bowl, combine flour, butter, egg, and salt with a wooden spoon, or with a hand mixer set to the lowest speed. Mix until dough comes together and can be formed into a ball.</p>
<p>2. Grease muffin tins. (This recipe makes 20 quiches, so you will need multiple tins.) On a floured work surface, roll dough into a log about 15 inches long. Cut log into 20 equal pieces. Roll each piece of dough into a ball and flatten it slightly with your palms. Place flattened dough into greased muffin tin, and use your fingers to press it out and up the sides of each well.</p>
<p>3. <strong>For the Filling: </strong>Preheat oven to 375°F. Add ground pork to a skillet, season it with ground chipotle chile and 1/4 teaspoon of the salt, and cook over medium heat until no longer pink.</p>
<p>4. Add pork, cheddar cheese, and chives to each quichelette crust. In a bowl, beat eggs, cream, and remaining salt together until combined. Pour the mixture over the pork until it reaches the top edge of the crusts.</p>
<p>5. Bake quichelettes for 26-28 minutes, or until slightly browned. Cool for about 10 minutes, and gently lift them out with a butter knife and serve warm.</p>

<p><strong>Ingredients</strong></p>
<ul>
<li>1/2 lb sweet Italian sausage</li>
<li>1/2 lb hot Italian sausage (or just use 1 lb sweet)</li>
<li>olive oil</li>
<li>1 onion, chopped</li>
<li>4 cloves garlic, chopped</li>
<li>28 oz crushed tomatoes</li>
<li>1/2 cup beef broth (or red wine)</li>
<li>salt and pepper</li>
<li>1 lb orecchiette</li>
<li>1 big bunch spinach</li>
<li>Parmesan cheese for topping</li>
</ul>
<p><strong>Directions</strong></p>
<ol>
<li>Remove sausage from casing, crumble, and cook over medium heat until brown, about 5 minutes. Remove cooked sausage from pan and place on a separate plate lined with a paper towel.</li>
<li>Add olive oil, chopped onion, and chopped garlic to pan. Saute for about 5 minutes.</li>
<li>Add sausage back to pan, plus tomatoes and broth/wine. Season with salt and pepper. Set heat to low and simmer sauce.</li>
<li>Meanwhile, cook orecchiette according to package directions, about 11 minutes. Add spinach to sauce when you have about 4 minutes left on the pasta.</li>
<li>Toss pasta with sauce and serve with cheese.</li>

				<content:encoded><![CDATA[<p>I love fall for so many reasons. Sweaters and boots; pumpkin pecan waffles and apple crisp with vanilla ice cream; crunchy, colorful leaves; college football; and soup. Yes, soup season is here, and I want to share with you one of our favorites.</p>
<p>In my opinion, a good soup is thick and hearty, a little bit spicy, and leaves you feeling warm and full. This White Chicken Chili is all of those things and more. I got the recipe from blog friend Sarah, and I have made it at least a dozen times since she shared it with me last year. (Side note: Sarah&#8217;s husband is assistant brewer at <a href="http://www.gunpowderfallsbrewing.com/">Gunpowder Falls Brewing</a> in New Freedom, PA. And Nick has been thoroughly enjoying the case of Dunkel I bought for his birthday!)</p>
<p>Now back to the chili. The list of ingredients is simple: chicken, smoked sausage, two types of beans, onions and garlic, spices, and corn starch for thickening.</p>

<p>You can cook the chicken in advance, and chop the sausage, onions, and garlic. Then store it all in a big Ziploc bag. I do this if we are expecting company, and I don&#8217;t want to spend too much time in the kitchen after they arrive.</p>

<p>Once everything is prepped, it takes less than 30 minutes to simmer and thicken. Topped with Monterrey Jack cheese and a big dollop of sour cream and served with a side of tortilla chips, it&#8217;s a perfectly comforting fall dinner.</p>

<p><em>Serves 8.</em></p>
<p><strong>Ingredients</strong></p>
<ul>
<li><span>1 lb boneless skinless chicken breasts</span></li>
<li><span>1 lb smoked sausage, diced</span></li>
<li>2 large onions, chopped</li>
<li>6 cloves garlic, chopped</li>
<li>2 cans (15 oz) great northern beans</li>
<li>2 cans (19 oz) cannellini beans</li>
<li>1 can (4.5 oz) diced green chiles</li>
<li>3 tsp ground cumin</li>
<li>2 tsp pepper (preferably white, but black will work)</li>
<li>1/4 tsp cayenne pepper</li>
<li>1 Tbsp extra-virgin olive oil</li>
<li>2 cans (14.5 oz) chicken broth</li>
<li>4 Tbsp cornstarch</li>
<li>4 Tbsp water</li>
<li>Monterrey Jack cheese, sour cream, and tortilla chips for garnish</li>
</ul>
<p><strong>Directions</strong></p>
<ol>
<li>Add olive oil to a heavy pot or dutch oven and cook the chicken over medium heat, about 5 minutes per side. Remove from the pot and set aside.</li>
<li>Add onions to the pot and cook until they start to get translucent, about 5 minutes. Add garlic and diced smoked sausage; cook 3-5 minutes more.</li>
<li>Add chicken back to the pot, along with the diced green chiles, cumin, white pepper, and cayenne pepper; stir and cook 1-2 minutes.</li>
<li>Raise the heat to high and add chicken broth and beans. (Drain and rinse the beans before you add them.) Bring the pot to a boil.</li>
<li>In a separate small bowl, mix together cornstarch and water. Add to the chili and simmer until it reaches desired thickness, about 20 minutes.</li>
<li>Garnish with cheese and sour cream and serve with tortilla chips for dipping.</li>

				<content:encoded><![CDATA[<p>You may have noticed that I have not posted a recipe in &#8230; almost three months. Wait, is that right? Yes. Yes, it is. While the <a href="http://theculinarycouple.com/2013/05/03/peanut-butter-cup-brownies/">Peanut Butter Cup Brownies</a> were amazing and unforgettable and worthy of the most recent recipe spot, it is unacceptable.</p>
<p>It&#8217;s not that we haven&#8217;t been cooking. We just haven&#8217;t made anything new. We&#8217;ve stuck to our favorites: <a href="http://theculinarycouple.com/2008/12/04/hearty-lasagna/">Lasagna</a>, <a href="http://theculinarycouple.com/2011/11/09/turkey-burgers/">Turkey Burgers</a>, <a href="http://theculinarycouple.com/2012/03/22/thai-chicken-pizza/">Thai Chicken Pizza</a>. Also, burritos and grilled cheese and omelettes. Recipes I know by heart and meals that are easy to prepare.</p>
<p>I was just too tired during the first trimester to make anything that required more than five minutes of prep work. And now, honestly, we have our hands in about a dozen different home projects (i.e. painting the garage, converting the loft into a playroom, and considering paint colors for the nursery) that we just don&#8217;t have time to stand over the stove.</p>
<p>Which is why I&#8217;m on the lookout for low maintenance dinner ideas. For now. And for when Nick goes back to school. And for when baby #2 arrives. And, oh boy, have I found a good one.</p>
<p>In my opinion, there is nothing better than a one-pot meal. Chop and drop and simmer, and dinner is ready. Also, we love pasta. And so this dish is perfect.</p>

<p>Simply choose your pasta (we like whole wheat spaghetti). Slice an onion and a few cloves of garlic. Open a can of diced tomatoes. Add a big bunch of basil (preferably from your backyard garden). Top with dried herbs and vegetable broth and a bit of olive oil. And let it do its thing!</p>

<p><strong>Ingredients</strong></p>
<ul>
<li>1 lb spaghetti or linguine</li>
<li>1 can (28 oz) diced tomatoes with liquid</li>
<li>1 large onion, sliced</li>
<li>4 cloves garlic, sliced</li>
<li>4 1/2 cups vegetable broth</li>
<li>1/2 teaspoon red pepper flakes</li>
<li>2 teaspoons dried oregano leaves</li>
<li>1 big bunch basil, chopped</li>
<li>2 tablespoons extra-virgin olive oil</li>
<li>salt and pepper to taste</li>
<li>Parmesan cheese for garnish</li>
</ul>
<p><strong>Directions</strong></p>
<ol>
<li>Place pasta, tomatoes, onion, garlic, and basil in a large stock pot. Add vegetable broth, red pepper flakes, and oregano. Drizzle with oil.</li>
<li>Cover the pot and bring to a boil. Reduce to a simmer and cook, covered, for about 10 minutes, stirring every 2 minutes or so. Cook until almost all of the liquid has evaporated.</li>
<li>Season to taste with salt and pepper, and stir to evenly distribute the sauce. Top with Parmesan cheese and serve.</li>

<p><strong>Ingredients</strong></p>

<li id="zlrecipe-ingredient-2" itemprop="ingredients">1 bag mini peanut butter cups, chopped</li>
<li id="zlrecipe-ingredient-3" itemprop="ingredients">2 cups semi-sweet chocolate chips</li>
<li id="zlrecipe-ingredient-4" itemprop="ingredients">1 Tbsp butter</li>
<li id="zlrecipe-ingredient-5" itemprop="ingredients">1 heaping cup creamy peanut butter</li>
<li id="zlrecipe-ingredient-6" itemprop="ingredients">1 3/4 cups Rice Krispies cereal</li>
<li id="zlrecipe-ingredient-7" itemprop="ingredients">1 tsp vanilla</li>
<li id="zlrecipe-ingredient-8" itemprop="ingredients">1 tsp kosher salt</li>

<p><strong>Directions</strong></p>

<li id="zlrecipe-instruction-0" itemprop="recipeInstructions">Line a 9&#215;9 pan with foil, and bake the brownies according to package directions.</li>
<li id="zlrecipe-instruction-1" itemprop="recipeInstructions">During the last 5 minutes of baking, remove the brownies from the oven and sprinkle chopped peanut butter cups and chopped peanuts on top. Return to the oven for remaining 5 minutes to melt the chocolate.</li>
<li id="zlrecipe-instruction-2" itemprop="recipeInstructions">As soon as you pull the brownies out of the oven, smooth the melted peanut butter cups and peanuts on top. Let them cool.</li>
<li id="zlrecipe-instruction-3" itemprop="recipeInstructions">In a microwave safe bowl, combine chocolate chips, peanut butter, and butter. Heat in the microwave for 1 minute; stir when done. If needed, continue heating in 20 second increments until chocolate is melted.</li>
<li id="zlrecipe-instruction-4" itemprop="recipeInstructions">Stir in vanilla and cereal until evenly combined.</li>
<li id="zlrecipe-instruction-5" itemprop="recipeInstructions">Pour the mixture over the brownies and smooth. Chill until set, about 2 hours.</li>
