Tales from the Test Kitchen...Drinking Girls Caprese Salad Sticks

We are feverishly working on getting all of out recipes for our second cookbook, The Drinking Girls Guide to Perfect Party Planning, tested and typed up! This one, our delectably delicious Caprese Salad Stick recipe. There are alot of recipes for Caprese Salad and Caprese Salad style sticks, but ours is extra special because we soak our tomatoes in a special blend of balsamic vinegar, onions, garlic, basil AND vodka!! This recipe is a part of our Itty Bitty "Tini" Weenie Cocktail Party complete with Martini Bar! So vodka was and obvious choice!!

We start with some grape tomatoes and cut a little "x" in the bottom...this helps with the marinating and easy "skewering..."

Marinate the tomatoes in the fridge overnight...or longer if you like...The longer they sit in the marinade, the more flavor in the tomatoes...

About 30 minutes before assembly, toss in your mini bufala mozzarella balls, so give them a little of that special flavor. They should not marinate for much longer because the alcohol can dry out the mozzarella balls...This super easy and tasty recipe can also be served as a simple salad or as Caprese Salad Bites on toothpicks...Later this week, stay tuned for our version of Twisted Slaw!

The list of wine’s benefits is long—and getting more surprising all the time. Already well-known as heart healthy, wine in moderation might help you lose weight, reduce forgetfulness, boost your immunity, and help prevent bone loss.

With America likely to edge out France and Italy in total wine consumption in the near future, according to one analyst, and with women buying more than 6 out of every 10 bottles sold in this country, we’re happy to report that wine may do all of the following:

1. Feed your head

Wine could preserve your memory. When researchers gave memory quizzes to women in their 70s, those who drank one drink or more every day scored much better than those who drank less or not at all. Wine helps prevent clots and reduce blood vessel inflammation, both of which have been linked to cognitive decline and heart disease, explains Tedd Goldfinger, DO, of the University of Arizona School of Medicine. Alcohol also seems to raise HDL, the so-called good cholesterol, which helps unclog your arteries.

2. Keep the scale in your corner

Studies find that people who drink wine daily have lower body mass than those who indulge occasionally; moderate wine drinkers have narrower waists and less abdominal fat than people who drink liquor. Alcohol may encourage your body to burn extra calories for as long as 90 minutes after you down a glass. Beer seems to have a similar effect.

3. Boost your body’s defenses

In one British study, those who drank roughly a glass of wine a day reduced by 11% their risk of infection by Helicobacter pylori bacteria, a major cause of gastritis, ulcers, and stomach cancers. As little as half a glass may also guard against food poisoning caused by germs like salmonella when people are exposed to contaminated food, according to a Spanish study.

4. Guard against ovarian woes

When Australian researchers recently compared women with ovarian cancer to cancer-free women, they found that roughly one glass of wine a day seemed to reduce the risk of the disease by as much as 50 percent. Earlier research at the University of Hawaii produced similar findings. Experts suspect this may be due to antioxidants or phytoestrogens, which have high anticancer properties and are prevalent in wine. And in a recent University of Michigan study, a red wine compound helped kill ovarian cancer cells in a test tube.

5. Build better bones

On average, women who drink moderately seem to have higher bone mass than abstainers. Alcohol appears to boost estrogen levels; the hormone seems to slow the body’s destruction of old bone more than it slows the production of new bone.

6. Prevent blood-sugar trouble

Premenopausal women who drink one or two glasses of wine a day are 40 percent less likely than women who don’t drink to develop type 2 diabetes, according to a 10-year study by Harvard Medical School. While the reasons aren’t clear, wine seems to reduce insulin resistance in diabetic patients.

My Kind of Red Velvet from Everyday Champagne!

One of the things we love about blogging is being able to connect with people all over the world who are doing amazing things with food, wine and entertaining! We feel it's our job to bring these wonderful people into your life through the power of technology! We can learn from one another and encourage each other all at the same time! So, in that spirit, we'd like to introduce you to Abbey from Everyday Champagne! She had us from the get-go with a title like that!

Abbey is a stay-at-home and hard-working mother of two. She's worn many hats as a personal chef and shopper, a caterer, a wine seller and more. She loves to use her blog to share original recipes, personal stories and helpful tip on shopping, meal-planning and cooking. Abbey says that most of her recipes are created out of desperation... throwing things together because it's simply what she happens to have in my kitchen. the result has been some amazing and creative meals that she can share with her readers! We suggest you become a follower and share in all the fun!

Abbey's philosophy is simply this, "I believe that you should never wait for a holiday to cook the best food you can, and that Everyday is as special as the next. If you're smart about how you shop and cook, you can drink that metaphorical (and often literal) bottle of Champagne Everyday! Until then, I hope I can entertain you a little, teach you a lot, and make a few new friends along the way."

Here is a little sample of what you'll see over on Abbey's blog, "Everyday Champagne." This post was entitled, "My Kind of Red Velvet!" She uses red wine and dark chocolate to take this classic to a "whole nother level!"

"I don't believe in Red Velvet Cake. I know people call it their favorite, but I just don't get it. It's a barely chocolate cake with enough red food coloring in it to just make it weird. Seriously. If it wasn't blood-red would people even care? But I do believe in Red wine. And Dark Chocolate. And combining the two. I love a Velvety Red wine with notes of Coffee and Chocolate so why not just turn it into a cupcake?! I served these the other night when my girlfriends came over for drinks and nibbles. I think they were a big hit among the ladies...there were a lot of groans and eye rollings so it was kinda hard to tell.

Now, you know that I often use cake mixes as the base for a lot of my cake recipes simply because I get so much for free, or close to it, with my couponing. I do know how to bake from scratch, but sometimes when you've got two little kids demanding your attention and affection, and you have the box within arms reach, it's just easier to not have to measure a couple things. I have a wonderful Chocolate Cake Recipe that can be used in place of the mix (just the dry ingredients) if you're anti-mix. But I don't have a moral issue with the boxed mix...I'm adding so many things to it it's barely a Pillsbury product anymore.

So, here they are- I hope you enjoy them as much as my gals and I did!"

*Dark Chocolate-Red Wine Cupcakes with Cream Cheese-Kahlua Frosting
(makes about 18 cupcakes)

-In a large mixing bowl add the contents of 1 box of chocolate cake mix*, 1 box of powdered chocolate pudding mix, 1 cup of a dry, red wine**, 1/2 cup of canola or vegetable oil, 4 eggs, about 1 tsp of espresso powder or instant coffee and EITHER 4-6 ounces of sour cream or yogurt, 1 snack sized container of chocolate pudding or about 1/2 cup of chocolate syrup. Mix this with an electric beater until all the dry ingredients have been moistened and there are no more lumps.

-Add in 1 cup of semi-sweet chocolate chips and mix by spatula.

-Line 2 muffin pans with liners (18 cupcakes is what I usually end up with) and grease each liner.

-Using a medium sized ice cream scoop, scoop some batter into each cup, filling it all the way up (these have a beautiful rise, and I like a big cupcake but if you want more, smaller cupcakes, fill them only 3/4 of the way).

-Press a Hershey's kiss*** deep into the center of each and bake in a preheated 350 degree oven for 20-25 minutes.

-Allow to cool completely on a rack before frosting (recipe below).

*Cream Cheese-Kahlua Frosting

-In a medium bowl mix 2 bricks of Neufchatel cream cheese, softened, along with 1 stick of unsalted butter, softened, a pinch of kosher salt, 1/2 cup of powdered sugar and a good splash of kahlua or other coffee liqueur. Beat until fluffy. Frost your cooled cupcakes.

-Dust each cupcake with cocoa powder or top with dark chocolate shavings if desired.

(*I used Pillsbury Moist Supreme Devils Food Cake, but I am always using a different brand considering I'm only 'buying' them because of the sale/coupon match-up)

(**Although these aren't my favorite red wines to sip, a very oaky California Cab or a Rioja are great choices for your baking because of the vanilla aspect to their flavor profile. But, by all means, use whatever you have!!)

(***I used the Hershey's 'Air Delight' Kisses because that's just what I happened to have. They are creamier than the standard kiss, which worked perfectly for this recipe)

We can't wait to try Abbey's recipe...nothing says Drinking Girls like RED Velvet Cake made with RED wine!!!

The Drinking Girls are moms as well as business women and that means the end of the school year is a BUSY, BUSY time! Are you with us, ladies??? So the last couple of weeks have been a blur and we haven't had much time to blog! So it's update time! We are busy working on our next book, The Drinking Girls Guide to Perfect Party Planning, so that means less time for classes and tastings if we are going to roll out this new book in time for Christmas rush!

But don't worry, we'll be around...we will be holding our Follower Appreciation Giveaway and profiling some of our favorite blogs in cyberspace...all while corralling the kids and enjoying a little down time! Look for sneak peeks of our new recipes here all summer long!

Tales from the Test Kitchen...Frozen Margarita Mini Cheesecakes

Ahh, what could be better than cheesecake?? Hmmm...cheesecake with tequila! Haha...as we started brainstorming for cookbook #2, we started thinking of ideas for our Drunken Desserts section. Ashleigh LOVES cheesecake, and with a Mexcian inspired menu going into the cookbook, a Margarita cheesecake seemed like a natural choice! The Drinking Girls are all about quick and easy entertaining. We don't have time for Springform pans and tons of ingredients. If your life is anything like ours, life is going to to throw you six or seven curve balls on the day of your get-together, so a recipe like this, that is "no-bake" and can be made up to a week ahead of time is a real God send. Here's some pics from the Test Kitchen. Full recipe will be available in our new cookbook, The Drinking Girls' Guide to Perfect Party Planning, coming out this fall!

Since Ashleigh still lives in Europe, she needs this transformer to run her 110v Kitchen Aid Chopper. It is the best way to turn pretzels into pretzel crumbs!

Preparing this pan is easy...just line with regular sized paper cupcake cups...

A little sugar and butter go into the pretzel crumbs to make our pretzel crumb crust for our mini cheesecakes

Once it's ready, we spoons the mixture into the cups and press it down to form a nice even crust!

Now for the cheesecake filling...we start with soften cream cheese and some sugar...Once that's "mixed" up, it's time to mix our tiny margarita...

We used Cuervo Gold Tequila, Cointreau (a subtle orange liqueur) and store bought Margarita Mix...

Then it's down the hatch, or in the bowl, in this case...

We use our mixer again to blend blend the margarita and cream cheese mixutre, then fold in the whipped topping...Can you say yum????

Wow! Doesn't that just look luscious???? You could stop right here and serve it as a mouse, but we like the blend of the salted pretzel crust with this...

So we spooned it over our preztel crust, covered it in foil and threw it in the freezer...they are ready to serve in 3 to 4 hours, or save them for a week...how's that for make ahead, huh? you might even be able to get a massage on the day of your dinner party...haha...

When we bring in our Tasters, we are going to have them taste it with sugared lime zest and let us know what they think...either way, if you like margaritas, you'll LOVE this dessert!!! Cheers!

Drinking Girls Margarita Guacamole Recipe for Your Cinco de Mayo Celebration!!

In honor of Cinco de Mayo and our love of Mexican food, we are sharing our special Drinking Girls' Margarita Guacamole Recipe with you, our loyal followers!!! Yes, because we LOVE you so much, we want to give you this recipe so you can use it to celebrate Cinco de Mayo this weekend and all summer long! We appreciate all your support and don't want you to have to wait 'til the fall when we launch our new cookbook, The Drinking Girls' Guide to Perfect Party Planning, to get this one! A Drinking Girl is never afraid to mix cocktails and cooking! Just watch the knives!

Drinking Girls Margarita Guacamole

6 ripe Hass avocados, pitted and peeled

1 1/2 c. tomatoes, seeded and chopped

1 small red onion, chopped

1 fresh lime, squeezed

1 T. salt

1 tsp. Worcestershire sauce

2 tsp. Tabasco sauce

1 tsp. cayenne pepper

2 garlic cloves, peeled and chopped

3/4 tsp. ground cumin

3-5 sprigs of fresh cilantro, chopped

1 shot Tequila

1 shot Grand Marnier

Place avocados in a large bowl and mash them Add the remaining ingredients, taking care to leave it slightly chunky. Refrigerate or serve immediately. Serves 8 to 10 guests as an appetizer!

Ours is like this only yummier!!! We NEED one of the Mortar and Pestle sets!

Ashleigh did this with her in-laws at the cafe in her Spanish neighborhood on Friday! Our Facebook friends over at The Frugal Tasters had this on their wall.
