hey there,

wanted to share with you the favors i made for my wedding that inspired the formation of the green knot. i wanted natural, unique and organic favors for my wedding and all the sites that i came across just didn’t have that unique touch i was looking for so i figured what better way to be eco-friendly than to make them myself.

i had burlap sacks filled with organic coffee beans accentuated with burnt orange ribbon made from 100% post consumer recycled plastic bottles. i secured contents with the drawstrings from the sacks and cleverly had my hang tag read “love is brewing”. the aroma of the coffee beans was absolutely amazing, and believe it or not…3 plus years later, the beans are still sweet smelling fixtures in my kitchen. with these favors, guests were able to reuse those burlap bags as well as brew the most fantastic beans for a great cup of java!

my second favor was natural palm fans made from actual palm leaves. i decorated them with natural raffia that was sprayed with a low toxic burnt orange dye. i had each fan read “good family and friends and a gentle breeze are blessings that make our hearts sing”. these were given out at my church ceremony to keep my lovely guests cool in the hot caribbean sun. it’s wonderful to visit family and friends now and see that my fan has been passed on as a decorative piece to their home and used to keep cool during the hot summer days.

so my objective was achieved! great eco-friendly favors, no waste to the environment and an amazing husband…all in one day!

one of my favorite summer herb is none other than organic mint! if you planted some in your garden this year, it’s probably going crazy growing about now! we all know the pleasing flavor of mint, i enjoy fresh mint for cooling drinks, vegetable salads, marinades, dressings or simply slivered and sprinkled over just about anything you end up grilling outdoors. my personal favorite is having a cup of organic green tea with mint as my night cap before bed. it’s so soothing and as an added bonus, mint promotes healthy digestion!

most eco-friendly folks are fans of growing their own organic garden. the usual herbs are mint, basil, lavender, rosemary to name a few. at the green knot, you can experience starting your own herbal garden with our unique garden in a bag! these are perfect, they come with everything you need and you can grow your organic herb of choice right in its very own bag! they can also be great green gifts for family, friends and co-workers or even more perfect as wedding favors.

want to add more mint to your diet? try these ideas:
• add fresh mint to smoothies – especially wonderful with berries
• add fresh mint slivers to salad dressings and dips
• add fresh mint to a stir fry
• stir fresh mint into yogurt or cottage cheese
• brewing iced tea? mint is great with black, white, green or herbal tea
• blend brewed mint tea with fruit juice such as pomegranate
• garnish vegetable soup with mint
• add some minced mint leaves to ice cream or frozen yogurt
• best of all – a summer mojito cocktail with fresh mint!
