4 eggs

&lt;p&gt;Ingredients: &lt;br/&gt;
4 eggs&lt;br/&gt;
1 medium carrot, minced&lt;br/&gt;
1 celery stalk, minced&lt;br/&gt;
1 Persian cucumber, minced&lt;br/&gt;
1/4 onion, minced&lt;br/&gt;
3/4 cup light mayo&lt;br/&gt;
Pepper and salt to taste&lt;br/&gt;
Whole wheat bread&lt;/p&gt;

&lt;p&gt;Directions:&lt;br/&gt;
1. Boil eggs for 10-12 mins. Shell and slice.&lt;br/&gt;
2. In a medium bowl mix carrot, celery, onion, cucumber, salt, pepper and light mayo. Add eggs and mix together.&lt;br/&gt;
3. Toast bread and spread egg salad spread. &lt;p&gt;Ingredients:&lt;br/&gt; 4 pcs organic chicken breast&lt;br/&gt; 1 tbsp garlic, minced&lt;br/&gt; 1 tbsp ginger, minced&lt;br/&gt; 1/2 cup onion, sliced&lt;br/&gt; 1 cup real pineapple, sliced&lt;br/&gt; 2 sprigs cilantro for garnish&lt;/p&gt;
&lt;p&gt;Directions:&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1. Preheat oven to 400°F.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;In an ungreased baking pan, place unseasoned chicken pieces. Bake for 20 minutes.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;2. In a saucepan, cook garlic, ginger for 2 mins in medium heat. Then add onion, wait to caramelize before adding pineapple. Cook for another 7 mins.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;3. Take chicken out from the oven to pour pineapple onion glaze over.  Continue baking for 20 to 25 mins.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;Garnish with cilantro.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;4. Yesterday, I bought these #organic #rainbow #carrots from our favorite farmer, Ryan. He suggested that I roast them (for 20 mins) and add on some fresh dill. It’s a little thick but it’s #delicious and #nutritious! And, to celebrate it, I’m highlighting my friend, &lt;em&gt;Kelsey Hotchkiss’&lt;/em&gt; recipe of KALE AND BRUSSEL SPROUT SALAD to celebrate the spirit of inspiration within the community for which this blog is created for. &lt;/p&gt;

&lt;p&gt;KALE AND BRUSSEL SPROUT SALAD (4-5 servings)&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1/4 cup fresh lemon juice&lt;/li&gt;
&lt;li class="ingredient"&gt;1 tablespoons Dijon mustard&lt;/li&gt;
&lt;li class="ingredient"&gt;1 tablespoon minced shallot&lt;/li&gt;
&lt;li class="ingredient"&gt;1 small garlic clove, finely grated&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 teaspoon kosher salt &lt;/li&gt;
&lt;li class="ingredient"&gt;Freshly ground black pepper&lt;/li&gt;
&lt;li class="ingredient"&gt;1 bunch of kale, center stem discarded, leaves thinly sliced&lt;/li&gt;
&lt;li class="ingredient"&gt;6 ounces brussels sprouts, trimmed, finely grated or shredded with a knife&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 cup extra-virgin olive oil, divided&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 cup slivered almonds, coarsely chopped&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 cup grated parmesan cheese&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;Directions: &lt;/p&gt;

&lt;p&gt;1. Combine lemon juice, Dijon mustard, shallot, garlic, salt and a pinch of pepper in a small bowl. Stir to blend; set aside. Mix thinly sliced kale and shredded brussels sprouts in a large bowl.&lt;/p&gt;
&lt;p class="instruction"&gt;2. Spoon 1 tablespoon oil into a small skillet; heat oil over medium-high heat. Add almonds to skillet and stir frequently until golden brown in spots, about 1-2 minutes. Transfer nuts to a paper towel–lined plate. Sprinkle almonds lightly with salt.&lt;/p&gt;
&lt;p class="instruction"&gt;3. Slowly whisk remaining olive oil in cup into lemon-juice mixture. Season dressing to taste with salt and pepper. &lt;/p&gt;
&lt;p class="instruction"&gt;4. Add dressing, almonds, cheese to kale mixture; toss to coat. Season lightly with salt and pepper. &lt;/p&gt;
&lt;p class="instruction"&gt;5. Enjoy with friends.&lt;/p&gt;

She was making dinner so I volunteered to make the dessert. At first, I was thinking of making something chocolate-y and sugar-y but the healthy part of me kicked in and thought why not make something fruit-y instead? I’ve been wanting to make these for the summer but I just couldn’t wait any longer. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Frozen Yogurt-covered Fruit Snack&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Ingredients: &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Grapes/Strawberry/Blueberry/Mango&lt;/p&gt;
&lt;p&gt;Non-fat Greek Yogurt&lt;/p&gt;
&lt;p&gt;Pistachio, shelled&lt;/p&gt;
&lt;p&gt;Honey&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Directions: &lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;br/&gt;1. Crush pistachio.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;2. Cover grape, blueberry, strawberry and mango in yogurt. &lt;/span&gt;&lt;br/&gt;&lt;span&gt;3. Sprinkle crushed pistachio on each yogurt covered fruit.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;4. Line fruits up onto parchment paper in a baking sheet. Freeze for 15-20 mins.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;5. Enjoy w/ friends!&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;Recipe: makes 2 servings&lt;/p&gt;

&lt;p&gt;1/2 cup quinoa &lt;br/&gt;
2 chicken sausages&lt;br/&gt;
1/4 cup onion&lt;br/&gt;
1 tomato &lt;br/&gt;
5 white mushrooms, sliced&lt;br/&gt;
A handful of spinach&lt;br/&gt;
Jalapeño, diced (optional for extra spice)&lt;/p&gt;

&lt;p&gt;1. Cook 1/2 cup #quinoa in a small pot.&lt;br/&gt;
2. Slice up 2 #chicken #sausages into small pieces and throw it in the pan w/o oil. Let the sausage brown for 3-4 mins. Add onions and mushrooms then cook for another 2 mins.&lt;br/&gt;
3. Mix cooked quinoa, #spinach and tomatoes in a bowl. Add chicken sausage, onion and mushrooms on top.&lt;/p&gt;
