<p>It looks like a long list of ingredients but feel free to substitute for different vegetables or herbs. You can also prep these ingredients and add them to meal prep containers so you have a nice filling meal for lunches for the week!</p>

<h2 class="wp-block-heading" id="h-my-trip-to-iowa">My Trip to Iowa</h2>



<p>I recently had the amazing opportunity to visit Des Moines, Iowa and visit a soybean farm as well as visit the World Food Prize Hall of Laureates and visit the National Pork Board where we learned all about soybeans and we even cooked together! </p>



<p>I learned so much, especially at the <a href="https://www.worldfoodprize.org/" target="_blank" rel="noreferrer noopener nofollow">World Food Prize</a>. Did you know the World Food Foundation awards a prize for people who help to fight world hunger and bring us forward and innovate in food and agriculture? The World Food Prize is given out by the World Food Prize Foundation and it's located in Des Moines.</p>

<h2 class="wp-block-heading" id="h-talking-to-farmers">Talking to Farmers</h2>



<p>Have you visited a farm before? If not, I highly recommend that you do visit at least one. If you have a kid, bring your kid too. We have so much to learn from our nation's farmers and we have so much to be grateful for.</p>



<p>Farmers feed us all. Whether you buy organic produce or not, your purchases affect family farms across this country and the world. Did you know that 97% of farms in the United States are family owned and operated?</p>



<p>That number was astounding to me and I wish more people knew this.</p>



<p>I'm grateful that I have had the opportunity to visit farms over the years because of what I do here on The Little Kitchen. From Maryland to Iowa, to Idaho to California and Minnesota and more, I always find it so awe-inspiring when I meet a farmer.</p>



<p>All of the farmers I have met care about these things:</p>



<ul class="wp-block-list"><li>sustainability &#8211; actually farmers practiced sustainability even before it became a buzz word. Why? Because they care about leaving the land to the next generation and beyond so they can raise more crops and livestock on that same land. </li><li>most farms I have visited span generations, that means the farms have been in the family for generations. It's all in the family!</li><li>profitability &#8211; oh my goodness, I know this might sound funny but it needs to be profitable. Think about any business that is run, if it doesn't turn a profit and it's not sustainable for the people who run it, it will go out of business. The same thing can happen with farms. Economics are also a key part of sustainability.</li><li>they care about what they grow because they feed it to their children. Farmers often live right next to or right on the land they are farming. What they use in the soil and what they spray on the crops needs to be safe for their kids too.</li></ul>



<p>Sustainability is a way of life for farmers.</p>

<h2 class="wp-block-heading">Facts about Soybeans</h2>



<ul class="wp-block-list"><li>Edamame is a green soybean, harvested while they are still unripe.</li><li>Edamame is usually served steamed.</li><li>Yellow soybeans are dried soybeans.</li><li>Soybeans are nutrient dense and is a sustainable crop.</li><li>Soybeans are 80% meal and 20% oil.</li><li>The oil is used to make what we know as vegetable oil. But it's also used as a biofuel.</li><li>97% of the meal from soybeans are used to feed animals like pigs and chickens on farms.</li><li>The rest of the 3% are used in food, such as, edamame, tofu, soy sauce and soy milk.</li></ul>



<p>I'm Vietnamese-American and I grew up eating tofu and soy sauce. Some people think that tofu is just for vegetarians and vegans but that's not true. I love tofu and I'm a meat eater.</p>



<p>My Mom would often cook tofu along with meat in the same dish. Of course, I use soy sauce in a lot of my cooking and I'm always using it at sushi restaurants. And I love that I can easily find edamame at my grocery store in the freezer section.</p>



<h2 class="wp-block-heading" id="h-how-to-make-a-tofu-noodle-bowl">How to Make a Tofu Noodle Bowl</h2>



<p>This tofu noodle bowl reminds me of a Vietnamese spring roll but all in a bowl, complete with the peanut sauce!</p>

<p>Press the tofu to remove excess moisture.</p>

<p>After pressing it, you can see the liquid that's removed!</p>

<p>Dry it with a paper towel and then cut into cubes. Then, mix it in your cornstarch mixture.</p>

<p>Follow the instructions on the frozen edamame to prepare it in the microwave. I love how fast and easy it is to prepare!</p>

<p>Prep all of your veggies just like you're about to make a spring roll. Make your peanut dressing which is similar to my Mom's <a href="https://www.thelittlekitchen.net/peanut-sauce/" target="_blank" rel="noreferrer noopener">peanut sauce recipe</a> but I tweaked it so it's more like a salad dressing.</p>

<p>Banh mi sliders are just little mini banh mis! The lemongrass chicken is super flavorful and just like how my Vietnamese mom makes it! I can't wait for you to try this!</p>



<h2 class="wp-block-heading" id="h-what-is-a-banh-mi">What is a banh mi?</h2>



<p>Did you know that banh mi translates to bread in Vietnamese? I see the words banh mi sandwich on menus all the time and it makes me chuckle out loud. Because they are literally saying bread sandwich. Doesn't that make you laugh too?</p>



<p>Banh mi is usually a baguette with Vietnamese cold cuts along with a butter mayo or even a pâté spread along with sliced cucumber, picked vegetables, cilantro, and sliced jalapeño on top.</p>

<h2 class="wp-block-heading" id="h-what-is-a-banh-mi-slider">What is a banh mi slider?</h2>



<p>A banh mi slider is just a mini version of a banh mi (sandwich haha) and to make this recipe super easy, I'm using <a href="https://rhodesbakenserv.com/product/artisan-french-rolls/" target="_blank" rel="noreferrer noopener nofollow">Rhodes Warm & Serve Artisan French Rolls</a>. They warm up in the oven so quickly and they are the perfect rolls to make banh mi sliders.</p>

<p>We can talk about how much I love bread until the cows come home. But I do need to tell you how obsessed I am with these Rhodes Warm & Serve Artisan French Rolls. They are sooo good!</p>



<p>You can find these Rhodes Warm & Serve Rolls in the freezer section at Walmart and Publix.</p>



<p>They heat up in the oven fairly and on the back of the bag it says if you like softer tops on the rolls, then you want to brush on melted butter. You definitely want to do that for this recipe!</p>



<h2 class="wp-block-heading">How to make chicken banh mi sliders</h2>

<p>First, you're making the quick pickled carrots and daikon and putting it in the refrigerator. I'm excited to say that these is my Mom's recipe and it's EASY to make!</p>

<p>Prep the chicken and then add the marinade ingredients:  garlic, oyster sauce, sesame oil, lemongrass, salt, and pepper. Mix together to make sure the chicken is completely covered and set aside for 10 to 15 minutes.</p>

<p>Heat up the skillet and then cook the chicken on each side for 5 to 7 minutes.</p>

<p>After you get a nice sear on both sides, I put the pan in the oven for a few minutes to ensure the chicken is cooked all the way through. You may need to have it stay in the oven longer if your chicken thighs are pretty thick.</p>

<p>Now it's time for those buttered rolls to go into the oven.</p>

<p>Always let meat rest before cutting. I usually let it rest 6 to 10 minutes.</p>

<p>Now set up your banh mi slider making station. So it's easy to assemble.</p>

<p>Once they come out of the oven, I let them cool for a few minutes and then slice them in half but not all the way!</p>

Add carrots and daikon and cover and set aside in the refrigerator for at least 2 hours.</span></div></li><li id="wprm-recipe-34061-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Heat oven to 375° F.</span></div></li><li id="wprm-recipe-34061-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Trim fat off chicken thighs. Use a fork to poke holes on each side of each piece of chicken thigh. Cook chicken on medium high for 5 to 7 minutes on each side.</span></div></li><li id="wprm-recipe-34061-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place pan with chicken in the oven for 4 to 6 minutes. Remove the chicken from the oven and the pan and place on a clean plate. Allow the chicken to rest for 6 to 8 minutes before cutting into it.</span></div></li><li id="wprm-recipe-34061-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Lower oven to 350 degrees. <p>It's actually really really easy to make pizza using frozen dough. All you have to do is defrost it and roll it out and bake in an outdoor pizza oven or in the oven in your kitchen!</p>

<p> Just take one loaf of Rhodes Bake n Serve White Bread and put it inside a plastic zip-top and allow to defrost for a couple of hours on your kitchen counter.</p>

<p>Once the frozen dough has defrosted, cut into two or three pieces and roll each piece into a ball. You're going to want to let this dough sit for about another hour.</p>

<p>It's a good idea to keep the shrimp tails on so you have something to hold onto when eating them. If you'd rather just use the toothpick that was used to hold the shrimp and bacon together, you can remove the tails. This also prevents you from having a plate of piled-up shrimp tails on the counter.</p>

<p>Air fryer bacon wrapped shrimp are delicious little bites of salty, shrimpy goodness. Here are some tips and variations that you’ll find useful in making them.&nbsp;</p>



<ul class="wp-block-list"><li>These shrimp are wrapped in bacon and then put in the air fryer in one seamless step. Other bacon wrapped shrimp recipes say to cook it in two steps. Make sure the shrimp don’t overcook by slightly cooking the bacon before wrapping the shrimp and then finish cooking in the air fryer. Even though this is an extra step, it will make sure the shrimp are perfectly cooked.&nbsp;</li><li>You can wrap bacon around all kinds of different foods. Some great options are meatloaf, dates, jalapenos, and asparagus.&nbsp;</li><li>This recipe uses the air fryer but there are other cooking methods you can use. Grilled bacon wrapped shrimp have a smoky flavor or you can bake them in the oven if the grill isn’t an option.</li></ul>

<p><strong>Wrap the shrimp:</strong> Wrap one-third piece of bacon around one piece of shrimp and secure it with a toothpick. Brush all the shrimp with the glaze.</p>



<p><strong>Preheat the air fryer:</strong> Heat the air fryer so the shrimp are ready to go in when you're done brushing with the glaze.</p>

<h2 class="wp-block-heading" id="h-how-to-add-the-heart-shaped-thumbprint-in-these-thumbprint-cookies">How to add the heart-shaped thumbprint in these thumbprint cookies</h2>



<p>Use the end of a curved butter knife to make the heart shape. Spray it with baking spray if needed. Place the knife standing up to make the left side of the heart and then the other side.</p>

<p>I find that if you let the dough balls sit for a few minutes after rolling them into balls, it takes less baking spray.</p>

Using an electric hand mixer, cream the sugars and butter together until light and fluffy. Add egg and vanilla extract and continue mixing until completely combined.</span></div></li><li id="wprm-recipe-32472-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add half of the flour mixture to the butter mixture, mix with a rubber spatula being careful to not over mix. Add the remaining flour and mix. You&#39;ll notice a cookie dough will form.</span></div></li><li id="wprm-recipe-32472-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Use a small cookie scoop (2 teaspoon size), scoop the dough and roll into a ball using your hands. Place on a silicon mat lined or parchment paper-lined cookie sheet, about 1 inch apart. </span></div></li><li id="wprm-recipe-32472-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Use the end of a clean, rounded butter knife to make the heart-shaped “thumbprint” on each cookie. Add about 1/4 teaspoon of jam or marmalade to each cookie. </span></div></li><li id="wprm-recipe-32472-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Bake for 10 to 11 minutes at 350°F. Place the cookies on a cooling rack. </span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Make the glaze</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-32472-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Whisk the glaze ingredients together in a small mixing bowl.</span></div></li><li id="wprm-recipe-32472-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">You can use a spoon or you can add glaze into a zippered plastic bag and cut out a very small hole in one of the corners of the bag.</span></div></li><li id="wprm-recipe-32472-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Drizzle the glaze over the cookies to your liking.</span></div></li></ul></div></div>

<p>I’m so excited to participate in this Valentine’s event (again). This is the sixth year of our event and we want to continue to make a difference in the fight against pediatric cancer.</p>



<p>Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved.</p>



<p>And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!</p>
