Kale and White Bean Chicken Soup

I don't know the exact measurements since I never really measure anything so here's as close as I can approximate.

2 chicken breasts
1 yellow onion
6 cloves of garlic
2 cans white beans
1 bundle lacinato kale
two big handfuls of baby carrots
salt, pepper, fresh thyme
maybe around 6 cups of chicken broth?
sploosh of olive oil
small scoop of duck fat

I chopped the boobs into nice bite sized chunks and tossed them into my hot cast iron dutch oven with some olive oil. I remembered I had some duck fat in the freezer so I added that to the pan and covered the chicken with salt and fresh cracked pepper and let it brown. If you don't have any, don't worry! Maybe use a touch of butter but just olive oil is fine.

I added the chopped onion. I sliced all of the garlic and left it in fairly big pieces before tossing it in the pot. I roughly cut the baby carrots into chunks and added those. Stripped the stems and ribs from the kale and cut them up. Is chiffonade a verb or an adjective? Whichever it is, I did it to the kale leaves and tossed them in the pot.

I covered the whole mess in chicken broth. I had some homemade but it wasn't quite enough so I had to supplement with a Knorr Chicken Stock tub and water. I really like these things. I bought some on a whim and they've been pretty useful, especially for my saffron rice. Hmm... I guess one of these days I'm just going to have to compile a cookbook....

Anyhow, back to the soup.

I rinsed two cans of white beans and added them to the pot. Turned down the heat and let simmer with a little more salt and some fresh thyme.

I put the lid on and let the soup simmer while I made my favorite Pioneer Woman recipe. Her Buttered Rosemary Rolls in a cast iron skillet. I love any excuse to make these babies.

I was tempted to add a little cream to the stock but my friend was having tummy troubles so I tried to make something gentle and soothing. I might give it another shot some time with a dab of cream but otherwise I WILL be making this soup again. Ira loved it. The kale took on a texture that was similar to seaweed in a miso soup. So healthy and fall like. I love this time of year and making soups. Now that it is almost officially Autumn I will have to make and post pictures of my stuffed squash (or pumpkin) dish. And roasted butternut squash soup. And beet salad... and cassoulet....

Another Day

I've been updating my Amazon Wishlist and trying not to worry too much that Ira's bank account is overdrawn again. I've been working enough to keep myself afloat but it's hard constantly thinking of the two of us and never having enough left over for anything fun. At least I had Vegas. I'll still be riding that high for a while.

My skin infection feels like it's trying to come back. Having to go back to the doctor again is just not something I want to worry about right now.

Since it's Friday we'll probably relax at home after work. We'll make dinner and play some board games or watch TV and wait for another tomorrow to come. I've got a good book that I'm working on.

We've almost made it through another day.
