Hi lovelies! Friday is here! It must've been a great week, because I can hardly remember what I did. Besides packing, spending the day on an elementary field trip and shopping for Father's Day (did you catch this???), I'm wondering where the time went.

One task I did finally complete was setting up my Instagram account (I've added it under "Stay Connected" in the right sidebar). Our trip to Spain was my inspiration, but I can't wait to begin sharing more of life through my eyes. Over the next couple of weeks, I hope you'll follow me (on Instagram) and our adventure through Barcelona, Madrid and everywhere in between.

The Secret to Moist Chicken Breast is.......?

Chicken is in constant rotation at our dinner table. Grilled chicken. Chicken stir-fry. Roasted chicken. Marinated chicken kebabs. Even with a strong marinade or a flavorful dry rub, grilled/roasted/baked chicken breast can be dry, slightly stringy and subsequently, not edible.

But, I hold the secret to moist chicken breast EVERY TIME! Drumroll please......the key is a salt brine! Soaking the chicken breast in a basic salt brine for a couple of hours, helps the meat to retain moisture. And moisture, is the key to delicious chicken.

BASIC SALT BRINE (for 2-3 chicken breasts)

4 cups of water
2 tablespoons of kosher salt

In a large bowl, dissolve the salt in the water. Place chicken in bowl, cover and refrigerate for no more than 3 hours (the chicken will taste too salty if left in much longer). Rinse chicken and marinade as usual.

A week from today, we will be en route to Spain. Admittedly, I am already dreaming about relaxing by a pool (or perhaps the Mediterranean), and enjoying some mental "downtime."

Lots to do between now and then. Packing. Researching restaurants, shops, bars, activities for kids, etc. A busy weekend ahead, for sure.

Seeking Inspiration

Lately, I've felt a bit depleted of inspiration. I am in desperate need of some creative refueling. Fortunately, inspiration is everywhere, and the creative universe is answering my plea (through sites like Pinterest and various online magazines).

I spent some time sorting through my archives of artistic projects and found several that rejuvenated my creativity.

1. This Shibori Tie-Dye project is so on trend right now. Dreaming of a Shibori summer tablecloth.

2. Studded Sandals. Ummmm.....yes, please.

3. DIY Terrarium. Been on my creative "to do" list for some time. With a guide this simple, I really have no reason to delay.

4. Custom Matchbox. Paired with a sweet candle. The perfect favor for a summer al fresco party.

5. Mini Travel Album. Possibly the cutest photo album EVER! Love the possibilities.

6. This Fuchsia and Black Painting is so me! A definite DIY to add to my summer projects.

Summer in Seattle

Summer in Seattle is slightly unpredictable. When you wake up with the sun beaming through your windows and fall asleep with a warm breeze in the air -- Seattle may just be the best city on earth. Come July, when the weather forecast calls for consistent rain however, you think otherwise (and begin planning for weekend getaways to warmer temperatures).

With the hope that the sun will be more permanent than the dismal days of rain, plans for the perfect summer have begun. With the help of Bing, I have been exploring every type of sunny day activity. If the sun is on our side, this summer will be like no other. From lazy rides through the park to bargaining at the largest flea market Seattle has ever seen; and everything in between. Activities to engage our senses and to satisfy our foodie palates.

Lather on the sunscreen. Gather your summer necessities (mine above: Gap scarf (similar), Jambox, Seattle magazine, Dolce Vita sandals (similar), hat, glasses, towel, etc). Summer in Seattle is going to fantastic!

WOODINVILLE WINE COUNTRY

Novelty Hill Winery

Located 30 minutes from Seattle, Woodinville is home to over 90 wineries. Plan a visit with friends and rent a bus for transportation between wineries. Or, pick one favorite winery and relax with a bottle at their tasting bar. Either way, end the perfect day of tastings at the Hollywood Tavern, an all-American roadside drinking spot, with an outdoor fire pit and delicious bites.

From July 4th through August 16th, Woodinville hosts several events, including a BYOG Wine & Beer Garden. Bring your own glass and enjoy tastings from local wineries and breweries.

EXPLORING WEST SEATTLE

Alki Beach on West Seattle

With beaches along Elliot Bay and Puget Sound, West Seattle is the ideal destination for a sunny day adventure. Personally, every visit to West Seattle means a visit to Bakery Nouveau (my recommendation is the Double Layer Chocolate Almond Croissant). After indulging at the bakery, head to Lincoln Park, where there is a saltwater pool and miles of trails for biking and walking. With a little energy to spare, take some time to explore the Junction. Some of my favorites spots are, Capers, Clementine's and Click Design that Fits. No West Seattle visit is complete without a delicious (and romantic) meal at La Rustica. The perfect ending to a perfect day!

WEEKDAY VISIT TO DOWNTOWN SEATTLE

Call in sick to work on the first Thursday of the month. Trust me, it's worth it.

Great Wheel

Start your day with a ride on the Great Wheel (unless you're afraid of heights, then skip this one). Enjoy the waterfront restaurants and shops. Then walk a few blocks to a neighborhood receiving a lot of artisan and high-end retail attention -- Pioneer Square.

A few of my favorite spots are -- The London Plane (shop/grab n' go eatery), E. Smith Mercantile and Momo (a few blocks away from the center of Pioneer Square, but still worth the walk).

On the first Thursday of every month, Pioneer Square hosts an art walk. Stroll through gorgeous galleries of paintings, blown glass, etc. Seen enough art? Drop by Radici (owned by the family of Cassandra Lavalle of coco + kelley), Bar Sajor, or any of the other delightful eateries in the neighborhood, before heading to the Summer at Seattle Art Museum outdoor event at the Olympic Sculpture Park (July-August, Thursdays, 6-9pm) to enjoy some music and dancing.

SUNDAY FUNDAY

During the summer months in Seattle, a visit to a local farmer's market is a must! And, for me, the Ballard Farmer's Market on Sunday has it all.

Alvarez Sugar Snap Peas at Ballard Farmer's Market

Pick up some fresh produce, cheese and a fresh baguette, then wander the streets of Ballard's eclectic neighborhood. It's Sunday, so slow your pace and enjoy the scenery (and social scene) that Ballard is best known for. Pop into a few of my favorite shops: Souvenir, Lucca Great Finds, Ketch, Horseshoe, Velouria and for a tasty, chocolatey, treat at Hotcakes (where you can purchase AMAZING smoked chocolate chips).

Right before sunset, race over to Ray's Boathouse (a long-time Seattle restaurant establishment) to enjoy the view, some fish n' chips and a glass of my favorite rose prosecco.

OUTDOOR DINING

The Pink Door

Warm days in Seattle usually mean equally gorgeous evenings. There is no better place to enjoy the warmth of a Seattle evening, then on the deck or outdoor patio of a local restaurant. Here are a just a few worth noting (however, a quick search on Bing will lead you to many others): The Pink Door, Westward Tavern, Revel, Ray's Boathouse and Serafina.

With a simple, white-on-white ensemble, less (color) is definitely more. Such an outfit can be either refined or laid back and casual. But in either case, all white on a sunny day, is perfection. The combination of a white tee with equally bright white cut-offs. The more thoughtful ensemble of a white button down, paired with a white blazer and skinny white denim. An all white suit with neutral heels. Accessible at any budget and in any style. A clean, fresh look, perfect for an afternoon of shopping with friends or for a more formal occasion.

Throw a white blazer (collar, popped) over the combination of the following easy pieces and accent with a simple necklace or belt, and you are ready to go!

For the Love of S'Mores

The ingredients of a s'more are such: A perfectly roasted, golden-tipped marshmallow. Melted chocolate, oozing from the sides. Both, sandwiched by a crisp outer layer.

The s'more touches on all of the right notes -- sweetness and crunch. If all I knew about s'mores was the medley of graham crackers, marshmallows and Hershey chocolate, I'd be quite happy. Such a perfect treat needs no deviation. Except for maybe a salted chocolate chip cookie and the addition of caramel.

SALTED CHOCOLATE CHIP COOKIE & CARAMEL S'MORE

homemade chocolate chip cookies with fleur de sel (or another finishing salt)
marshmallows
caramel squares (or a Caramelo candy bar is also DELICIOUS!!!)

Sandwich, a roasted marshmallow and caramel square, between two chewy, dense chocolate chip cookies. The heat of the marshmallow slowly melts the caramel. Paired with the salty bite of the cookie. Pure decadence.

Truffled Roast Almonds with Rosemary

I've been experimenting with truffle oil lately. Mainly with snacks. Atop popcorn. Poured over edamame (and then sprinkled with black sesame seeds). Drizzled on warm kettle chips. Blended in a crudite dip.

Most commercial truffle oils are an infusion of olive oil and the "aroma" of a truffle. Opinions quite vary on this topic. The taste is synthetic. Or, the oil is "not principally derived from truffles." My palate is not that discerning, and given the nearly $2000/pound market value of white truffles, I will probably keep to the grocery version of the black truffle oil.

Purchased online (on various sites; such as here and here) or at some grocery stores (I purchased mine at Whole Foods), this rich and aromatic oil pairs perfectly with delicate recipes, such as eggs and asparagus, or more robust dishes, like macaroni and cheese.

Yesterday, with a glass of wine in hand and the Seattle sun in my face, I noshed on these (enhanced with truffle oil, of course):

TRUFFLED ROAST ALMONDS WITH ROSEMARY

1 cup raw almonds

2 tablespoons chopped rosemary (plus additional for finishing)

2 tablespoons olive oil

1 teaspoon fleur de sel

2 teaspoons truffle oil

ONE: Preheat oven to 350 degrees.

TWO: In a bowl, combine the almonds, rosemary and olive oil. Pour onto an aluminum foil lined baking sheet. Bake for 10 minutes. Allow to cool slightly.

THREE: While almonds are still on the baking sheet, drizzle with truffle oil, a few chopped sprigs of rosemary and fleur de sel. Stir and pour into your serving bowl and enjoy.

My style leans more towards neutral modern classics than soft feminine motifs. But, I have to admit, I am quite taken by this season's floral trends. Specifically, the tropical leaf pattern. Even on more relaxed pieces, this vibrant design makes a statement.

The countdown to Spain has begun. 4 weeks from tomorrow!

In preparation, I have begun researching apps to best serve our needs while abroad. The more you read, the more you know, right? To suggest the layers of information available is overwhelming, would be quite understated. From the highest rated restaurants with kids to the best walking streets for shopping. From the top city map apps to the most efficient transportation routes. Requiring a global data plan (cellular). Free without data. I perhaps am more confused now than I was before, but at the very least, I now know how to ask (in Spanish) for directions to the bathroom -- On és el levabo?

This list is by no means complete or thoroughly vetted, but at least it's a start.

1. MetrO: Advises on the most efficient route via subway, bus, railway (depending on the city). Once the city is installed, no network data is required. Free.

2. City Maps 2Go Pro. Easy to use offline city maps with popular landmarks and insider tips. Free.

3. iStone Travel Translation. Translation support for over 300 daily global phrases. From asking for directions to greeting a new friend. No data connection is required. Free.

4. minube. Based on recommendations from other travelers, discover the best places to eat, shop, stay, etc. Free.

5. Triposo Spain Travel Guide. Complete city guides for major global cities. Bars, pubs and nightlife section. Eating out section. Free with no data required.

6. Museo del Prado. Official app for the famous Madrid museum. Added kid features such as a museum treasure hunt, to encourage interaction with and appreciation for the works of art.

Get the Look: Rooftop Lounge at Ace Hotel LA

Outdoor entertaining season has arrived in Seattle (at least for this week)! We furnished our patio last weekend, but like any space in our home, it never seems quite complete. As if it needs one more accessory or the arrangement needs a minor tweak.

In the past, I have sought design inspiration from the suite of Ace Hotels. I love their industrial design approach and nod to mid-century. Their designs fully engage the idea of "hi/lo." Within each hotel room, raw metal features (oftentimes re-purposed) pair perfectly with softer touches of a Pendelton blanket or bright splashes of art on the wall.

Their outdoor living spaces are no exception. At their newest venture, Ace Hotel LA, concrete walls and live-edge wood tables and stools compliment the patterned design of the awning, the reclaimed kilim-wrapped pillows and army green canvas seat pads.

Taking inspiration from this cool outdoor vibe, I designed a patio with rustic masculine touches and natural hues of orange and green.

The dining area pairs a modern Parsons concrete table with a re-purposed DIY fence post bench and orange metal cubed stools. Reminiscent of Ace's Navajo-inspired awning, the space is protected with a simple black and cream standing umbrella. A bright lemon tree potted in a rusted metal pot completes this dining area.

A second, more conversational space, grounded by a multi-color kilim outdoor rug, has been added. A natural canvas butterfly seat (also a nod to Ace's appreciation of mid-century furniture) paired with a vinyl and powdered coated steel "hoop" chair rounds out this space. A green metal coffee table, accessorized with a set of orange ceramic lanterns adds to the industrial and natural touches of this patio.

Faux Tats

I can't say that I've ever truly wanted a tattoo. In my life, there has never been an image with such purpose and meaning that I wanted so permanently represented on my body. That's not to say I don't respect the art and design of tattoos. In fact, I find many (more simple) tattoos quite beautiful.

Temporary tattoos (faux tats) are the perfect alternative to the more permanent branding option. And, they are no longer just for the kids (although there are some fantastic and modern designs for kids at present). Last weekend, I admired the metallic and fresh, temporary tats on a friend -- the super talented stylist, Tiffany Wendel. And, as I do, have been obsessing about them ever since.

I'm partial to the metallic armbands. But a quick online search led me to the bright friendship bracelets. The beachy, bohemian motifs. The amusing hand puppets for kids. All temporary and all super fun.

I think I first became interested in typography as an interior accent, while watching Home by Novogratz on HGTV. Their creative and modern use of letters and fonts in their projects, always struck me as super cool. Walls accessorized with light boxes, spelling out a name or phrase. Vintage marquee letters arbitrarily leaned up against a shelf. A simple design detail whose impact can be quite understated or equally significant.

From simple to more decorative, here are a few examples of typography in the home:

Baked Polenta Chickpea Fries with Dill Caper Sauce

It's hard to eat a hamburger without also enjoying some fries. Crispy, salty dippers. Tastiest when dunked in a perfectly seasoned sauce (my fave is tartar).

During the week, we try and keep to healthy eating habits. French fries just don't qualify. But a turkey burger can not stand alone on a dinner plate. It begs for a crispy accompaniment.

I have made the following recipe in several variations. The polenta contributes to the crisp texture, while the chickpea flour adds a subtle nuttiness and a wonderful Mediterranean note. Baked at a high temperature, and to crunchy perfection (with a creamy center), these delicious dippers are the ideal alternative to french fries. Dare I say.....even better!

BAKED POLENTA AND CHICKPEA FRIES WITH DILL CAPER SAUCE
(Printable Recipe Card)

1 cup polenta
1/2 cup garbanzo bean flour (also known as "chickpea flour"; sold at natural food stores)
zest of one lemon
1 tablespoon dried herbs (herbes de provence, thyme, oregano, fennel, marjoram, basil, etc)
1 teaspoon salt

DILL CAPER SAUCE

1 cup mayonnaise
2 tablespoons tahini
2 tablespoons chopped capers
1 tablespoon chopped dill

2 tablespoons olive oil
salt

ONE: In a large pot, boil 6 cups of water. Once water comes to a boil, pour in the polenta and garbanzo bean flour.
TWO: With a whisk, stir until the polenta and flour have been incorporated and there are no longer lumps. Cover and continue to cook (stirring occasionally) for about 7-8 minutes, or until the mixture has fully thickened.
THREE: Add the zest, herbs and salt and stir to combine.
FOUR: Pour and spread into a 9x13 baking dish. Allow to cool for a few minutes. Cover and refrigerate for at least 2 hours, until fully set.
FIVE: While the polenta/chickpea flour mixture sets, combine the ingredients for the sauce and place aside in a bowl.
SIX: Preheat oven to 450 degrees.
SEVEN: Unmold polenta/chickpea flour mixture and cut into sticks. Place in a single layer on a baking sheet. Drizzle olive oil over fries and sprinkle with salt.
EIGHT: After 20 minutes, when you notice the bottoms forming a golden crust, flip over. Bake for another 15-20 minutes, until the fries are uniformly crisp. Sprinkle with additional salt and eat immediately.

This week was such a great week. The sun came out in Seattle.....in full force. In a city that infrequently experiences such heat, smiles seemed grander and most people were simply.....happy. I wish it could last, but alas, the rain returns tomorrow.

The short lived glory of the sun inspired some Spring shopping for me. Nothing as stunning though, as this Edie Parker clutch held (in the image above) by it's designer, Brett Heyman. If only......

"Hands On" DIY Picnic Blanket

A Spring picnic is perfect on any given weekend. But for Mother's Day, a lazy day picnic in the park, sipping wine, nibbling on appetizers, and enjoying the company of friends and family, sounds heavenly.

Monday's post listed the keys to a perfectly planned picnic. A modern basket, with classic touches. Acrylic glasses for wine. A simple arrangement of flowers. Delicious food. A beautiful and functional blanket; durable enough for food and drinks and comfortable enough for lounging.

Celebrate Mom (or a friend, wife, etc) on Mother's Day with this special gift:

"HANDS ON" PICNIC BLANKET

Poly backed canvas dropcloth (found at any hardware store -- I used a 5x5)

paint of your choice (I used 2 samples of Glidden from Home Depot and added some white to the lightest shade to create a gradient, 3-shade design on the blanket)

paint brush

painter's tape

set of hands (I used my kids' hands)

ONE: Take the dropcloth out of it's package and place in a dryer with a damp cloth for 5 minutes, until the creases have disappeared.

TWO: Create a pattern with painter's tape. I followed a swirl design and placed pieces of tape on where I wanted the imprint.

**I found the best imprints were made by swiping the paint on my kids' hands with a paintbrush. Feel free to experiment with a roller, or having them place their hands in the paint itself.

THREE: Place painted hand on dropcloth and lift hand straight up.

**If your design includes an ombre pattern, start with the lightest shade, and gradually transition to your darkest.

FOUR: Continue pattern and allow to completely dry.

A Mother's Day Picnic

In my experiences, Mother's Day can go one of two ways. The day's events can be grand and elaborate. Or, the arrangement can be more casual. Slightly less planned. Spent with family and friends -- honoring "togetherness" rather than just "mom."

This year, we are (hopefully) taking the latter approach and celebrating in a simple manner. Weather permitting, we will be toasting a fruity Prosecco (my fave) and enjoying a platter of savory and sweet bites, while picnicking in the park. Enjoying each other's company. Taking a moment to really appreciate what life is all about.

A simple picnic can be beautiful in both scenery and packing necessities. Here are a few lovely items to complete a perfectly planned picnic:

I have a friend who I love dearly. She makes me smile without saying a word. I miss her when I don't I see her. Our busy "mom" schedules interfere with us getting together as often as I would like.

A couple of weeks ago, with a fleeting moment between projects, I sent her a quick text. A simple, three word message -- "Hi. Just hi." There was depth to the text (even though it was so brief). She knew what it meant.

I know I've been absent this week from the blog. I took a much needed "blog break." My creativity was waning and, to be honest, I was 100% void of inspiration and ideas. Next week is a new week. Expect great things. I am back!

So, just wanted to say "hi" and wish you a great weekend.

The week after vacation is always so tough. Instead of lazy mornings, the alarm screams at 6:30. Goodbye to the mid-day drinks. Hello green smoothies. Lounging poolside is replaced by extreme exercise (to counteract the mid-day drinks all week long).

That said, on Monday morning, I jump started my week with a relaxed mind and a fresh perspective. This was a good week! How was it for you?

What's for Lunch (and Dinner)? Mediterranean Socca Wrap

My husband travels a bit. In between travel days, he attends corporate meetings that take him away from dinners at home. I, unlike many, revel in making dinner for one. When preparing a meal for myself, I immediately turn to healthy Mediterranean ingredients. Olives. Tahini (my favorite). Chickpeas. Lemon. My husband is not a picky eater, but given the choice, these are not the ingredients he would choose as the foundation for a meal.

Earlier this week I pinned this recipe for a Chickpea Crepe. That recipe reminded me of David Lebovitz's Socca recipe. Which inspired the following homemade recipe. Which I've eaten for dinner, lunch....and possibly again for tonight's dinner.

Mediterranean Socca Wrap with Minted Chicken Salad and Tahini Lemon Vinaigrette

(serves one, with some leftovers for the next meal)

Socca (unleavened pancake or crepe)

1/4 cup garbonzo bean flour (found at Whole Foods Market and in most natural food departments)

1/4 cup + 2 tablespoons water

1/2 tablespoon olive oil

1/2 teaspoon herbes de provence

1/4 teaspoon fennel powder

1/4 teaspoon cumin

1/4 teaspoon salt

Minted Chicken Salad

1/4 cup leftover chicken (cut or shaved into small bite sized pieces)

1/2 cup thinly sliced romaine lettuce

1/4 cup grated carrots

4-5 chopped black olives (kalamata, oil cured, nicoise, etc.)

10 thinly sliced Persian cucumber rounds

5 mint leaves, chiffonade

Tahini Lemon Vinaigrette

1/4 cup extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon chopped thyme

1/4 teaspoon honey

1 tablespoon tahini

salt

ONE: Pour all of the Socca ingredients into a bowl. With a whisk, stir the batter until there are no lumps. The batter should be very thin (slightly thinner than pancake batter). Add a drip more water if necessary. Cover and keep at room temperature for an hour or so.
TWO: Heat oven to broil. Place a non-stick 10" pan into the oven while it preheats. Once the oven preheats, and your pan is screaming hot -- with a pot holder in one hand and your Socca batter in the other, pour enough batter into the pan to cover the bottom and swirl around (like you would a crepe).
THREE: Bake for 2 minutes, being careful not to allow the pancake to get too crisp on the edges. Flip over and bake for an additional minute. You want the pancake to be soft and flexible enough to wrap around the salad. Make additional pancakes with the remainder of your batter.
FOUR: Place a tortilla/pancake onto a piece of aluminum foil (with about a 2 inch border beyond the pancake itself).

FIVE: Pour ingredients for vinaigrette into a jar with a lid and shake until combined.

SIX: Add salad ingredients into a bowl and dress with vinaigrette.

SEVEN: Place a handful of salad into the center of the tortilla and wrap the tortilla and its ingredients over itself to form into a roll.

EIGHT: Roll the wrap with the aluminum foil, to create a tightly formed wrap. Unravel one end of the foil and enjoy!
