<p>Tasty Tuna Burgers! I came up with this meal because I wanted to incorporate more fish into my diet and some more protein.  This recipe is a great way to do both.  Also I am gluten and dairy free and that totally follows along with that as well. Sometimes I am hesitant to eat canned fish but I got this recipe idea in my head and I went ahead and tested it out anyway.  I was really surprised! It tasted really fresh and not fishy at all.  I wouldn’t recommend this meal as leftovers however.  Something about reheating it changes the taste.  I am such a huge fan of fresh food.</p>

<p>Ingredients</p>
<p>&nbsp;</p>
<p>1 can of tuna</p>
<p>1/3 cup of oat flour</p>
<p>1 egg</p>
<p>salt and pepper to taste</p>
<p>clove of garlic minced</p>
<p>half a Jalapeno minced</p>
<p>1/3 cup of cilantro chopped</p>
<p>drizzle of olive oil</p>
<p>avocado</p>
<p>green onions</p>
<p>&nbsp;</p>
<p>Instructions</p>
<p>Put first 7 ingredients into a bowl and mix together.  Form into 4 patties.  Preheat a nonstick frying pan with some olive oil.</p>
<p>Cook the tuna patties on each side till golden brown and cooked through. Serve with slices of avocado and chopped green onions on top.</p>
<p>Enjoy with your favorite side of vegetables to make a tasty meal.</p>

<p>Gluten Free, Dairy Free Italian Sausage Soup</p>
<p><span id="more-333"></span></p>
<p>Ingredients</p>
<p>1 pound Italian chicken sausage<br />
1 medium onion<br />
4 cups chicken broth<br />
2 small russet potatoes<br />
1 bunch kale<br />
1 cup canned coconut milk<br />
3 cloves of garlic<br />
pinch of crushed peppers</p>
<p>Instructions</p>
<ol>
<li>In a large pot cook the Italian sausage until cooked through. Chop up the medium onion and cook with the sausage until translucent.</li>
<li>Add the 4 cups of chicken broth and bring to a boil. Slice the potatoes and add to the pot. Cook until potatoes are done.</li>
<li>Chop up the kale into small pieces and mince the garlic and add to the pot. Cook until Kale is wilted.</li>
<li>Stir in the cup on coconut milk and add salt and pepper to taste. Add a pinch of crushed pepper and serve while warm.</li>

<p>Okay, so those steps really aren’t necessary to make this recipe, however my dad might tell you differently. My dad is legitimately obsessed with fishing. He is always going on fishing trips, and loves to go deep-sea fishing in California. The last trip he took, he actually caught something good! (Just kidding dad J) He reeled in a monster 30lb Tuna. According to him, it was quite the fighter. Upon returning home, he was kind enough to share his bounty with us. He also filled us in on his favorite way to prepare and cook it. I tweaked it a bit by turning it into kebabs with some yummy veggies. And wow! These kebabs are delicious! My family has had a huge influence on me, and a lot of the recipes I post reflect their input. Thanks dad for the inspiration! I was never super into fish, however these kebabs are totally to die for. I am slowly but surely expanding my taste for fish and other seafood. <p>Ingredients</p>
<p>1 pound tuna cut into 1 inch pieces<br />
1/4 cup orange juice<br />
1/4 cup lime juice<br />
1/4 cup olive oil<br />
Pinch of salt and pepper<br />
Mushrooms<br />
Red &amp; orange bell pepper cut into 1 inch pieces</p>
<p>Directions</p>
<p>1. Combine the orange juice, lime juice, olive oil and salt and pepper in a bowl to make the marinade. Add the pieces of tuna and marinade for 15 minutes.</p>
<p>2. Assemble the kabobs with tuna, bell pepper and mushrooms on each one.</p>
<p>3. Cook on hot grill 3-4 minutes on each side on medium low. Enjoy!</p>

<p>Grilled cheese sandwiches are so yummy! What&#8217;s better than warm toasty buttery bread with gooey melty cheese? These tasty sandwiches don&#8217;t really have the best reputation when it comes to healthy food. This recipe was my attempt to change that! Without changing that delicious taste of course. I packed this grilled cheese with some of the yummiest green things I could think of! My favorite part is the avocados. The way they soften and sort of melt as you cook the sandwich is just amazing. It&#8217;s so creamy and good! About 3 years ago I hadn&#8217;t really given avocados a good try. You know how you try some kind of food as a kid and you don&#8217;t like it and years go by and then you&#8217;re an adult and you still think you don&#8217;t like that particular food? Well, that&#8217;s what happened here. I was going through life thinking I didn&#8217;t like avocados when really I hadn&#8217;t ever given them a fair chance. Thanks to my husband for reintroducing them to me! My life is so much better with avocados in it. I hope everyone&#8217;s lives are better with this Green Vegetable Grilled Cheese!</p>

<p>Servings 1<br />
Ingredients<br />
2 slices Ezekiel bread<br />
1 tablespoon butter<br />
1 slice Monterey Jack cheese<br />
Small handful of Spinach<br />
3 Roma tomato slices<br />
1/4 Avocado sliced<br />
Salt and pepper to taste<br />
Small handful of Sprouts</p>
<p>&nbsp;</p>
<p>Directions<br />
1. Butter the Slices of Ezekiel bread on one side. Place one of the slices on a preheated pan on medium. Layer the the cheese, spinach, tomato, and avocado slices on top. Sprinkle with salt and pepper and place other slice of bread on top<br />
2. Cook until golden brown and cheese has melted and carefully flip. Cook until golden brown on the other side.<br />
3. Slightly open up the sandwich and place your sprouts inside. Serve and enjoy!</p>

It&#8217;s the thing I look forward to every day. Good food always makes my day better. Max on the other hand feels a little differently. Sometimes he tells me eating can be like a chore. He would rather continue with whatever he&#8217;s doing than stop and feed himself. Crazy I know! So when he tells me he really likes something I&#8217;ve made I know it must be good! I hope you enjoy these fajitas as much as Max and I did.</p>

<div>2 red bell pepper cut into slices</div>
<div>1 small onion cut into slices</div>

<div>Head of iceberg lettuce</div>

<div>1.  Heat up the olive oil in a large pan. Add sliced chicken and fajita seasoning. Cook till almost cooked through.</div>

<div>2. Add the sliced onions and sliced bell pepper. Cook till chicken is cooked through and onions and bell pepper have softened</div>

<div>3.  Wash lettuce thoroughly and pull leaves off to use as a tortilla. Make sure they are dry and place chicken mixture in the lettuce. Squeeze some lime juice on top and add a spoonful of guacamole. Enjoy!</div>

This recipe is great for seasoning any of your favorite Mexican dishes</div>

<p>Max and I recently went on vacation in California with his family at their time share. It was a much needed vacation. My favorite part was not working! We kept pretty busy doing lots of fun stuff like going to the beach, swimming, going to the farmers market, playing tennis and just spending lots of time with family. Before we even left on vacation I volunteered to make dinner for everyone one night. I wanted to make something that I thought everyone would enjoy. I decided to make chili! It turned out really great and luckily everyone enjoyed it. It&#8217;s delicious served with cheese on top and a corn muffin on the side. It was a pretty large crowd so I made a triple batch. Apparently I don&#8217;t know how to estimate that kind of stuff because we had a good amount of leftovers. We found some really cool ways to use them the next two days. For lunch the next day we made chilidogs. Delicious! And then the next day we made quesadillas with the chili. Also delicious! Some people even made a taco salad with chips crumbled on top. This chili is my new favorite thing.</p>

<p>Ingredients</p>
<p>1 pound grass fed ground beef<br />
1 onion chopped<br />
2 cloves garlic minced<br />
1 green bell pepper diced<br />
1/2 cup chicken broth<br />
1/2 cup frozen corn<br />
1 can black beans drained and rinsed<br />
1 can kidney beans drained and rinsed<br />
1 teaspoon salt<br />
1 teaspoon cumin<br />
2 teaspoons chili powder<br />
1/4 teaspoon cayenne pepper</p>
<p>Directions</p>
<ol>
<li>Cook ground beef in a large pot and drain excess fat.</li>
<li> Add onion and garlic and cook till just translucent.</li>
<li>Add salt, cumin, chili powder and cayenne and cook for 1 minute.</li>
<li>Add corn, black beans, kidney beans, can of diced tomatoes, broth and green bell pepper.</li>
<li>Cook on medium low for 15 minutes or until the green bell pepper is cooked</li>

<p>Growing up my mom always made really yummy stir-fry. When I was in high school she signed up for these monthly food boxes that would have all different kinds of fresh produce and bread and other food things. She would have to wake up really early in the morning to go pick them up. Sometimes I would go with her. I loved seeing all the different fruit and veggies she would get. Sometimes she would receive produce that she didn&#8217;t know what to do with. Stuff we had never seen or heard of before. One time she got Bok Choy and Napa cabbage. We weren&#8217;t super familiar with these items but she ended up using them to make a delicious stir-fry that was super green and delicious. This recipe is inspired by my mom’s stir-fry. As I&#8217;ve learned to cook I have added some different ingredients and come up with my own stir-fry. Something I love about stir-fry is it&#8217;s an easy dinner with tons of yummy vegetables. I love easy and delicious healthy food!<br />

Ingredients</p>
<p>8 napa cabbage leaves chopped<br />
7 Bok Choy leaves chopped<br />
1 tablespoon olive oil<br />
2 chicken breasts cut into bite sized pieces<br />
2 carrots sliced<br />
1 red bell pepper diced<br />
1 head of Broccoli cut into small pieces</p>
<p>Sauce<br />
2 cloves of garlic minced<br />
1/4 cup soy sauce<br />
1/8 cup rice wine vinegar<br />
1 tablespoon sesame oil<br />
1 tablespoon honey<br />
1 tablespoon cornstarch</p>
<p>Directions<br />
1. Heat up olive oil in medium sized wok. Add chicken and cook till cooked through. Move chicken over to a plate.</p>
<p>2.  Sauté carrots broccoli and bell pepper in remaining oil for 2-3 minutes and add Bok Choy and Napa cabbage and let cook for another 2 minutes till everything is tender.</p>
<p>3. While the vegetables are cooking whisk together the sauce ingredients.</p>
<p>4.  Add the cooked chicken. And sauce to the cooking vegetables and cook till the sauce has thickened a bit. About 3 minutes. Enjoy!</p>

<p>For a long time I wasn&#8217;t a huge fan of oatmeal. I kind of had to force myself to eat it. Not fun. Then I discovered the key ingredients to making it actually taste good!  This might not be the healthiest but everything in moderation right? It&#8217;s all about the salt and the butter! I always sweetened my oatmeal but I never thought that salt and butter would be the perfect thing to balance it out and really make it super tasty. This is the perfect bowl of oatmeal. It&#8217;s a little sweet and it&#8217;s got a little bit of crunch from the nuts and apple chunks.</p>

<p>Ingredients<br />
1 1/2 cups water<br />
1 cup oats<br />
1/2 heaping cup cut up apple chunks<br />
1/4 teaspoon salt<br />
1 tablespoon butter<br />
1/2 teaspoon cinnamon<br />
1/4 cup chopped walnuts<br />
2 tablespoons maple syrup</p>
<p>Directions</p>
<p>1. Add the water, oats, apple, and salt to a small pot and bring to a boil. Lower the heat to medium and simmer for 3-5 minutes till oats are cooked and apple is tender.</p>
<p>2.  Turn off the heat and add the butter, cinnamon, chopped walnuts and maple syrup. Mix together well until the butter is melted and serve.</p>

<p>Sometimes I just crave a good hamburger and nothing else will do. I LOVE this burger. I got the inspiration from my aunt Becky. She made these delicious burgers for everyone on Memorial Day and she told me there were bits of bacon crumbled up in the meat. I just about died when I heard that. She also put slices of avocado on top, but I prefer mashed avocado. So here is my take on this delicious burger.</p>

<p>Ingredients<br />
1/2 onion chopped<br />
1 tablespoon olive oil<br />
8 slices of cooked bacon<br />
2 cloves garlic<br />
Pinch of salt and pepper<br />
Hamburger buns<br />
1 pound grass fed beef</p>
<p>1 1/2 mashed avocados<br />
1/4 teaspoon salt<br />
1/4 teaspoon cumin<br />
Tomatoes sliced<br />
Sprouts</p>
<p>Directions</p>
<p>1. Cook the bacon in a pan until crispy. Let cook and crumble up in a medium bowl.</p>
<p>2. Dispose of bacon grease and wipe pan clean. Caramelize onion in olive oil. Add caramelized onions to bowl with bacon.</p>
<p>3. Add to the bowl the ground beef, minced garlic, pinch of salt and pepper. Mix together and form 4 patties. Cook on medium heat until desired doneness.</p>
<p>4. Mash avocado and mix in 1/8 teaspoon of salt and 1/4 teaspoon cumin.</p>
<p>5. Toast the buns on the pan and assemble the burgers with mashed avocado, tomatoes slices and sprouts.  Enjoy</p>
