<p>Grouper is a light flaky reef fish that is very popular in the gulf of Florida. It is also my personal favorite. The Florida Fish and Wildlife Conservation Commission <a href="http://myfwc.com/media/3812053/Quickchart.pdf" target="_blank">protect the fish</a> as certain species and sizes must be thrown back. Grouper can be served in sandwiches, nuggets and fillets. It is a pricey fillet and you may do a double take when you see the price, but it is well worth it. Shoppers should be careful they are buying real grouper. The <a href="http://www.freshfromfloridablog.com/2012/04/grouper-is-super-when-its-the-real-thing/" target="_blank">price should be over $13 per pound</a>. Anything less would be suspect.</p>
<p>This easy to prepare lemon zest recipe is a great way to prepare a home cooked meal for dinner. It can be served as a fillet or on a bun as a sandwich with french fries or steamed vegetables.</p>

<li class="instruction">Cook fish over medium heat on olive oil.</li>
<li class="instruction">Season with Old Bay seasoning and a splash of lemon juice.</li>
<li class="instruction">Cook both sides about 3 minutes until browned.</li>
<li class="instruction">Salt and pepper to taste.</li>
<li class="instruction">In a separate pan, heat 3 Tbsp. olive oil, butter, garlic, wine, lemon juice, rosemary and thyme.</li>
<li class="instruction">Brush sauce over grouper.</li>
<li class="instruction">Garnish with fresh vegetables</li>

<li class="instruction">Brown scallops in olive oil and butter until seared on both sides. It may take 2-3 minutes per side. Set Aside.</li>
<li class="instruction">In same pan, cook onions, pepper and cook for 3-4 minutes.</li>
<li class="instruction">Add egg noodles, kale, garlic, salt and pepper. Cook for 3-4 minutes.</li>
<li class="instruction">Add lemon juice.</li>
<li class="instruction">Service noodle mixture on a dish with scallops over the top.</li>

<ol>
<li class="instruction">Preheat oven to 400˚ and lay foil on two cookie sheets.</li>
<li class="instruction">Heat 2 spaghetti squash in microwave for 3 minutes.</li>
<li class="instruction">Slice in half, remove seeds and rub olive oil inside spaghetti squash.</li>
<li class="instruction">Slide top and bottom off pearl onions, large sweet onions onto onion rounds, sweet peppers lengthwise, zucchini in half and then lengthwise and slice 3 garlic bulbs in half, then slide off top and bottom.</li>
<li class="instruction">Pour 3 Tbsp. of olive oil over vegetables to coat. Mix around vegetables then sprinkle with 1 tsp of pepper, 1 tsp Italian seasoning, 1 tsp garlic powder.</li>
<li class="instruction">Rinse and pat dry 16 ounces of chickpeas and place on other cookie sheet with foil. Coat with 1 Tbsp. of olive oil.</li>
<li class="instruction">Sprinkle with pepper, Italian seasoning and garlic powder.</li>
<li class="instruction">Roast vegetables in oven for 45 minutes. Roast chickpeas for 25 minutes.</li>

<li class="instruction">Peel the shrimp.</li>
<li class="instruction">Mix the seasoning and flour together in a bowl.</li>
<li class="instruction">Add the shrimp to the seasoning and flour mixture.</li>
<li class="instruction">Chop the garlic.</li>
<li class="instruction">Get a small pot and melt the butter.</li>
<li class="instruction">Add the garlic and brown it for 30 seconds.</li>
<li class="instruction">Then add the hot sauce.</li>
<li class="instruction"><span class="s1">While you are making the buffalo sauce, add a little butter to a </span><span class="s1">large pan and once it is melted start sautéing the shrimp, about 1-2 </span><span class="s1">minutes each side until golden brown.</span></li>
