          Relay For Life is this weekend in Flagler Beach!   There are three ways you can help me with this cause. First, give me some money!   By that I mean donate to the American Cancer Society via Team TikiTender at http://main.acsevents.org/site/TR?pg=team&fr_id=37370&team_id=1038665.   Two, share this link with others in you circle.   Three, show up for the event Saturday night!   It is at Wadsworth Park, beginning at 4pm. Music by Old Haw Creek until 5:30.   Music by Two Thirds around 10pm. Drink Recipe: Smiling Amy

A semi regular customer was in over the weekend at the Tiki Bar. She initially ordered a margarita, then asked me to make her something with the bottle of Cruzan® Mango rum she spotted on the shelf. Since her first impulse was a margarita, stayed with the tart and came up with what we named the "Smiling Amy". I'm happy to add Amy to my list of personalized drinks because she is a Red Sox fan, which is the next best thing to being a Cubs fan!

1 oz Cruzan® Citrus rum
1 oz sour mix
splash grenadine
club soda to balance

Build over ice, garnish with a cherry, and watch Amy smile.

Today we celebrate National Margarita Day! For a change of pace, try one of my favorite margaritas, the Apple Pie Margarita.

Apple Pie Margarita
1 oz white tequila
1 oz DeKuyper® Sour Apple Pucker schnapps
1 1/2 oz apple juice
1 1/2 oz sweet and sour mix
cinnamon sugar
Rim a margarita glass with the cinnamon sugar and fill with ice. Shake all ingredients with ice and strain into glass. Sprinkle a little cinnamon-sugar on top. Yummy!

Snickerdoodle Shot
1 tbsp amaretto
1 tbsp Irish cream
1 tsp butterscotch schnapps
2 dashes cinnamon

In a shot glass, layer in order. Butterscotch schnapps, amaretto, 1 dash cinnamon, Irish cream. Top with the other dash of cinnamon. Enjoy.

1 oz irish cream
1/2 butterscotch liqueur

Have You Seen This Whale?

The Golden Lion Cafe is an official Right Whale watching spot. From December to April, the highly endangered North Atlantic Right Whale visits our coastal waters to calve. Whale spotters can be seen on our deck and all along Scenic A1A for unobstructed views of these beautiful creatures. We are proud to be part of this project!

The holidays are here in Flagler Beach! Crisp "winter" temperatures in the 50s, rope lights on palm trees, and skydiving Santa!

This weekend marks the official start of the holidays with our Holiday Parade, tree lighting, and music in the park!    A perfect chance to come over to the beach and enjoy all we have to offer.

Of course here at the Lion we celebrate everything. First day of December, sunset, Tuesday. You name it, we celebrate it! This weekend we will have great local music from Billy Bowers and Dug & Fill.    Happy Holidays!

Thanksgiving Drinks For Island Time Radio!

I am calling in to Island Time Radio Show tonight for my regular drinks feature. Tonight's call in will be from Toucan's Bar & Grill in Brunswick, GA.   Tune in at wbwc.com between 11:00-11:30 to hear me on the show.

Since Thanksgiving is right around the corner, I am mixing up some cocktails for the occasion.

Cranberry Margarita
1.5 oz tequila
2 oz sour mix
1 oz cranberry juice

Combine ingredients in a cocktail shaker half filled with ice. Shake, shake, shake! Pour over ice into your favorite margarita glass.     Also tastes yummy when disguised in a red dixie cup.

Cheesecake Martini
2 oz Absolut® Vanilia vodka
1 oz cranberry juice

Combine ingredients in a cocktail shaker half filled with ice. Shake, shake, shake! Strain into your favorite chilled martini glass. Can also be served over ice.

Pudding Shots
1/4 cup Kahlua® coffee liqueur
1/4 cup Bailey's® irish cream
1/4 cup vodka
8 ounce tub Cool Whip
5 oz box chocolate instant pudding

Mix all ingredients in a mixing bowl and pour into 14 plastic shot glasses.    Put into the freezer to set, then remove to the fridge a few hours before your party.

What a great weekend that was! We are so proud to have been a part of the 12th Annual Tommy Tant Memorial Surf Contest!   Congratulations to the winners and thank you all for coming to the Kickoff Celebration at the Lion on Friday night. Last weekend was a "chamber of commerce" weekend with blue skies, smiling faces, and surfers everywhere you looked!

It's here! It's here! The Beaujolais Nouveau is here!! We have been celebrating Beaujolais Night at the Golden Lion Cafe since 1994, so we get a little excited.

On Saturday, it will all Trop Rock all the time.   Local parrothead Jim Lamb will be here in the afternoon as part of the Phun Coast Parrothead Club's monthly social.   In the evening we will welcome Jeff Pike from Atlanta.   Jeff is the front man for A1A, widely regarded as the best Jimmy Buffett tribute band on the East Coast.

Don't forget about Thanksgiving Eve in Flagler Beach. It is a night to see and be seen as locals return to the fold to visit family and friends.   We will be featuring the Park-O-Lators on the main stage for this fun Wednesday night!

Beaujolais Nouveau Night

Thursday November 17

It's not too late to make your plans to attend the Golden Lion Beaujolais Nouveau Party! This event is a fall tradition at the Lion as we join the world-wide on the third Thursday of November every year! We have celebrated since 1994!

Live music by Cesar Romero, a special four-course meal, and plenty of wine!

Special 4-Course menu to include your choice of entrees (Beef Bourguignon, Coq Au Vin, Lamb Shank, or Salmon Filet) and our delicious Berry Crepes! Cost of the dinner is $25 per person and does not include wine. Come for dinner or just stop by for a glass.

Beaujolais Nouveau is a red wine made from Gamay grapes produced in the Beaujolais region of France. Hand harvesting and whole berry fermentation create a red wine that is easy to drink and does not age. So drink it while it is young on November 17th!

Atlanta native Jeff Pike has been entertaining, singing and playing music for a living since 1984.

An accomplished guitarist, vocalist, songwriter and keyboardist with over 15 CDs to his credit, Jeff has performed thousands of shows, traveled the globe and played many styles of music.

His vast and extensive song list covers Jeff's original music, classic rock and soft rock standards, easy listening oldies, acoustic classics, deep cuts and favorites dating back to the 1960's.

The Park-O-Lators return for their second show at the Golden Lion on Thanksgiving Eve. If you missed them the first time they were here, you might have seen a taste of them at the all day Junior Lifeguard Jam a few Sundays ago. Happy Thursday! Our upcoming weekend is all about Tommy Tant. The 12th Annual Tommy Memorial Surf Contest will be held Saturday & Sunday a few hundred feet away from our front door. We are excited to be hosting the Kickoff Celebration on Friday Night with music from Brad Corrigan.

Tommy Tant Kickoff Celebration

The 12th Annual Tommy Tant Memorial Surf Contest presented by Nautica will be held November 12-13, 2011 at the Flagler Beach Pier. There will be an official kick-off concert and silent auction at 6:30 pm on Friday evening at the The Golden Lion Cafe. Join musician Brad Corrigan and friends as they kick-off the 12th Annual Tommy Tant Memorial Surf Classic. There will also be a silent auction of unique International travel packages and surf related items. There is a $5 suggested donation for this event.

The Tommy Tant Memorial Surf Classic began twelve years ago as a small event to celebrate the life of 24-year old surfer, Tommy Tant, who died unexpectedly in his sleep from an aortic aneurysm. With the help of Tommy's former high school teachers, the Flagler Palm Coast High School marketing class organized the first contest. Proceeds were given away in scholarships to local students, beginning the Tommy Tant Memorial Scholarship Fund.

After the original event, Zoee Forehand, owner of Z-wave Surf Shop in Flagler Beach, and her staff directed the contest for the next three years. In the fifth year, Tommy's younger brother, Will, became the event organizer. Now a professional surfer, Will wanted to inspire and encourage the local youth to follow their dreams by introducing them to professional athletes and artists.

With the help of the surf community, the Tommy Tant Memorial Surf Classic is now a internationally recognized event. The event has featured world-renowned photographers Aaron Chang, Brian Nevins, Jimmy Wilson and Tony Neste, cinematographers Matt Katsolis and Nic McClean, artists Austin Blasingame and Patrick Maxcy, and musicians Braddigan and Josh Garrels. Each year, the event also features pro-surfers from across the country, including past champions Aaron Cormican, Asher Nolan and Jesse Heilman.

Over the past twelve years, the Tommy Tant has grown into a two-day event with more than 300 contestants. This year the 12th Annual Tommy Tant presented by Nautica will include two days of amateur and professional competition, nighttime surfing exhibition hosted by Red Bull, food festival, concert, live-art exhibit, and silent auction. All proceeds benefit the Tommy Tant Memorial Scholarship Fund, the Flagler County Food Bank, and the National Marfan Foundation.

Beaujolais Nouveau Night

It's not too early to make your plans to attend the Golden Lion Beaujolais Nouveau Party! This event is a fall tradition at the Lion as we join the world-wide on the third Thursday of November every year! Live music by Cesar Romero, a special four-course meal, and plenty of wine!

This is an open invitation to you and all of your friends that like to dance. We are looking for party goers able to dance as if you are at a nightclub or dance party. (Just open dancing, no practice, rehearsals or formal experience neccessary)

We are creating a nightclub atmosphere for a show onstage next Saturday, November 5th at 4:30 pm at The Palm Coast Seafood Festival.

We are asking all participants to arrive wearing black & white clothing and dance on stage for about an hour for artist Mark E Walker of C+C Music Factory *Gonna Make You Sweat (Everybody Dance Now) video and Stevie B.* Spring Love fame.

Mark is performing on the main stage at 5pm and we are going to fill up the stage with people to create our "nightclub". Songs will be pop and hip hop like Chris Brown, Taio Cruz, C+C Music Factory, Usher etc. and of course Mark's originals.

They're predicting a decent sized crowd at the show and we're trying to fill the stage up with people that like to dance.

Send this info out to anyone online that just wants to get up on stage in the spotlight for about an hour. (both girls and guys)

Anyone can use a blaster or a fusioncutter—but to use a lightsaber well, was a mark of someone a cut above the ordinary." - Obi-Wan Kenobi Recently we were asked to do a staff training only covering bar tools and their uses. Exciting, but a bit nerve wracking to speak for four hours to a staff that is mildly to heavily hung over on their Saturday morning about only tools - we were sure they would rather have been eating spicy, greasy plates of eggs and swilling over roasted coffee with their sunglasses on. But there we were. No booze talk, just mechanics: why we stir, the many uses of a muddler, how to open a beer bottle with your tin, how the julep strainer is the perfect ice scoop in a catering situation when your icebox is a swamp, etc. We step behind the bar, open our mouths, and then BAM! The intro and first subject of the days training comes into focus. The most important tool in the bartender’s toolbox is….The BARTENDER.
From there, the training fell like rain. We are our most important tools behind the bar - yes we are aware we just called all bartenders tools - on with the show. Your appearance, attitude, physical and mental well-being, presence, and confidence of space are all invaluable to making a night kick a*s. Most bartenders have the luxury of not having to wake up at 8 am on a regular basis. So, if you are coming to work exhausted, let’s hope it’s because you woke up early to a) hit the books and study up on your spirit knowledge, b) take care of / hang out with your kid - that says it all, or c) you have found a yoga class that somehow hits all the spots bartenders need to hit… and worked a double. The obvious alternatives of why you are tired mean that you have no excuse. When you walk through the door, you can shake it off and do what needs to get done.
We are not innocent to the overindulgence; late nights and lack of sleep are sometimes commonplace in a bartender’s world. We just realize that it doesn't serve that moment when your bar is three deep and you need to keep your chin up and smile.
We know speaking to a group that prides itself on the individuality of one’s dress and appearance is a dangerous plank to walk down. We'll play this safe and say be clean, have clean clothes, clean breath and fingernails, and don't stink. Dress as you are able given the place you work, and express yourself in whatever way makes you feel the most comfortable taking the stage behind the bar. The stage… We feel you have to accept it. The bar is a stage wherein everyone watches you, whether you want them to or not, so posture matters. Chin up, chest facing forward, eyes bright and active, smile easily. We often find we are our nicest, most natural and personable selves when we are behind the bar. Sometimes after a few busy nights, all we want is six hours of catch up on cable TV shows, some take out and very little conversation, if any. But, when you are working, you gotta give it. It's like an actor hitting the stage on a bad night. People paid for their tickets and want to see the show. They could give a sh!t if the actor isn't “feeling it.”
Presence is a powerful thing. It’s innate in some people, but in others, it's something that is learned, nurtured and practiced. It gets easier to "fake" when you’re feeling really beat up, and becomes more natural over time as the emotional epicenter of your bartender state. With a strong presence, an unruly mob of people clamoring for a drink becomes something that can be controlled and guided into the night with the bartender at the reins.
Eyes, ears, nose, mouth. For example, while we stir, we treat this as a time to take visual inventory of what needs doing once this delicate little all spirit bastard is done. We make eye contact with guests. We smile and nod with the universal, be there in a sec, face. We catch the barbacks gaze and speak with our eyes. We take a second to survey the general crowd and check in with the room. Ears pick up where your eyes leave off. Bartender ears are thieves. They are fine tuned filters that can sort through the conversations of the room, take cues from the conversations of their guests, hear what is happening in the station down the bar, and what is happening behind them. By acquiring this data, you can find your way out of any maze. Now that you are seeing and hearing, smelling your way through the night keeps you on your game. Are your tins clean? Smell them. If that glass is too clean (meaning the sanitizer is alive and well), the nose knows. Has the cream turned, is that drink balanced, corked wine, skunked beer? Of all things, your nose will be a last line of defense against preventing something bad from landing in front of a guest and soiling their experience. Finally, the mouth. Help us out. Is this drink on or off? On or off, balanced or imbalanced, too much bass or treble, you get the point. Always trust your gut. Your instincts will save you in all walks of life, and definitely will save you behind to bar.
Bartending is beautiful. Or at least it can be. It can also be clunky, sloppy and uncoordinated. Move behind your bar as if you were born to. Own the space. If temporarily blinded by lemon juice shot from a squeezer, know you can find your way out without looking like a blinded Frankenstein. Move with purpose. If you can do it in one move, do so. We all know our local maestros of bar movement - we love to see them in action and study the efficiency of their game. They are captivating to watch. Whatever your style is, decide, and be that style. A machine, a dancer, flair, a comic, whatever, just carve out your style. Own your space!

With all these things considered, practiced, and then properly utilized, then reach into your briefcase full of vintage pre-Prohibition silver that we all love, and kick a*s with it.

Whiskey Wednesday: Jim Beam Rye

This week's whiskey is Jim Beam® Rye. Drier and spicier than its sweet Bourbon cousins, Rye adds character and depth to any whiskey cocktail. Pairs especially well with fruit flavors. This whiskey is clean and spicy, with a peppery taste and a slight sweetness.

While I enjoy this whiskey on its own, it also makes a great Manhattan!

Jim Beam® Rye Manhattan
2 oz Jim Beam® Rye
1/2 oz sweet vermouth
dash of bitters
cherry for garnish

Chill a cocktail (martini) glass with ice. In a mixing glass half filled with ice add whiskey, vermouth, and a dash of bitters.   Stir until well-chilled. Dump the ice from the prepared glass and strain in the contents of the mixing glass.   Drop a cherry in for garnish and enjoy!

There's Nothing Skinny About My Margarita

Disclaimer: This post is due to an email I received at work and not because I enjoyed the new show Big Sexy last night on TLC (click here for a review). Did I mention that Tiffany Bank @replied one of my tweets? Woohoo!

Anyhow, back to the business of making a margarita. The email I received was to ask The Golden Lion to start buying "skinny" margarita mix. The person sending the email was diabetic. Fair enough question, BUT those skinny mixes are full of artificial sweeteners and other chemicals. I'm no expert in diabetes, so I might be wrong in presuming that the natural sugars found in fresh fruit are acceptable.

That being said, skip the fake mix. Skip the sour mix. Skip all the mixes and try a "Mark-A-Rita"! I don't care for sour mix in a margarita, so this is how I make them at home.

Original Mark-A-Rita
2 oz Sauza® gold tequila
3/4 oz Cointreau® orange liqueur
1/2 medium lime, juiced

Chill a cocktail glass (aka martin glass) with ice. In a shaker half-filled with ice, combine all ingredients. Shake until cold & frothy. Dump ice from cocktail glass and strain ingredients into the frosty glass. Enjoy!

The above is how I prefer my margaritas. No sour mix, no salt, no lime. All the flavor you need is right in the glass. I have substituted other tequilas in. I particularly enjoyed this recipe with Agavero® and Partida® Blanco. Agavero has a yummy sweetness to it, while Partida Blanco adds some subtle citrus flavors. Options you might enjoy include salting the martini glass or serving over ice in a double old-fashioned glass with salt.

You can shave a few more calories and go au natural by grabbing a bottle of Tierras® Blanco Organic tequila. You should be able to find a bottle for under $40. Ditch the Cointreau and go with this all fresh fruit recipe.

Mark-A-Rita On A Diet
2 oz Tierras® Blanco tequila
1 whole lime, juiced
1/2 orange, juiced

Combine all ingredients into a shaker half-filled with ice. Really shake it up. You want all those flavors bouncing up against each other. Strain into a chilled cocktail glass or over ice into a double old-fashioned glass. Enjoy the circus of flavors!

This might not be a solution for a diabetic person looking for sugar-free alternatives. But, these recipes are closer to natural than your average margarita. Tastier too! Further, remember that "sour mix" much like "frozen daiquiri mix" did not exist when these classic cocktails were created. Retro is in.
