<p>The culinary instructor team at Remington College’s <a title="Texas Culinary Arts School" href="http://www.remingtoncollege.edu/culinary-arts-school-dallas" target="_blank">Dallas School of Culinary Arts</a> is excited to announce that your dream of learning to make pastries, chocolates, cakes, and confections may have come true.</p>
<p>Our Dallas (Garland) Texas campus now has a <a title="Dallas Pastry Arts Program" href="http://www.remingtoncollege.edu/dallas-pastry-chef-training-school" target="_blank">Pastry Arts diploma program</a> that can be completed in as few as 9 months.</p>
<p>Here are some of the top reasons we’re excited about the arrival of this program at our campus:</p>
<p>- Our instructors and students can focus on their favorite culinary specialties, such as making candies, baking artisan breads, and designing and decorating elaborate wedding cakes.</p>
<p>- The on-campus <em>Beginnings Restaurant</em> will feature creations by the students in the Pastry Arts diploma program.</p>
<p>- Students will have the opportunity to learn how to prepare healthier desserts, including sugar-free and gluten-free treats.</p>
<p>- All Pastry Arts students will be provided with an extensive toolkit, uniforms, and a collection of contemporary baking and pastry books.</p>

<p><strong><em>Remington College leads 3 Lives effort with the Sickle Cell Disease Association of America and America’s Blood Centers</em></strong></p>
<p>September is National Sickle Cell Awareness Month and <a title="Remington College" href="http://www.remingtoncollege.edu" target="_blank">Remington College</a> is holding <a title="Blood Drives with 3 Lives" href="http://www.3lives.com" target="_blank">blood drives</a> on all its campuses in an effort to increase the number of minority blood donors.</p>
<p>According to the Sickle Cell Disease Association of America, more than 70,000 people in the U.S. have this life-threatening disease.</p>
<p>Remington College has partnered with the Sickle Cell Disease Association of America (SCDAA) and America’s Blood Centers to hold a series blood drives on all its campuses. The effort is called 3 Lives &#8211; because three lives may be saved for every one pint of blood donated.</p>
<p><strong>So far this year, Remington College campuses have collected a total of 1,479 pints of blood.</strong></p>
<p>The September blood drives will focus on the need for minority donors – especially African Americans.</p>
<p>According to the SCDAA, African American donors are vital to many people battling sickle cell disease because they provide blood with unique antigens. The best blood match for a chronically ill patient requiring multiple blood transfusions will likely come from a donor of the same ethnic background. Blood transfusions help benefit sickle cell disease patients by reducing recurrent pain crises, risk of stroke and other complications.</p>
<p>While the focus is on recruiting minority donors, everyone is encouraged to attend the September drives and donate blood. All the blood collected will be used to help people in the communities where Remington College has campuses.</p>

<p>Remington College’s <a title="Texas Culinary School" href="http://www.remingtoncollege.edu/culinary-arts-school-dallas" target="_blank">Dallas Culinary Arts degree program</a> encourages creativity in student projects, but the &#8220;Wedding Cake Design Challenge&#8221; in Chef Sandra Cohen’s <em>Introduction to Bakeshop</em> class literally takes the cake!</p>
<p>Chef Cohen assigns her Culinary Arts class two group projects each quarter, and with her guidelines and requirements in mind, the students begin researching a wedding cake design that reflects their styles and personalities.</p>

<p>Drawing inspiration from books, websites, photos, and their own lives, the students work together to create a unique wedding cake design that is entirely edible.</p>
<p>Chef Cohen encourages the students to test their creativity in learning how to create each piece, no matter how intricate or delicate it may be, and she stands by prepared to assist students with the skills and procedures it takes to produce each masterpiece.</p>
<p>Once the cakes are completed, the students display them in the Culinary Arts building, where other students and staff are encouraged to come by and vote for their favorite.</p>
<p>Winners are selected from both the morning and evening Culinary Arts classes, and once the voting is finalized, students are welcome to take their works of art home to share with family and friends.</p>

<p>Students Dominique McFarlin, Sonya Danforth-David, and Meghan Lynett set out to “make a simple cake while at the same time surpassing the norm by going over and beyond with a touch of elegant, creative detail.”</p>
<p>Their cake, pictured left, features hand-made pink lilies crafted from gum paste and a black fondant ribbon with delicate edible pearl detail.</p>

<p>Our <a title="Fort Worth Texas Colleges" href="http://www.remingtoncollege.edu/fort-worth-texas-career-schools-overview" target="_blank">Fort Worth, Texas College</a> was recently recognized as one of Carter BloodCare’s “Top Performers of 2009” among local vocational colleges.</p>
<p>The award was presented to Allied Health Department Chair Tonia Lawrence during Carter BloodCare’s last campus visit. The plaque states: “In honor of your generous donations during 2009, we celebrate and honor your commitment to saving lives and thank you for bringing life and hope to others through the Volunteer Blood Donor Program.”</p>
<p>Remington College&#8217;s <a title="Fort Worth Texas colleges" href="http://www.remingtoncollege.edu/fort-worth-texas-career-schools-overview" target="_blank">Fort Worth, Texas college</a> campus organized four blood drives on campus in 2009, ably and efficiently coordinated by the Career Services Department. “The participation from our students, faculty, and staff was phenomenal,” said Ms. Lawrence, adding, “The majority of donors were Remington students, but faculty and staff also made a great showing, even using their lunch breaks to donate.”</p>
<p>In commenting on the award, Ms. Lawrence paraphrased a popular quote she often refers to: “The ability to positively affect change starts with each of us as individuals.” She added, “As individuals, and as a team working together, I’m very proud of our Campus’s dedication to helping save the lives of those in need.”</p>
<p>The Campus’s blood donation efforts have continued throughout 2010, with the next blood drive scheduled for September 21.</p>

<p>The National Technology Honors Society (NTHS) at Remington <a title="College in Lafayette Louisiana" href="http://www.remingtoncollege.edu/louisiana-career-school-overview" target="_blank">College in Lafayette</a> might be small, but they recently proved they have a big heart.</p>
<p>In early May, Remington College’s Lafayette Campus President, Jo Ann Bourdeaux, shared the hardships that the faculty and staff at their sister school – Remington <a title="College in Nashville Tennessee" href="http://www.remingtoncollege.edu/nashville-tennessee-career-colleges-overview" target="_blank">College in Nashville</a> – were experiencing as a result of recent flooding.</p>
<p>Sensitive to the devastating effects of the flood, Lafayette NTHS members immediately mobilized into fund-raising action by organizing an on-campus raffle and change drive.</p>
<p>Student Shakun Thakore organized the raffle, which featured Bath and Body Works gift sets, while student Reginel Robertson oversaw the change drive.</p>
<p>The NTHS students accepted contributions over a month-long period, and during that time nearly 100 students, faculty, and staff members contributed to the drive.</p>
<p>By the end of June, NTHS had raised $130 toward relief efforts and donated the funds to Hands On Nashville. Brian Williams, of Hands On Nashville, wrote to the Lafayette students in appreciation: &#8220;In this great time of need, we are humbled by your willingness to help those impacted by this large-scale natural disaster.&#8221;</p>
<p>Each of the 20 active NTHS members at Remington College in Lafayette played a critical role in this successful fundraiser.</p>
<p>Students are eligible to join Lafayette NTHS after their first semester. During the pledge process, each member makes a commitment to volunteerism. The club holds canned food drives year-round to support local food banks, and each Christmas it sponsors two United Way Angels.</p>
<p>Efforts like these serve as a great indicator of the exceptional, well-rounded people Remington College – Lafayette Campus will send into the work force.</p>

<p>A grand time was had by all at the official opening of our newest <a title="Cosmetology School" href="http://www.remingtoncollege.edu/cosmetology-beauty-school-overview" target="_blank">Cosmetology School</a>, at Remington College&#8217;s <a title="Mobile Alabama College" href="http://www.remingtoncollege.edu/mobile-alabama-colleges-campus" target="_blank">Mobile, Alabama College</a> Campus. The open house event was held on July 12, 2010, from noon to 2 p.m.</p>
<p>A large gathering of faculty, staff, students, parents, and visitors sampled a bountiful buffet catered by a local restaurant, Time to Eat. And indeed it was!</p>
<p>The spread included meatballs, chicken wings, ham and cheese wraps, chicken salad wraps, fruit, cheese, veggies, cookies, and assorted soft drinks.</p>
<p>Attendees had a chance to tour the salon, the manicure, pedicure, and facial areas, and the cosmetology classrooms. Instructors and students were on hand to talk about the program and the salon services that students of the <a title="Cosmetology School" href="http://www.remingtoncollege.edu/cosmetology-beauty-school-overview" target="_blank">Cosmetology school</a> plan to provide to local patrons.</p>

<p>“The atmosphere was upbeat and exciting, and we were all so motivated to let others know about our great new Cosmetology program at Mobile,” noted Mobile Campus Cosmetology Program Chairperson LaKeyshia Mauldin.</p>
<p>Among the event highlights was a ribbon-cutting ceremony held at 1 p.m. and officiated by Mobile City Commissioner Reggie Copeland. All attendees were presented with gift bags as a token of thanks for participating in the Campus’s celebration.</p>
<p>The <a title="Cosmetology Diploma Program" href="http://www.remingtoncollege.edu/cosmetology-beauty-school-overview" target="_blank">Cosmetology Diploma Program</a> teaches students the art of hair, skin, and nail care through traditional classroom instruction and hands-on training, which allows students the opportunity to work with real clients. The program was launched at Mobile Campus on January 25 and currently has 17 enrollees.</p>

<p>When asked about her goals for the program, she responded, “Here at Remington, our mission is to raise the standard of cosmetology education in the Mobile area. <p>Our <a title="Shreveport College Campus" href="http://www.remingtoncollege.edu/shreveport-career-school-overview" target="_blank">Shreveport college campus</a> hosted a four-hour community health and fitness expo on June 12, 2010. About 100 local visitors attended the campus’s first-ever expo, whose goal was to promote continuing awareness of health and fitness issues such as weight loss, nutrition, controlling blood pressure, and dealing with stress.</p>

<p>High School Presenter Sharona Mitchell, Director of <a title="Campus Career Services" href="http://www.remingtoncollege.edu/technical-schools-career-services" target="_blank">Career Services</a> Becky Currier, and Career Services Representatives Natasha Melder and Jeremy Malmay served as event coordinators.</p>
<p>Activities included complementary fitness and exercise classes, massages and skin care consultations, and glucose and blood pressure screenings offered by <a title="Medical Assistant Training Program" href="http://www.remingtoncollege.edu/medical-assisting-diploma-overview" target="_blank">Medical Assistant training</a> program faculty and students.</p>
<p>Information booths were sponsored by organizations such as:</p>
<p>The <strong>Kedrick DeWayne Stith Foundation,</strong> or <strong>KDS, Inc.,</strong> which offered information and help to individuals and families contending with the adversities associated with sickle cell anemia.</p>
<p>The <strong>Louisiana Children’s Health Insurance Program, </strong>or<strong> LaCHIP,</strong> which gave parents valuable information about no-cost and low-cost health care options for children in Louisiana.</p>
<p><strong>LifeShare Blood Center of Shreveport,</strong> which provided information about the importance of donating blood and bone marrow, especially to benefit sickle cell patients.</p>
<p>A spacewalk setup, hula hoops, jump ropes, and basketball activities were available for the children in attendance. Organizations such as KDS, Inc., handed out popcorn, T-shirts, and caps. Door prizes were also awarded.</p>
<p>Participants enjoyed healthy lunch options including grilled turkey dogs and fruit smoothies.</p>
<p>Ms. Mitchell said, “The health screenings and exercise demos were the most popular events, but I know everyone benefitted from all of the activities and information available. We were very pleased, excited, and overwhelmed by the turnout and the interest that people from the community had in our very first Health and Fitness Expo. It was phenomenal!&#8221;</p>

<p>As we’ve been reading in the headlines, the U.S. Gulf Coast region has faced tremendous struggles in dealing with the after-effects of the Deepwater Horizon/BP oil spill.</p>
<p><a title="Mobile, Alabama Colleges" href="http://www.remingtoncollege.edu/mobile-alabama-colleges-campus" target="_blank">Remington College – Mobile Campus</a>, located in the heart of the Gulf Coast area, is doing its part to help. The Campus’s efforts have been led admirably by Mobile Campus Executive Assistant Kristy King.</p>
<p>“Some folks around town were organizing drives, and we wanted to offer our help in a way that would do the most good for our community. So I contacted Mobile Baykeeper (an environmental group leading Mobile’s cleanup efforts with BP and the Dauphin Island Sea Lab) and asked them what needs they have for the oil spill cleanup efforts,” said Ms. King.</p>
<p>She then quickly took action, setting up a table in the Campus&#8217;s student lounge and operating it from June 30 to July 9, primarily during break periods and after classes were dismissed. This donation effort also included collecting canned goods.</p>
<p>Before long, the Campus had raised money from students, faculty, and staff. And that amount was matched dollar for dollar by the Remington College Community Matching Funds Program, for a total donation of $360.</p>
<p>Additionally, more than 100 cans of non-perishable items were collected and donated to the Bay Area Food Bank, which is experiencing a shortage due to the oil spill and the number of people out of work and in need of the basics many of us take for granted.</p>
<p>Ms. King said, “We decided to donate the money so that Mobile Baykeeper can use it in the way they need it the most – however that is. I have no doubt that they are looking out for the best interests of our bay and our estuaries.”</p>

<p>She believes that the organization may use the dollars raised to purchase digital cameras and handheld GPS navigation units that will be sent out with volunteers on kayaks, canoes, and small vessels.</p>
<p>The cameras will be used to take pictures of the impacted areas. The GPS units will be used to help the smaller vessels navigate the area safely and efficiently.</p>
<p>“The Mobile Baykeeper organization was delighted that we contacted them with our idea to donate,” said Ms. King, adding, “I am proud of and humbled by the response we received from our student body to our request for donations. All along the Gulf Coast, folks are realizing that we won’t get through this without pulling together, and this is just another example of that. Nothing can stop you when you come together to help your community. We will overcome this.”</p>
