There is a wonderful environmental message behind The Lorax, so I wanted to incorporate some tips for greening up your Dr. Seuss party plans.

Even when it comes to baking delicious cupcakes, you can be kinder to the environment by using cupcake liners that are biodegradable. I just love my silicone baking cups too, they are easy to clean, and can be re-used over and over again.

Note: The cupcake toppers were made by printing The Lorax Reflection Activity Sheet, cutting out the discs and attaching them to toothpicks.

When celebrating with children, it is not always possible to use plates that won't break, but that doesn't mean you can't use more eco-friendly products such as bamboo, or the ones that I have used for this party which are compostable and made from wheat stalks. The cutlery is compostable plastic made from plant materials. And of course if you do use straws, I prefer paper ones as they can be recycled.

Instead of serving juice boxes (with plastic straws), or soda to the kids, fill a beverage dispenser and leave out glass bottles of water. Serve beverages in re-useable glass bottles or jars.

My party tip: If you are using jars instead of bottles to serve beverages, turn your straws into truffula trees that tickle your nose when you are drinking. Kids will love it.

Note: The Lorax face on the beverage dispenser was made by printing the pumpkin carving template available on The Lorax Movie site, under downloads.

I thought the chocolate 'seeds' were a nice touch for the party treats.

Glass vases, hurricane candle holders, bowls, and canning jars are another great way to present your party treats. Finn and Gil's jelly pond treats were made by pouring the jelly into canning jars and refrigerating until set. The lids help protect your treats from bugs, and little fingers, plus you can pop these jars into a shallow ice bucket to keep the jelly cold.

Another thing I love to use for parties is fabric, bed sheets, or tablecloths for both back drops, and to cover tables rather than plastic table covers.

When planning your party food, get to know what your characters like. Do you know what the characters of The Lorax love to eat?

Finn and Gil: Marshmallows

Bill: Truffula Fruit

The Lorax: Truffula Berry Pancakes

Pip: Mini Marshmallows

These should give you some great ideas for your Dr. Seuss' The Lorax party.

I made some delicious blueberry pancakes for our party table. I used my standard pancake recipe, then added in about 1/3 of a tub of fresh chopped blueberries. Then I used circular metal rings in the pan to make the perfect little round pancakes pictured. Note: Make sure to spray the rings before using so the pancakes don't stick to them. Once you flip the pancakes, carefully remove the metal rings (not with your fingers silly), and set them aside to cool for a few moments before making your next batch.

Now a party doesn't just begin or end with food. The other ladies on The Lorax Blog Tour have lined up some fabulous things to do that would be a great addition to your Dr. Seuss' The Lorax party.

I see that only a month into this project and I'm already slacking off. I forgot to take photographs a couple of days, so may have used photographs from days when I took more than one as fillers, and I'm about 3 days late in posting my week round-up. I'm surprised that I've managed to stick it out this long though. I have commitment issues.

February 5: A book finished - I've now finished reading 2 books since the beginning of the year when I made my 40 by 40 list and aimed to have 5 books finished by June. I really enjoyed Shearwater, by Andrea Mayes. It was a very easy read and I recommend it for some light summer reading.

February 6: Thrift Store Finds - Do you love thrift shopping as much as I do? I have a favorite Goodwill store that I visit at least once a week. I never walk out of there empty handed.

February 7: Klout Perks - Every now and then I get a Klout Perk. I need to start taking better care of myself. This is a good start. This old chook is starting to see a few wrinkles ... I mean laugh lines. At least there are no grey hairs yet.

February 8: The Principles of Knitting - I received this book in the mail during the week to review. It's big. With lots of pages. I cannot wait to open it and learn a few new techniques.

February 9: Wine Tasting - Fresh & Easy hosted a virtual wine tasting. They supplied me with a gift card to pick up the 3 bottles of wine we were tasting, including a chocolate wine. The three bottles were: Montcadi Cava, Ombretta Chianti, and Chocolate Shop Red. I enjoyed them all, for different reasons. I may have purchased a few snacks to go with my wine. I called it dinner.

February 10: Happy Pills - These are my happy pills. They are delicious. I may have eaten them all in the car before I even made it home from the store.

February 11: Golf - The little man has started golf lessons. Since he was diagnosed with ADHD we've been looking for activities that require concentration and discipline. He loved his first lesson.

One thing that I miss about living in Australia is morning and afternoon tea. Ever since I was a little girl, my mum has served morning and afternoon tea to anyone who is in the house. We sit around the table and enjoy a cuppa (a little Aussie slang for you) with a variety of treats and catch up with one another. Sometimes there will be biscuits, other days there may be sticky buns, scones, or even an assortment of treats such as chocolates and nuts. One of my favorite treats to enjoy with tea (aside from scones with jam and cream) is biscotti.

I need to bring back that tradition. Although I have always served the kids morning and afternoon tea, we haven't sat around the table catching up and talking about our day, we seem to be so busy that we are all running in different directions. Unfortunately during the weekdays it is just me at home for morning tea while the kids are at school and my husband is at work, but beginning this week, we will start having afternoon tea together, and on the weekends when we are home, we will have both. I am really looking forward to it.

January 29: La Jolla Farmers Market - what a perfect day for the market. The kids enjoyed fresh lemonade and cups full of watermelon and mango. They played in the playground, and we bought some delicious fruit and bread, and found some beautiful flowers to take home with us.

January 30: Gardening - Another beautiful day was too good to waste being stuck inside doing housework, so I got out into the garden for a while and pulled weeds and cut back some plants.

January 31: Reading - So far I have stuck with my new tradition of reading every single night in bed since January 1. That's 31 days of reading. Hope I can keep it up, I am really enjoying it.

February 1: Crafting - Although the weather was lovely again, there are many household projects that need to be done. Today I worked on Flynn's costume storage.

February 2: Groundhog Day - The kids made these adorable groundhog day pop-ups in kinder.

February 3: Giving the Teacher a Haircut - 9 students (including Flynn) cut a teachers hair to donate to Locks of Love after they raised money for Olive Garden Pasta For Pennies.

February 4: Relaxing outside - It was a lovely afternoon outside with the kids. The sun was shining, they were swinging and riding bikes, and I was enjoying a glass of wine and a good book.

Everything is now within reach and will be easy for him to clean up. Yes, I will just keep telling myself that he will clean it up and that I won't be left to do it, but we all know the truth now, don't we.

The items on the shelf are just out of reach though. I absolutely love the Zid Zid elephant mask that a friend gave him a few years ago. I am surprised it has lasted this long. And, I could not believe it when I found the dinosaur mask in a box in the garage. I made it about 10 years ago for Jay (when we were living in Australia) and he was going through his dinosaur phase. An old chai tea tin was perfect to put all of the mustaches in, remember we used them at the twins cowboy and cowgirl birthday party. You can also find the details on making the hobby horse there too.

So, for the quick round-up.

The box - I purchased from Ikea for about $10 a few years ago. It had unfinished wood around the edges which I painted brown.

The shelf - Was another unfinished wood item that I found at Michael's for $14.99 (don't forget your 40% off coupon). Again, a few coats of brown paint did the trick.

The rail - Is perfect to hang small accessories on, and to stand up items such as the sword and hobby horse. That was $9.99 at Marshall's.

Ingredients:

Cheesecake Base

8 sheets of Graham Crackers

4 tbs of butter (softened)

2 tbs sugar

Cheesecake Filling

1 package (8oz) cream cheese (bring to room temperature, it's easier to mix when it's softer)

2 eggs (lightly beaten)

1 tsp vanilla essence

3/4 cup sugar

2/3 cup heavy whipping cream

pinch of salt

Additional ingredients

Raspberries

Chocolate (for melting)

Butter (melted) for greasing the pan

Confectioner's sugar

Note: You will need either mini individual springform pans or a mini cheesecake pan for this recipe. If you don't have either of these, they can be made in cupcake liners, I'm just not sure how well the wrapping peels off once cooked.

Turn the oven onto 325F. Lightly grease the pans with the 1 tablespoon of butter, making sure to brush up the sides of the pan.

Break the graham crackers into smaller pieces and mix in a food processor until you see fine crumbs. Add in the sugar and mix just for a few seconds. Add the softened butter in small sections into the food processor too and mix until you can see that everything is starting to stick together a little.

Press the mixture into the base of the pans creating a very shallow well in the center and allowing just a little to edge up the sides.

Bake for 10 minutes. Set aside to cool. Turn the oven down to 300F.

Chocolate hearts: melt chocolate in the microwave, cool just a little and pour into a piping bag with a small round tip (I used a Wilton no.2 round tip) on the end. Lay down a sheet of parchment paper onto a cookie sheet and carefully pipe chocolate hearts onto the paper, filling each with a lace pattern. Pop into the refrigerator until you are ready to use them.

Cream Cheese Filling: Break up the cream cheese and blend in a bowl until smooth (by having it at room temperature it will be easier to mix than if it came directly out of the refrigerator). Add in the sugar and blend again for just a few seconds. Add the vanilla, salt and cream and mix until combined. Pour in the eggs and blend on low speed.

Pour the cheesecake filling over the graham cracker base until about 3/4 of the pan is full. Pop back into the oven and bake for between 45-50 minutes. Check them to make sure that the outside is set, you will see that it has pulled away from the pan a little and will be the slightly browned. The inside will still be a little wobbly and may look like it's risen over the pan, but it's okay, once you remove it from the oven it will settle and set.

Leave on the counter until cool. Once cool, gently either push the base of the cheesecake pan up (or open the springform pan). Using a sharp knife gently remove the base. Pop onto some parchment paper and into a container and refrigerate for a couple of hours before serving.

Once ready to serve, remove from the refrigerator, top with raspberries, sift confectioners sugar over the top, and add a chocolate heart.

Makes 4 mini cheesecakes - will make more though if you are using cupcake liners which are smaller.
