INGREDIENTS
리코타 치즈 : 우유 500ml, 레몬 반 쪽, 소금
샐리드: 체리 토마토, 레몬 반 쪽, 소금, 후추, 엑스트라 버진 올리브 오일, 바질
애호박, 어린 잎, 레디시, 버섯, 물 1/4컵, 식초 1/4컵, 설탕 6 TBSP, 소금 2 1/2 TBSP
에그인어홀 : 둥근 빵, 메추리알, 베이컨, 휘핑크림 1/2컵, 고다치즈, 후추
딸기, 오렌지, 플레인 요거트, 꿀 약간

리코타 치즈
1. 전자렌지용 용기에 우유, 레몬주스, 소금 약간을 넣고 거품이 일을때까지 돌린다.
2. 거품이 올라오면 꺼내어 저어준다.
3. 거름망에 치즈거즈나 커피필터를 깔아 그 위에 부어 물을 적당히 걸러준다.
4. 냉장고에 넣어두어 식힌다.

셀러드
1. 체리토마토를 갈라 즙을 짜고 씨를 작은 볼에 담고 레몬주스와 올리브 오일을 1:3 비율로 넣고 잘게 썬 바질과 섞어 소금 후추로 간을 하여 드레싱을 만든다.
2. 물, 식초, 설탕 소금을 같이 끓여 내어 버섯위에 붓고 5분에서 10분정도 절인다.
3. 만들어 놓은 리코타 치즈의 절반을 덜어내어 레몬 껍질, 레몬 주스, 올리브오일을 두르고 소금 후추로 간을 한다.
4.애호박 껍질부분을 가늘게 썰어 면처럼 만들고 후라이팬에 올리브 오일, 소금, 후추와 함께 볶는다.
5. 체리토마토와 레디쉬를 납작한 원형으로 썰어낸다.
6. 어린잎과 채소를 그릇에 담아 드레싱을 두르고 레몬 리코타 소스와 곁들여 낸다.

에그 인 어 홀
1. 휘핑크림를 냄비에 올리고 끓면 불을 줄이고 치즈와 후추를 더한다.
2. 소스가 걸죽해 질 때까지 저어주면서 끓인다.
3. 후라이팬에 잘게 썬 베이컨을 바삭해질때까지 볶고 키친타월에 덜어논다.
4. 둥근 빵 반을 가르고 가운데에 병 뚜껑을 이용해 동그란 구멍을 낸다.
5. 팬에 올리브 오일을 두르고 빵 양면을 구워낸다.
6. 빵이 구워지면 메추리알을 깨어 구멍에 채워 살짝 익혀낸다.
7. 치즈소스를 위해 붓고 베이컨조각을 뿌린다.

과일
1. 남은 절반의 리코타 치즈를 요거트와 1:1 비율로 섞고 오렌지 껍질 갈은 것과 적당한 만큼 꿀을 넣고 섞는다.
2. 빵을 잘게 썰어 중불 후라이팬에 설탕, 버텅, 계피가루와 함께 볶는다.
3. 딸기와 껍질 벗긴 오렌지를 바질과 민트를 잘게 썰어 섞는다.
4. 리코타 요거트위에 과일을 얹고 빵가루를 뿌린다.

한가로운 일요일 아침하면 가장 생각 나는 것은 브런치가 아닐까 생각된다.
그런 S+ by trugen의 컨셉과 스타일링 한 이번 레시피는 세가지의 브런치 메뉴를
한접시에 담아 편안하고 심플하며 fresh한 이번 컨셉의 감성을 보여준다.
이 중 집에서 치즈를 초간단으로 만들어 내는 방법은 정말 쏠쏠한 팁이 아닐 수 없다.
나가기 귀찮은 일요일 아침 요리로 하루를 시작 해 보는 건 어떨까?

Ingredients:

[Ricotta]
1 Pint Milk, 1/2 lemon juice, salt

[Salad Dressing]
Cherry tomato seed and juice, lemon juice, salt, black pepper, extra virgin olive oil, basil

[Pickling Juice]
1/4 cup water, 1/4 cup vinegar, 6 tbsp sugar, 2 1/2 tbsp salt

[Salad]
Zucchini, Cherry tomato, Basil, Baby Greens, Breakfast Radish, Mushroom

[Cheese Sauce]
1/2 cup heavy cream, gouda cheese, black pepper

[Egg in a Hole]
Bread, Egg, Bacon,

Ricotta
1. In a microwave safe bowl put in the milk, lemon juice, and salt.
2. Microwave until milk is boiled.
3. Take out and stir.
4. Strain it through a cheesecloth or a coffee filter until it’s not too wet but not too dry.
5. Leave it to cool in the refrigerator.

Salad
A. Salad dressing
1. Cut the top of the cherry tomato and squeeze out the juice and seeds into a small bowl.
2. In the same bowl squeeze a little bit of lemon juice, olive oil (3:1 ratio olive oil to lemon), cut basil, and season with salt and black pepper to your taste.
3. Mix it.

B. Pickled mushrooms
1. In a small pot to boil the water, vinegar, sugar, and salt.
2. Take the pickling juice of the heat and on to your mushrooms until it is submerged.
3. Leave the mushrooms in about 5 to 10 minutes.

C. Lemon ricotta
1. Take half of the ricotta and add lemon zest, lemon juice, and a swirl of olive oil.
2. Season with salt and black pepper to your taste.
3. Mix it.

D. Salad
1. Cut the zucchini into a spaghetti strands and cook them in the pan with a little olive oil salt and pepper. cook the zucchini until it’s softened.
2. Cut the cherry tomato and breakfast radishes into thin circles.
3. Place all the ingredients besides the lemon ricotta in a bowl and gently toss them together.
4. Smear the lemon ricotta place the salad on top.

Egg in a Hole
A. Cheese sauce
1. In a small pot, bring the heavy cream to boil.
2. Lower the heat and add the cheese and black pepper.
3. Continue to stir and cook until you get the consistency you want.

B. Bacon crumble
1. In the saute pan, cook the bacon until it’s crispy.
2. Place the crispy bacon on a paper towel and allow it to cool.
3. Cut the bacon into little crumbles.

C. Egg in a hole
1. Take your bread and make a hole in the middle.
2. In a saute pan at some olive oil and toast both sides of the bread.
3. Once the bread is toasted, crack an egg right in the middle of the toast.
4. Flip the toast once the egg is settled in and only cook for a little so you can have runny tolls.
5. Put some of the cheese sauce on top with the bacon crumbles.

Fruits
A. Ricotta yogurt
1. Take the other half of the ricotta and put in the same amount of yogurt as the ricotta.
2. Add some orange zest and honey until you have the right sweetness you want.
3. Mix it.

B. Breadcrumbs
1. Cut the bread into little crumbs.
2. In the saute pan on medium heat, add the bread crumbs, sugar, butter, and cinnamon.
3. Cook the bread comes until it’s nice and crunchy.

C. Fruit
1. Slice the strawberries and segment the orange flesh.
2. In a bowl, combine the fruits, cut basil, and cut mint.
3. Either put the ricotta yogurt on the bottom or top of the fruit mix and sprinkler some breadcrumbs.

주말을 마무리하며
월요일의 시작을 준비하는 일요일.
어떤 이들에게는
침대에서 빠져나오기 가장 힘든
날이 아닐까 생각된다.
좀더 부지런한 이들은
가까운 카페에서 브런치를 먹거나
공원을 산책하면서 일요일을 열기도 한다.
이번 시즌의 S+ by trugen의 컨셉중 한가지도
바로 이 SUNDAY MORNING의
편안함에서 따왔다.
