Caleb has decided he doesn’t need to nap anymore. Ok, I will give him a little credit, he usually falls asleep for 20-30 minutes, but then he is wide awake and ready to play. I admire his energy, but it makes it difficult for mama to get things done. My work and personal time are very limited these days…and that includes my lunch time. I try to keep my lunches simple because I never know how much time I will have to cook or eat. This Spinach Quinoa Salad with Roasted Grapes, Pears, & Almonds is a new staple lunch for me. It is healthy, easy to make, and satisfying.

Happy Shrove Tuesday, also known as Pancake Day. Shrove Tuesday (Fat Tuesday) is the day before Ash Wednesday, the first day of Lent. It is tradition to eat pancakes on this day because it is the last day to indulge before giving up foods that aren’t allowed during Lent. Pancakes are the perfect food to eat because they contain butter, eggs, flour, and sugar-foods most people give up for Lent. It is also National Pancake Week. Yay for pancakes! We love pancakes at our house so today we are sharing a few of our favorite pancake recipes to help you celebrate Shrove Tuesday and National Pancake Week.

Have you tried a green smoothie yet? I shared one of my favorite green smoothie recipes a few weeks ago, so I hope you all tried it:) I make a green smoothie almost every day. I am kind of addicted. I keep playing around with the ingredients and I have come up with some winning green smoothie recipes. I really love this Pineapple Mango Green Smoothie. The tropical flavors of the pineapple and mango come together to create a very refreshing smoothie.

Roasted Chickpea Fajitas make a regular appearance on our dinner menu. Josh loves them, but asked if he could switch fajita night up by making Chicken Fajita Soup. Of course, I said yes. Anytime my man wants to cook, I let him:) And don’t worry, Josh served me up a bowl of hot soup before adding the chicken. So if you want a vegetarian Fajita Soup, just don’t add the chicken. It is great both ways. We like to make our recipes adaptable so everyone can enjoy them!

Valentine’s Day is tomorrow and I think you should treat your sweetheart to a special breakfast in bed. Get out the breakfast tray, fine China, and make this Chocolate Dutch Baby. Oh-and don’t forget the fresh flowers and card. Ok, I know we are all busy, so if you don’t have time in the morning to serve breakfast in bed, I understand. It would be nice though, huh? You can still make this Chocolate Dutch Baby, even if your mornings are rushed because it only takes 25 minutes to make, from start to finish!

I still remember the first Valentine’s Day we celebrated together-we were dating and Josh made me a delicious Italian meal with chocolate chip cookies for dessert. Of course, he won bonus points for the cookies:)  I think cookies should be a part of every Valentine’s Day. There is no better way to show someone you love them than by baking them a batch of homemade cookies. I’ve shared a few festive Valentine cookie recipes already-Red Velvet Crinkles, Raspberry Hugs Chocolate Cookies, Red Velvet Cheesecake Cookies, and Lofthouse Style Soft Sugar Cookies. My good friend, Becky, recently joined me for an afternoon in the kitchen. Becky brought a bag of beautiful Meyer lemons for us to bake with. I was thrilled she wanted to share her gorgeous lemons-I love lemon everything, especially desserts. We tossed around a few ideas, but finally decided to make a Meyer Lemon Pudding Cake. First of all, thanks everyone for the birthday wishes. I had a fabulous birthday weekend. I have an easy and festive Valentine’s Day cookie recipe for you today. I made Red Velvet Cheesecake Cookies during Christmas time and they were a huge hit. Everyone loved them. I decided I needed to create a new red velvet cookie for Valentine’s Day, red velvet is too perfect for this holiday. I made Red Velvet Crinkle Cookies and cut them into cute little heart shapes. If you are still pondering what to do for your sweetheart on Valentine’s Day, ponder no more. Make them a batch of Red Velvet Crinkle Cookies-their heart will go pitter patter for these cookies.

Happy Friday! Who is excited for the weekend? My hand is raised high in the air. It is Super Bowl weekend and my birthday weekend! Yahoo! My birthday (the big 3-0) is on Sunday.
