Caleb loves this Vegetarian Quinoa Chili. No, we didn’t give him a bowl to eat, but he loves the word quinoa. I was holding Caleb when I told Josh we were having Quinoa Chili for dinner and he started laughing. I asked Caleb if he liked Quinoa Chili and he started giggling like crazy. Every time I would say quinoa, he would crack up…so of course I said it one too many times:) Now that I think of it, quinoa is kind of a funny word. I am glad my Vegetarian Quinoa Chili made Caleb so happy because it certainly made our bellies and tastebuds happy.

Caleb will be 4 months old tomorrow. We can’t believe how fast the time is going. Our little guy is not so little anymore. He is already rolling over, “talking” up a storm, sleeping through the night (most of the time), and playing with his toys. He loves his blankie, helping mom at the computer, watching football with dad, bath time, making new friends, singing ’Twinkle Twinkle Little Star”,  sucking on his fist, giving mama kisses, and play time.

On Sunday we had friends over to watch the football games. I made a big pot of chili and Josh made his favorite Queso Dip. Good food and football go hand in hand at our house:) Unfortunately, Josh’s team, the 49′ers, lost, but at least his Queso Dip was a winner. This easy cheese dip is perfect game day food. You really can’t go wrong with a big bowl of melted cheese and salty tortilla chips. Mmmmm!

Saturday was a rough day. Long story, but we have been having problems with our hosting company so we decided to switch to a new company. Well, the transition didn’t go too smoothly. We spent the majority of the weekend on the phone trying to figure things out. Sorry to anyone who tried to access our site and got an error message. We really appreciate your patience. We finally got our site up and running, but it was a stressful day. I owe Josh a huge thank you for the long hours he spent working on our site. I also owe a huge thank you to these Chocolate Chip Salted Caramel Cookie Bars. They were a lifesaver. I don’t deal well with tech issues, so I decided to bake. Baking always cheers me up, especially when the end result is a sweet and salty cookie bar.

Josh loves pizza and is excited to share his all-time favorite pizza recipe with you today. When he first started making this BBQ Chicken Deluxe Pan Pizza I thought he was weird. The pizza has BBQ sauce and is topped with BBQ chicken, bacon, pineapple, and jalapeño slices. Sounded kind of odd to me, but it is always a hit. I guess Josh knows his pizza:) We host pizza parties at our house with the neighborhood kids and it is always the first pizza to go. Kids and adults love Josh’s special BBQ Chicken pizza.

We spent most of our Sunday watching football and the Golden Globes. I wanted a sweet treat, but was not in the mood to bake. Surprise, huh? I was going to make our Twix Caramel Popcorn, but didn’t have any Twix candy bars, so I made a batch of Reese’s Peanut Butter Cup Popcorn instead. So happy I found my stash of Reese’s:) This popcorn is divine-think caramel corn, but with a peanut butter honey coating instead of the caramel. Oh, and it gets better, I also added a drizzle of chocolate and mini Reese’s Peanut Butter Cups to the mix.  I was in sweet treat heaven with this Reese’s Peanut Butter Cup Popcorn!

In December, we bought a new camera and lens. I was shooting with a Canon Rebel for years and decided it was time to upgrade. It was a very Merry Christmas to me:) I now shoot with a Canon 7D and the 24-70 lens. I love my new camera and lens. I also love my new Epiphanie camera bag. Of course, I needed a new camera bag to carry around my new toys-every girl needs to carry her gear in style:)

I have gotten a few questions from friends and readers about the absence of cookies on our blog. I haven’t posted a cookie recipe since December-gasp! I think that is a record. No, I am not mad at cookies, I was just giving everyone a little time to detox from cookie overload in December. I am back today with my all time favorite sugar cookie recipe. These soft sugar cookies are a copycat of the popular Lofthouse Sugar Cookies that you can buy at the store. Homemade cookies are always best, so skip a trip to the store and make a batch of sugar cookies at home.

Yesterday I did my usual Body Combat workout at Dash Fitness and came home and made one of my favorite post workout snacks-a Green Smoothie. I posted the photo on Instagram, Twitter, and Facebook and got several requests for the recipe. So today I am sharing my favorite Green Smoothie recipe. Some people call the Green Smoothie a Green Monster, but I like to refer to mine as the Green Goblin:)

We had a few ripe avocados leftover after making our Guacamole Grilled Cheese Sandwiches and I didn’t want them to go to waste, so I made one of our favorite pasta dishes-Creamy Avocado Pasta. It may not be the prettiest pasta dish, but it might be the tastiest. Trust me on this one. If you are an avocado lover, you will go crazy for this pasta.
