things I’ve found is that it’s an excellent ingredient substitute for red wine,
especially the lighter varietals. It can give a similar wine-like sensation,
yet the fruitiness provides a freshness and brightness that’s hard to capture
in an aged red.&lt;/span&gt;&lt;/font&gt;&lt;/p&gt;

&lt;p&gt;&lt;o:p&gt;&lt;span style="font-size: 12px; font-family: Arial; "&gt;One of the tricks with cooking with red wine, especially reducing it, is
handling the astringency. Pomegranate juice shares this, and it’s something to
watch for. According to food scientist Harry McGee, tannins in food love to
bond to proteins (thus their name — tannins will “tan” animal hides by bonding
with perishable skin proteins). If there aren’t enough proteins in direct
contact with the tannins, they will bind with the proteins in saliva, causing
that sticky sensation after a glass of heavy red wine. The trick for a cook is
to provide some protein in the meal to lessen the astringency, so the meal has
a bit of the feel, without gumming up the mouth. This can be as simple as
adding some mustard when making a vinaigrette. It also explains the long
history of cooking red wine and beef together.&lt;/span&gt;&lt;/o:p&gt;&lt;/p&gt;

&lt;p&gt;&lt;o:p&gt;&lt;span style="font-size: 16px; line-height: 19px; "&gt;&lt;span style="font-size: 12px; font-family: Arial; "&gt;For August’s POM blogger recipe, I made a POM
pomegranate juice and balsamic vinegar marinade with beef, reduced the marinade
into a sauce, seared the beef with some blanched green beans, and served it all
in a Parmesan crisp “bowl”. A single bowl can be made as an appetizer, or
several as a meal.&lt;/span&gt;&lt;/span&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;span style="font-size: 12pt; "&gt;&lt;strong&gt;&lt;span style="font-size: 12px; font-family: Arial; "&gt;Recipe: POM Pomegranate Steak in a Parmesan Crisp&lt;/span&gt;&lt;/strong&gt;&lt;span style="font-size: 12px; font-family: Arial; "&gt;&lt;br&gt;
1 cup POM 100% pomegranate juice&lt;br&gt;
1 tablespoons balsamic vinegar&lt;br&gt;
1 tablespoon dijon mustard&lt;br&gt;
1 clove garlic, minced&lt;br&gt;
10 oz tender beef, diced into 1/2 inch cubes&lt;br&gt;
1/2 pound green beans&lt;br&gt;
1/2 cup finely shredded Parmesan Reggiano&lt;br&gt;&lt;br&gt;

cooking (and new foods in general) interesting for pre-teens is to make it a fun
time.&lt;/p&gt;

&lt;p&gt;The cooking day is usually Saturday or Sunday. On the Wednesday before, the
boys pick out of a hat: an ingredient, which of us they will partner with, and
either appetizer or dinner. We decided on a random assortment of kid-friendly
ingredients like brown sugar, bacon, applesauce, and peanuts, and of course,
POM pomegranate juice was one of the ingredients in the hat. Over the July 4th
weekend, the pomegranate juice was plucked out of the hat and it was time for
Battle POM!&lt;/p&gt;

&lt;p&gt;&lt;o:p&gt;&lt;p&gt;Christey and Andy had the
appetizer course, and Colin and I had the dinner course. Christey and Andy
decided to grill pineapple slices marinaded in POM and soy sauce, then fill the
hole with melted feta, topped with walnuts. Colin and I decided on panko
chicken tenders with an Asian POM dipping sauce.&lt;/p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;POM Pineapple with feta and walnuts&lt;/strong&gt;&lt;br /&gt;
(serves a dozen)&lt;br /&gt;
2 pineapples, peeled, sliced, and cored&lt;br /&gt;
1 cup POM 100% pomegranate juice&lt;br /&gt;
1/2 cup soy sauce&lt;br /&gt;
8oz block feta&lt;br /&gt;
walnuts to taste&lt;/p&gt;

&lt;p&gt;&lt;o:p&gt;&lt;p&gt;&lt;span style="font-weight: bold; "&gt;Panko Chicken Tenders with POM dipping sauce&lt;/span&gt;&lt;/p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;
(serves a dozen)&lt;br /&gt;
6-8 chicken breasts, cleaned and cut into tenders&lt;br /&gt;
flour/eggs/panko enough to coat the tenders&lt;br /&gt;
3 scallions, chopped fine&lt;br /&gt;
1 inch cube fresh ginger, minced&lt;br /&gt;
1 large clove garlic, minced&lt;br /&gt;
1/2 tablespoon olive oil&lt;br /&gt;
1 cup POM 100% pomegranate juice&lt;br /&gt;
1 tablespoon soy sauce&lt;br /&gt;
1 tablespoon corn starch dissolved in 1/4 cup water&lt;/p&gt;

&lt;p&gt;&lt;o:p&gt;&lt;p&gt;&lt;strong&gt;Battle Results&lt;/strong&gt; — The guests voted based on appearance,
creativity, and taste. While Colin and I won on taste, Christey and Andy won
the appearance and creativity votes, and their points carried the meal!&lt;/p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;

POM Pomegranate Gnocchi with Pomegranate Chocolate Ganache
A couple years ago, Christey and I ate at Thomas Keller’s Bouchon restaurant at the Venetian in Las Vegas. It was the first (and so far only) Keller restaurant we have visited. I had Keller’s gnocchi parisienne, which is a different way of making them from the more common potato or semolina versions. This recipe alone was the reason I bought his Bouchon cookbook, and I’ve since been inspired by several recipes.&lt;BR&gt;&lt;BR&gt;

Gnocchi parisienne are savory, but made from the more traditionally sweet pâte à choux dough. For the savory version, mustard, cheese, and herbs are added.&lt;BR&gt;&lt;BR&gt;

For June’s POM Pomegranate recipe, I decided to try to take the pâte à choux gnocchi back toward a sweet direction, and made a dessert gnocci with POM 100% pomegranate juice, served with a pomegranate and chocolate ganache.&lt;BR&gt;&lt;BR&gt;

I was expecting these to turn out more red, and the color blended into the flour and butter more than I expected. It didn’t matter, as the little gnocchi nuggets were pretty tasty — a little caramel on the outside and soft on the inside. The ganache was fantastic, and we’ve since had it on ice cream. Several times.&lt;BR&gt;&lt;BR&gt;

Recipe:&lt;BR&gt;
1 cup AP flour&lt;BR&gt;
3/4 cup POM 100% pomegranate juice&lt;BR&gt;
6 tbsp butter&lt;BR&gt;
1/2 tsp salt&lt;BR&gt;
3 eggs&lt;BR&gt;
1/2 cup chocolate chips&lt;BR&gt;
1/4 cup POM 100% pomegranate juice&lt;BR&gt;
1/2 cup heavy cream&lt;BR&gt;&lt;BR&gt;

<div xmlns="http://www.w3.org/1999/xhtml"><p>POM was pleased to provide refreshing post-game antioxidant recovery to a group of British soccer players this past weekend, here in the LA area.  The game was the annual friendly between BAFTA/LA <a href="http://www.baftala.org" target="_blank">www.baftala.org</a> and a visiting team from Virgin Atlantic (London). It took place on Saturday June 13th at the Glendale Sports Center, CA, and was a tough, well-fought game that ended in a close 3-1 win for Virgin. BAFTA/LA is the British Academy of Film and Television Arts (Los Angeles) and the soccer team is comprised of lads primarily involved in the entertainment business in LA.  Many thanks to Julian Stone <a href="http://www.tastyfilms.com" target="_blank">www.tastyfilms.com</a> for sharing POM with the players.  </p>
