Try Simon Brown's Christmas pudding recipe

Hi everyone, I'm Simon Brown the guest expert for cook's essentials.

A delicious, homemade Christmas pudding is the best way to round off Christmas dinner, but only if you’ve remembered to leave enough room!

Nothing beats the magic of making your own and gathering the whole family around for a stir and a wish before gently steaming the pudding and then tucking it away for a few weeks to mature, ready for its flaming entrance on Christmas Day.

Here’s my favourite recipe which makes a rich, scrumptious pudding...

Rich Christmas pudding

Serves 8-10 (depending on how much turkey you’ve eaten beforehand!)

Ingredients

115g (4oz) shredded suet (vegetarian if preferred)
55g (2oz) self-raising flour
225g (8oz) soft dark brown sugar
115g (4oz) fresh breadcrumbs
1tsp mixed spice
¼ tsp grated nutmeg
¼ tsp ground cinnamon
225g (8oz) currants
175g (6oz) raisins
115g (4oz) sultanas
25g (1oz) mixed candied peel, chopped
25g (1oz) whole almonds, blanched (skinned) and chopped
1 cooking apple, peeled, cored and grated
Grated zest of 1 orange
Grated zest of 1 lemon
2 medium eggs, beaten
30ml (2tbsp) rum
150ml (¼ pint) stout or brown ale

Method

1. In a large bowl, mix together the suet, flour, sugar, breadcrumbs and spices then stir in the dried fruit, mixed peel, almonds, apple, and orange and lemon zests. Once thoroughly mixed add the beaten eggs, rum and the stout or brown ale. Now stir everything together really thoroughly.

2. At this point, you need to call the family so that they can each take a turn in stirring and making a wish (the best bit!). Now leave the mixture in the covered bowl for a couple of hours (or even overnight) so that the fruit can plump up and the flavours can start to mingle.

3. When you’re ready to cook the pudding thoroughly, butter a 1.2 litre (2 pint) pudding basin and spoon in the pudding mixture, levelling the surface. Take a double sheet of greaseproof paper and place a sheet of foil on top. Grease the underside of the greaseproof paper, fold a 5cm (2") pleat across the centre so that the pudding has room to rise and place over the pudding basin, greased side down. Tie a long piece of string securely around the rim and then thread one of the ends across the pudding and under the string on the opposite rim and tie it off to form a handle.

3. Now lower the pudding into a steamer insert (like the cook’s essentials cookware set) or onto a trivet in the base of a pan with enough simmering water to come halfway up the basin - cover and steam gently for 8 hours. Keep an eye on the water and top it up with boiling water if necessary.

4. Once cooked allow the pudding to cool completely. Then remove and discard the foil and greaseproof paper and replace with a fresh greaseproof and foil cover, greased and tied in place as before. Store in a cool, dark place until Christmas Day.

5. To re-heat the pudding, steam for 2 hours (keeping an eye on the water as before) then remove the cover, turn out onto a warm plate and decorate with a sprig of holly.

6. Now pour the brandy into a small pan and warm on the hob. Pour the warmed brandy over the pudding, carefully set it alight then serve immediately to a round of applause!

Hi everyone,

I'm back on your screens tomorrow at 11am and 11pm so I thought I'd drop in to share a few tips and answer a couple of your questions...

It's so important to have even a really basic skincare routine. Just simply cleansing, toning and moisturising can help improve the look of your skin - very important with the party season fast approaching!

Step one: Firstly you should pick a cleanser and toner suited to your skin type. In the Elemis skincare range you can choose from normal to dry, normal to combination or sensitive options.

All Elemis cleansers use natural bases and pure plant extracts including lecithin to gently cleanse away make-up and grime. Elemis toners are alcohol-free and are designed to rebalance the skin’s pH level.

Step two: After cleansing and toning, you should always moisturise to help protect the skin. Choose your moisturiser based on your skincare concerns i.e. if you’re starting to see the first signs of ageing then choose Pro-Collagen Marine Cream, or if dehydration is your main concern choose Maximum Day & Night Cream.

To get salon-professional results: incorporate an exfoliator and mask into your routine. Always use an exfoliator first, followed by a mask.

The best way to decide which to use is to decide what your specific concern is, either brightening the look of dull skin - Fruit Active Rejuvenating Mask and Skin Buff, tackling the signs of ageing - Gentle Rose Exfoliator and Exotic Cream Moisturising Mask or balancing - Gentle Rose Exfoliator and Herbal Lavender Repair Mask. Adding in an exfoliator and mask twice a week can really boost your skincare results!

My sister's eyes have reacted very badly to the Tri-Enzyme. I know you say be careful around the eyes and she has been but no difference. Can you suggest a care routine or another product in the range as I'm determined to get her the great skin results that I've experienced with Elemis?! Evonne

Hi Evonne,

I’m sorry to hear about your sister's reaction. Unfortunately it might be that she's allergic to one of the ingredients as everyone’s skin is different.

If the Tri-Enzyme range isn’t for her I would suggest the 5 Piece Visible Brilliance Collection. She’ll need to choose either the dry or combination option for her skin type but this kit has everything you need for a great routine and could give her the same dramatic effects as a salon facial! I hope she experiences the same amazing results as you!

Create the perfect manicure with Leighton Denny

Just dropped in to tell you about my exciting Today's Special Value and to share a few tips to help you get the best results. Whether you want bold colour or beautifully natural nails, The Ultimate Collection has all you need to achieve your favourite look, quickly and simply, in the comfort of your own home.

From the classic French Manicure to kooky colour cocktails, this selection of top-notch items will allow you to create a different look for each day of the week, and more besides!

How to create a flawless French Manicure

There's no need for perfect eyesight or a steady hand - just follow these simple, step-by-step instructions.

1. Apply a Base Coat to your nails, such as Undercover. When dry, dab your Natural White Nail Varnish across the tip of each nail.

2. Use the Precision Brush dipped into Corrector Liquid like an eraser to carefully wipe away the excess white polish and make a gentle curve. Wipe the brush on a tissue after each use.

3. Follow with another application of Base Coat over the entire nail.

4. When dry, apply the Nail Varnish of your choice over the entire nail. For a high-gloss finish, continue with a thin application of Top Coat over the top, such as Crystal Finish.

For fabulously natural, no-effort nails…

1. Buff and gloss the nail with the three surfaces of the Trio Buffer. Use a few strokes of surface one, buffing from side to side across the nail. A few strokes of surface two will help smooth ridges and imperfections on the nail surface.

Do not buff too much or you could thin the nail. Lastly use surface three, buffing rapidly to leave the nail with a super-smooth surface and wet-look shine.

2. Brush Slick Tips Nail & Cuticle Oil around each cuticle and over the nail and gently massage.

3. Use the pink end of the Hoof Stick to gently push back cuticles in small circular movements, creating healthy, moisturised and natural-looking nails and cuticles.

How to achieve the Naked Moon effect

If you fancy having nails that make a statement, then try the Naked Moon technique. Massively popular with the celebs, this high fashion, glamorous look will give you nails that’ll be envied by all.

1. Apply a Base Coat to the nails, such as Undercover, leaving the 'half moon' naked. When the Base Coat has changed from shiny to matte, apply two thin coats of Nail Varnish, again leaving the half moon free of polish.

2. Use the Precision Brush dipped into Corrector Liquid like an eraser to carefully wipe away the excess polish and make a gentle curve. Wipe the brush on a tissue after each use.

3. Follow with a thin coat of Top Coat, such as Crystal Finish, to wrap up your polish and leave your nails with a glass-like shine.

"Hi everyone, Mal here,

I simply love Today's Special Value and thought I'd share a few recipes with you that will cook beautifully with the silicone bakeware set.

Here's a recipe from Margaret Johnson who I met at the Royal Cornwall Show in Wadebridge, Cornwall.

An emmet Cornish pasty - the Cornish call anyone who isn't Cornish an emmet!

Ingredients
1.5lb ready made short crust pastry
2.25lb partially boiled potatoes cubed
4oz diced raw smoked bacon
3tbsp chopped chives
2tbsp Worcestershire sauce
1 medium free range egg
25fl oz milk
Salt and freshly ground black pepper

Method
• Roll out half of the pastry and to make an oblong about 3mm thick and then do the same with the remainder of the pastry to make an identical shape.

• Pile the potato cubes and spread to within 1/4" of the edge of the pastry.

• Sprinkle on the diced bacon on top of the potatoes, followed by the chives and finally drizzle over the Worcestershire sauce.

• Season with the salt and the pepper and then with the end of a wooden spoon, prod little holes into the mixture.

• In a bowl, lightly beat the egg with the milk and then pour three quarters of the mixture into the ready made holes.

• With the remaining egg wash brush the edge of the pastry and then cover with the second rolled out pastry crimping the edges together with your fingers.

• Brush the remaining egg wash over the top of the pastry and place onto the baking sheet.

• Place in a preheated oven and bake at 400F for 45 minutes or until the pastry is golden.

Dark bread pudding

Ingredients
1.5lb bread
2.5 pints of boiling water
1tbsp black treacle
2 eggs
1tsp each of cinnamon, nutmeg, cloves and ground ginger
3oz sultanas
3 oz mixed peel
2.5 oz currants
1 rounded tbsp dark brown soft brown sugar

Method
• Tear the bread into pieces and place into a mixing bowl.

• Pour the boiling water over the bread and allow to soak until the water goes cold.

• Using a clean tea towel wring out the bread and place back into the dry mixing bowl.

• Add all the remaining ingredients and mix in well.

• Place the mixture into the square silicone roaster and spread out evenly, then cover with foil.

• Bake on the middle shelf at 355F for 1 hour.

• Take off the foil cover and continue to bake for a further 15 minutes.

Swiss tarts

Ingredients
8oz margarine
2oz caster sugar or icing sugar
Few drops of vanilla extract
12 tsp raspberry jam

Method
• Cream the margarine and the sugar together until light and fluffy.

• Add the vanilla extract and the flour and beat in until well combined.

• Place the mixture into a piping bag with a small star nozzle and pipe the mixture into the 12 silicone cups. Start at the centre and swirl to make a spiral, leaving a depression in the centre.

• Place in the oven on the middle shelf and bake for 30 minutes at 375F.

• Take out of the oven and spoon in the jam into the centre.

And lastly, here's a recipe I picked up from a butcher I met at the Cook and Dine cook shop in Doncaster about six weeks ago.

Stuffed chicken breast with Stilton and seedless grapes

Ingredients
2 free range chicken breast, skin removed
8 slices prosciutto ham
2tbsp olive oil
4tbsp Stilton cheese
8 seedless grapes, halved
2tbsp fresh basil, torn
Black pepper

For the sauce
3 spring onions, chopped
4 chestnut mushrooms, chopped
250ml white wine
250ml chicken stock
Sea salt and black pepper to taste
25g unsalted butter

Method
• With a paring knife, carefully make a slit into the chicken breast along the whole of the breast until you have make a pocket.

• Stuff the pocket with the Stilton cheese, basil and the seedless grapes.

• Lay four slices of prosciutto ham onto a board overlapping each slice and lay the chicken piece in the middle. Season with the black pepper and gently roll up the chicken breast. Repeat with the second chicken piece.

• In a frying pan add the olive oil and let it get hot. Sear the chicken until the ham is golden brown and transfer to the square or round silicone roaster and keep warm.

• In the meantime, make the sauce by returning the pan to the heat and get fairly hot. Add the onions, mushrooms and cook for 3 minutes on a medium heat.

• Pour in the wine and reduce the liquid to half the volume.

• Add the chicken stock and again reduce by half and then season to taste.

• Pour over the chicken and place in the oven and cook for 25 minutes or until the chicken is cooked through.

• Serve with potato rostis and steamed mixed peppers.

These Photo Montage products are popular as gifts and, because it can be difficult to pick photos for other people, our order box is ideal.

The 55Max order box can be given as the gift itself and the recipient can then choose the photographs they want to use. The box is similar to a gift voucher and allows the recipient to send their images in for production in their own time.

What happens once I've received the order box?
Once the order box has left QVC the next stage will be between the customer and 55Max Bespoke. 55Max Bespoke will process the order and consult with the customer via email or phone to ensure a constant flow of communication.

Is there a cut-off date for Christmas delivery?
Images for blankets will need to be sent in before Tuesday 24th November. For cushions, the images will need to be sent in before Friday 4th December.

Do I have to have the amount of photographs suggested?
No – we only recommend the maximum amount of images that would suit each product but you can have less so that the images will be bigger.

How do I submit my photos?
You can post original photographs along with other memorabilia. You can also send in a CD or USB stick with images on. We advise sending any hard copy original photographs and memorabilia via registered post.

Images can also be emailed or uploaded online to the dedicated website www.55maxbespoke.com. It's very easy to use!

Will my hard copy photos be returned and do I need to pay any extra?
Yes. They'll be returned by registered post and separate to your bespoke product – free of charge. USB sticks will also be returned. CDs won’t be returned.

Can you make adjustments to my photos?
55Max Bespoke designers will always make some colour adjustments and crop the image to fit to get the very best results. Red-eye and date stamps will be removed free of charge. If the customer has a specific request, they must include this request in their order. 55Max Bespoke can also change colour photos to black and white or sepia.

Can you ship my bespoke product outside the UK?
UK delivery is free of charge on all bespoke products and cushions and blankets will be sent via First Class by Royal Mail.

Meet our Face of Diamonique finalists

You may remember that back in September we launched our competition to find QVC's new Face of Diamonique. The lucky winner will be appearing on air during Diamonique Day on Thursday 29th October.

We caught up with the finalists when they came in for their auditions to find out a little bit more about them and why they think they could be the next Face of Diamonique.

I spotted the advert for the competition when I was watching one of the Diamonique shows a few weeks ago, and I just knew I had to enter because I LOVE the jewellery so much!

I work at a college advising students on courses and I wear Diamonique to work almost every day. I'm a bit of an exhibitionist so the sparkliness of the jewellery really reflects all the facets of my personality!

I watch QVC all the time and I love the beauty and make-up brands that you sell. That's how I first discovered Diamonique; it was the next show after a beauty hour that I'd tuned in for, and I decided to watch the first five minutes to see what it was all about - I was instantly hooked!

My whole family loves shopping with QVC, we consider it our own 'secret shop'! It's such a relaxing experience to going out on the high street, and you know that each time you open a package you're guaranteed something of great quality.

I'm spreading the word about Diamonique and QVC among my friends, but sometimes if it's a piece I really want to keep just to myself, I'll tell them that I bought it from some obscure shop so they can't copy me!

It was my mum Ramila that first heard about the Face of Diamonique competition. She watches QVC all the time and spotted the ad on air. As soon as she found out about it she said I should enter - and kept leaving me 'reminder' notes all around the house about it until I'd filmed my entry!

I sent the tape in weeks ago and then forgot all about it, to be honest I didn't think I'd hear anything more. So when the phone rang and it was QVC saying that I'd made it to the final shortlist, I was amazed!

I'd like to be the Face of Diamonique as I love the jewellery and I think it would be a great way to spread the word. My mum bought me my very first piece of Diamonique jewellery and now I buy it for all my freinds too.

We tend to do all our Christmas shopping with QVC as it means you don't have to battle through lots of crowds and your time is your own. We've always had such professional service and care from QVC, and everything seems to arrive so quickly.

My own favourite Diamonique pieces are the more subtle designs that I can wear day to day, though if I'm going to a party I'll put on a big statement necklace to really wow! Mum also has lots of Diamonique - some of it is over 10 years old and it still looks as amazing now as the day she bought it. There aren't many jewellery brands you can say that about!

I've been a fan of QVC and particularly Diamonique for years, so when I saw your competition I thought to myself 'Why not?!'. I've bought lots of Diamonique jewellery and I thought this could be my chance to show just how much I enjoy it.

I'm a bursar at a primary school in Sutton and I accessorise with Diamonique every day. When people ask me where my jewellery comes from, they're always surprised when I say it's from QVC.

Wearing my Diamonique makes me feel good and I love to let everyone know where I bought it - I think everybody should have the opportunity to enjoy Diamonique just as much as I do.

My daugther has just turned 13 and she's just getting into Diamonique too. I think it's a great introduction to jewellery as it's fun and sparkly, but not too expensive or so precious that it's too special to wear.

I tend to wear one statement piece of Diamonique, and rings are a particular favourite - I have 40 or so at the moment, and the collection is growing! I love to look down and admire the stones glistening on my finger; it's almost mesmerising. My favourite piece of all is the Princess Cut Signature Ring from Tova's Diamonique range.

Today has been wonderful. I've seen behind the scenes, met the lovely Anthony and got to talk about my passion - Diamonique! The chance to model on TV on Diamonique Day would be a dream for me - I just hope it comes true!

Likes: Thinking he's a dog and having the full run of the place
Dislikes: Having a bottom bath, which we have to do quite regularly so he has a nice clean bum!

Dear Santa,

I have been a good girl this year and have tried really hard to behave myself. I've been going to bed at a reasonable time but sometimes QVC keeps me up late.

The new Lauren G Adams jewellery collection

As part of our Get Gorgeous for Winter weekend we're proud to unveil a brand new fashion jewellery collection - Lauren G Adams. We caught up with the designer, Orly Ovadia, to find out more about her and her fun and fabulous designs...

I called my brand Lauren G Adams after my three children - Lauren, 17, is my middle child; the G is for Gabby, my youngest; and Adams is for my eldest son. His name is actually Eric, but somehow Lauren G Eric didn't sound quite right, so we used his middle name Adam instead! I miss my children when I'm working so it's a good way to be constantly reminded of them when I'm busy.

The signature look to my jewellery is bright colours and feminine prints. I love designs that are really ladylike: flowers, paisley, daisies and so on. I'm also a huge fan of colour, which I inject into all my jewellery with gorgeous enamels. They also give the finished pieces a lovely glossy look.

The other signature to my jewellery is the amount of work on the inside of each piece - it can be cut-outs or more enamelling, but the finish is very important to me. It's all about the little details!

I take my inspiration from all kinds of sources, but I'm particularly drawn to vintage fabrics and prints - I love going through fashion and drapery archives to inspire my new pieces. They also influence the colours I use too - all the enamels are mixed to my own specifications, so you won't find anything with exactly the same colours anywhere else.

My jewellery's very popular with young actresses - Haylie Duff (sister of Hilary) is a fan, as is Rumer Willis, and also many of the contestants on Dancing with the Stars (the US equivalent of Strictly Come Dancing) have also worn my designs.

If I could chose any celebrity to be seen out and about in my jewellery it would have to be Eva Longoria. Or Scarlett Johansson - I love her classic beauty yet funky, modern edge that she always seems to have.

My own personal style icon isn't an actress or singer but a fellow designer, Michael Kors. I love the fact that he designs for real people, not just the privileged or uber-trendy. All his fashion and accessories have a 'realness' to them. I try to do that with my jewellery too; I like to think that anyone who buys my designs wears them every day without worrying about it being the 'in thing' or out of season - it should always be about fun and making you feel good!

If I had to choose just one piece from my collection then I guess it would be the Enamel Flower Station Necklace. It measures over one meter in length, so it's ideal for creating a layered look. It goes great with other necklaces in the collection, and comes in a choice of three colours, which look fabulous when you wear them all together!

For this autumn and winter I would say the one piece you have to have in your jewellery collection is a big statement cocktail ring. Sometimes a big ring is all you need to finish off your look.

Another trend that's still really hot is the whole layered, wrapped and stacked look. Pile on lots of bangles or stack band rings together. Personally I think three or four chains worn together can really finish an outfit.

The one thing I'd say not to worry about is colour. I don't design to a seasonal palette and I think if you want to wear cool white or vibrant red in the middle of winter, then go for it! There are no rules, just wear what YOU like and enjoy every minute of it!

This gemset necklace is an unusual choice for me, as I don't usually wear stones, but this piece is so different that it caught my attention. It's ideal for the autumn and winter as it's long enough to wear over a jumper.

The weight of this necklace is amazing and the stones feel wonderful against the skin. The smoothness and shapes of the gems are playful and I love the way they graduate along the length of the piece, reminding me of pebbles smoothed by a flowing stream.

With Christmas on the horizon, we caught up with Elemis expert Keeley to find out how she's spending the festive season with baby Kaya and what her top gift ideas are...

How will you be spending your first Christmas with baby Kaya?
I'll be spending time with my family definitely, spoiling Kaya rotten, and with lots of food and pressies. We may even try and get away somewhere hot this year, which would be lovely!

What do you want to find under the Christmas tree this year?

I would love anything Disney as I'm still a real child at heart - Kaya is a great excuse now to bring out the child in me!
