<div xmlns="http://www.w3.org/1999/xhtml"><p>We watched "Julie and Julia" this evening. Possibly the most satisfying film I have ever seen. Meryl Streep, Stanley Tucci - both magical in their unique portrayal of a couple in mature love. Julia Child and a youthful blogger who dedicated herself to cooking and writing up every one of Child's recipes in her  book on French cooking make up the main thrust of the film. On the surface, nothing special.</p><p>It's beneath the surface that the wonderful mysteries of cooking, loving, struggling and making sense out of lives craving for something more than the standard grind of making do in a sometime humdrum world.</p><p><a href="http://viewfromarizona.typepad.com/.a/6a00d83452294369e2012876448d03970c-pi" style="display: inline;"><img alt="Images" border="0" class="asset asset-image at-xid-6a00d83452294369e2012876448d03970c " src="http://viewfromarizona.typepad.com/.a/6a00d83452294369e2012876448d03970c-800wi" title="Images" /></a> <br /> </p><p>We stand in awe of Streep. Never has an actress shown excellence in so many varieties of acting - from comedy to "Sophie's Choice". She never chooses the same type of part twice. And she is so masterful in whatever role she chooses that I sit, literally in wonder. OK. There were tears of happiness and satisfaction running down my face as the film came to its end. Jo Ann too. Yep. Just too good to cope with.</p><p>Let me close with Julia's most famous recipe:</p><p><span style="font-family: Times; font-size: medium; line-height: normal; " /></p><p style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; height: 100%; font: normal normal normal 13px/15px Arial, sans-serif; color: #333333; background-image: none; background-repeat: initial; background-attachment: initial; -webkit-background-clip: initial; -webkit-background-origin: initial; background-color: initial; font-family: Arial, sans-serif; font-size: 13px; line-height: 15px; background-position: initial initial; " /><p class="printable_container" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; width: 730px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; "><img class="printable_logo " src="http://static.oprah.com/images/global/printing_logo_oprah_com.gif" style="border-top-width: 0px; border-right-width: 0px; border-bottom-width: 0px; border-left-width: 0px; border-style: initial; border-color: initial; position: relative; top: 0px; left: 0px; width: 276px; height: 110px; margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 20px; float: none; " /></p><p class="printable_ad" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; width: 468px; height: 60px; position: absolute; top: 15px; left: 230px; "><a href="http://ad.doubleclick.net/click;h=v8/3900/0/0/%2a/f;44306;0-0;0;34778015;1-468/60;0/0/0;;~aopt=2/1/ff/0;~sscs=%3f" style="text-decoration: none; color: #e15a00; position: relative; cursor: pointer; " target="_blank"><img alt="Click here to find out more!" border="0" src="http://static.2mdn.net/viewad/817-grey.gif" style="border-top-width: 0px; border-right-width: 0px; border-bottom-width: 0px; border-left-width: 0px; border-style: initial; border-color: initial; position: relative; top: 0px; left: 0px; " /></a></p><p class="printable_content_recipe" style="margin-top: 0px; margin-right: 0px; margin-bottom: 3px; margin-left: 25px; clear: both; width: 620px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; " /><p id="article_title" style="margin-top: 0px; margin-right: 0px; margin-bottom: 5px; margin-left: 0px; " /><p class="headline" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; font-size: 23px; line-height: 25px; color: #329500; font-weight: normal; ">Boeuf Bourguignon</p><p class="byline" style="margin-top: 4px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; font-size: 12px; ">Recipe created by Julia Child</p><p /><p class="clear" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; clear: both; " /><br /><p id="article_body" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; " /><p class="article_image" style="margin-top: 0px; margin-right: 12px; margin-bottom: 16px; margin-left: 0px; float: left; "><a href="http://www.oprah.com/printrecipe/food/recipesmeat/20090806-orig-julia-child-boeuf-bourguignon#" style="text-decoration: none; color: #e15a00; position: relative; cursor: pointer; "><img alt="Mastering the Art of French Cooking Vol. 1 by Julia Child" class="no_nav " src="http://images.oprah.com/images/foodhome/food/200908/20090806-mastering-the-art-of-french-cooking-125x163.jpg" style="border-top-width: 1px; border-right-width: 1px; border-bottom-width: 1px; border-left-width: 1px; border-style: initial; border-color: initial; position: relative; top: 0px; left: 0px; border-top-style: solid; border-right-style: solid; border-bottom-style: solid; border-left-style: solid; border-top-color: #dddddd; border-right-color: #dddddd; border-bottom-color: #dddddd; border-left-color: #dddddd; " /></a></p><p class="photo_credit grey" style="margin-top: -4px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; font-size: 10px; color: #a5a5a5; " /><p /><p style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; ">As is the case with most famous dishes, there are more ways than one to arrive at a good <em>boeuf bourguignon</em>. Carefully done, and perfectly flavored, it is certainly one of the most delicious beef dishes concocted by man, and can well be the main course for a buffet dinner. Fortunately you can prepare it completely ahead, even a day in advance, and it only gains in flavor when reheated. <br /><br /><strong>Vegetable and Wine Suggestions</strong><br />Boiled potatoes are traditionally served with this dish. Buttered noodles or steamed rice may be substituted. If you also wish a green vegetable, buttered peas would be your best choice. Serve with the beef a fairly full-bodied, young red wine, such as Beaujolais, Côtes du Rhône, Bordeaux-St. Émilion, or Burgundy.</p><p class="clear" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; clear: both; " /><p style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; " /><h5 class="recipe" style="font-family: Arial, sans-serif; font-weight: bold; margin-top: 10px; margin-right: 4px; margin-bottom: 0px; margin-left: 0px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; line-height: 1em; font-size: 13px; color: #3eb601; display: inline; ">Ingredients:</h5>Serves 6<br /><br /><strong>Kitchen Supplies:</strong><br /><br /><ul class="recipe" style="margin-top: -5px; margin-right: 0px; margin-bottom: 15px; margin-left: 0px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 0px; list-style-type: none; list-style-position: initial; list-style-image: initial; "><li style="margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 15px; padding-top: 0px; padding-right: 0px; padding-bottom: 0px; padding-left: 10px; background-image: url(http://static.oprah.com/images/global/global_bullet_grey_4x4.gif); background-repeat: no-repeat; background-attachment: initial; -webkit-background-clip: initial; -webkit-background-origin: initial; background-color: transparent; background-position: 0px 4px; ">9- to 10-inch, fireproof casserole dish , 3 inches deep</li>

<p id="recipe_instr" style="margin-top: 0px; margin-right: 0px; margin-bottom: 0px; margin-left: 0px; ">Remove rind from bacon, and cut bacon into <em>lardons</em> (sticks, 1/4 inch thick and 1 1/2 inches long). Simmer rind and bacon for 10 minutes in 1 1/2 quarts of water. Drain and dry.<br /><br />Preheat oven to 450 degrees. <br /><br />Sauté the bacon in the oil over moderate heat for 2 to 3 minutes to brown lightly. Remove to a side dish with a slotted spoon. Set casserole aside. Reheat until fat is almost smoking before you sauté the beef. <br /><br />Dry the stewing beef in paper towels; it will not brown if it is damp. Sauté it, a few pieces at a time, in the hot oil and bacon fat until nicely browned on all sides. Add it to the bacon. <br /><br />In the same fat, brown the sliced vegetables. Pour out the sautéing fat. <br /><br />Return the beef and bacon to the casserole and toss with the salt and pepper. Then sprinkle on the flour and toss again to coat the beef lightly with the flour. Set casserole uncovered in middle position of preheated oven for 4 minutes. Toss the meat and return to oven for 4 minutes more. (This browns the flour and covers the meat with a light crust.) Remove casserole, and turn oven down to 325 degrees. <br /><br />Stir in the wine, and enough stock or bouillon so that the meat is barely covered. Add the tomato paste, garlic, herbs, and bacon rind. Bring to simmer on top of the stove. Then cover the casserole and set in lower third of preheated oven. Regulate heat so liquid simmers<br />very slowly for 2 1/2 to 3 hours. The meat is done when a fork pierces it easily. <br /><br />While the beef is cooking, prepare the onions and mushrooms. Set them aside until needed. <br /><br />When the melt is tender, pour the contents of the casserole into a sieve set over a saucepan. Wash out the casserole and return the beef and bacon to it. Distribute the cooked onions and mushrooms over the meat. <br /><br />Skim fat off the sauce. Simmer sauce for a minute or two, skimming off additional fat as it rises. You should have about 2 1/2 cups of sauce thick enough to coat a spoon lightly. If too thin, boil it down rapidly. If too thick, mix in a few tablespoons of stock or canned bouillon. Taste carefully for seasoning. Pour the sauce over the meat and vegetables. Recipe may be completed in advance to this point.<br /><br /><strong>For immediate serving:</strong> Covet the casserole and simmer for 2 to 3 minutes, basting the meat and vegetables with the sauce several times. Serve in its casserole, or arrange the stew on a platter surrounded with potatoes, noodles, or rice, and decorated with parsley. <br /><br /><strong>For later serving:</strong> When cold, cover and refrigerate. About 15 to 20 minutes before serving, bring to the simmer, cover, and simmer very slowly for 10 minutes, occasionally basting the meat and vegetables with the sauce.<br /><br /><em>Copyright © 1961, 1983, 2001 by Alfred A. There are more, but as a sample they point to something on their own. There's more to the season than what you might hear at Walmart, Target, or even your local church. It is darker and deeper.</p><p>These are mostly fine old Irish carols, but that is just a surface. To us they are new and thoughtful. "Haunting" is a word I like. Again, Advent at its best.</p><p>In this morning's <span style="text-decoration: underline;">NY Times</span>, Jon Parales comments on a concert by Sting at New York's Cathedral of St. John the Divine on Tuesday night. "The faith in the carols was humble and awestruck, not celebratory." Well, friends, that's exactly the spirit of the Scriptures. It is right and true.</p><p>A tradition around here has been to purchase one, and only one album that might add something to our Christmas celebration. I usually choose one that will stretch us a bit - and invite some thoughtful exploring of the dimensions of the season. Sting gets the star at the top of our tree this year.</p><p><p class="asset asset-audio at-xid-6a00d83452294369e201287641a31d970c"><a href="http://viewfromarizona.typepad.com/files/10-the-hounds-of-winter.m4a">Download 10 The Hounds of Winter</a></p></p><p /></div>
