<p>Bars are no exception and there is increasing pressure to find a waste management programme and win the war on waste.</p>
<p>Being on top of trends, when done properly is a good route to profitability. <h2>Problem-solving innovation</h2>
<p>Did you know that “the average hospitality operation loses eight to 12 per cent of their food and beverage inventory each week", according to <strong><a title="Restobiz: How to drive a successful food and beverage inventory program" href="https://www.restobiz.ca/how-to-drive-a-successful-food-and-beverage-inventory-program/" target="_blank">Restobiz</a></strong>.</p>
<p>And if you think this number only relates to food, you might be surprised.       <![CDATA[<p>The liquor industry is replete with iconic bottles, each telling a unique story; think Johnnie Walker, Courvoisier, Patrón, Chivas Regal, Mozart, Chambord, Cîroc, and Hibiki.</p>
<p>Liquor bottles are far more than just vessels, they are powerful marketing tools, where the bottle is the brand and the brand is the bottle, each inexorably linked in a sales and marketing embrace.</p>
<p>However, the pursuit of unique bottle designs has often overlooked the practical needs of bars.</p>
<p>In this blog, we will explore how bottle design enhances and hinders bar operations.</p>
<h2>Design queues from perfume bottles</h2>
<p>For just over 15 years, liquor bottle design has undergone a significant transformation, given the entry of thousands of new brands or old brands reinvented to attract new customers.</p>
<p>One of the first new brands to adopt the “perfume bottle” led design thinking was <a title="St-Germain Elderflower Liqueur" href="https://www.stgermainliqueur.com/" target="_blank">St-Germain,</a> with many brands following in their footsteps.</p>
<p>According to <a title="Why Perfume Bottle Design Matters" href="https://scentsesandco.com/blogs/blog/why-perfume-bottle-design-matters" target="_blank">Scentses + Co</a>, <em>"Through the bottle design, perfumers get a chance to tell the story of their scent even prior to a customer gets a single whiff of it. It tells you about who they are, what their brand stands for, and what kind of scent awaits you in that bottle."</em></p>
<p>This is the same feeling or emotion that liquor bottle design builds on to create a link to history or other cultural queues such as the <a href="https://www.thoughtco.com/the-belle-epoque-beautiful-age-1221300" title='Belle Époque or the "Beautiful Age" in France' target="_blank">Belle Époque</a>.</p>
<p>We asked Aussie icon vermouth brand, <a title="Social media post about Regal Rogue" href="https://www.instagram.com/p/C_POsoht563/" target="_blank">Regal Rogue</a>, about their bottle design and why the bottleneck is small, they replied, <em>"Because when we created our own bespoke bottle in 2018, we were drawn to vintage Eau de vie bottles being a grape product and so this design indirectly linked to those styles in recycled glass."</em></p>

<p>While eye-catching designs may attract consumers off-premise, bars have specific requirements and this can create challenges for bartenders.</p>
<p>Ironically, the race to develop bespoke bottle designs has inadvertently created the reverse, which we call an “anti-bar bottle”.</p>
<p>An “anti-bar bottle” is a bottle shape selected by brand owners for aesthetics, where functionality is ignored and the consequences come at a high cost.</p>

<h2>But first, the wine bottle?</h2>
<p>Let’s quickly look at wine bottles. From a marketing perspective, the design feature differentiating wine brands, other than the name and contents, is the label on the bottle.</p>
<p>The most striking aesthetic of the wine bottle is the commonality of its shape, which has remained fairly constant for several hundred years.</p>
<p>We believe that the wine bottle design was informed purely by the closure traditionally used which was cork. Cork being a natural material requires hand crafting to ensure it can be snuggly fitted into a bottleneck to seal it, in so doing securing the contents.</p>
<p>Unlike wine bottles, which have maintained a fairly consistent shape, liquor bottles have enjoyed more design freedom. This has led to a wide variety of shapes and sizes, often overlooking the practical needs of bars and bartenders.</p>

<h2>When design leads, bars are usually left behind</h2>
<p>It’s widely known that 20% of all liquor sales are generated in bars, with more or less 80% of it generated from retail distribution channels.</p>
<p>In a retail setting, aesthetics is an important consideration in making a sale or attracting consumer interest.</p>
<p>Saying that, bars are a critical pathway to consumer “discovery” by introducing consumers to a new spirit or brand through a low-cost risk entry point of consumption made by a shot or mixed drink.</p>
<p>It can be said that designers rarely consider the bartender when it comes to bottle design, which can create unintended operational consequences impacting on-premise liquor management.</p>
<p>Here are some of the questions that need to be considered with bottle design in the bar setting:</p>
<ol>
<li>Does the bottle sit easily on a speed rail?</li>
<li>Is the bottle easy to pick up by someone with small or large hands?</li>
<li>Is there sufficient neck length and shoulder to allow for a comfortable grip?</li>
<li>Is the bottle well-balanced when picked up? Think of squat bottles versus long bottles.</li>
<li>Does the bottleneck opening (bore size) easily accommodate a standard speed pourer to allow a bartender to quickly serve a guest without a problem?</li>
</ol>
<p>What are the on-premise consequences of poor bottle design?</p>
<ul>
<li>Liquor wastage due to problematic pourer fit (bottleneck openings are too small or large).</li>
<li>Bottles too difficult to pick up or pour slow down service, tending to force bartenders to use other competitive brands instead.</li>
</ul>

      <![CDATA[<p>Sometimes, polar opposites exist within the same continuum ... a practical example of this thought is Angel's Share which receives reverence and respect whilst it’s polar opposite, the Devil’s Take, is completely ignored by profit atheists!</p>
<p>Angel's Share affects distillers costs while the Devil’s Take destroys bar profits. The differences and outcomes are wide reaching and devastating!</p>
<h2>The Angel's Share</h2>
<p>According to <a title="Angel’s share whiskey: what is it?" href="https://oakandeden.com/blogs/journal/angel-s-share-whiskey-what-is-it" target="_blank">Oak &amp; Eden</a>, "The Angel's Share is the whiskey lost to evaporation during the aging process... This whiskey that evaporates into the air and perfumes the storehouse was dubbed the angel's share in medieval Ireland and Scotland. They believed the whiskey that disappeared into the air was meant as an offering for the angels."</p>

<p>So, how much is really lost during the aging process?</p>
<p>While climate may be seen as the most influential one, there are other factors at play that affect the evaporation rate, such as:</p>
<ul>
<li>Temperature</li>
<li>Humidity</li>
<li>Air circulation</li>
<li>Air pressure</li>
<li>Barrel storage</li>
<li>Cask size</li>
<li>Cask fill level</li>
</ul>
<p>"Generally speaking, spirits tend to evaporate more quickly while they’re young, and then slow down as they age. So, at the very beginning of a whisky’s time in the cask, the angels’ share will be around 3.5% to 4% every year. As it ages, the whisky will now evaporate at much lower rates. By the end of its maturation period, a 20-year-old spirit might lose 40% of its volume", according to <a title="Whisky Evaporation: What is the Angel’s Share?" href="https://www.theglenlivet.com/en/our-community/articles/angels-share-meaning/" target="_blank">The Glenlivet</a>.</p>
<p><a title="Unveiling the Angel’s Share: Unlocking the Secrets of Whisky’s Hidden Loss" href="https://whiskyinvestments.com/what-is-the-angels-share-of-whisky/" target="_blank">UKV International</a> says, "On average in Scotland, 1-2% of whisky is lost to the Angel’s Share per year. This figure is different for countries with warmer climates, for example, in India, the rate of evaporation is around 12% per year... If a whisky is stored for 25 years, it could lose up to 25-50% of its volume in Scotland".</p>
<h2>The Devil's Take</h2>
<p>The Devil’s Take, on the other hand, occurs downstream and is the process of alcohol transfer loss from bottle to serving glass at the Point of Pour. The Devil’s Take is widely agreed by industry experts such as Barmetrix and Bevinco to represent losses on average of 3-5 mL (1/10-1/6 Oz) per 30 mL or 1 Oz serve!</p>

<h2>So how does one account for Angel's Share and the Devil’s Take?</h2>
<p>Distillers are a fairly canny lot... every production loss, irregularity, and imperfection are quickly noted and accounted for. As spirit ages, Angel's Share accounts for increasing costs. The total costs to bottle (including storage, processing, bottling, and packaging) is then divided by total net volume produced, resulting in higher cost and wholesale/retail sales price... (Marketing, transport, taxes, and margins excluded).</p>
<p>Bar operators, on the other hand, receive a certain amount of bottled sprits and alcohol into stock which deplete via sales an amount weekly. The difference between POS recorded sales and remaining stock on hand is the Devil’s Take, representing alcohol drips, leaks, over pours, freebies, and shrinkage!</p>
<p>Bars do not charge more money to guests/consumers for the arising alcohol wastage/loss. Of course, if bars were to increase the price of every drink served by the comparable amount of alcohol over-poured or wasted, shouldn’t incensed consumers demand greater accountability in the way alcohol is dispensed?</p>
<p>The Devil’s Take is broadly explained away by bar management as “a cost of doing business” rather than the consequence of poor practice and execution at the Point of Pour.</p>
<p>If Distillers-owned bars would find ways to account and reverse engineer the Point of Pour process to reduce or eliminate a preventable loss…we believe they would! Acceptance of the Devil’s Take is not futile as practical, cost effective solutions are available to overcome this large problem.</p>

<h2><a id="nmi">The National Measurement Institute and its Inspectors</a></h2>
<p>The <a href="https://www.industry.gov.au/national-measurement-institute" title="National Measurement Institute" target="_blank">National Measurement Institute (NMI)</a> is the national body charged with administering all measurement requirements in Australia, including anything sold by weight and volume. It employs inspectors throughout Australia who regularly inspect alcohol being sold to ensure that sellers are following the correct process.</p>
<p>Inspectors can visit a place of business at any reasonable time of day and do not have to give notice of entry. They base the frequency of their visits on their risk assessment of your operations.</p>
<p><strong>NMI inspectors have the power to:</strong></p>
<ul>
<li>enter and search a building or place apparently used for business, but not residential premises unless the inspector has a warrant or the person in control of the residence consents</li>
<li>record details of the building, place, or measuring instruments by filming, photographing or making sketches and notes</li>
<li>test and verify measuring instruments</li>
<li>check if servicing licensees’ verification marks have been properly applied and the instrument’s details have been provided to NMI</li>
<li>examine a seller’s records, and take copies of documents when necessary</li>
<li>seize documents, records, packages or measuring instruments</li>
<li>ask questions and require answers</li>
<li>issue non-compliance notices</li>
</ul>

<h2><a id="fines">Fines and Enforcement</a></h2>
<p>If an inspector finds that businesses are short-measuring customers, they could be fined up to $222,000 per offence.</p>
<p><strong>NMI has a range of enforcement options for offences under trade measurement legislation such as:</strong></p>

<li>a verbal warning</li>
<li>a notice of non-compliance at the end of an inspection—this notice may include remedial actions that have to be carried out</li>

<h3>Beer, Stout and Ale</h3>
<p>If you sell beer on tap, this usually involves serving it in an approved batch-tested glass or jug:</p>
<ul>
<li>with the volume marked in millilitres (mL) or litres (L)</li>
<li>made from glass, acrylic or another approved material</li>
<li>with the capacity of a glass defined by either the brim or a capacity (Plimsoll) line</li>
<li>with the capacity of a jug defined by a capacity (Plimsoll) line</li>
</ul>
<h3>Spirits</h3>
<p>You must sell brandy (including cognac and armagnac), gin, rum, vodka or whisky (or whiskey) by reference to volume. This usually involves using an <a href="https://www.uberbartools.com.au/collections/jiggers-measure" title="NMI-approved spirit measure and jiggers" target="_blank">NMI-approved spirit measure</a>. Spirit measures include:</p>
<ul>
<li>thimble measures</li>
<li>jiggers</li>
<li>more complex dispensers that require verification by servicing licensees</li>

<p>Simple spirit measures must be:</p>

<li>in capacities of 15 mL, 30 mL or 60 mL</li>

<p>There’s a direct relationship between guests spend, individual drinks sold and contribution margin towards a venues costs.</p>
<p>A great guide to understanding in easy terms the impact… consider overhead and expenses in terms of 3 drinks sold to one guest.</p>

<p>In a nutshell, category swap is the outcome of a business process failure, an inability to deliver consistency... consistently.</p>
<p>Inconsistency is the result of multiple failures:</p>

<li>Insufficient staff training and compliance</li>
<li>Management oversight</li>

<h2><a id="cost">What can category swap cost you?</a></h2>
<p>Every time a guest swap out, from say, a $15 cocktail to a lower-priced $9 bottled alternative, there’s a real loss of $6 in sale revenue and an arising loss.</p>
<p>Yes, we appreciate that money’s entering the till, however the value of the sale and the amount of profit drastically reduces.</p>
<p>Let’s explore what the real impact is of a cocktail swapped to a bottled alternative using the $15 and $9 drinks example above:</p>
<p><strong>First Drink:</strong> $15 cocktail at a 90% Gross Profit. *$13.50 = $15-$1.50.<br><strong>Second Drink:</strong> $9 glass of wine at a 60% Gross Profit. *$5.40 = $9-$3.60.</p>
<p style="font-size: 12px;" data-mce-style="font-size: 12px;"><em>*Gross Profit (GP) = Revenue - Cost of goods sold (COGS)</em></p>
<p>In the example, we see the $6 decrease in sales value leads to a $8.10 reduction in profit ($13.50-$5.40).</p>
<p>How many extra bottled drinks does one need to sell to the same or the next customer to make up the shortfall of a bartender-made drink?</p>
<p>In a sense, category swap may be considered a business process failure.</p>
<h2><a id="signs">What are the signs to look out for?</a></h2>
<p>A guest rarely will share with a bartender their first drink was unpleasant, they'll instinctively swap to a bottled alternative as it's consistent tasting.</p>
<p>Category swap is hard to measure, to do so one needs to consider a two-pronged strategy: anecdotal and inference.</p>

<h3>Anecdotal</h3>
<p>Serve staff should be trained/rewarded to report back on glasses collected with drinks partially consumed (between 50%-90%).</p>
<p>Some could say this exercise may cost more than what it’s worth.. maybe they’re right, however saying that we’d still suggest that this approach should be considered several times a year to monitor drinks consistency.</p>
<h3>Inference</h3>
<p>Most bars know the percentage and value of bartender-made drinks sold on average versus glasses of wine, bubbles, beer and ready-to-drink (RTDs). Sudden changes to these numbers may indicate an issue with category swap—remember to take into account seasonal and possible one-off factors such as weather, trading down due to economic factors.</p>
<h2><a id="conquer">Conquering category swap</a></h2>
<p>If the data suggests an issue within consistency, then that’s the opportunity to review or eliminate causal factors such as:</p>
<ol>

      <![CDATA[<p>During April 2024, Überbartools™ conducted an international survey of hospitality businesses—bars, pubs, clubs, hotels, distilleries and more—to help identify the causes of liquor loss, highlighting the role speed pourers play in alcohol wastage.</p>
<p>The survey focused on inventory management frequency, reported variances and bar tools, specifically bottle pourer types used.</p>
<p>Here are the key insights from the survey and some questions worth exploring:</p>
<h2>Type of pourer used</h2>
<p><em>76% of all respondents use metal pourers (50% of them solely use metal pourers and the other 50% use a combination of metal and other kinds of pourers). The 24% of all respondents use other kinds of bottle pourers such as plastic and ball pourers.</em></p>

<p><em>81% of the respondents surveyed use metal pourers and sell over 5 cases of spirits weekly.</em></p>

<p><em>According to the survey results, 77% of the metal pourer users found liquor variance after stock take, and 60% of them further estimated a cost of over $200 per week from overpouring liquor.</em></p>
<p>The arising question: is there a direct correlation between the use of metal pourers and liquor variance/loss?</p>
<h2>Stock takes frequency</h2>
<p><em>95% of all respondents perform stock takes: weekly (57%), monthly (24%) and fortnightly (14%)</em>.</p>

<p><em>Of the 81% of all respondents selling more than 5 cases of spirits weekly, 76% of them find liquor variances after stock take.</em></p>
<p>While liquor loss may be attributable to many factors, <em>38% of all respondents estimated a cost of over $200 per week from liquor overpouring in their venue, 31% of respondents say losses are $100 per week and a further 31% respondents claim losses of $50 per week.</em></p>
<p>Note: We did not survey how scientific the in-venue stock take process was, suggesting that we need to look into this question on a further study.</p>
<h2>Conclusion</h2>
<p>The survey revealed the popularity of metal pourers, with a high likelihood of contributing to liquor variance. While further studies and surveys could identify several contributing factors, overpouring emerged as a major issue.</p>
<p>On the bright side, the widespread use of speed pourers across the industry shows a commitment to efficiency and cost control, as well as the high frequency of weekly stock takes.</p>

<p>Often down to ‘flash over function', but sometimes it’s just about pure sloppiness. <h2>Over-pouring</h2>

As a general rule, you want to use a cork that is 1 mm larger to ensure that your top fits tightly."</p>

<h2>A bit of history of Gin and Tonic</h2>
<p>"Gin and tonic was invented by the officers of the Presidency Armies. They are the Armed Forces of the East India Company operating in the Indian subcontinent. Malaria was a frequent problem for Europeans living in India and other tropical regions during this time."</p>
<p>"In the 1700s, Scottish physician George Cleghorn researched the use of quinine in the prevention of malaria. <p>That's when British soldiers accidentally created the famous Gin and Tonic by mixing sugar, lime, water, and gin with quinine. At the time it was to make their drink palatable. They had no idea it would become so popular. Or did they?</p>

<p><span>The last of those is a key asset and it ties in with the organisation of your bar space, staff and stock. If you can be speedy and accurate, you have a happy customer with a well-made drink and a smile-inducing profit line.</span></p>
<p><span>“We know, in a busy bar, on average, a bartender can generate $600 per hour in sales. If you break that down: $10 per minute or 17 cents per second! So, every second is worth $0.17 in opportunity cost”, says <strong><a href="https://www.barmetrix.com/" data-mce-href="https://www.barmetrix.com/">Barmetrix</a></strong>.</span></p>
<p><span>That’s some math right there and it shows that even the smallest things count–every second counts, every lost drop of booze, every over-pour of drinks, and every leaking pourer—they all add up.</span></p>

<h2><span>Over Pouring</span></h2>
<p><span>According to <a title="The Impact of Overpouring on Bar Profits" href="https://www.sculpturehospitality.com/blog/the-impact-of-overpouring-on-bar-profits"><strong>Sculpture Hospitality</strong></a>, "</span>Overpouring is a common occurrence in the hospitality industry, where bartenders and servers occasionally pour more alcohol into drinks than they should. While this might seem like a generous gesture to keep customers happy, it can lead to both financial and operational challenges."</p>
<p>"<span data-mce-fragment="1">Serving inconsistently sized drinks due to overpouring can result in an uneven customer experience. Some patrons might receive larger drinks, while others get standard servings." </span></p>
<p><span data-mce-fragment="1">Similar applies to having <strong><a title="Why measuring and using jiggers is a must" href="https://www.uberbartools.com.au/blogs/news/baking-physics-and-thingamajigs-why-measuring-is-a-must">consistent quality of drinks</a></strong>—overpouring alcohol can create discrepancy between a cocktail recipe and what the customer has been used to getting served.</span></p>
<p><span data-mce-fragment="1">Apart from that, over pouring directly leads to increased costs as pouring more than the necessary amount per drink depletes your bar inventory faster. This translates to lower profit margins, as the additional liquid poured isn't generating corresponding revenue, all while inflating the business’s overall expenses.</span></p>
<p><span data-mce-fragment="1">But there's another kind of over pour that might not be always obvious, considering the normal hustle and bustle in a bar or restaurant—the meniscus. The meniscus is the bubble that standard jiggers create at the top when liquid is poured in.</span></p>
<p>Here are some bar math to help you wrap your head around:</p>
<p><span>For every <strong>one</strong> <strong>30ml or 1oz</strong> shot you pour, you’re probably wasting <strong>10-15%</strong> extra booze. That’s <strong>4.6ml</strong> over-pour to be precise… </span><span>and it’s just the meniscus. Most of the time, this meniscus get spilt in a busy bar station. The practice for some bartenders is to pour a bit more to compensate for the spilled liquor.</span></p>

<p>It's not just about measuring. What about pouring?</p>

<p>But when it comes to stocking and streamlining your bar, there are just a few essential tools you can't live without—a jigger is one of those tools. Yet with so many different jiggers on the market, it can be tough to decide which one keep... which one is right for you.</p>
<p>Rationalising clutter on the bar top seems like a great start, replacing multiple products with just one. In theory, this seems logical yet sometimes great intentions don’t always translate into the savings desired.</p>
