Ingredients
1 1/2 Cup Flour
1 1/2 Cup Butter
1 1/2 Cup sugar
8 Eggs
1/4 tsp vanilla

For filling
1 Cup Espresso, or strong coffee
3 Cups dates cut into half
2 Cups mascarpone cheese
2 Cups cream, whipped
1/2 Cup sugar
Cocoa powder and cinnamon for decoration

Method
For the Cake:

- Preheat the oven to 180°.
- Grease and lightly flour a (26 cm) cake pan.
- Whisk butter and sugar with electric mixer on medium speed until fluffy.
- Add eggs one at the time, vanilla while continuously whisking until all ingredients are well combined.
- Fold in flour gradually, stir slowly until just combined.

For the filling:
- Bake the cake for 20 minutes or until done.
- Flip the cake on a wire rack, cool.

- Whisk cheese and sugar with a hand mixer; fold in the whipped cream until combined.

For the tiramisu:
- Flip the cake upside down so the dates will be on the top.
- Cut the cake horizontally into two equal layers.
- Put the lower layer of the cake in the serving plate; make some holes in the cake (using a wood chopstick), moister with coffee.
- Top with mascarpone cream, spreading evenly.
- Place the other cake layer, cover with cream; sprinkle with cocoa powder and cinnamon.

salmon avocado remoulade

"Bacon" variety avocados are in season in the winter; lighter in
flavor than the more popular Haas variety, these large, thin-skinned
avocados are exceptionally creamy and are perfect for using in sauces.
While remoulade is typically made with mayonnaise, in this case we've
substituted the mayo with avocado and seasoned it with lime juice.
Pan Seared Salmon with Avocado Remoulade Recipe

Ingredients
    * 2 large avocados, cut and peeled
    * 3 Tbsp freshly squeezed lime juice (can substitute lemon)
    * 3-4 Tbsp light olive oil (light refers to flavor and color, not calories)
    * 1 Tbsp minced shallots or green onion
    * 1 Tbsp minced parsley
    * 1 teaspoon Dijon mustard or to taste
    * Salt and pepper to taste
    * 1 to 1 1/2 pounds of salmon fillets
    * Grapeseed or canola oil

Method
1 - Put avocado pieces and lime juice into a food processor or blender
and pulse until blended. Slowly add olive oil, pulsing, until you reach
desired consistency of sauce. Add minced shallots (or green onions) and
parsley, pulse just until combined. Remove to a bowl, add mustard, salt
and pepper to taste.

2- Coat the bottom of a sauté pan with oil, heat on medium high until
almost smoking. Season both sides of the salmon fillets with salt and
pepper, carefully lay the salmon into the pan, skin side down. Cook the
salmon until about medium doneness, about 3-4 minutes per side.

Serve salmon with avocado remoulade sauce.

French Pistachio Buttercreams

Ingredients
•    1-1/2  cups all-purpose flour
•    1/2  teaspoon salt
• 3/4 cup unsalted butter, softened
• 1/2 cup sifted powdered sugar
•    1  egg
•      Granulated sugar
• 1/2 cup sifted powdered sugar
• 1/4 cup unsalted butter, softened
• 1 teaspoon rum, cognac, or milk
• 6 ounces semisweet chocolate pieces or white baking pieces, melted
• 1/2 cup pistachio nuts, chopped

Directions
1. In a small bowl, combine flour and salt; set aside. In a medium mixing bowl, beat the 3/4 cup butter and 1/2 cup powdered sugar with an electric mixer on medium to high speed until combined. Beat in egg until combined. Beat in flour mixture on low speed just until combined. Cover and chill dough about 1 hour or until easy to handle.
2. Preheat oven to 350 degrees F. Shape dough into 3/4-inch balls. Place balls on an ungreased cookie sheet. Dip the bottom of a glass in granulated sugar and use to flatten each ball to a 1-1/2-inch circle. Bake about 8 minutes or until bottoms are lightly browned. Transfer cookies to a wire rack; cool.
3. Meanwhile, for filling, in a small mixing bowl, beat together 1/2 cup powdered sugar, the 1/4 cup butter, and rum on medium to high speed until combined.
4. To assemble cookies, spread filling on the flat sides of half of the cookies. Top with remaining cookies, flat sides down. Chill cookies about 30 minutes or until fillling sets. Drizzle or spread melted chocolate on tops of cookies and sprinkle with pistachio nuts. Chill about 10 minutes or until chocolate sets. Makes about 30 sandwich cookies.
5. Make-Ahead Tip: Prepare and bake cookies as directed; cool (do not fill or decorate). Place cookies in layers separated by waxed paper in an airtight container. Store at room temperature for up to 3 days or freeze for up to 3 months. Thaw frozen cookies, covered, at room temperature. Fill and decorate cookies.

Seared Sea Scallops with Chamomile Beurre Blanc

Ingredients
* 1 shallot, chopped
* 1 tablespoon white wine vinegar
* 1/3 cup dry white wine
* 1 tablespoons dried chamomile flowers
* 1 tablespoon cream
* 7 tablespoons unsalted butter, cubed and cold, plus 1 tablespoons
* 4 large sea scallops

Procedure
1. Begin with the beurre blanc. In a medium saucepan, place the shallots, vinegar, wine, and chamomile. Bring to a low simmer,
and cook until liquid is just evaporated, on a low flame, careful not to let it go so long that the pot burns.

2. Meanwhile, melt 1 tablespoon of butter in a small skillet over medium heat. Season the scallops on both sides with salt and pepper. Sear each scallop on the first side until it is golden brown and then flip over, about 5 to 6 minutes in total, until the scallop is firm, opaque, and just cooked through.

3. Once the reduction is "dry," either keep the flame on very low heat, or take the pan off the heat altogether, using the residual heat from the pan to melt the butter. First add the cream. Then, whisk in bits of the remaining butter a few at a time, whisking continuously, so that as the butter softens, it does not melt, but stays opaque and emulsifies. Strain the sauce

4. Plate the scallops on a bed of beurre blanc. Garnish with some fronds of chervil and a few dried chamomile flowers. Serves one as a main, two as a starter. Double the recipe for larger servings.

Avial (Mixed Vegetables With Sauce)

Drumstick*, Bell Pepper, Potato -- 3 cups
(mixed together)
Green Chilies -- 4 (medium sized)
Plain Yoghurt -- 2 cups
Grated Fresh Coconut -- 1 cup
Curry Leaves -- 10
Coriander Leaves -- 4 tsp.
Mustard -- 1/8 tsp.
Turmeric -- 1/8 tsp.
Cooking oil -- 1/2 cup
Dried Red Chilies -- 2
Sugar -- 1 tsp.
Cumin -- 1 tsp.
Split Black Gram -- 1/8 tsp.
Asafoetida -- a pinch or two
Salt to taste

Method
In a deep pot boil the mixed vegetables in a cup
of water until tender. Keep aside. (If there is any
water left in the pot, do not discard it).
In a blender, blend yogurt, sugar, cumin, grated
coconut, turmeric, salt, coriander leaves, a cup of
water until well mixed. Pour this mixture into the
pot containing the vegetables and keep it on
medium heat. Add the green chilies sliced
lengthwise and simmer the contents for ten
minutes. (Remember to stir frequently, as yogurt
tends to stick to the bottom of the pot). Remove
from heat and keep aside.

In a wide skillet heat oil on medium. When oil is
hot add dry red peppers and fry for one minute.
Then add mustard seeds, black gram and curry
leaves. When the mustard seeds pop, add
asafoetida. Immediately add the vegetables and
sauce from the pot. Cook for a minute or two.
Remove from heat.
Goes well with plain white rice, pita, paratha, puri.
*If drumstick is not available, you can add some
other vegetable. Eggplant, however, is
not advised because it becomes bitter when
boiled in water.

* 1 tablespoon dark soy sauce or tamari
* 1  dry sherry
* 1 teaspoon brown sugar
* 2 teaspoons vegetable oil or pure olive oil

Read More
Preparation:
Rinse the chicken thighs and pat dry. Cut in half. Rub the salt and pepper over the thighs.
Peel and chop the onion. Peel and finely chop the garlic. Cut the red bell pepper in half,
remove the seeds, and cut into 1-inch squares.
In a small bowl, combine the chicken broth, oyster sauce, soy sauce, rice ,
dry sherry, and brown sugar. Set aside.
In a non-stick frying pan, heat the olive oil over medium heat. Add the chicken thighs and
brown on both sides. Remove the chicken thighs from the pan and drain on paper towels.
Do not clean out the pan.
Add the onion and garlic into the pan, and cook until the onion is softened (about 5 minutes).
Add the red pepper into the pan. Cook briefly, then add the sauce.
Bring the sauce to a boil, then add the chicken thighs back into the pan.
Reduce the heat,
cover, and simmer the chicken until the juices in the thickest part of the thigh are
clear when pierced with a fork (about 15 minutes). Stir the chicken occasionally
while cooking. Serve hot over rice.
