			<content:encoded><![CDATA[<p>Just a simple breakfast, this was. One thing I'm not overly fond of is the typical &quot;kitchen sink omelet,&quot; i.e., the notion that the addition of more and more ingredients makes it better and better. Not for me.</p>
<p>Alternatively, how about a single ingredient omelet or frittata? A couple of my favorites are onion as a lone ingredient, or mushroom. In this case, the mushrooms were slowly saut&eacute;ed in sweet organic butter, then the egg mixture added, and into the oven at 350 for about 20 minutes. At the end, three pats of butter melted on top.</p>

			<content:encoded><![CDATA[<p>I'm an inconsistent Journey fan, never resolute. Sometimes they strike me as far too pop (Steve Perry), and other times I can really get into appreciating them. I suppose that's why they've definitely stood the test of time: they appeal to a number of genres.</p>
<p>But, definitely, I prefer the early stuff and in particular, when Gregg Rolie was still on board (he left shortly after this, I believe).</p>
<p>Steve Perry indisputably has a wonderfully pure voice; I just think it's more pop than rock. But it's also a power voice and I do tend to like bands where vocals isn't just an afterthought but an integral instrument. Think: Grace Slick, Janis Joplin, David Lee Roth, Ann Wilson, Geddy Lee...</p>
<p>And, so, here we go. Be sure to crank it and get into Gregg Rolie's harp mastery at around 2:00 and later, 3:30. enjoy.</p>

<p>Well, after thanking him/her for bringing &quot;fresh meat&quot; to the table, I set out to do a more substantive response. Given the huge increase in readers over the last few months I thought I'd reproduce that here as it covers a lot of stuff I haven't blogged about in quite a while.</p>
<p>So, here's my response, along with some touch-ups and additions.</p>
<p><strong>~~~</strong></p>
<p>Weston Price, eh? So, are you just a troll? ...Because if you knew anything about this blog you&rsquo;d know that we&rsquo;re not shills for <a target="_blank" href="http://www.westonaprice.org/splash_2.htm">WAPF</a>. I don&rsquo;t think grains &amp; legumes have a proper place in the human diet, soaked, sprouted and/or fermented or not (though, if you must, that's the way to prepare them).</p>
<p>But I suspect all you know about Weston Price is what you&rsquo;ve read and heard in your vegan echo-chamber. You&rsquo;re probably not aware that he travelled the world in the 1920s to seek out indigenous populations that had had little contact with civilization and were still eating their traditional foods, and he also compared them to members of these populations who had moved away into contact with modern foods. The research was meticulously documented in journals and photographs and published in <a target="_blank" href="http://journeytoforever.org/farm_library/price/pricetoc.html">Nutrition and Physical Degeneration</a>.</p>
<p>Who did he study? From <a target="_blank" href="http://en.wikipedia.org/wiki/Weston_Price">Wikipedia</a>:</p>

<p>Curiously, all native peoples studied made great efforts to obtain seafood, especially fish roe which was consumed <em>so that we will have healthy children</em>. Even mountain dwelling peoples would make semiannual trips to the sea to bring back seaweeds, fish eggs, and dried fish. <p>The last major feature of native diets that Price found was that they were rich in fat, especially animal fat. Whether from insects, eggs, fish, game animals, or domesticated herds, primitive peoples knew that they would get sick if they did not consume enough fat. Explorers besides Dr. Price have also found this to be true. For example, anthropologist Vilhjalmur Stefansson, who lived for years among the Innu and Northern Canadian Indians, specifically noted how the Indians would go out of their way to hunt down older male caribou for they carried a 50 pound slab of back fat. When such animals were unavailable and Indians were forced to subsist on rabbits, a very lean animal, diarrhea and hunger would set in after about a week. The human body needs saturated fat to assimilate and utilize proteins and saturated animal fats contain high amounts of the fat soluble vitamins, as well as beneficial fatty acids with antimicrobial properties.</p>
<p>Of course, the foods that Price&rsquo;s subjects ate were natural and unprocessed. Their foods did not contain preservatives, additives, or colorings. They did not contain added sugar (though, when available, natural sweets like honey and maple syrup were eaten in moderation). They did not contain white flour or canned foods. Their milk products were not pasteurized, homogenized, or low fat. The animal and plant foods consumed were raised and grown on pesticide-free soil and were not given growth hormones or antibiotics. In short, these people always ate organic.</p>

<p>Conclusions of the research from the <a target="_blank" href="http://www.ppnf.org/catalog/ppnf/PriceResearchConclusions.htm">Price-Pottenger website</a>:</p>

<p>- Dental decay is caused primarily by nutritional deficiencies.</p>
<p>- Although radically different, 14 tribal diets provided almost complete immunity to tooth decay and resistance to disease.</p>
<p>- The diets contained no refined or devitalized foods.</p>
<p>- Laboratory analyses revealed that all of these diets were unusually high in protein, vitamins, minerals and especially in fat soluble factors found in animal fats.</p>
<p>- Contact with civilization, followed by adoption of the &ldquo;displacing foods of modern commerce,&rdquo; was disastrous for all groups studied.</p>
<p>- Rampant dental caries were followed by progressive facial deformities in children born to parents consuming refined and devitalized foods.</p>
<p>- These changes consisted of narrowed facial structure and dental arches, along with crowded teeth, birth defects and increased susceptibility to infectious and chronic disease.</p>
<p>- Significantly, when some natives returned to their traditional diets, open cavities ceased progressing and children subsequently conceived and born, once again had perfect dental arches and no tooth decay.</p>
<p>- If civilized man is to survive, he must incorporate the fundamentals of primitive nutritional wisdom into his modern life-style.</p>

<p>Based upon his findings, he came back and began curing cavities in his patients nutritionally. See, he found almost no tooth decay in his travels (often less than one cavity per 1,000 teeth or more examined) at a time when tooth decay was 30% in the modern world and even teens were having teeth extracted for dentures.</p>
<p>Prove it? Yep, you guessed it. Re-calcifying tooth cavities was published in major medical journals as early as 1924.</p>

<p>Whenever back when, I did a post on saturated fat epidemiology from a UK reader, Alex Thorne. He was pretty careful in that -- unlike <a target="_blank" href="http://freetheanimal.com/2009/11/fraudulent-science.html">science frauds</a> and <a target="_blank" href="http://freetheanimal.com/2009/09/all-the-stupid-stuff-in-my-face-from-the-grant-whores.html">grant whores</a> -- as an honest guy, he anticipated objections and so constructed and graphed the data in different ways. <a target="_blank" href="http://freetheanimal.com/2009/09/saturated-fat-intake-vs-heart-disease-stroke.html">You can go read that post here</a>.</p>
<p>Fast forward to a couple of weeks ago. <strong>Seth Roberts</strong>, author of <a target="_blank" href="http://www.sethroberts.net/">The Shangri-La Diet</a>, wasn't satisfied. I'd dropped a comment at his place over something I can't recall, and I guess he checked out my place and <a target="_blank" href="http://freetheanimal.com/2009/09/saturated-fat-intake-vs-heart-disease-stroke.html#comment-10087">his comments begin here</a>. So, you can read the basis for Alex's additional work, which I'll now display. First, Seth was kind enough to take the time to offer a method:</p>

<p>Here&rsquo;s a better way to look at these data: make a scatterplot with X = percent saturated fat and Y = disability adjusted lost years per 100,000 population. To see if large and small countries are different, divide the countries into two groups splitting at the median of their population sizes. Then plot large countries with one color of dot (say, red) and the small countries with a different color of dot (say, blue). That will show you if the large and small countries show the same trend. If you want to see even more clearly, fit separate lines to the two sets of points and plot those lines in different colors.</p>

<p>It seems no matter how you slice it, more real, natural, saturated fats from animals and coconuts are wonderfully healthful.</p>
<p>Go figure. I mean, should this be a surprise? Are predatory animals who eat other animals and prize the [saturated] fat dropping dead of strokes and heart disease? No, and why? Because they're less arrogant than humans. They don't, because they can't, eat in any way other than how they evolved to eat.</p>
<p>Go forth and do likewise.</p>

			<content:encoded><![CDATA[<p>The worst thing about eating french fries, in my view, isn't the starch carbs or the anti-nutrients in potatoes, but what they are deep fried in. You can rest assured that you're getting some sort of industrailly processed, heat &amp; solvent extracted, deodorized franken oil with the high omega 6 polyunsaturated fats heavily oxidized from heat damage.</p>
<p>But that's a problem I can easily deal with.</p>

<p>That's tallow rendered from grassfed ground beef, leaf lard, and coconut oil. A veritable cornucopia of healthful saturated fat goodness.</p>
<p>And, naturally, I had to reduce some of my beef &amp; bone stock. The hanger steak, very popular in France, is really one of my favorite cuts of meat. The texture isn't exactly tender, but it's not tough at all. It has a nice pleasant chewiness combined with arguably the best flavor of any steak. There's only one <a target="_blank" href="http://en.wikipedia.org/wiki/Hanger_steak">hanger cut</a> per animal. This one was from La Cense, so grassfed. It's also a pretty economical cut at about the same price as flank steak, but way better in my opinion.</p>
<p>I chose to grill it, and too bad I didn't take a picture of the inside. It was perfect medium rare. The fries are twice fried. Essentially, put them in long enough to get hot throughout (3 minutes, perhaps), remove to a mesh strainer while you get the meat finished and the sauce reduced. The fries continue to self cook. Then, put the fries back in and they brown up really quickly. And, they're nice &amp; fresh, hot, &amp; ready when dinner's ready.</p>

<p>So, if you're not in heavy weight loss mode and can tolerate some potatoes now and then, you can't go wrong this way. Just do them yourself in good 'ol saturated fat.</p>

			<content:encoded><![CDATA[<p>Yep, and who does fraudulent science? Fraudulent researchers (<a target="_blank" href="http://freetheanimal.com/2009/09/all-the-stupid-stuff-in-my-face-from-the-grant-whores.html">grant whores</a>). And what are fraudulent researchers? They're frauds.</p>
<p>Well, as I try to finish up a post on saturated fat and one particular fraud from abroad, I just came across an interview by the great <strong>Uffe Ravnskov</strong>, <a target="_blank" href="http://freetheanimal.com/2009/08/saturated-fat-is-good-for-you.html">whom I've mentioned</a> in blogs a few times, at least. Here's an excerpt dealing with the current state of the diet-sanity revolution in Sweden.</p>
<p><strong>Do you think mainstream medicine will ever relinquish its view that elevated cholesterol causes heart disease and that statins are the magic bullet?</strong></p>

<p>I hope so. The failures of the most recent statin trials has been commented by several journalists in the major US newspapers. In Sweden a revolution is going on. Here, a general practitioner treated her own obesity successfully by eating a low-carbohydrate diet with a high content of animal fat. When she advised her obese and diabetic patients to do the same, she was reported to the National Board of Health and Welfare for malpractice. After a two-year-long investigation she was acquitted, as her treatment was considered to be in accord with scientific evidence. At the same time, the Board dismissed two experts, who had been appointed for updating the dietary recommendations for diabetics, because it came up that they were sponsored by the food industry. Instead the Board has asked independent researchers to review the scientific literature.</p>
<p>The subject has gained general attention due to a number of radio and television shows, where critical experts including myself have discussed the issue with representatives of the official view. Most important, thousands of patients have experienced themselves that by doing the opposite as recommended by the current guidelines they have regained their health. The effect has been that the sales of butter, cream and fat milk are increasing in Sweden after many years of decline, and a recent poll showed that a majority of Swedish people today think that the best way of losing weight is by a low-carbohydrate, fat-rich diet.</p>
<p>Further progress was achieved this spring. Several times colleagues of mine and also myself have asked the Swedish Food Administration for the scientific basis of their warnings against saturated fat. We have been met with the argument that there are thousands of such studies, or by referrals to the WHO guidelines or the Nordic Nutrition Recommendations. As the main argument in the latter two is that saturated fat raises cholesterol we were not satisfied with their answer and finally the Food Administration published a list with 72 studies that they claimed were in support of their view on saturated fat and twelve that were not.</p>
<p>We scrutinized the lists and found that only two of the 72 studies supported their standpoint; eleven studies did not concern saturated fat at all, and the unsupportive list was incomplete, to put it mildly. We published a short report with our comments to these lists in the Swedish medical journal Dagens Medicin. A response from the Food Administration appeared seven weeks later in which they pointed out that their recommendations were directed to healthy people, not to patients. They maintained that they were based on solid scientific evidence without mentioning anything about saturated fat and without answering our critical comments.</p>
<p>But this is not all. Earlier this year Sachdeva et al reported that the mean cholesterol in 137,000 patients with acute myocardial infarction was lower than normal. As usual, the authors didn&rsquo;t understand their own findings, but concluded that cholesterol should be lowered even more. A few months later Al-Mallah et al. came up with the same result and conclusion, although they also reported that three years later, mortality was twice as high among those who had been admitted with the lowest cholesterol.</p>
<p>These results created a fierce debate in one of the major Swedish newspapers. It was opened by ninety-one-year old Lars Werk&ouml;, the &lsquo;Grand Old Man&rsquo; in Swedish medical science, retired professor in internal medicine and former head of The Swedish Council on Technology Assessment in Health Care, together with Tore Scherst&eacute;n, retired professor in surgery and former secretary of the Swedish Medical Research Council. &ldquo;Now it is time to sack the cholesterol hypothesis and to investigate the reason of this scientific breakdown&rdquo; they wrote. They also criticized American researchers in AHA and NHLBI and their followers for sloppy and <strong>fraudulent science</strong>.</p>
<p>They were of course attacked by two professors and representatives of the current view, but none of them came up with any substantial evidence, only by personalities.</p>

<p>&quot;Only by personalities.&quot; Yep, you'll get that a lot:&nbsp;<a target="_blank" href="http://www.skepticwiki.org/index.php/Argument_from_Authority"><em>argumentum ad verecundium</em></a>. In this context, it means they have nothing but the say-so of the sorts of frauds I identified right at the beginning.</p>

<p>Oh, hey, want to read some silly bits and more&nbsp;<em>argumentum ad verecundium</em> from another fraud? How about T. Colin Campbell, author of the ridiculous <em>The China Study</em>. No, haven't read it. <a target="_blank" href="http://www.westonaprice.org/bookreviews/chinastudy.html">Don't need to</a>. Chris Masterjohn:</p>

<p>What is most shocking about the China Study is not what it found, but the contrast between Campbell&rsquo;s representation of its findings in The China Study, and the data contained within the original monograph. Campbell summarizes the 8,000 statistically significant correlations found in the China Study in the following statement: &quot;people who ate the most animal-based foods got the most chronic disease.&quot;26 He also claims that, although it is &quot;somewhat difficult&quot; to &quot;show that animal-based food intake relates to overall cancer rates,&quot; that nevertheless, &quot;animal protein intake was convincingly associated in the China Study with the prevalence of cancer in families.&quot;27</p>
<p>But the actual data from the original publication paints a different picture. Figure 1 shows selected correlations between macronutrients and cancer mortality. Most of them are not statistically significant, which means that the probability the correlation is due to chance is greater than five percent. It is interesting to see, however, the general picture that emerges. Sugar, soluble carbohydrates, and fiber all have correlations with cancer mortality about seven times the magnitude of that of animal protein, and total fat and fat as a percentage of calories were both negatively correlated with cancer mortality. The only statistically significant association between intake of a macronutrient and cancer mortality was a large protective effect of total oil and fat intake as measured on the questionnaire. As an interesting aside, there was a highly significant negative correlation between cancer mortality and home-made cigarettes!</p>

He hasn't posted any of his stupid drivel in a couple of days, so maybe his tail is tucked. It's interesting he showed up there, though. Perhaps the tide really is turning and some of these assholes see the writing on the wall and are trying to figure their next angle (or, how best to lie their way past having their credibility smashed, as justice demands).</p>
<p>Too many frauds, too little time.</p>

<p>What I like best is that he really knows his biochemistry and metabolism. In fact, he came to see the validity of a low-carb approach when things he was reading about it reminded him of what he's learned in college, so he dug out his textbooks, and there it was, right there. I recommend it.</p>
