However, it turned out so BOMB DIGGITY  that i had to share it.  This is the banana bread recipe I have been searching for!  My Quest began over a year ago (<a href="http://www.vanillaandvelvet.com/2011/inthekitchen/banana-bread/">see quest</a>).  Im not sure the quest will ever officially be over because I love experimenting with new banana bread, but this is my new go to recipe.</p>
<p>Bonus points- its made with coconut oil and oatmeal!</p>

<p id="zlrecipe-ingredient-2" itemprop="ingredients">1 1/2 cup all-purpose flour</p>
<p id="zlrecipe-ingredient-3" itemprop="ingredients">1 cup oatmeal</p>
<p id="zlrecipe-ingredient-4" itemprop="ingredients">3/4 teaspoon baking soda</p>
<p id="zlrecipe-ingredient-5" itemprop="ingredients">1/2 teaspoon salt</p>
<p id="zlrecipe-ingredient-6" itemprop="ingredients">1 teaspoon cinnamon</p>
<p id="zlrecipe-ingredient-7" itemprop="ingredients">4 tablespoons coconut oil</p>
<p id="zlrecipe-ingredient-8" itemprop="ingredients">1/2 cup firmly packed brown sugar</p>
<p id="zlrecipe-ingredient-9" itemprop="ingredients">2 eggs</p>
<p id="zlrecipe-ingredient-10" itemprop="ingredients">1 1/2 cups mashed ripe banana (about 3) &#8211; leave some chunks!</p>
<p id="zlrecipe-ingredient-11" itemprop="ingredients">1/3 cup plain yogurt</p>
<p id="zlrecipe-ingredient-12" itemprop="ingredients">1 teaspoon vanilla</p>
<p id="zlrecipe-ingredient-18" itemprop="ingredients">1/2 cup roughly chopped walnuts</p>
<p id="zlrecipe-instruction-0" itemprop="recipeInstructions">Preheat the oven to 350ºF. Coat a bundt pan with cooking spray and set aside.</p>
<p id="zlrecipe-instruction-1" itemprop="recipeInstructions">In a medium bowl, whisk together all-purpose flour, oatmeal, baking soda, salt, and cinnamon. Set aside. In the bowl mix coconut oil and brown sugar on medium speed until well blended, about 1 minute. Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla. Add the dry ingredients- do not overmix.</p>
<p id="zlrecipe-instruction-2" itemprop="recipeInstructions">Pour the batter into the prepared pan. Bake 40-45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes in the pan on a wire rack, then remove and cool completely on the wire rack.</p>

				<content:encoded><![CDATA[<p>There were a handful of months in my life (around high school) where I dedicated all my time to the game <a href="http://thesims.com/en_US/home">Sims. </a> My version of Sims looked a bit different then the way it was intended- I would just use cheat codes and build + decorate huge homes.  I loved it!   The game consumed me-  I cant help that the idea of designing a dream home is at the top of my list.</p>
<p>So once I signed a lease for my new home over the weekend (Yay!) I immediately turned to <a href="http://www.floorplanner.com/">Floor Planner </a> AKA Sims Real Life.  The program brought me back to my Sims days and I drained several hours of my day playing with room layouts&#8230;  Things were a bit tricky because I do not have the dimensions of the condo- so I estimated and looked at the 5 photos I do have.  I think Im close, but I will have to tweak it once we get measurements.  One of my favorite parts about the program is how you can change the size of the furniture to match yours!  Amazing.</p>
<p>If possible, I am now more excited then ever for the big move.  Next steps, finding movers and packing up all my goods.  Count down: Less than two months!</p>

				<content:encoded><![CDATA[<p>I have been searching for dessert substitutions- trying to get off my sweet kick induced from eatting too many oreos over our ski vacation.  Scones have been a great alternative, especially ones like these that are packed with healthy ingredients.  While they still have sugar and flour they also have honey, dates, pecans, and oats.  They are delightful- especially with a cup of coffee.</p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>1 cup all-purpose flour</li>
<li>1/2 cup old-fashioned oats (my oatmeal mixture is half steal cut oats and half old-fashioned oats)</li>
<li>2 teaspoons baking powder</li>
<li>1/2 teaspoon cinnamon</li>
<li>1 egg</li>
<li>1/4 cup canola oil</li>
<li>1/4 cup sugar</li>
<li>1/4 cup honey</li>
<li>2 tablespoons almond milk</li>
<li>1 cup diced dried dates</li>
<li>1/4 cup chopped pecans</li>
</ul>
<p><strong>Directions:</strong></p>
<p>Preheat oven to 350 degrees. Prepare a large baking sheet with greased aluminum foil.</p>
<p>In a medium bowl, stir together flour, oats, baking powder, and cinnamon. Then, in a smaller bowl, whisk together egg and oil. Then add honey and mix well. Fold the liquid ingredients into the dry ingredients until just combined. Then gently mix in half and half. In a small bowl, cover dates and pecans with sugar and then fold into dough.</p>
<p>Use your hands to form a large ball with the dough.  Place dough ball on  baking sheet and flatten to 1/4 in.  Bake at 350 degrees for 20  minutes or until lightly golden brown. Serve warm, preferably the same day the scones are baked. Otherwise store in an airtight behavior or freeze until ready to eat.</p>

				<content:encoded><![CDATA[<p style="text-align: left;">There are lots of highs and lows to searching for a new place to live and in my case they are all extremes- i cant help it.  I just get incredibly way too excited when I find what looks like the perfect house/apartment/condo on <a href="http://atlanta.craigslist.org/">Craigslist</a>, <a href="http://hotpads.com/">HotPads</a>, <a href="http://www.zillow.com/">Zillow </a>or whatever apartment site I am using at that moment (I use them all).</p>
<p>Time for the confession&#8230; I am easily susceptible to Craigslist addictions.</p>
<p style="text-align: left;"><strong>Exhibit A)</strong> My search for <a href="http://www.vanillaandvelvet.com/2012/bitsandpieces/fortheloveofcats/">Felix (a rag-doll cat</a>).   I turned to Craigslist because the doglike personality Ragdoll cats have can cost you a pretty penny and I did not have $1000+ pretty pennies to spend on a furry friend.  Yes, I was searching for a dog in a cats body so my &#8220;dog&#8221; would have the ability to sleep for 19hours a day.   It took me around 3 weeks to find Felix.  Want to know the trick?  Stalk Craigslist.  No but seriously you have to be the first to pounce to get the the best.  So for 3 weeks every 30 minutes to 2 hours you could find me on craigslist searching not only Indianapolis but all surrounding cities&#8230; and all cities surrounding my parents in Cleveland.  I told- its a serious problem.</p>
<p><strong>Exhibit B)</strong> finding a place to live in Atlanta.  I find an apartment that looks good- instantly I think it is amazing and I tell myself this is the one.  I then get super giddy and can not stop thinking about the apartment until we have checked it out.  When I say &#8220;we&#8221; I mean Greg&#8230; because I have not been in town to view one apartment yet.  Its a cycle- once greg views the appartment and says &#8220;no&#8221; I get frustrated and upset because i am back on my apartment treasure hunt (aka browsing craigslist).</p>
