NATIVE SOUP

Native soup is One of hubby's all time favorite and also a favorite of the riverine residents. It's usually prepared with fresh seafood and a thickner is used.

For my version am using a combo of dried items & fresh periwinkle. I used ofor as thickner but you can also use boiled pounded cocoyam or ground achi. The Fresh uziza leaf gives it a distinctive flavor which makes this soup a must try for every foodie........it doesn't get any better than this.

2 large Kpomo cut into small cubes

3 meduim dried fish deboned

2 cups fresh periwinkle

Half cup ground dried crayfish

4 tbsp grounded ofor (thickner)

2 bunches Uziza leaves finely chopped

3 tbsp ground fresh chili

1 large onion chopped

1 cooking spoon palm oil

2 seasoning cubes (Maggi)

3 cups of beef stock

Salt to taste

METHOD OF PREPARATION

1. Add cow head to a medium pot with one litre of water and set over heat cook until meat is soft about 40mins; due to my choice of meat it takes a longer time to get soft. Add kpomo, dried fish, half chopped onion, 1 Maggi, 1 tbsp chilli and salt and cook for another 5 minutes.

2. Set medium pot over heat, add palm oil and sauté onion and chilli for 10 secs, add all ingredients in step one above and add 3 cups of beef stock.

3. Add periwinkle, remaining chopped onion, crayfish, seasoning cube and pinch of salt to taste. Allow to cook for 15 mins.

4. Add thickner(ofor) little at a time, till desired thickness is achieved. Stir properly to dissolve thickner and incorporate ingredients. Simmer for 5 mins.

5. Add chopped Uziza leaves , combine and simmer for 2 mins.

6. Stir, remove from heat and serve with desired swallow.

Nigerian Jollof rice is a easy and tasty recipe that can be made by both the experience and newbie cook. It's the most popular delicacy in nigeria prepared in almost every household and you find it at party events menu. There are different variations to this dish and you can use fish, chicken or beef. I used dried smoked croaker fish for this recipe and it gave this a distinctive flavor; smoke iced fish or catfish is also a good option.
WEEKEND SPAGHETTI AND MEATBALLS
Spaghetti and meatballs is a fantastic and low cost recipe that is quick and very easy to prepared. I prepared this recipe as a weekend dinner, I sometimes like to spend as little time as possible in the kitchen; if you share the same views then this is one of those recipes that will help you accomplish that.

Beef Curry Sauce

This is a delectable beef curry sauce with a slightly creamy texture and a wonderfully aromatic fragrance from the use of Garam Masala spice. This curry origins are from the southern and southeast Asian cuisines.
Curry simply means any dish which has a richly spiced sauce cooked with meat and/or vegetables.
Indian curry is one of my favorite go to sauce and the the beef can be substituted with chicken, shellfish or fish and a combination of different vegetables as desired. This is a wet curry because am using coconut milk and warm water; to make a dry variation use limited amount of liquid.
Am using garam masala spice which is a common Indian spice; components of the mix are toasted, then ground together. A typical Indian version of garam masala contains: bay leaf, cloves, black and white peppercorns, nutmeg, cumin, mace, ginger, cayenne, allspice, fennel, cinnamon etc.
You can find the garam masala at any food store in the spice section; I purchase mine at Spar Mall in Port Harcourt, Nigeria.

4 cloves garlice, peeled and coarsely chopped

1 Inch root of ginger, peeled and coarsely chopped

2 fresh green chillies

1 large onion

1 tsp parika

1 tsp salt or to taste

4 tbsp olive oil

1 cup coconut milk

3 cups warm water

METHOD OF PREPARATION

Trim off any fat from the meat, wash and dry on absorbent paper and cut into big chunks or as desired.

Place ginger, garlic, green chillies and half onion in electric blender and blend until fairly smooth. Chop remaining onion finely.

Pour olive oil in cooking pan over medium heat and fry chopped onion, adjust heat to low and add paprika, turmeric, 1 tbsp garam masala spice from the specified amount . Stir and fry for 2-3 minutes.

Now add the liquidised ingredients and fry for 10 - 12 minutes, stirring frequently. if during this time the spices tend to stick to the botton of the pan, sprinkle with about 1 tspn of water at a time as when necessary.

Add the meat and adjust heat to medium high. Fry for 4-5 minutes stirring constantly.

Add the tomato puree, salt, coconut milk and water, stir and mix, bring to the boil, cover and simmer for 35 minutes or until the meat is tender. Stir occasionally during the first half of cooking time, but more frequently towards the end to ensure that the thickened gravy does not stick to the bottom of the pan.

Add remaining garam masala, stir properly and remove from heat and serve hot or warm as desired.

SERVING IDEAS - Serve with Plain Boiled Rice, Quinoa, Bread or Paratha.

Bon Appetit

Macaroni provides beneficial carbohydrates. Carbohydrates as we know serve as a
primary source of fuel for your body. Its preferable to go for whole-wheat pasta which provides a
considerable amount of dietary fiber, a particularly beneficial type of
carbohydrate. Fiber helps fight chronic diseases like obesity
and type 2 diabetes and promotes digestive health.

This particular salad can be topped with tuna, sardines or shredded
chicken as opposed to shrimp. More veggies can be included to obtain a
more healthy and balance diet. That is the great part about cooking, we
can each do what we like. Hope you enjoy it!

Spiced Chicken Wings

I really love chicken and is one of my favorite proteins, its cheap, tasty and easy to prepare. That's why my very first post is on chicken. I love spices too and I will be doing a lot of spicy recipes in my upcoming posts. Bland foods are not the way to go for me.

For this recipe I used a Nigerian spice called Suya spice which is
native to the Hausa tribe, it is a mixture of ground peanut(kuli kuli),
ginger powder, garlic powder, onion powder, paprika, chilli and salt
mixed in appropriate quantities.
But you can use your own variation of
spices like the Indian spice mixture Garam masala which is by the way
one of my favorite spices or a mixture of your own spice since this
might not be readily available to you. I prepared this as a weekend
treat for hubby.

INGREDIENTS

12 pieces Chicken wings

3 tablespoons Suya Spice

1 seasoning cube(Knorr)

1 teaspoon salt

small bunch fresh Lettuce

2 ripe tomatoes

Ketchup as desired

METHOD OF PREPARATION

Marinate chicken wings with Suya Spice (Recipe coming up in next post), salt
and seasoning cube. keep overnight in the fridge or for 30mins.

Grill in the oven on parchment paper/foil or barbecue for 30mins. 15 Mins on each side.

Serve with shredded Lettuce and sliced Tomatoes salad drizzled with olive
oil, a side of Ketchup and a glass of freshly squeezed orange juice.

Bon Appetit!!!!!

Therefore, if anyone is in Christ, the new creation has come: The old has gone, the new is here. 2 Corinthians 5:17
