Quick and Easy-to-Prepare Black-Eyed Peas Munchies for Vista Ridge!

Black-eyed peas are a lucky addition to any New Year's meal

According to old traditions, black-eyed peas are one of the luckiest foods to eat on New Year’s Day. Why? Well, they are considered to be symbols of prosperity and money. Who wouldn’t want to eat up for prosperity? Black-eyed peas can be used in a variety of recipes, and I have included one below for chili-roasted black-eyed peas – perfect for munching before the main event. Enjoy, and let me know if you have any other traditional black-eyed peas recipes to share with other Vista Ridge residents!

Ingredients

2 (15.8-oz.) cans black-eyed peas, rinsed and drained
3 tbsp. olive oil
1 1/2 tsp. chili powder
1 tsp. pepper
3/4 tsp. ground cumin
1/2 tsp. salt

Quick and Easy Preparation

Preheat oven to 425° and combine all ingredients in a medium bowl. Transfer mixture to a lightly greased 17 x 12-inch jelly roll pan. Bake 45 to 50 minutes or until crispy and dry, stirring every 10 minutes. Let cool for 20 minutes, and then serve.

Unplug for extra savings on energy and money

Going green can seem like a big pain when you don’t know a good way to start. After all, when the green movement started, people talked about how pricey it was to buy environmentally-friendly products and organic food. The truth is that this couldn’t be farther from the truth. You can go green and actually SAVE money while making just a few small changes to your lifestyle. How? Read on for tips from Metromix:

Unplug whatever isn’t currently in use. This includes cell phone chargers and electronics, and for even more energy savings, turn off the lights whenever you leave a room. This will not only help you save on your power bill, but it allows you to stop wasting energy as well.
Use less water by doing larger loads of laundry instead of several smaller loads. Also, make sure the dishwasher is full before running it. This is another way to save you money and energy!
Commute to work with a friend. This will save you money on gas, reduce the amount of fuel emissions and will give you an extra chance to socialize
Bring your own bags to the grocery store – either previously used plastic grocery bags or more durable reusable totes meant to serve that purpose.
Make your own compost or plant herbs and vegetables. It’s great for the soil and saves you money on produce, which can get very expensive.
