Try this Recipe for Caramelized Onion and Spinach Dip from Fogelman!

With the biggest sporting event in the country coming up on Sunday, February 5, it’s time to start planning what you’ll be doing. If you’re planning to have a few friends over for a Superbowl party at your Waterford Place apartment and you’re trying to come up with delicious and creative recipes for snacks, check out this recipe from our Fogelman CARES Cookbook:

Caramelized Onion and Spinach Dip

1 Stick unsalted butter
2 sweet yellow onions, coarsely chopped
2 ½ tablespoons sugar
2 teaspoons kosher salt, divided
2 (10 ounce) packages frozen chopped spinach, thawed and completely drained
1 (12 ounce) jar marinated quartered artichoke hearts, drained and chopped coarsely
1 (8 ounce) can water chestnuts drained and chopped
8 ounces cream cheese, softened
1 Cup sour cream
1 cup mayonnaise
½ cup heavy cream
8 Whole cloves garlic, peeled ( I used the garlic that is already chopped in a jar)
1 teaspoon black pepper
1 tablespoon lemon pepper
1 teaspoon crushed red pepper flakes
2 tablespoons hot sauce
1 tablespoon freshly squeezed lemon juice
2 cups shredded Parmesan cheese

1. Melt butter in a heavy fry pan over medium heat. Add onions, sugar and 1 ½ teaspoon salt. Saute onions until they begin to turn brown and caramelize. Place in large mixing bowl and set aside to cool.

2. Meanwhile, place spinach in a colander and press to drain liquid. Squeeze drained spinach tightly in small handfuls until almost dry.

3. Add artichokes and water chestnuts to vegetable mixture. Set aside

4. In the bowl of a food processor, combine cream cheese, sour cream, mayonnaise, cream, garlic, remaining ½ teaspoon salt, black pepper, lemon pepper, crushed red pepper flakes, hot sauce, and lemon juice. Pulse several times until well blended. (I did not use the food processor and just mixed really well).

5. Add parmesan cheese and mix very well. Mixture will have a coarse texture.

6. Fold into vegetable mixture and mix thoroughly. Serve at room temperature or heat in oven at 350 degrees until it is bubbly and slightly browned on top. (I prefer it hot).

7. Serve with bagel chips, pita chips, or crackers.

February is a big month for hearts. The first thing that may come to mind is Valentine’s Day, but did you know that there is another day in February that pertains to the heart? National Wear Red Day, taking place on Friday, February 3, is a day when you can help to raise awareness for the leading cause of death in the nation, heart disease.

If you would like to participate in the fight against heart disease, visit the Louisville affiliate of the American Heart Association’s page at heart.org for more information on how you can donate, volunteer and more.

According to the Mayo Clinic, there are several ways that you can reduce your risk of heart disease. These include not smoking or using tobacco, exercising for 30 minutes most days of the week, eating a heart healthy diet including low amounts of saturated and trans fats, maintaining a healthy weight, and getting regular health screenings.

When she was about 6 months old, Dora Lee had surgery to repair her knees, which slipped in and out of the sockets when she walked. She still has some hair loss and she’s a very petite cat, but she is doing great now. She gets along wonderfully with the other cats at the shelter and loves people. She is a sweet, curious, and outgoing kitten. Dora is listed as special needs so her adopters will be aware of her medical history, but today she requires no special care.
