Quella fu la volta della torta di ricotta, ma penso che presto potrei ritrovarmi con la necessità di un *passo passo* per il ragù, l'arrosto, le lasagne, {temo anche per} il brodo di carne o quello di pollo {mica son sicura del taglio giusto, per esempio}, i tortellini, l'arista al forno o il cacciucco.&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Che ne so, per me non è così immediato utilizzare il forno per cuocervi la carne, perlomeno non senza il patema d'animo ed il sospetto&amp;nbsp;{per&amp;nbsp;almeno un paio d'ore} di dover buttar tutto e ripiegare su una frittata {comunque un passo avanti in questo senso l'ho fatto, quando ho cucinato lo spezzatino in crosta di J.O. !}.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Cooomunque, per tornare a noi e alla ricetta di oggi&amp;nbsp;: cosa di più semplice di una torta di mele? E di una torta allo yogurt?&amp;nbsp;E sapete che ho scoperto che mia mamma le ha sposate, queste due ricette, e quel che&amp;nbsp;ne è uscito è diventato per lei un must?&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Inutile scrivere che ho deciso {soprattutto dopo l'assaggio} che anche per me lo sarà; di più, diventerà una mia *base*. Come ho scritto è davvero *semplice*: la partenza è una *7 vasetti rivisitata* per via dell'uso del miele, il prosieguo è istintivo :)&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;span style="color: #999999;"&gt;&lt;strong&gt;yogurt bianco al naturale&lt;/strong&gt;&lt;/span&gt;&lt;span style="color: black;"&gt;, possibilmente autoprodotto un vasetto da 150 gr&lt;/span&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;span style="color: #999999;"&gt;&lt;strong&gt;farina 0 macinata a pietra&lt;/strong&gt;&lt;/span&gt; 3 vasetti {quelli dello yogurt, come i seguenti}&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;miele di castagno&lt;/span&gt;&lt;/strong&gt; 2 C&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;olio evo molto leggero&lt;/span&gt;&lt;/strong&gt; 1&amp;nbsp;vasetto scarso&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;uova codice 0&lt;/span&gt;&lt;/strong&gt; {o, come sempre, di galline felice che razzolano ;) } 2&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;lievito&lt;/span&gt;&lt;/strong&gt; 6 g&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;mele staiman&lt;/span&gt;&lt;/strong&gt; 1&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;strong&gt;&lt;span style="color: #999999;"&gt;succo di limone&lt;/span&gt;&lt;/strong&gt; {volendo del limoncello, naturalmente fatto in casa!} qb&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Preriscaldate il forno a 180°C.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Setacciate la farina con il lievito; imburrate ed infarinate uno stampo. Lavate, sbucciate ed affettate sottilmente la mela, bagnandola con il succo di limone per bloccarne l'ossidazione.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;In una ciotola lavorate brevemente le uova con il miele, aggiungete lo yogurt e mescolate. Unite poco a poco la farina e lievito e successivamente l'olio a filo. Lavorate bene fino ad ottenere un composto liscio ed omogeneo. Aggiungete le fette di mela e mescolate delicatamente, versate nello stampo livellando la superficie. Infornate e cuocete per 40' {prova stecchino prima di sfornare!}.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;

Ed è finita lì, il procedimento è quello di sempre.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Vero è che con una passatina sì delicata ci voleva anche qualcosa di *ruvido* e schietto, qualche sapore importante {non per questo pesante}: così la metà si è sbizzarrita a comporre crostoni con il nostro pane {1/2 farina 0 a pietra 1/2 integrale, con semi di lino e di sesamo bianco} ed i formaggi razziati a Spinofiorito, entrambi di capra, un erborinato ed uno stagionato sotto cenere e miele {auuu!!!}.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ah, fosse mai che il verde non sia stato abbastanza, ci siam preparati pure &lt;a href="http://wennycara.blogspot.it/2011/05/fagiolini-marinati-alla-senape-ed-erbe.html" target="_blank"&gt;gli immancabili ;)&lt;/a&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;Passata di piselli, finocchio e ceci&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;piselli freschi sgranati&lt;/b&gt;, 2 tazze&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;finocchio&lt;/b&gt;, 1 piccolino&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;ceci &lt;/b&gt;già cotti 120 g&lt;/div&gt;&lt;div style="color: #999999; text-align: justify;"&gt;&lt;b&gt;olio evo&lt;/b&gt;&lt;/div&gt;&lt;div style="color: #999999; text-align: justify;"&gt;&lt;b&gt;sale marino integrale&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;pepe nero&lt;/b&gt; macinato al momento &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Lavate, mondate il finocchio e tagliatelo a fettine di 3-4 mm. Tenete da parte le barbine. Affettate sottilmente la cipolla.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Prendete un tegame abbastanza alto, velatene il fondo con dell'olio evo e scaldatelo. Versateci la cipolla e lasciatela diventare traslucida a fiamma dolcissima. Unite i piselli ed il finocchio, alzate la fiamma e saltateli affinchè si ricoprano d'olio. Aggiungete i ceci, mescolate, coprite a filo con acqua calda e incoperchiate. Portate a leggera ebollizione e cuocete a fiamma media, salando e pepando a metà cottura.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Passate al minipimer, versate nelle fondine e completate con un giro d'olio e le barbine di finocchio.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Però sapete, c'è qualcosa che depone a mio favore :)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Innanzitutto l'assoluta necessità di poter contare su una colazione casalinga &lt;i&gt;tutte le mattine tutte&lt;/i&gt;: è almeno un paio di mesi che punto la sveglia alle 6*30 {poi vi racconterò diffusamente :)} per esser pronta ad uscire di casa alle 7*15: ci credete se vi dico che minimo una mezz'ora è dedicata a torta e caffellatte?&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Giuro, è proprio così: se qualcuno mi turba quest'equilibrio è finita, e ne risentirò per tutta la giornata {sob, già}. E quanto di peggio possa esserci è aprire la credenza e realizzare che no, niente torta, neanche un briciolino quindidevibuttartisuibiscottisecchichenaturalmentenonhaifattotu!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Allora ho imparato a giocare d'anticipo, dunque torte, torte, torte.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;A prima vista ed ad una prima letta questa qui ricorda in maniera impressionante la precedente, ma le differenze ci sono ;)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;La maggiore riguarda indubbiamente la consistenza: la precedente richiama da vicino la nostra schiacciata alla fiorentina, con qualche punta morbida dovuta alla frutta, in questa qui invece, complice la scelta di uno stampo ampio e dunque di un'altezza finale modesta, è decisamente più &lt;i&gt;fondente&lt;/i&gt;, praticamente un cuore mobidissimo tra due strati friabili, appena croccanti. La frutta naturalmente è parte importante del composto, in generale comunque più dolce {ma assolutamente non stucchevole o artificiale, ecco}.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Insomma, vi consiglio di provare entrambe. Perchè credo che estate non significhi basta torte al cioccolato ;)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

&lt;br /&gt;
&lt;b&gt;&lt;span style="color: #999999;"&gt;uova di galline felici e razzolanti nell'erbetta&lt;/span&gt;&lt;/b&gt; {o codice 0, naturalmente!} 2&lt;br /&gt;
&lt;b&gt;&lt;span style="color: #999999;"&gt;zucchero scuro&lt;/span&gt;&lt;/b&gt; 140 g&lt;br /&gt;
&lt;b&gt;&lt;span style="color: #999999;"&gt;farina 0 macinata a pietra&lt;/span&gt;&lt;/b&gt; 300 g&lt;br /&gt;
&lt;b style="color: #999999;"&gt;lievito&lt;/b&gt; 6 g&lt;br /&gt;
&lt;b style="color: #999999;"&gt;cacao amaro&lt;/b&gt; di quello buono 1C &lt;br /&gt;
&lt;b style="color: #999999;"&gt;olio evo molto leggero&lt;/b&gt; 3/4 di bicchiere&lt;br /&gt;
&lt;b style="color: #999999;"&gt;fragole&lt;/b&gt;, possibilmente lucane,&amp;nbsp; una decina, tagliate a piccoli pezzi&lt;br /&gt;
&lt;b style="color: #999999;"&gt;fette d'ananas fresco&lt;/b&gt; 5, detorsolate e tagliate a piccoli ventagli&lt;br /&gt;
&lt;b style="color: #999999;"&gt;latte intero&lt;/b&gt; 1 bicchiere circa&lt;br /&gt;
&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;Preriscaldate il forno a 180°C, imburrate ed infarinate lo stampo.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;In una ciotola capiente setacciate insieme la farina, il cacao ed il lievito.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;In un'altra ciotola lavorate fino ad ottenere un composto cremoso le uova  con lo zucchero; incorporate poco a poco la farina setacciata con il  cacao ed il lievito e poi a filo l'olio. Mescolate bene, ed aggiungete  tanto latte quanto basta a rendere l'impasto abbastanza fluido  {procedete *a cucchiaiate*}. Unite le fragole e l'ananas e mescolate con delicatezza. Lo sapete tutti, la mia stagione è l'Autunno. E sapete perfettamente che sono avversa alla primavera e fortemente astiosa nei confronti dell'estate. Ma c'è un piccolissimo momento, una transizione che genera una nascita, che mi è abbastanza congeniale.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;La fioritura.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
I&amp;nbsp;campi che sono solita attraversare nelle miei ricerche di erbe selvatiche&amp;nbsp;diventano morbidi&amp;nbsp;cuscini trapuntati di mille perle colorate, gli alberi da frutto, selvatici e solitari o diligentemente organizzati in filari, si caricano di profumi ed insetti ronzanti, i parchi cittadini sono tappeti di un verde tenero ed i piccoli giardini scrigni dalle svariate cromie.&lt;br /&gt;
Senza fare eccezione, anche il nostro giardino ha cambiato la veste: il roseto, gli iris, i ranuncoli in vaso assieme alle pansè, i gerani rampicanti ed il glicine. E ancora il pitosforo e il rosmarino, che sentirne il profumo da lontano mi fa tanto casa. Questo sì, questo l'apprezzo e ringrazio infinitamente.&lt;br /&gt;

Torno a postare, dopo un'eternità {uhm fatemi controllare... aaahhh dal 20 gennaio!!!}, una ricetta.&lt;br /&gt;
E visto il tipo, direi che è stato inevitabile. Non potevo non scriverla, fotografarla, &lt;i&gt;dovevo sentirla mia&lt;/i&gt;, e l'unico modo che mi pareva adeguato era proprio quello di farle seguire l'*iter blogghesco* :)&lt;br /&gt;

Questo per dire, confusamente, che esistono delle contingenze così ispirate che devono essere fissate in una maniera ben precisa, studiata, curata, devota.&amp;nbsp; Nello specifico, tocca ad un dolce inaspettatamente delicato e... persuasivo direi, che ha visto la luce, manco a dirlo, in un momento illuminato.&lt;br /&gt;
Speriamo che ne capitino più spesso di queste contingenze, d'ora in poi ;)&lt;br /&gt;

Mescolate e lasciatele insaporire al fresco.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;In un'altra ciotola lavorate fino ad ottenere un composto cremoso l'uovo con lo zucchero; incorporate poco a poco la farina setacciata con il cacao ed il lievito e poi a filo l'olio. Mescolate bene, ed aggiungete tanto latte quanto basta a rendere l'impasto abbastanza fluido {procedete *a cucchiaiate*}. Riprendete le fragole ed aggiungetele, mescolando con delicatezza. Versate il tutto nello stampo, infornate e cuocete per 35' {fate la prova stecchino prima di sfornare!}.&lt;br /&gt;

4 T &lt;b style="color: #999999;"&gt;brown sugar&lt;/b&gt;&lt;br /&gt;
140 g &lt;b style="color: #999999;"&gt;very light extra virgin olive oil &lt;/b&gt;&lt;br /&gt;
1 &lt;b style="color: #999999;"&gt;egg&lt;/b&gt;&lt;br /&gt;
3 T &lt;b style="color: #999999;"&gt;unsweetened cocoa powder&lt;/b&gt;&lt;br /&gt;
12 &lt;b style="color: #999999;"&gt;ripe strawberries&lt;/b&gt;&lt;br /&gt;
6 g &lt;b style="color: #999999;"&gt;baking powder &lt;/b&gt;&lt;br /&gt;
&lt;b style="color: #999999;"&gt;whole milk &lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 180° C, grease a rectangular mould with butter then flour it. In a large bowl sift together the flour, baking powder and unsweetened cocoa powder. &lt;br /&gt;
Wash, peel and cut into large pieces the strawberries, put them in a bowl and sweeten with a bit of sugar. Mix well and set aside.&lt;br /&gt;
In another bowl work until creamy the egg and sugar; add little by little the flour sifted with baking powder and cocoa, then the oil. Mix well and add as much milk as needed to make the mixture a bit liquid. Add the strawberries and stir gently. Così come i gusti, da puntualizzare chè una food addicted non può non riportare:&amp;nbsp;vini&amp;nbsp;strutturati e impegnativi oppure fruttati, caprini stto cenere e miele o aromatizzati alla menta e &amp;nbsp;pepe rosa, sgabei, focacce allo stracchino, calda calda e lasagne al pesto...&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Beh sì, sono ingrassata :)&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Come state? Sentita la primavera?&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Io assolutamente sì: esco la mattina di casa in giacca {pesante} e sciarpona, via di passo svelto chè sennò a Ponte Vecchio ci arrivo congelata e quando esco, cinque e mezzo ore dopo, un caldo epocale, così come mi fanno già notare { :\ sappiate che li odio, è così} i turisti smanicati {anche se a parer mio se li chiamassimo nudisti andrebbe pressochè bene}.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Comunque, stante ciò, ho deciso di segregarmi in casa più che posso, perchè mica mi è passata, sono arrabbiatissima che l'inverno se ne sia già andato quindi ecco, devo abituarmi alla nuova stagione a piccole dosi, pena un esaurimento nervoso {mio ma sicuramente anche di chi mi sta accanto, so essere intrattabile :D}.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Mi sono fatta una tazza di caffè; grazie al cielo qui in casa fa freddo e di ciò sono felicissima, e ho scoperto... una cosa bellissima... chissà come ho fatto a non accorgermene prima.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Buongiorno a tutti voi!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;E' da tanto {troppo} tempo che non ci sentiamo, ma ho un buon motivo, una valida giustificazione, via :)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Insieme al mio compagno ed ad un terzo fotografo infatti, sono stata impegnata nell'organizzazione {l'allestimento? no, sie, ancora tutto da preparare :/ !!!} di un nuovo progetto fotografico, &lt;b&gt;100 FENCING CLICKS&lt;/b&gt;, il cui committente è la Confraternita della Spada di Firenze, una scuola di scherma tradizionale, unica riconosciuta dalla Federazione FISAS nella nostra città.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Due parole sulla scuola.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Si tratta di una *Sala D'Arme* che ha come obiettivo quello di ricostruire, riapplicare ed insegnare i *metodi* di utilizzo {il termine corretto è *maneggio*} delle diverse armi tradizionali, in un duplice interesse, storico e marziale. Dunque niente a che vedere con le rievocazioni, più o meno realistiche o fantastiche :)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ciò che apprezzo di questi ragazzi, perchè di ragazzi si tratta, sono l'impegno, la dedizione e l'accuratezza con cui svolgono il loro insegnamento: qualità che a mio parere sono imprescindibili per un'istituzione che si fregi del titolo di *scuola*.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;L'evento fotografico &lt;b&gt;100 FENCING CLICKS&lt;/b&gt; si pone a celebrare i dodici anni di attività della Sala D'Arme, che spazia dai corsi tradizionali a manifestazioni sportive, a livello tanto cittadino quanto nazionale: attraverso i nostri *clicks* cercheremo di farvi conoscere questa meritevole realtà, che chiamare *sportiva* è, credo, riduttivo ed ingiusto. E' molto di più, e vi invito a visitare la mostra per vederlo con i vostri occhi ;)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Per quel che mi riguarda, essendo forzata ad annullare e rimandare un appuntamento a cui tenevo molto, rimarrò tra le mura di casa, avvolta nella coperta, leggiucchiando un po' qui ed un po' là. No, dico, ma che coppia pazzesca è??? :D&lt;/div&gt;&lt;div style="text-align: justify;"&gt;A me piacciono moltissimo: oltrechè per il loro gusto {e per la forma, il colore, la struttura -ebbene sì} per il senso di *completezza* che mi danno. Potrà parvi strano, ma al banco del nostro amico ortolano raramente dimentico di portar via un mazzo di porri: sono rassicuranti, mi danno la sensazione che non mi tradiranno mai ma che anzi, mi risolveranno pranzi e cene di qualunque impegno. Non c'è verso, con loro non si toppa mai: un risotto, un clafoutis, caramellati insieme ad un arrosto, chessò, le possibilità sono innumerevoli, semplici e sicure e mai banali.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;E poi, intendiamoci: falliscono forse nelle zuppe o nelle passate? Giammai!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Questa è di una semplicità disarmante ma non mi annoia, perchè ho scoperto che con pochissimo si può rimanere sbalorditi e soddisfatti: porri e semi di finocchio.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Buon fine settimana d'inverno a tutti!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;Passata semplice di porri&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;scalogni&lt;/b&gt; 1&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b&gt;&lt;span style="color: #999999;"&gt;olio evo &lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;porri&lt;/b&gt; 6 {ma di quelli piccolini, giovani e freschi, non quei tubi da 4 cm di diametro che troppo spesso si vedono in giro!!!}&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;dado vegetale homemade&lt;/b&gt; un paio di cucchiaini* {o, in alternativa, brodo vegetale preparato con carota, sedano e cipolla, aromatizzato con &lt;b style="color: #999999;"&gt;semi di finocchio e basilico essiccato&lt;/b&gt;. Deve essere molto concentrato ed andrà a sostituire l'acqua utilizzata per la cottura dei porri}&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;grana padano&lt;/b&gt; 3C&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #999999;"&gt;pepe nero &lt;/b&gt;da grattugiare al momento&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;/div&gt;&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;Lavate e mondate i porri, tagliateli a fette di un paio di cm di spessore. Tritate lo scalogno.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;In una casseruola dal fondo spesso scaldate un cucchiaio abbondante di olio, versate lo scalogno e lasciatelo soffriggere delicatamente finche non diventa traslucido. Aggiungete i porri, mescolate e fate cuocere a fuoco vivace per un paio di minuti. Coprite le verdure a filo e portate a bollore, unite il dado, mescolate e incoperchiate: cuocete finchè i porri non saranno morbidi ma non sfatti {circa 15'}.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Lasciate nella pentola soltanto il liquido necessario a frullare le verdure, mettendo da parte il restante: passate tutto al minipimer, pepate e riaggiungete il liquido di cottura finchè non raggiungerete la consistenza desiderata.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Impiattate, spolverate con il formaggio e un giro d'olio.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Questo piatto è un vero orgoglio.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;E quando dico vero, intendo *realmente* vero: originale, genuino, autentico, puro. &lt;i&gt;Territoriale&lt;/i&gt;.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Eh sì, perchè *la pecora* {lo stufato di pecora} è solo e soltanto quella di Campi {Campi Bisenzio, periferia di Firenze}: per farvi capire, è un pò la nostra *bistecca* :)&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;E a dirla tutta, o almeno per quanto ne so, esiste anche una ed una sola bottega affidabile {prego contattare in privato se interessati :D}: se non vi fate tante domande {non fatevene proprio, andate sulla fiducia} e lasciate fare allo spassosissimo e pittoresco proprietario non rimarrete delusi. A patto che la sappiate cucinare, la pecora, che abbiate la ricetta giusta, o che la portiate alla nonna/suocera che la prepara da generazioni: altrimenti non funziona, non sarà mai, come dicevamo, *quella vera*.&lt;br /&gt;

Piccolo aneddoto: tempo fa la metà discorreva con un vecchio cliente, un tizio furbo e conoscitore della buona cucina, proprietario e gestore di un noto ed apprezzato ristorante fiorentino.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;"Stasera vado a mangiare &lt;i&gt;la pecora&lt;/i&gt;", disse sornione la metà, ultimando il lavoro.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Silenzio.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;"Ah", fu la tarda e laconica risposta. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;"Vado dalla suocera. Sa, &lt;i&gt;è di Campi&lt;/i&gt;"&lt;/div&gt;&lt;div style="text-align: justify;"&gt;"Aaahhh! Buon appetito allora! Non sai quanto ti invidio, ragazzo!"&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Vero è che fuori dal nostro territorio non è famosa; abbiamo i grandi classici fiorentini/toscani che occupano la *scena del tradizionale*: d'altro canto la produzione è ridotta, faticherebbe ad imporsi, anzi forse verrebbe snaturata. Così è e rimane un piatto *di nicchia*: se amate le preparazioni corpose, di carattere, ve ne innamorerete, ne sono più che certa. Dunque signori, se siete di queste zone, se siete toscani, se programmate un viaggio qui ed amate la carne o sperimentare e conoscere le tradizioni, fermatevi per l'acquisto, leggete e imparate la ricetta che vi passo {da qualche parte bisogna pur cominciare!} e godete.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Eh sì, dimenticavo, perchè questa ricetta è anche un orgoglio di famiglia: la condivido volentieri, perchè certi saperi vanno trasmessi e basta. se gradite, 4 o 5 &lt;b style="color: #999999;"&gt;patate&lt;/b&gt; sbucciate e tagliate a piccoli pezzi, da unire allo stufato 1 ora prima del termine della cottura&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Per la marinata, da preparare il giorno precedente&lt;/i&gt;.&lt;br /&gt;
Tagliate a pezzi la cipolla e riunitela in una larga ciotola con l'alloro, l'aglio sbucciato e schiacciato, il rosmarino, le bacche di ginepro pestate. Unite la carne e mescolate con le mani affinchè si ricopra delle erbe e degli aromi. Versate il vino a coprire, sigillate con la pellicola e fate riposare in frigorifero per una notte.&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Per lo stufato&lt;/i&gt;.&lt;br /&gt;
Scolate bene la carne dalla marinata, rimuovendo con cura le bacche e i residui delle erbe.&lt;br /&gt;
Lavate e mondate le verdure. Tritate finemente la cipolla, il sedano, la carota e fateli soffriggere in un largo tegame dal fondo spesso, velato d'olio. Unite i dadi di carne e scottateli a fuoco vivo, girandoli con un mestolo affinchè risultino dorati da ogni lato. Versate il vino e fate evaporare. Salate. Aggiungete l'aglio sbucciato e schiacciato, il rosmarino, le bacche di ginepro schiacciate e proseguite la cottura per qualche minuto, abbassando la fiamma. Unite la passata di pomodoro, il peperoncino, le olive e tanta acqua tiepida quanta ne serve per coprire a filo la carne. Mescolate bene. Incoperchiate e cuocete a fiamma bassissima per 4 ore. &lt;br /&gt;
