<p style="text-align: left;">Puerto Vallarta is much more than beautiful beaches and breathtaking sunsets over the Pacific ocean. Of course I fell in love with viejo Vallarta (old Vallarta), the original town where everything happens, and its beaches, food and people. But I also loved some of the activities we did this week. In a way, they were the highlight of this trip, especially the zip line and mountain bike tours.</p>

<p>In a previous article I wrote about <a href="http://whatscookingmexico.com/2011/05/01/foodbuzz-24x24-a-day-in-xochimilco/">Xochimilco</a> and the <em>chinampa</em> system that was developed by the civilizations living around the lakes in the Anahuac Valley, where modern Mexico City (a.k.a <strong>D.F.</strong> or Federal District) sits now. This system consisted in creating floating islands for agriculture using mud from the bottom of the lake and decaying vegetation. The chinampas were essential in the construction and  thriving of Tenochtitlan, the Aztec empire capital. The system is highly efficient and productive (with up to seven crops a year), not to mention sustainable, ecological and local.</p>

However, some people can be intimidated when it comes to dried beans. I was one of them a few years ago. Other people avoid beans because they can cause gas if they&#8217;re not cooked properly. But beans can be easily stored and cooked following some simple tips. Here are my personal tips when it comes to buying, storing and cooking beans.</p>

<p>Most markets in Mexico offer the same products to their visitors, fruits and vegetables, meat, grains, dairy products, etc. However, there are few markets that are known for one specific thing. One of this markets is Mercado de Jamaica to the southeast of downtown. Even though this market offers all the above products, most people go to that market to buy flowers. This market is the biggest whole sale market for flowers in the city and most people who sell flowers at other markets or stores buy them here.</p>
<p>Mexicans love flowers. Our weather is so amazing that we always have one kind or another growing in the fields. You just have to visit any market in the city to see this. And if you go to Xochimilco (flower field in Nahuatl) or Cuemanco you&#8217;ll see this love for flowers multiplied. After Xochimilco market, I think this has become my second favorite market in the city. Getting there takes me about 15 minutes by subway, it&#8217;s not as close as my neighborhood market, but the trip is worth it for the food and flowers. This is a place you definitely have to visit when in Mexico City.</p>

<p style="text-align: left;"><span style="text-align: left;">I&#8217;m not a vegetarian, but it would be very easy to be one here in Mexico. Like I mentioned in </span><a style="text-align: left;" href="http://whatscookingmexico.com/2012/02/29/nixtamal-and-tortillas/">this maize post</a><span style="text-align: left;">, the diet of pre-Hispanic Mexican civilizations didn&#8217;t contain a lot of meat. Their main ingredients were maize, squash, chiles, amaranth, and wild greens among many others. One of the of most important ingredients was beans. When mixed with the other ingredients already mentioned they created a healthy and balanced diet that allowed civilizations to thrive for thousands of years. </span></p>
