Recipe Corner - Lemon Pancakes

Sometimes it's a challenge to come up with new breakfast selections that will be pleasing to the majority of guests. A particular guest favorite and frequently on the menu, are lemon pancakes. Made with sour cream one would think they'd be heavy, but in fact, they are feather light.

Whisk together in a large bowl:

1 cup all-purpose flour
1/2 cup sugar
1 1/2 tsp. baking powder
1/2 tsp baking soda
1/4 tsp. salt

Whisk together in another bowl:

3/4 cup sour cream
1/3 cup milk
1/4 cup fresh lemon juice
3 T melted butter
1 large egg
1 1/2 tsp. vanilla

Pour the wet ingredients over the dry ingredients and gently whisk together, mixing until just combined. Fold in:

Finely grated zest of 2 lemons

The batter will be thick and bubbly, similar to cake batter.

I serve them with Devonshire cream or raspberry syrup. Either is delicious.

Enjoy Authentic Italian Food at Fanucci's

Eating in local restaurants is part of the fun of being on vacation, and guests staying at the Whistling Swan Inn are always asking me to recommend nearby eateries. This week Tom and I popped into Fanucci's in Netcong to have a quick dinner, and we were not disappointed.

Family owned, the restaurant is homey and casual, serving authentic Italian food. By authentic I mean food cooked the way they prepare it in Europe, not the Americanized version of Italian food. We had the eggplant parmigiana, and it was exactly how my mother made it.

In addition to a full menu, they also offer homemade gelato, which is exquisitely creamy.

What is the Advantage of Booking a Hotel Directly vs Through an OTA?

Today I read an interesting article in Travel and Leisure magazine about the advantages of using a travel consultant vs. online booking, and I couldn't help but relate it to my own experience of owning/operating a bed and breakfast inn.

It's true that the proliferation of the Internet and rise of online booking intermediaries have made it easier to compare prices, see guest photos and book a room on the fly. When booking a room at one of the chain properties, this may be the best way to go, because pretty much all the rooms are the same regardless of whether you're in Boston or Bangkok. However when you're
looking for a bed and breakfast inn - an experience, not just a bed - it's better to book directly, and here are the reasons why:

Broader Choice of Rooms

All hotels pay a substantial commission to the booking intermediaries. Consequently, smaller hotels, such as bed and breakfasts, may not put their premium rooms on the block for sale, particularly during high or holiday seasons. By booking through the property's own web site or reserving on the phone, you will get your choice of available rooms.

Ability to Change a Reservation Easily

It's easy to sort out a reservation change with the property owner with one phone call. Changing a reservation made through an online travel agency may require several phone calls before you get a live person, and even then it can be a difficult process requiring communication with the innkeeper through a "middleman".

Unpublished Deals

It's a fallacy that you will get the lowest rate by booking online. To preserve "rate integrity", the rates are the same on all channels. Bed and breakfasts frequently have discounted deals, such as a military discount, last-minute booking discount or a "stay six nights and get the seventh night free" discount. However, these are only applicable to direct bookings.

Better Customer Service

Innkeepers have a vested interest in keeping their guests happy. We will spend as much time on the phone with you as necessary to ensure all your questions are answered thoroughly. Want the room with the best view? We'll spend the time describing it so you can make an informed choice. Never been to the area before? We'll be able to recommend the best restaurants, shopping and sightseeing attractions. There won't be any unpleasant surprises when you arrive.

Complimentary Perks

Everyone likes to be unexpectedly delighted. Perks such as a free upgrade to a more luxurious class of room or a complimentary bottle of champagne, are sometimes available, but only on non-commissioned bookings.

In summary - the Internet has definitely transformed the way we live, but sometimes it's better to do business the old-fashioned way.

What Can I Read this Summer?

Finally summer is here. The days are longer, the flowers are in bloom and I'm wearing short sleeves at last. Growing up in rural central New Jersey, summertime meant kicking up our heels after a long school year. It meant biking around the neighborhood with friends, learning to dive backward and waiting with eager anticipation for the ice cream truck.

Sweet days of summer, doing what I love best

As a voracious reader then, and now, one of my fondest memories was hunkering down in the hammock under the old oak tree with a good book. Remember, this was before central air conditioning. In fact, we had no air conditioning at all, so midday we ran for the nearest shade and moved as little as possible.

I still plan my summer reading each year. Here are some of my favorites, old and new, in no particular order of preference - just books that have made a lasting impact.

Bonfire of the Vanities - Tom Wolfe, 1987
Wolfe's first novel captures the essence of Wall Street greed and the excesses that defined New York City in the 1980's.

Making Time: A Life Beyond 'Cheaper by the Dozen' - Jane Lancaster - 2004. This is a biography of Lillian Gilbreth, the founder of ergonomics. Most of us recognize her as the mother in Cheaper by the Dozen, however she was a world-renowned engineer and psychologist in her own right who developed modern conveniences such as the foot pedal garbage can and efficiency designed kitchen, all while raising 11 children.

The Help - Kathryn Stockett - 2009
Set in the Civil Rights South, The Help examines the relationship between a privileged southern belle and two African American maids, and her quest to write an expose about racism and the disparities between the haves and have nots.

The Bucolic Plague - Josh Kilmer-Purcell - 2010
Written by one half of the Fabulous Beekman Boys, this memoir recounts how the author and his partner purchased and restored an historic mansion and goat farm in Sharon Springs, NY. Over the last five years, they've launched a lifestyle brand that has revitalized the town.

A Hundred Summers - Beatriz Williams - 2014
This is a story of friendship, love and betrayal among Rhode Island's glitterati in the 30's. It's good beach reading.

In my previous corporate life, earning a living depended upon my ability to meet deadlines and exceed customer expectations. As the owner of the Whistling Swan Inn, my deadlines are largely self-imposed, but exceeding customer expectations definitely ranks #1 on my priority list.

What Can I Do for Mother's Day?

Traditionally celebrated on the second Sunday of May, Mother's Day was established as an official holiday by President Woodrow Wilson in 1914. It was originally meant to honor mothers whose sons had died in war. Today, we typically celebrate mothers by dishing up breakfast in bed, showering them with flowers and sending sentimental cards meant to elicit a tear or two.

Where Can I Tour a Country Estate?

Every two years the Women's Association of Morristown (NJ) Medical Center conducts its signature fundraiser, "Mansion in May", which raises thousands of dollars to support the hospital's programs. The group selects a country estate in either Morris or Somerset County and invites renowned area interior and landscape designers to turn it into a spectacular showcase, which attracts thousands of visitors.

This year's mansion, located in the tony burg of Peapack-Gladstone, is Blairsden, the 500-acre, 62,000 square foot mansion built by New York financier, C Ledyard Blair. Designed by the firm of Carrere and Hastings who also built the New York Public Library and the Frick Museum, the house is one of the best examples of Beaux-Arts architecture in the United States.

A mile-long driveway leads up to the house. The estate also features twenty acres of formally landscaped gardens, tennis courts, plunge pools and pavilions. ...and the Newport glitterati thought THEY had the monopoly on luxurious living!

The tour is open from May 1st through May 31st. Tickets can be purchased either online or at the door. Advance tickets cost $40 per person, but after April 30th, the price goes up to $50.

A free shuttle will take you from the parking lot to the mansion. There is no parking at the estate, and it cannot be accessed on foot.

Insider's tip:

Regardless of how luxurious the fabrics are or how glossy the furnishings, do not touch anything. The tour is conducted by volunteer docents, and they take their job very seriously. Two years ago when I toured Glynallyn, I got reprimanded three times in 10 minutes.

Where Can I Bicycle Near Stanhope, NJ?

Okay, so there's still snow on the ground. However, I'm optimistic that warm weather is just around the corner. We've turned our clocks ahead, which has always been the harbinger of Spring for me.

The Whistling Swan Inn is running a special during April and May for all you cycling enthusiasts. We are very close to the Sussex Branch Trail, which is an old preserved rail bed. Let it be said that I have not ridden this trail, nor do I intend to, but Tom is an avid cyclist, and I have it on his authority that this is one of the best in the state of New Jersey.

The trail takes you through 21 miles of changing scenery. You'll go through forests, farmland and small towns in this bucolic corner of the New Jersey Skylands. You'll pass through rock cuts, woods, fields and past the pristine Cranberry Lake. There's wildlife along the way; keep on the lookout for beaver, mink, deer, muskrat, fox and otter. There's nothing more interesting than seeing animals frolicking in their natural habitats.

Now for the special ... with any two-night stay in April or May, we will provide you with a complimentary loaner bike (or you can bring your own if you want), a customized bike trail map and a delectable picnic lunch.

What Can I Expect from a Bed and Breakfast?

Over the past 25 years, more people are choosing to stay in bed and breakfast inns over the large hotels. One of the best things about a B and B is that each one is unique and offers the type of personalized hospitality that chain properties simply cannot provide. And yet, some misperceptions about the B and B experience still exist. That being said, here's what you can expect when you visit the Whistling Swan Inn.

1. Privacy

Privacy is a concept so dear it's guaranteed in the Bill of Rights, and you'll get it here. We'll be around and available, but never intrusive. If you want to know about the history of the house, things to do in the area or why I decided to become an innkeeper, I'm delighted to tell you. But there is no mandatory socialization with either the innkeepers or other guests. No one will summon you to tea in the drawing room at precisely 4:00 pm like on Downtown Abbey.

2. Scrumptious food

Our breakfasts have been touted consistently by our guests. It's served buffet style with two hot entrees and all the accompaniments, so you can stroll down anytime during the breakfast hours to help yourself. Enjoy it at an intimate table for two or on the veranda in nice weather. Read the morning paper if that's your Sunday routine. No one will hold you captive at a communal dining table. You can even take a breakfast tray up to your room if you wish. Hungry or thirsty before or after breakfast? There's a 24-hour hospitality bar with my signature chocolate chip cookies and other snacks and beverages available.

3. Your own bathroom

One of the more popular myths about B and B's is that guests have to share a hall bathroom. Another popular interpretation of a private bath is that while it's private for your room, you have to step across the hall to use it. Not here. Not ever. Each room has its own private bath en suite, which loosely translated from the French means "part of your room". So, you don't have to worry about being seen in your jammies.

4. Five-star amenities

You don't have to sacrifice luxury when you come to my inn. Each room is elegantly appointed with exquisite bed linens, cushy robes and fluffy towels. Toss some bath salts into the Jacuzzi tub and relax. Forgot your shampoo, body lotion or hair dryer? Don't fret - we've got them.

5. Modern conveniences

While it's true that the Whistling Swan Inn is a restored Victorian mansion, the architecture is the only thing that predates the 21st century. There are ample power strips for your electronic devices. Yes, I did say electronic devices. Each room is equipped with a flat-panel TV, DVD player and expanded cable, so you don't have to miss that college basketball game. Some even have I-pod docking stations. If you must stay connected with your office or Facebook friends, we have WiFi, and it's free. Best of all, there's not a doily or antimacassar in sight.

6. Personalized service

How can I have a stress-free party? I can't even begin to count how many times I've fretted about that. It's great fun to celebrate life's big and little milestones, but sometimes just the thought of the food, the decorations, the set-up, the clean-up, is enough to send one into a vapor lock.

Well, stress no more. The Whistling Swan Inn is a perfect venue for an intimate, elegant, yet affordable party - and best of all - no stress. Booking your party begins with a consultation at the Inn. You'll have a chance to see the site as well as photos of past gatherings to get a sense of how your event could be executed.

Customization is the theme of my party planning. One size definitely does not fit all, and I like to spend ample time discussing ideas with the party host to ensure that what they envision for their special day is translated into an event that is memorable not only for the guest of honor, but attendees as well.

Food, Glorious Food - Breakfast at the Whistling Swan Inn

When I look at old photos of my big Italian-American family, the common denominator has always been the dining room table laden with food. To say that food has always been a big part of my life is an understatement, so that's why it's a huge part of the experience I deliver to my guests at the Whistling Swan Inn.

This is a guest favorite

Part of the fun of going on vacation is forgetting about the diet and trying new things, and many of my guests will ask me to describe in detail what food is available at my bed and breakfast. Because I like to see people eat, I'm only too happy to comply.

Breakfast each morning is served buffet style; my guests seem to like the flexibility of strolling down anytime between the designated hours, rather than having to commit to a set time. The varied menu (chef's choice) consists of two entrees, one sweet, one savory, accompanied by an array of sides. Here's an example of a typical menu:

Eggs Benedict (Florentine for our vegetarian friends)
Croissant a L'orange French toast
Potato latkes with sour cream and applesauce
Assorted sweet breads, such as blueberry muffins or cinnamon walnut coffee cake

Freshly ground coffee and/or assorted gourmet tea

For guests who may have dietary restrictions, such as gluten intolerance, we can easily accommodate them, and in fact, Tom's Potato Crust Frittata is often requested by returning guests.

I like to make sure my guests have accessibility to snacks in order to tide them over until dinner after a fun-filled day of antiquing, horseback riding or seeing the nearby historic sights. They can grab some of my signature chocolate chip cookies or rich brownies and a soda or coffee at my 24-hour hospitality bar. I'll admit, it's hard to keep that cookie jar filled.

Eating Gluten Free

Several months ago, I wrote about gluten intolerance being on the upturn and published Tom's popular gluten-free potato-crust frittata. I want to be sure that guests coming to the Whistling Swan Inn will be able to enjoy the breakfast buffet, so I continue to research recipes that are not only gluten-free, but delicious.

Still, there's always the dilemma of where to send people with gluten sensitivity for lunch or dinner. For people with severe gluten intolerance or full blown celiac disease, cross-contamination is always a big concern, because even a stray bread crumb can set off a chain of events resulting in dire illness.

This weekend I discovered Mama's Cafe Baci, an Italian restaurant in Hackettstown. Just a short drive from the Inn, Mama's not only serves up an exquisite gluten-free menu, but in fact, owner, Tom Schiano, has invested considerable funds to retrofit his kitchen with separate prep areas and equipment to prevent cross-contamination. Halloween at the Whistling Swan Inn

It's creepy and it's kooky...mysterious and spooky...it's Halloween in the New Jersey Skylands. Yes, it's hard to believe the season of ghosts and goblins is upon us. The air up here in Sussex County has turned crisp, the leaves need almost daily blowing and I've bought my candy for the trick or treaters that are sure to descend. The Inn is all decked out for the holiday, and my sassy little witch friends are perched on the mantels.

In between decorating, baking pumpkin bread and trying to exercise some self-control with so much candy around, I've been checking out some of the activities in and around the Whistling Swan Inn. Once again, Corrado's Farm in Hackettstown will have their "Hayride of Horrors". While I haven't participated in this, I have it on good authority that the people who work on the hayride are experts at scaring the bejesus out of you.

Dine Around the Whistling Swan Inn - Part 1

Within a ten mile radius of the Whistling Swan Inn, my northern New Jersey bed and breakfast, is quite an array of restaurant choices. Last week, at the Friends of Waterloo Village Harvest Moon Festival, I had an opportunity to sample some of the best food in the area.

The evening began at 6:30 pm, and because I was feeling a little prickly from hunger, my first stop was The Prickly Pear table, where I tasted the most delectable pork loin served over a bed shrimp and chorizo sausage grits. Proprietors Linda and Chef Joe Andes opened their doors in September of 2006 with a menu that features European, Asian, French and Italian cuisine all with an American twist.

The next stop was Andre's. Tracey, one half of the restaurant's husband and wife team, was serving up cups of butternut squash and apple soup. It had just the right blending of flavors. To ensure variety and the freshest in-season ingredients, Andre changes the menu every two weeks.

I scream, you scream, we all scream for Cliff's....Cliff's Ice Cream, that is. Open year-round, Cliff has been making homemade ice cream since 1975. In celebration of autumn, Cliff was serving scoops of pumpkin and apple crumb ice cream at the event.

Ah, so much food and so little time. Tune in for Part 2 of Dining Around the Whistling Swan Inn. Next time you're in the area, be sure to stop by one of these great eateries.

Recipe Corner - Apple Crisp

Autumn in central New Jersey means an abundance of fresh apples from local farms, which translates into some delicious hot fruit selections at my bed and breakfast, the Whistling Swan Inn. There is nothing I like better than hot apple crisp, whether served in the morning or as a dessert with lots of chocolate almond ice cream on top. Mmm, mmm, good.

I've tried many recipes from gourmet sources such as Bon Appetit and Epicurious, and even some from the Food Network. But none even come close to the recipe in my old (1981) Betty Crocker Cookbook.

This morning, Debbie, one of my guests from Texas, to my great delight, told me she was following my blog. She loved the apple crisp so much that she asked for it to be posted. Here it is...enjoy.

Betty Crocker's Hot Apple Crisp

4 cups peeled and sliced tart apples (about 4 medium)
2/3 to 3/4 cups packed brown sugar
1/2 cup all-purpose flour
1/2 cup oats
3/4 tsp. ground cinnamon
3/4 tsp ground nutmeg
1/3 cup butter, softened

Heat oven to 375 degrees. Arrange apple slices on greased square pan 8x8x2 inches. Mix remaining ingredients, sprinkle over apples.

Bake until topping is golden brown and apples are tender, approximately 30 minutes. Serve warm. If desired it can be topped with ice cream or Devonshire cream. Serves 6.

Wait for it - a Water Feature at the Whistling Swan Inn

When I was a kid growing up in rural central New Jersey, a lot of my friends had ponds, creeks, rills or streams in or around their yards. My ritzier pals had fountains or waterfalls as part of the built-in swimming pool. We called them "ponds", "creeks" or "fountains". Today, they're called "water features". A water feature...kind of like calling raw hamburger steak tartare.

But okay, I'll go with the flow (pun intended). At the Whistling Swan Inn, my New Jersey bed and breakfast, there is a hill in the back where nothing grows. So, we're putting in a water feature, which consists of a pond at the top corner of our English garden and terraced rocks with water cascading down them.

Once completed, we plan to have a cozy sitting area where guests can relax with morning coffee or an evening bottle of wine set against a backdrop of burbling water. We might even have fish! However, there is much work to be done before we buy those water plants.

The digging, is done. Tom spent an entire day with a mini excavator, rented from my pal, Eric, owner of Sussex County Rental Center. The photo at right is not a crime scene, despite the tape and six-feet deep hole at the bottom....it's Step 1 of what will be a beautiful enhancement to the Inn's landscape, designed for the enjoyment of our guests.

It was inevitable. The Whistling Swan Inn now has a presence on Twitter. Ever the researcher, I looked "Twitter" up on Wikipedia.org and found out more than what I wanted to know or need to know for my purposes.

Since its founding in 2006, by yet another undergraduate college student, Twitter has grown exponentially, and today is the third-highest ranking social network. Currently there are 200 million users and 400 million tweets daily! That's a lot of chirping.

Now I have to learn to tweet using only the 140 characters they allow. Talk about being terse! So what will I tweet about? Because tweets are visible to the general public, I'll use this vehicle to increase awareness about the Inn, goings on in the NJ Skylands region and other stuff to help bring business to Stanhope, NJ.

My followers should be watching for "tweep" only specials at the Inn. "Tweep", in case you were wondering, is a portmanteau of Twitter and peeps, so please follow me in order to take advantage of these upcoming special deals.

Celebrate Oktoberfest in the Skylands of New Jersey

This morning after my guests checked out I was perusing Yahoo when a picture of dachshunds racing caught my eye. Each year in Cincinnati, Ohio, Oktoberfest kicks off with the "Running of the Weiners".

Doxies are dressed up in hot dog bun costumes and run approximately 75 feet to their owners. I had to laugh. Somehow I cannot imagine my Lucy, AKA the Red Devil, submitting to a weenie bun costume and racing on cue. But apparently, this is a big deal and a highlight of this Oktoberfest celebration. Who knew?

Oktoberfest is also a big deal in northern New Jersey and has kicked off this weekend at the Black Forest Inn, my favorite German restaurant, located a mere mile away from the Whistling Swan Inn.

On Saturdays and Sundays from September 14th through November 3rd, you can enjoy an authentic German Oktoberfest celebration, which features traditional German cuisine, live music and imported German beers. Reservations are required, so if you're a guest at the Swan this fall, and want to get in on the fun, book your table early. The event will have everything but the weenie races. To see that, you'll have to content yourself with the photo below.

Recipe Corner - Baked Omelet Roll with Hollandaise Sauce

Easy and elegant - always a hit

This is an easy, elegant breakfast or brunch dish. It's a Whistling Swan Inn guest favorite, and I've experimented with different fillings to add a little variety to the buffet.

Ingredients:

6 eggs
1 C milk
1/2 C all purpose flour
1/2 tsp salt
1/4 tsp ground black pepper
1 C shredded cheddar cheese

Preheat oven to 350 degrees. Lightly grease (or spray with Pam) a 9 x 13 baking pan. In the blender combine eggs, flour, salt, pepper and milk. Cover and process until smooth. Pour into prepared pan. Bake in preheated oven until set, approximately 15 minutes.

Sprinkle with cheese and pop back in the oven for 3 minutes until cheese melts. Carefully loosen edges of omelet from pan. Starting from the short end, carefully roll up omelet. Transfer seam side down to serving plate. Garnish with Hollandaise sauce and either fresh chives or tarragon. Slice into 6 equal size pieces.

Variations:

1 C chopped spinach - spread on omelet and sprinkle with cheese
Saute chopped broccoli, mushrooms and onions - spread on omelet and sprinkle with cheese
Instead of plain cheddar cheese, try the four cheese Mexican blend for a little spice

Tips:

It helps to rotate the pan halfway through the cooking process
This can go from "done" to "burned" very quickly, so I always watch it carefully.

Grey Towers National Historic Site - Milford, PA

It's not often that Tom and I can take a break from our responsibilities as innkeepers of the Whistling Swan Inn. However, this Labor Day we took the day off to do something fun. Accompanied by Tom's brother, Mike, and sister-in-law, Karen, we headed out to Milford, PA, a small, quaint town, approximately 45 minutes from our bed and breakfast, to tour the Grey Towers Historic Site.

Steeped in history, Milford was the ancestral home of Gifford Pinchot, two-time governor of Pennsylvania and the first director of the United States Forest Service. Grey Towers, his summer estate, was built in 1886 and sits on 102 acres overlooking the Delaware River. Particularly fascinating to me was "The Finger Bowl", an outside dining room consisting of a raised pool surrounded by a flat ledge. Food was passed family style by floating bowls and platters across the water. For the small sum of $8, visitors can tour both the chateau and the spectacular grounds.

Before the tour, we did a little shopping and had a great lunch at the Waterwheel Cafe. This is not your usual lunch place - the selections are quite gourmet and feature homemade soups and sandwiches prepared with the freshest ingredients. The dinner menu also looked wonderful, featuring some interesting entrees such as Cassolette de Coquille St. Jacques and Crispy Hazelnut Pork Chops.

Milford is also somewhat famous for its celebration of independent films, under-seen classics, plus silent and historical films originally shot in the area. The Black Bear Film Festival will take place on October 18, 19, 20, 2013.

So, come on down to Stanhope, NJ - relax at one historic mansion, tour another, eat some great food and catch some flicks.

Highlands Festival at Waterloo Village - A celebration of all things local

Victorian Days - Belvidere, NJ

The Victorian Era has fascinated me ever since I read Charlotte Bronte's Jane Eyre in high school. By definition, this is the period of British history between 1837 and 1901, the years of Queen Victoria's reign.

Thirty minutes away from the Whistling Swan Inn, my bed and breakfast in Stanhope, NJ, is Belvidere, a town steeped in Victorian culture. Each year, the town celebrates its Victorian heritage by holding a weekend event, Victorian Days.

This year's event will be held on Saturday, September 7, 2013 from 9:00 am to 6:00 pm and on Sunday, September 8, 2013 from 11:30 am to 5:00 pm. The festivities will include house tours, garden parties, craft and food vendors, an antique car show and vintage fashion show. Victorian era demonstrations and musicians playing period selections will also be on hand to add to the fun.
