The preparation for it is similar to that of risotto, so it does require a little time and attention [...]]]> Polenta is a coarsely ground corn meal that can be used in all kinds of delectable recipes or served on its own. The preparation for it is similar to that of risotto, so it does require a little time and attention to make properly. However, the final result is a creamy, filling side dish that everyone will enjoy. Here are simple instructions for making the perfect creamy, classic polenta with only 4 ingredients!

Ingredients

  • Water
  • Polenta
  • Salt
  • Butter

Directions

  1. Measure out the water and corn meal in a 4:1 ratio; 4 cups of water per 1 cup of polenta.
  2. Add water to a large stock pot and turn the heat on high. Once the water is at a near boil, add a bit of salt to the water (~1 teaspoon), and let the water continue to a full, rolling boil.
  3. Add the polenta to the water slowly enough that the water continues to roll throughout the pouring process. This helps keep the polenta kernels from sticking to each other.
  4. Reduce the heat and stir the polenta semi-constantly for the next 30-35 minutes with a large spoon. The polenta should start to come together.
  5. Once this happens, it’s time to finish off the polenta with a bit of butter (as much as you feel comfortable with), and continue stirring until the sides of the polenta start to pull easily from the sides of the pot.
  6. Put a little bit of water into a serving bowl and pour the polenta into it. The water should keep the polenta from sticking.
  7. Serve and enjoy!

Notes

  • Feel free to finish off your polenta with different cheeses or herbs. Mascarpone and parmesan are favorites.
  • You can use broth instead of water to imbue your polenta with more flavor. Keep in mind, however, that stock will usually imbue your polenta with a duller color.
  • If you don’t want to stir it for the whole 30 minutes, try stirring at least for the first 5 minutes, and then cover it loosely with aluminum foil. After 25 minutes pass, you’ll probably find that your liquid and polenta have separated, but just gently stir them back together with a wooden spoon and finish the polenta as you would normally.

How would you describe your culinary style?
I like to cook food that people like to eat. It’s as simple as that. My blog focuses a lot on the sweet stuff, but that’s not all that we eat around here! I try to cook tasty, healthy food for my family, and we eat the sweet treats in moderation. I give away a lot of what I make for my blog. 

What is the main source of inspiration for your recipes?
Most of the time, I try to cook things my husband, my daughter and I all enjoy – so I guess they’re my biggest inspiration. I am also really inspired by a lot food blogs out there! And since I started blogging, I am so proud and happy to call some of them my friends! 

If you could have one food while stranded on a desert island, what would it be? 
That’s SO hard to answer! If it had to be JUST one thing, I’d have to go for something that’s salty AND sweet because I couldn’t bear to be stranded without either flavor - Fudgy Brownies with Bacon, maybe? :) 

For someone new to your blog, which recipe do you recommend they try first? 
If you want something savory, try the Spinach & Bacon Quiche. If you want a sweet treat, you must try the Moist Carrot cake! My Homemade Boursin is also a very popular recipe among my readers. It’s really easy to fix, and great for parties!

What is your ultimate guilty food pleasure? 
Anything deep fried – anything from chicken wings to candy bars! Yes, I know it’s not good for me. I don’t eat deep-fried food every day, but how I wish I could!
And cheese!
Oh, and condensed milk!

Some do best just sitting out on the counter, but others require airtight storage and cold air to keep their taste and color. If you’re good with eating your fruits in a timely fashion, you’ll most likely be fine with any number of storage options, but for those to whom a pint of strawberries just never gets eaten quickly enough, here’s a simple guide to keeping all your fruits at their finest!

General Storage Tips

  • Keeping perfectly ripened fruit in the fridge is generally a good way of extending it’s life.
  • Don’t overcrowd your fridge! Even if your fridge is adequately cool, overcrowding will reduce the circulation of cold air around your produce.
  • If you want to hasten the ripening process for fruits that you buy, put it in a paper bag at room temperature with an apple or pear! These fruits emit ethylene gases that cause other produce to ripen more quickly. (Conversely, if you don’t want to hasten the process, this is also a good reason to store your produce separately from each other!)
Specific Storage Tips
  • Apples: Apples should be ripened on the counter and put into the fridge once they’re ripe. As mentioned earlier, they should also be stored away from uncovered fruits and vegetables because of the gases they emit; for example, the ethylene can make carrots very bitter!
  • Bananas: Keep bananas on the counter until they’re ripe, and then store them in the fridge. This should extend their life by at least 2 days.
  • Berries: Refrigerate berries unwashed and untrimmed. Berries have a tendency of soaking up water, which hastens their rotting process. It’s best to store them in a single layer with a paper towel covering them on top and bottom to keep them dry and unpressed.
  • Citrus: Oranges, lemons, limes, and other citrus are the easiest of the fruits. Just leave them on the counter and they should keep for about 2 weeks.
  • Kiwis: Store them on the counter out of the sun and they should stay fresh for a few days.
  • Mangoes: Ripen mangoes on the counter at room temperature and store them in the fridge once they’re ready. They can last for up to 2 weeks this way.
  • Peaches: Ripen peaches, plums, and nectarines on the counter out of the sunlight. Once they’re ripe, pop ‘em into the fridge! They should last another 3-4 days.
  • Pineapples: Store them on the counter until they’re ripe and then refrigerate. A ripe pineapple emits a very fruity, pleasant scent, has golden color creeping up from the bottom to the top of the plant, and yields slightly to the a gentle press.

How would you describe your culinary style?
I love to experiment in the kitchen. A lot of the recipes I make are a result of my looking around my kitchen and fridge and trying to creatively put ingredients together. I lead a very active lifestyle and I think that reflects in my cooking. I try to use healthy, in season ingredients. I am known to try my hand at “healthifying” dishes by cutting out or substituting ingredients, while trying to maintain (or bump up!) the flavor of the original dish. While I truthfully enjoy cooking and eating healthy, colorful foods, I also love a good cocktail and/or glass of wine! I am also a firm believer that there are times when only a cookie or cupcake will do! I guess to sum it up…Everything in moderation, lots of colors on the plate, stick with whole foods as much as possible, always have Greek Yogurt on hand. 

What is the main source of inspiration for your recipes?
This one is easy! :) Definitely my mom and my grandmother. Anyone that reads my blog can see that a lot of my recipes are inspired from things I’ve learned from my mom and Ginny (my grandmother). My mom is a fantastic self-taught cook. Growing up we ate EVERYTHING. I was one of the only kids I knew who ate runny eggs, sushi (growing up in Spokane, WA in the early 90′s there wasn’t a lot of sushi going on!), all kinds of seafood, and even (gasp!) cooked spinach! My mom’s motto was, “you can’t say you don’t like it until you try it,” and she was so good at making everything taste great, we almost always cleaned our plates. Ginny is what you might call a “down home” cook. I was incredibly lucky to grow up in the country and we had a garden at my house, but Ginny had a GARDEN. Acres of super fresh fruits and veggies. Ginny and Papa also raised chickens (you’ll read in my blog about my love of farm fresh eggs), pigs, cows, and lambs. I have access to the best and freshest meat around. I remember thinking it was funny when people started talking about “free range” animals, because all the meat I ate was not only free range, but came from the backyard ranch at Ginny and Papa’s. Because I grew up this way, I think I have a different view of where food comes from, how we treat and how we grow our food. Don’t get me wrong, I love a good steak, but I learned from an early age that just because the cows in the pasture were going to become our dinner one day didn’t mean they shouldn’t be respected. In fact, we should respect them more. I’ve also been able to start my own garden with tips from my mom and Ginny. While it is no where near either of theirs, I love being able to use fruit and veggies and herbs I grew myself in my latest dishes! 

If you could have one food while stranded on a desert island, what would it be? 
I don’t know if this is cheating, but FRUIT! All kinds! I am a fruit-a-holic. If I wasn’t so embarrassed, I could sit down with a spoon and eat an entire watermelon without thinking twice. I have never met a fruit I didn’t like either. My husband says he thinks the guys at Costco would have a good laugh if they knew that the massive quantities of fruit I buy are not, in fact, for a small army, but just for me! 

For someone new to your blog, which recipe do you recommend they try first? 
This one is tough!

What is your ultimate guilty food pleasure? 
Tough one! You, or at least I, hear guilty pleasure and immediately think sweet, but I think actually my guilty food pleasure is a really good burger and fries. My papa would always say a burger is the perfect food because it has every food group, and I think he’s right! I would have a super juicy burger, medium rare, with everything. Shoe string fries please. Might as well throw a glass of red wine in there as well, just for good measure. Woah, my mouth just started watering! ;) 

Define Yummly.
To me yummly is just a different kind of yummy. You know when something is so good you have to invent another word for it? Like, it can’t just be good, it has to be ohmygawdthatis “cheesetastic”, “creamylicious”, “fanfreakingamazing”, “saltsational”, “YUMMLY!” The best thing ever is when you eat something that makes you feel that good. Actually, I take that back. I think the best thing ever is making something that makes someone else feel that good.

For the culinary minimalist who enjoys good, clean, homemade cooking, there are few dessert recipes more fulfilling than sorbet. Sorbets are incredibly easy to make, don’t require a ton of ingredients, and are a much healthier alternative to their creamy frozen counterpart. Keep these simple tips in mind, and you can make any kind of sorbet you like, any day of the week!

Basic Ingredients

  • Fruit (frozen or fresh)
  • Yogurt
  • Sugar (granulated or raw)
  • Water

The Frozen Fruit Method
Making sorbet with frozen fruit is super convenient for multiple reasons. Firstly, the fruit has already been cut and cleaned, mostly free of seeds, pits, and debris. Secondly, it’s already frozen, so you don’t have to re-freeze it!

  • Take a bag of your favorite frozen fruit and put it in the food processor.
  • Add the desired amount of yogurt, sugar, and water.
  • Process it until it reaches the desired, sorbet-like consistency
  • Enjoy!
You can really be flexible with the amounts you add or don’t add to this. Depending on the tartness of the fruit, you might want to add more sugar or yogurt. Making this sorbet is 100% about your tastes and preferences, and not at all about exactly how much of any ingredient you need.

The Fresh Fruit Method

  • Create a simple syrup by boiling equal parts water and sugar until the sugar has dissolved. Let it cool.
  • Drop your fresh fruits and syrup into the food processor and blend until smooth.
  • Pour the blend through a cheesecloth to remove any seeds or pits.
  • Line a cookie sheet with parchment and pour the mixture into the sheet. Put it in your freezer until it’s solid.
  • When you’re ready to eat, break up the frozen mix and puree it again until it reaches the desired consistency.
  • Serve immediately, and enjoy!

Again, how much syrup and fruit you use is up to you! If the food processor mixture looks too lumpy or thick, add a little more syrup or water. Making sorbet in a food processor isn’t so much about recipes as it is about a basic methodology that you can tweak and customize as you see fit.

  • The very best way to ensure that you buy a perfect avocado is to buy one that’s very hard and unripe and simply let it ripen at home. Put it in a paper bag at room temperature and it should ripen in 2-5 days. If you’re really impatient, you can throw a ripe apple into the bag! The ethylene gasses emitted by the apple should help speed the ripening process along.
  • If you need the avocado right away, remember to be gentle when you handle them at the store to be considerate of others.
  • Consider what you’re cooking!  If you need clean slices of avocado, a perfectly ripe pick is more important, but for something like guacamole, an overripe avocado will still perform well and will be very easy to mash!
  • If your avocado ripens too early for your liking, you can put it in the fridge to help slow down the ripening process.
