&lt;br /&gt;
We ate it today... By we, I mean my family members because part of that sickness thing is that everything is making me nauseous.&amp;nbsp; Which is unfortunate, because everyone really liked the cheesecake.&amp;nbsp; Although the texture was wrong (Dad blames the waterbath; I'm not sure why.) that taste was very right.&amp;nbsp; Except it needed chocolate chips, apparently.&lt;br /&gt;

&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/_LRh9ZfbdLa0/SOVuTxbyLjI/AAAAAAAABHo/Xv6ilsjs6FU/s1600-h/PA021915.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://1.bp.blogspot.com/_LRh9ZfbdLa0/SOVuTxbyLjI/AAAAAAAABHo/eFQX2JxIxdU/s320-R/PA021915.JPG" /&gt;&lt;/a&gt;&lt;/div&gt;Also yesterday I made chocolate chip cookies after taking some medication and a nap.&amp;nbsp; I felt well enough to make some thins for my AP Statistics class.&amp;nbsp; I would say that those cookies were a success.&amp;nbsp; They were huge, by the way.&amp;nbsp; But everyone (or almost everyone) loved them!&amp;nbsp; Yay!&amp;nbsp; After feeling so icky, I really wasn't up to baking (I know! How out of character for me!) but Enrique did volunteer me to make them and I couldn't let down my classmates...&lt;br /&gt;
&lt;br /&gt;
...I did let down my dad though, because there weren't any leftovers for him.&amp;nbsp; I keep telling him that if he would just buy some more chocolate chips (dark chocolate) and granulated sugar (and I think we need unsalted butter too) then I would make a batch of cookies just for us.&amp;nbsp; I should probably add parchment paper to my shopping list...&lt;br /&gt;
&lt;br /&gt;
And the last order of business today:&amp;nbsp; &lt;a href="http://ironcupcake.blogspot.com/"&gt;The Iron Cupcake: Earth challenge&lt;/a&gt;.&amp;nbsp; No, I didn't win the basil competition, but &lt;a href="http://mamabaker.wordpress.com/"&gt;Mama Baker&lt;/a&gt;'s basil mango yummy cupcake did.&amp;nbsp; However, the challenge for October is CHEESE.&amp;nbsp; Cheese?!&amp;nbsp; I have no idea what I'm going to make...&amp;nbsp; Cheese is so varied and different; there are a bajillion different varieties it seems like...&amp;nbsp; I will definitely be putting my thinking cap on for this month!&lt;br /&gt;

But I'm still making the cheesecake.&amp;nbsp; The other reason (which I just now remembered) that I didn't bake yesterday was that Dad brought home a Key Lime Pie and Tab (best soft drink ever...) so 2 desserts would've been a bit much for a salty-rather-than-sweet lover.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Voting is still open for the &lt;a href="http://mkecupcakequeen.blogspot.com/"&gt;cupcake challenge&lt;/a&gt;!&amp;nbsp; So while I'm baking, you can be voting and telling all of your friends!&lt;/b&gt;&lt;br /&gt;

Oh, and I might make some fall-themed cupcakes for the cake walk at the local elementary school's Fall Festival.&amp;nbsp; I can't go to the festival because I'm going to my BFF's homecoming game but I am making the cake walk numbers and possibly cupcakes.&amp;nbsp; I have to play it by ear though. If I don't squeeze in a few hours before Friday, I'll make cupcakes for myself!&amp;nbsp; Now to study for that Spanish test...&lt;div class="feedflare"&gt;

&lt;br /&gt;
But fall does provide ample opportunities to bake:&amp;nbsp; my mom and dad and brother's birthdays, Halloween, Thanksgiving, other people's birthdays, and so on.&amp;nbsp; Hopefully I'll make a cheesecake sometime this week for my mom's birthday (which is tomorrow) but she says that she'd rather I clean my room as a gift to her...&lt;br /&gt;
&lt;br /&gt;
In the mail a few days ago I got a little mini-magazine from &lt;a href="http://www.tasteofhome.com/"&gt;Taste of Home &lt;/a&gt;with Halloween recipes.&amp;nbsp; It was so cute:&amp;nbsp; my little &lt;a href="http://snazzy-cakes.blogspot.com/2008/09/ni-hao-cake.html"&gt;brother &lt;/a&gt;came up to me and said:&amp;nbsp; you can make something for me for Halloween.&amp;nbsp; So we flipped through the pictures together, picking out a chocolate cake and pumpkin cookie pops that I should make.&amp;nbsp; Actually, I think that the pumpkins would be even better if they were &lt;a href="http://snazzy-cakes.blogspot.com/2008/09/tastiest-kind-of-success.html"&gt;cake balls&lt;/a&gt;!&lt;br /&gt;
&lt;br /&gt;
So I've got a lot to look forward to baking wise this season.&amp;nbsp; Hopefully I'll have time to do it all, since at the same time I'm still in school, and I have to apply for all these scholarships and colleges...&lt;br /&gt;

First, let me preface the cupcakes with some background.&amp;nbsp; Earlier in the summer, I planted a plethora of fresh herbs:&amp;nbsp; spearmint, peppermint, Italian parsley, sweet basil, oregano, and banana peppers (yes, I am aware that banana peppers aren't herbs).&amp;nbsp; However, the mints never grew. :(&amp;nbsp; Everything else did, and aside from some wimpy parsley, everything flourished.&amp;nbsp; As the season went on, I occasionally used my herbs for certain Italian dishes such as lasagna.&amp;nbsp; But I never really had a reason to eat them.&amp;nbsp; Then, alas, the weather began to get cool again and I feared that I would have no true purpose for the herbs and they would wither away and die when the frost came.&amp;nbsp; Was all my hard work for naught?&amp;nbsp; Should I have just let them die that one week when I completely forgot to water them?&lt;br /&gt;
&lt;br /&gt;
No!&lt;br /&gt;
&lt;br /&gt;
Thanks to Iron Cupcake:&amp;nbsp; Earth, my herbs have a reason to live again.&amp;nbsp; At least, the basil does.&amp;nbsp; So now I finally present to you&lt;b&gt; Kelsie's Chocolate Basil Cupcakes with Cream Cheese Icing&lt;/b&gt;:&lt;br /&gt;
&lt;br /&gt;

When it comes to dessert, though, I'm 100% on the chocolate bandwagon. And so this cupcake was born.&lt;br /&gt;
&lt;br /&gt;
The chocolate-basil cupcake is filled with dark chocolate ganache and topped with cream cheese icing and a sugared basil leave plucked fresh from my garden."&lt;/i&gt; &lt;/div&gt;&lt;br /&gt;
&lt;div style="text-align: center;"&gt;&lt;b&gt;&lt;span style="font-size: large;"&gt;The Cupcake&lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
3/4 cup dark chocolate cocoa powder (regular is OK too but not as tasty)&lt;br /&gt;
1 1/2 cup boiling water&lt;br /&gt;
1 1/2 stick unsalted butter&lt;br /&gt;
1 1/2 cup granulated sugar&lt;br /&gt;
1 1/2 cup fresh sweet basil leaves, packed&lt;br /&gt;
1 tbsp pure vanilla extract&lt;br /&gt;
2 cup AP flour (all purpose)&lt;br /&gt;
1 tbsp baking powder (make sure it's not expired!)&lt;br /&gt;
3/4 tsp salt&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 375 F.&amp;nbsp; Boil the water.&amp;nbsp; While that's boiling, add sugar and basil to food processor and processor until nice and green, set aside.&lt;br /&gt;

When the water is boiling hot, stir together the water and cocoa powder until smooth, set aside.&amp;nbsp; &lt;br /&gt;

8 oz whipping cream&lt;br /&gt;
1 tbsp butter&lt;br /&gt;
1 oz sugar&lt;br /&gt;
12 oz chocolate (high quality; I prefer dark)&lt;br /&gt;
&lt;br /&gt;
Heat the cream, sugar, and butter to boiling over the stove.&amp;nbsp; Pour over chocolate in a stainless steel bowl.&amp;nbsp; Let stand for 5 minutes.&amp;nbsp; Stir out from the center until smooth and ganache-like.&amp;nbsp; Let the ganache cool in the fridge until it is of piping consistency, then pipe ganache into cupcakes.&lt;br /&gt;

Cream together the butter, Crisco, and cream cheese.&amp;nbsp; Gradually add the vanilla, powdered sugar, and salt.&amp;nbsp; This is a thick recipe so you might have to cut back on the sugar (I did).&amp;nbsp; This is a very sweet cream cheese icing.&amp;nbsp; About half the people in my family thought it was too sweet while the other half loved it.&amp;nbsp; (Funny thing, my mom was one of the ones who loved it, even though she hates sweet icings and desserts.)&lt;br /&gt;

I piped the icing on the cupcakes with a&lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E30DE4E-475A-BAC0-5286A221EFC16EC2&amp;amp;killnav=1"&gt; 1M (2110) tip&lt;/a&gt; and I piped a lot, but then, I like a lot of icing.&amp;nbsp; So pipe at your discretion.&amp;nbsp; However, watch out for the ganache, which might be poking back out of the cupcake!&lt;br /&gt;

You need as many basil leaves as you have cupcakes, a food-quality paintbrush, granulated sugar, and corn syrup.&amp;nbsp; Clean the basil leaves and paint them with the corn syrup (you could dip them in the syrup but then you have a lot of excess) and then dip the leaves into a bowl of sugar.&amp;nbsp; Gently set the leaf on top of your cupcake, and you're done!&lt;br /&gt;

Ta-Da!&amp;nbsp; Hillary's fantastic 18th birthday cake to go with her fantastic birthday and party.&amp;nbsp; Sorry I didn't get a better picture but as it was already safely packaged in the box, I didn't want to risk making it un-safe. ;)&amp;nbsp; The theme was Jeopardy, because that is such an amazingly fun show and my BFF is uncommonly good at shouting out the right answers when watching it. (Fun Fact:&amp;nbsp; After we ate the cake, we actually watched the show.&amp;nbsp; Good timing, huh?)&amp;nbsp; The cake was also deliciously German Chocolate.&amp;nbsp; You know that super awesome coconut/peacan stuff that they put all over German Chocolate cake?&amp;nbsp; Yeah, I put it all over this cake, too, even if you can't see it.&amp;nbsp; It's between the 2 layers of cake and around the sides.&amp;nbsp; The buttercream icing on the top is flavored not with vanilla extract, but with coconut.&amp;nbsp; It smelled heavenly. =)&lt;br /&gt;

The party was a lot of fun, too.&amp;nbsp; There was a pool full of jello, two birthday girls, two cakes, a sombraro and lots and lots of fun.&amp;nbsp; I guess I already said that it was fun, but that's the only way to describe it!&lt;br /&gt;

So, Hillary, I hope you had an amazing 18th birthday and I'm very, very glad that you loved the cake so much!&amp;nbsp; It was an honor to make it for you!&lt;br /&gt;

Do you remember in elementary school when you celebrated the 100th day of school?&amp;nbsp; There were all kinds of fun activities:&amp;nbsp; counting out 100 pieces of fruit loops to string on a necklace, making 100 hats, counting to 100, counting to 100 by 2s or 5s or 10s...&lt;br /&gt;
&lt;br /&gt;
In elementary school, 100 was a big deal.&amp;nbsp; Well, I may be as far removed from elementary school as a public school student can get, but the number 100 is still a very important number.&lt;br /&gt;

text-align: left;"&gt;If you are unfortunate enough not to have a little person in your home who does not watch Nick Jr., then you are probably wondering who the heck is on Adam's cake.&amp;nbsp; Meet Rintoo!&amp;nbsp; He is a fun-loving, albeit mischievous five-year-old tiger on &lt;a href="http://www.nickjr.com/shows/ni-hao-kai-lan/index.jhtml"&gt;Ni-Hao, Kai-Lan&lt;/a&gt;, the most adorable show on TV ever.&amp;nbsp; (To give you some quick background in your are unfamiliar with Kai-Lan and co.:&amp;nbsp; it's a show about a little bilingual Chinese girl who &lt;a href="http://www.nickmobile.com/nickjr/ringtones/ringtone_nihao_theme1.jhtml"&gt;teaches kids how to speak Chinese&lt;/a&gt;-- like Dora the Exporer-- and also about the culture while teaching important lessons like sharing.)&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;a href="http://4.bp.blogspot.com/_LRh9ZfbdLa0/SNBVbPK51YI/AAAAAAAABHI/b4rBKk6Kgy8/s1600-h/P9131673.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://4.bp.blogspot.com/_LRh9ZfbdLa0/SNBVbPK51YI/AAAAAAAABHI/QEUnhDebuRs/s200-R/P9131673.JPG" /&gt;&lt;/a&gt;Anyway, Adam asked me to "please make a Rintoo cake (!!!!!!)" so even though I had no idea how I was going to decorate this lemon cake 24 hours before it was completed, I knew Rintoo would be there.&amp;nbsp; (In fact, I didn't even know if he wanted a "circle" cake or a "rectangle" cake until I was about to pour the batter in because he kept changing his mind!)&amp;nbsp; But I found a cute image of the happy tiger and decided that he needed a speech bubble to wish Adam a happy birthday, and I used that to make a frozen buttercream transfer.&amp;nbsp; (I remembered to &lt;a href="http://snazzy-cakes.blogspot.com/2008/05/nother-post.html"&gt;reverse the image&lt;/a&gt;!!)&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;The flowers and mushrooms make the cake look a little girly in my opinion, but I tried to make the cake themed around the show as much as possible.&amp;nbsp; The icing was thinned down to make the transfer, so the flowers are a little droopy.&amp;nbsp; Something else that I would've done differently:&amp;nbsp; the words are written with a &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E3111C2-475A-BAC0-53E697EA2D3DE483&amp;amp;fid=3E332502-475A-BAC0-52CC3749ED9EFC2D"&gt;#5 &lt;/a&gt;tip but I think a &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E3111C2-475A-BAC0-53E697EA2D3DE483&amp;amp;fid=3E332502-475A-BAC0-52CC3749ED9EFC2D"&gt;#3&lt;/a&gt; would work out better.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Overall, I'm pleased with this cake, especially considering that I didn't start baking until 9pm the night before the party and that I decorated between coaching Adam's soccer team, working at the concession stand, and watching James' &lt;a href="http://snazzy-cakes.blogspot.com/2007/10/goooooal.html"&gt;soccer &lt;/a&gt;game.&amp;nbsp; Saturday was &lt;b&gt;&lt;i&gt;very &lt;/i&gt;&lt;/b&gt;busy!&amp;nbsp; Adam was pleased with the cake too, I believe, even if he didn't actually eat any at the party (?).&amp;nbsp; James, however, had two slices (and remember, he's the one who claims not to like cake) and Mom liked it too.&amp;nbsp; Although, the cake was lemon flavor, so that might have something to do with it.&amp;nbsp; I thought it tasted &lt;i&gt;alright &lt;/i&gt;(I used a Duncan Heines box mix with an &lt;a href="http://www.cakecentral.com/cake_recipe-1977-Cake-Mix-extender.html"&gt;extender&lt;/a&gt;).&amp;nbsp; But it looked cute!&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; I used the cake mix extended recipe with a Betty Crocker chocolate cake mix.&amp;nbsp; However, I didn't use all the batter, so I make a little 8" cake with the leftovers and stuck it in the freezer.&amp;nbsp; More &lt;a href="http://snazzy-cakes.blogspot.com/search/label/cake%20balls"&gt;cake balls&lt;/a&gt;, perhaps?&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;I made a batch of &lt;a href="http://whatscookingamerica.net/PegW/ButtercreamIcing.htm"&gt;regular white buttercream&lt;/a&gt; and half a batch of chocolate buttercream.&amp;nbsp; I crumb coated the entire cake:&amp;nbsp; white at the top; chocolate at the bottom.&amp;nbsp; Then I carefully did a second coat along the sides of the cake and smoothed them out nicely.&amp;nbsp; The entire top of the cake is made out of &lt;a href="http://whatscookingamerica.net/PegW/Fondant.htm"&gt;marshmallow fondant&lt;/a&gt;.&amp;nbsp; To get the different shades of brown, I used MMF with &lt;a href="http://snazzy-cakes.blogspot.com/2008/08/how-to-make-chocolate-marshmallow.html"&gt;chocolate MMF&lt;/a&gt; and a bit of yellow food coloring.&amp;nbsp; I also used CMMF and black colored CMMF.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Actually, I lied.&amp;nbsp; The entire top is not exclusively made of fondant.&amp;nbsp; The guitar strings (#5 tip) and "Congratulations" (#2 tip) were buttercream.&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Why does the cake say "Congratulations" anyway?&amp;nbsp; Well, because I am congratulation my little brother's 4th grade teacher because he is getting married next week!&amp;nbsp; I was asked to make a cake because the class was throwing a little surprise party today during lunch.&amp;nbsp; I was told by a very good source that everyone loved the cake and said it was delicious and awesome, etc.&amp;nbsp; So I'm glad that everyone liked it, because, critical cake decorator that I am, I couldn't help but notice the little imperfections with my piping.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;So that's my guitar cake.&amp;nbsp; I'm not done yet, though.&amp;nbsp; Today is my other brother's 5th birthday and I'm making him a cake this weekend.&amp;nbsp; He can't decide if he wants a &lt;a href="http://www.flickr.com/photos/12057691@N03/2834392359/in/pool-cakefun"&gt;Yoda cake&lt;/a&gt;,&lt;a href="http://www.flickr.com/photos/russweakley/2201030649/"&gt; Lego Starwars cake&lt;/a&gt;, &lt;a href="http://www.nickjr.com/shows/ni-hao-kai-lan/kai-lan-about-the-show/ni-hao-kai-lan-about-the-show.jhtml"&gt;Rintoo cake&lt;/a&gt;, or an orange &lt;a href="http://www.wilton.com/idea/Electric-Guitar-Cake"&gt;electric guitar cake&lt;/a&gt;.&amp;nbsp; He needs to decide pretty soon though.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;a href="http://3.bp.blogspot.com/_LRh9ZfbdLa0/SMlLXsftzWI/AAAAAAAABGg/FrwVu7Y6NbQ/s1600-h/P9111618.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://3.bp.blogspot.com/_LRh9ZfbdLa0/SMlLXsftzWI/AAAAAAAABGg/y8awEoyOUag/s320-R/P9111618.JPG" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;

&lt;br /&gt;
Last night, I baked the cake.&amp;nbsp; Just a regular ol' box mix in my regular ol' (actually, it's kinda new) 9" x 13" rectangular pan.&amp;nbsp; I didn't bother with flower nails in the middle or even Crisco/flouring the pan; I just used that spray-on fake butter stuff.&amp;nbsp; I wasn't concerned with how the cake turned out because, well, I was just going to crumble it all up anyway.&lt;br /&gt;
&lt;br /&gt;
Lo, and behold:&amp;nbsp; the cake was &lt;a href="http://snazzy-cakes.blogspot.com/2008/08/importance-of-being-flat.html"&gt;flat&lt;/a&gt;!&amp;nbsp; I don't understand.&amp;nbsp; I mean, I didn't try at all with this cake; but everything about it was perfect:&amp;nbsp; It came out of the oven perfectly; it's a perfect shade of red; it's not too lumpy in the middle (although there is a slight hump).&amp;nbsp; I just don't get it.&amp;nbsp; Why?!&amp;nbsp; Of all the times that I have make cakes, praying for them to be flat, why did &lt;i&gt;this &lt;/i&gt;one cake turn out flat?&lt;br /&gt;

It's so perfect that I &lt;i&gt;almost &lt;/i&gt;want to just leave it as a cake...&lt;br /&gt;

...Or maybe I'll smush it up and make &lt;a href="http://bakerella.blogspot.com/2007/12/red-velvet-cake-balls.html"&gt;red velvet cake balls&lt;/a&gt; like I originally planned.&amp;nbsp; I mean, either way, cake balls or no, it's going to get eaten.&amp;nbsp; So I might as well have fun with it.&lt;br /&gt;

So I'll try to finish these babies up this weekend (which would be quite a feat, considered the amound of homework that I have!) and next week I have 2 other cakes:&amp;nbsp; my brother's birthday cake (he wants a lemon cake?! But he still hasn't decided on the theme), and a surprise cake that I'm making for someone at school (chocolate).&amp;nbsp; And, of course, the week after that, my BFFF turns 18 and I get to make her delicious cake!&lt;div class="feedflare"&gt;

&lt;li&gt;&lt;a href="http://homemadebyjill.blogspot.com/"&gt;Homemade by Jill&lt;/a&gt; is a yummy blog.&amp;nbsp; She has all kind of food recipes and pictures, but Jill's craftiness extends beyond that:&amp;nbsp; she sews, she makes quilts, and I think her &lt;a href="http://homemadebyjill.blogspot.com/2007/09/diaper-cake-tutorial.html"&gt;diaper cake&lt;/a&gt; is &lt;i&gt;adorable&lt;/i&gt;!&amp;nbsp; (If you thought "diaper" and "cake" don't go together, then you'd be wrong.)&lt;br /&gt;

&lt;li&gt;&lt;a href="http://homemades.blogspot.com/"&gt;HomemadeS&lt;/a&gt; by Arfi is yet another great blog.&amp;nbsp; She has some great recipes and she's quite the photographer.&amp;nbsp; (Chocolate cotton cake anyone?&amp;nbsp; It looks so good!&amp;nbsp; In fact, everything she takes pictures of looks good, whether or not it's food.)&lt;br /&gt;

Her cake theme is Jeopardy, but the cake will be German Chocolate.&amp;nbsp; My plan is to make a 2-layer German Chocolate cake with the pecan/coconut filling in between the two layers.&amp;nbsp; The top of the cake will be blue with yellow/white icing, and will look like the Jeopardy game board screen thingy.&amp;nbsp; Whatever it's called.&amp;nbsp; The categories with be birthday related.&lt;br /&gt;

I think what I'm going to do around the sides of the cake is have more coconut/pecan filling.&amp;nbsp; (Like &lt;a href="http://www.cakecentral.com/cake-photo_1248011.html"&gt;this cake&lt;/a&gt;.)Although I'm not 100% sure on that yet.&amp;nbsp; I've got a month to work about any possible problem, and since her birthday is during our Fall Break from school, I'll have plenty of time to decorate.&amp;nbsp; Yay!&lt;br /&gt;

I wonder if there is a way to flavor the buttercream to better match the cake flavor.&amp;nbsp; Since G.C. cakes typically have the chocolate, coconut, and pecan flavors, perhaps I could find a coconut or pecan extract.&amp;nbsp; (&lt;a href="http://www.mccormick.com/productdetail.cfm?id=6021"&gt;Maybe like this?&lt;/a&gt;) &lt;br /&gt;

My little sister loves deviled eggs.&amp;nbsp; And what's not to love?&amp;nbsp; It's like egg salad, but not as messy (unless you're the one making them...).&amp;nbsp; And they're fun to decorate, too.&amp;nbsp; I didn't have a recipe for these, but it's pretty basic:&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;Hard-boil the eggs.&lt;/li&gt;
&lt;li&gt;Let the eggs cool down (I use ice water)&lt;/li&gt;
&lt;li&gt;Peel off the shell and cut the eggs in half&lt;/li&gt;
&lt;li&gt;Scoop out all of the yolks and put them into a bowl&lt;/li&gt;
&lt;li&gt;Add mustard and mayo to taste and mix it all up.&lt;/li&gt;
&lt;li&gt;Use a piping bag with star tip (or &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E30D6AD-475A-BAC0-5FB5C8A02A57ED0B&amp;amp;fid=3E32BB99-475A-BAC0-59BE9FF5AB81D536"&gt;one of these fancy things&lt;/a&gt;) and pip the mix into the eggs.&lt;/li&gt;
&lt;li&gt;Sprinkles with paprika and top with parsley (I used it fresh from my herb garden)&lt;/li&gt;

&lt;br /&gt;
&lt;div style="text-align: center;"&gt;INGREDIENTS&amp;nbsp;&lt;/div&gt;&lt;ul&gt;&lt;li&gt;                                     18 jumbo black olives, pitted&lt;/li&gt;
&lt;li&gt;                                     1 (8 ounce) package cream cheese, softened&lt;/li&gt;
&lt;li&gt;                                     18 small black olives&lt;/li&gt;
&lt;li&gt;                                     1 carrot&lt;/li&gt;
&lt;/ul&gt;&lt;div style="text-align: center;"&gt;DIRECTIONS&amp;nbsp;&lt;/div&gt;&lt;ol&gt;&lt;li&gt; Cut a slit from top to bottom, lengthwise, into the side of each jumbo olive. Carefully insert about 1 teaspoon of cream cheese into each olive. Slice the carrot into eighteen 1/4 inch thick rounds; cut a small notch out of each carrot slice to form feet. Save the cut out piece and press into center of small olive to form the beak. If necessary cut a small slit into each olive before inserting the beak. &lt;/li&gt;
&lt;li&gt; Set a big olive, large hole side down, onto a carrot slice. Then, set a small olive onto the large olive, adjusting so that the beak, cream cheese chest and notch in the carrot slice line up. Secure with a toothpick.&lt;/li&gt;
&lt;/ol&gt;We have a lot of cream cheese at our house since they have Bagel Fridays every week at my Dad's work, and he brings home leftovers.&amp;nbsp; Unfortunately, we ran out of jumbo olives before we ran out of cream cheese; so if you've got lots of C.C., then buy a couple cans of jumbo olives.&amp;nbsp; Also, Wal-Mart had "medium" olives, not small.&lt;br /&gt;

So let's move on to some cake-related sugary goodness.&amp;nbsp; I bought some &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E30AE35-475A-BAC0-5B68F137E1F8854E&amp;amp;fid=5A88940A-475A-BAC0-5E3849DF1A36A6C9"&gt;new cake pans&lt;/a&gt; with my &lt;a href="http://snazzy-cakes.blogspot.com/2008/08/cake-fit-for-royalty.html"&gt;birthday money&lt;/a&gt;.&amp;nbsp; &lt;a href="http://snazzy-cakes.blogspot.com/2008/08/importance-of-being-flat.html"&gt;The good stuff&lt;/a&gt;.&amp;nbsp; The my-cakes-might-actually-turn-out-nice kind of pans.&amp;nbsp; :) Yay!&amp;nbsp; (I bought some round 10" cake boards, too.)&amp;nbsp; But the cake pans.&amp;nbsp; I am soooo looking forward to puttin' some batter in those babies!&lt;br /&gt;

Unfortunately, I don't have an excuse to use my pretty new pans until my dad's birthday in October! (Hillary and Adam both want rectangular cakes, and I have no idea what my mom wants.)&amp;nbsp; That's a long time to wait... I'll have to come up with a cake idea before then.&lt;br /&gt;

(Actually, I thought up a &lt;a href="http://www.jonasbrothers.com/"&gt;Jonas Brothers&lt;/a&gt; cake, but I really don't have a good enough excuse to make it... yet.)&lt;br /&gt;

I got a lot of awesome gifts for my birthday involving food/baking/kitchenware.&amp;nbsp; My grandparents gave me cookie cutters, a digital kitchen scale (I can't even tell you how long I've been asking to have our ancient (antique) scale replaced), and a &lt;a href="http://www.wilton.com/store/site/product.cfm?id=BFB486EA-802D-F658-02B38E82FDA40AB1&amp;amp;fid=BFB48709-802D-F658-0B88D9A7E33D725E"&gt;rectangular cake container&lt;/a&gt; (yes, the one with the cupcake tray!)&amp;nbsp; I also recieved, from LeAnne's family, an oven mitt that said "A messy kitchen is a happy kitchen, and this kitchen is delirious."&amp;nbsp; =D&amp;nbsp; (I try, I really do, but, you know...)&lt;br /&gt;
&lt;br /&gt;
I really want to make some cupcakes, too, so that I can carry them around in my snazzy container.&amp;nbsp; Well, bake sales are coming up soon in school (I &lt;i&gt;think &lt;/i&gt;there is one next Tuesday...) so I'll have to make some then.&amp;nbsp; Cupcakes are also a good excuse to use up any extra icing.&amp;nbsp; (Which I plan on doing, since I have about a cup or two of that purple icing, plus some green icing in the freezer.)&lt;br /&gt;

Although I've got no baking in my immediate future, I am looking forward for that moment when I can take advantage of a cake-making situation and get some bakin' and decoratin' done! :)&lt;br /&gt;

&lt;/ol&gt;I'm not sure if it's because of the added chocolate, or becomes I'm incompetent, or what, but my fondant was really dry.&amp;nbsp; So take it easy on the powdered sugar just in case.&lt;br /&gt;

&lt;div style="text-align: left;"&gt;That's a lotta toothpicks!&amp;nbsp; I mostly used the violet and burgundy colors, but I also used Royal blue so that it wouldn't be so pinkish.&amp;nbsp; At first, I thought that the color wasn't dark enough, but of course, buttercream color darkens as it crusts, so that worked out nicely for me.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;After I iced the cake (crumb coat first) and did that wonderful Viva thing, I used my handy-dandy &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E30D66E-475A-BAC0-57C5D7D262D8EE2D&amp;amp;killnav=1"&gt;garland marker&lt;/a&gt; and marked out 8 divisions in the cake, with more toothpicks.&amp;nbsp; After that, I made myself some f&lt;a href="http://www.cakecentral.com/article63-How-To-Make-Fondant-Swags.html"&gt;ondant swags&lt;/a&gt;.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;I couldn't've done it without the wonderfully talented people over at &lt;a href="http://www.cakecentral.com/modules.php?name=Search&amp;amp;q=fondant+swags"&gt;CakeCentral&lt;/a&gt;.&amp;nbsp; Not only did I learn how to make the swags, but I also felt confidant that the swags would stick to buttercream icing (thankfully!).&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;I wasn't sure if the MMF and gumpaste mix would be tasty, but when my grandma tried some, she said that it tasted like marshmallows.&amp;nbsp; So, I think that worked out.&amp;nbsp; The swags and pearls were made out of the same GP/MMF mixture, about 50/50.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;After I stuck the swags and pearls on there (using toothpicks for the swags for added support), I dug out the imitation brandy extract that we've never used and the &lt;a href="http://www.wilton.com/store/site/product.cfm?id=1B002240-423B-522D-F6C386AABC28C24A&amp;amp;fid=1B00227E-423B-522D-FC822BB13BB183C8"&gt;Pearl Dust&lt;/a&gt; that I bought at Michael's (Yay, Michael's!) and proceeded to paint the fondant a nice pearly color.&amp;nbsp; The effect was gorgeous, in my humble and completely un-biased opinion. =P&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;My fondant (and in general, cake) skills have come a long way in a year, haven't they?&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;/div&gt;&lt;div class="separator" style="text-align: center; clear: both;"&gt;&amp;nbsp;&lt;a href="http://2.bp.blogspot.com/_LRh9ZfbdLa0/SKC5oeS6pQI/AAAAAAAAAwc/OnnOsW9VD58/s1600-h/cake11.JPG" imageanchor="1" style="border: 0pt none ; background-color: transparent; margin-left: 1em; margin-right: 1em;"&gt;&lt;img src="http://2.bp.blogspot.com/_LRh9ZfbdLa0/SKC5oeS6pQI/AAAAAAAAAwc/9_UPkntTKJs/s200-R/cake11.JPG" style="border: 0pt none ;" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;div class="separator" style="text-align: center; clear: both;"&gt;&amp;nbsp;&lt;a href="http://4.bp.blogspot.com/_LRh9ZfbdLa0/SKC0vSF86pI/AAAAAAAAAv8/a5_TB-3slKY/s1600-h/P8101526.JPG" imageanchor="1" style="border: 0pt none ; background-color: transparent; margin-left: 1em; margin-right: 1em;"&gt;&lt;img src="http://4.bp.blogspot.com/_LRh9ZfbdLa0/SKC0vSF86pI/AAAAAAAAAv8/phK8a-3n63s/s200-R/P8101526.JPG" style="border: 0pt none ;" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Happy Birthday to me :)&lt;/i&gt;&lt;/div&gt;&lt;div class="feedflare"&gt;

&lt;br /&gt;
That being said, here are some pointers that I've picked up along the way to ensure flatness:&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;Bake the cake at a lower temperature [like 325 F].&amp;nbsp; But make sure that you actually cook the cake longer, so that it's actually done.&amp;nbsp; And doesn't fall apart on you and make you cry.&lt;/li&gt;
&lt;li&gt;Make sure your oven is flat.&amp;nbsp; Ha, I wish.&lt;/li&gt;
&lt;li&gt;Don't grease the sides of the pan.&amp;nbsp; I don't know why this works, but it does.&amp;nbsp; Just run a knife around the side(s) of the pan before you pop it out.&lt;/li&gt;
&lt;li&gt;I grease and flour the bottoms of my pans.&amp;nbsp; Some people use &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E314CE6-475A-BAC0-5E1C5AE72E14DEBE&amp;amp;killnav=1"&gt;Wilton Cake-Release&lt;/a&gt;.&amp;nbsp; Some people make their own.&amp;nbsp; There are various "recipes" that involve flour, shortening, and vegetable oil.&lt;/li&gt;
&lt;li&gt;Some people also use bake-even strips, which I've heard are very useful, although I've never used them myself.&amp;nbsp; I went to Michael's today-- why didn't I buy some?!&lt;br /&gt;
&lt;/li&gt;
&lt;li&gt;Use a &lt;a href="http://www.wilton.com/store/site/product.cfm?id=3E30DA27-475A-BAC0-5B9517D6CAF8BB75&amp;amp;fid=785F04A7-475A-BAC0-5B99539A6A26722A"&gt;Wilton flower nail&lt;/a&gt; (all greased up, please!) in the center of your cake to prevent humps.&lt;/li&gt;
&lt;li&gt;Before you put the cake pan in the oven, tap in against the counter (don't get little cake splatters everywhere though!) to get rid of the bubbles.&lt;/li&gt;

&lt;br /&gt;
And what a cake this is!&amp;nbsp; I felt &lt;i&gt;so honored&lt;/i&gt; that I was asked to make Katye's cake for her 21st birthday.&amp;nbsp; It was really cool of LeAnne and Aunt Juli to ask me.&amp;nbsp; I hope that the cake was good enough for such an important celebration.&amp;nbsp; Although, I think that it's safe to say that it was, because everyone did say that they loved it.&amp;nbsp; (And I did get a request for a November birthday cake too!)&lt;br /&gt;
&lt;br /&gt;
The cake is a white cake with an &lt;a href="http://www.cakecentral.com/cake_recipe-1977-cake-mix-extender.html"&gt;extender recipe&lt;/a&gt;.&amp;nbsp; So there's more cake batter than a regular cake box.&amp;nbsp; (You know what's lame?&amp;nbsp; Wal-Mart sells low-fat yogurt in 8oz containers but Publix sells theirs in 6ox containers, so if I go to Publix, I need to buy 2 containers and I have leftover yogurt.&amp;nbsp; And no one eats plain yogurt at my house.) I also (because I have problems with humps in my cakes and my small 1.5" pans) divided up the batter into fourths so that I have four small-ish layers that were less humpy-ish.&amp;nbsp; As in flatter.&amp;nbsp; If that makes any sense.&lt;br /&gt;
&lt;br /&gt;
The icing is just regular ol' &lt;a href="http://whatscookingamerica.net/PegW/ButtercreamIcing.htm"&gt;buttercream&lt;/a&gt;.&amp;nbsp; If by "regular ol" I mean deliciously sweet. ;-)&amp;nbsp; The decorations are all &lt;a href="http://www.cakecentral.com/article47-how-to-make-and-decorate.html"&gt;marshmallow fondant&lt;/a&gt; colored various shades of pink and green.&amp;nbsp; (Which also happen to be Katye's favorite colors.)&lt;br /&gt;
&lt;br /&gt;
&lt;a href="http://cakecentral.com/modules.php?name=gallery&amp;amp;file=displayimage&amp;amp;pid=1006663"&gt;This cake&lt;/a&gt; was my inspiration (&lt;a href="http://snazzy-cakes.blogspot.com/2008/07/margaritaville.html"&gt;as you can see here&lt;/a&gt;).&amp;nbsp; The pink margarita glass was supplied by LeAnne.&amp;nbsp; I didn't know that it was going to be pink, but I think that's really cool.&amp;nbsp; It tied in with the theme nicely!&amp;nbsp; Inside the glass (which is actually plastic; a good thing because glass would've been too heavy for the cake to support) is lime Jell-O that I beat up with a fork.&amp;nbsp; Did you know that they make a margarita flavored Jell-O?&amp;nbsp; Me neither.&amp;nbsp; Before I put the Jell-O in the glass, though, I put piping gel around the rim and then covered that with green sugar sprinkles... the margarita "salt."&lt;br /&gt;

Speaking of theme, did you see the tablecloth?&amp;nbsp; You know the best part about it is that LeAnne made it specifically for Katye's birthday.&amp;nbsp; She called it a prototype but I think that she did a great job and she's really talented.&amp;nbsp; Anyway, I know that's not really cake-related, but the tablecloth is really awesome, so I wanted to share that. :)&lt;br /&gt;
&lt;br /&gt;
The cake was actually set up at their house, because I was afraid of it all falling apart during transportation.&amp;nbsp; Can you believe that it took 4 of us to make sure that the cake arrived safely?&amp;nbsp; I was afraid enough that the icing was going to melt in the August heat.&amp;nbsp; Thankfully, it didn't!&amp;nbsp; So once we got there, I put on the the glass and the fondant roses &amp;amp; leaves (with the help of some extra icing).&amp;nbsp; And the "21" candle, of course!&lt;br /&gt;

And so that was the cake that I made for Katye's 21st birthday party.&amp;nbsp; I hope that she has a fantastic year ahead of her and that she enjoyed her party!&lt;div class="feedflare"&gt;

So you would think that because I'm fairly good at making cakes, that I would be a pretty proficient artist with marker and paper, but apparently I can't draw as well as I can ice and frost! :)&lt;br /&gt;
&lt;br /&gt;
This is the cake idea that I have for my brother's best friend's older sister.&amp;nbsp; The idea from this cake comes from a variety of sources:&amp;nbsp; different cakes found online, her mom's ideas, my own thoughts.&amp;nbsp; It's a mix of a lot of different concepts rolled into one really cool cake.&lt;br /&gt;
&lt;br /&gt;
Here's the background:&amp;nbsp; my brother's friend's sister turns 21 next week, although she's celebrating this weekend.&amp;nbsp; Her mom asked me to make the cake, so I e-mailed her some pictures that I found online to give her ideas.&amp;nbsp; She saw &lt;a href="http://cakecentral.com/modules.php?name=gallery&amp;amp;file=displayimage&amp;amp;pid=1006663"&gt;this cake&lt;/a&gt; and wanted it more margarita themed-- and that's what you see in the drawing above!&lt;br /&gt;

Maggie has such a unique and amazing personality.&amp;nbsp; So I think that the theme of "yin and yang" fits her perfectly.&amp;nbsp; Plus, she came up with the idea herself, so I think that definitely says something of the appropriateness of this cake.&amp;nbsp; Not only did she come up with the idea, but the execution of the cake as well.&lt;br /&gt;
&lt;br /&gt;
One word: ganache!&amp;nbsp; Ganache, ganache, ganache; that's all she wanted.&amp;nbsp; And who can blame her?&amp;nbsp; That super chocolate cake that I made for my dad was delicious!&amp;nbsp; So, honoring the birthday girl's wishes, I made ganache!&amp;nbsp; And boy, did that ganache give me problems.&amp;nbsp; Maybe because it's July?&amp;nbsp; Or maybe because I didn't have a buttercream base coat this time?&amp;nbsp; I bet that's it.&lt;br /&gt;
&lt;br /&gt;
You see, I make a pretty thick ganache recipe, so I figured that I could skip the base buttercream layer.&amp;nbsp; Unfortunately, I don't think that I waited long enough for the newly-made ganache (isn't that such a cool word?) to cool, and when I spread it all over the cake, it just kind of drooped.&amp;nbsp; And I couldn't get the ganche to adequately (my new favorite word) cover the space made between the two layers (because of my cake pan woes, but more about those later!).&amp;nbsp; So, frustrated, I just stuck the cake in the fridge for a while and went to cool off myself.&lt;br /&gt;

When I came back to the cake, it was much easier to spread the ganache around as icing, so I'm inclined to think that it was just too warm.&amp;nbsp; I used the left-over ganache that hadn't made it on the cake t
