Veggie Roll-Ups Diabetic
2 large flour tortillas
1/2 c hummus or crumbled feta cheese
2 green onions, finely chopped
1/2 c shredded lettuce
1/2 large cucumber, seeded and chopped
Spread tortillas with hummus, or sprinkle with cheese. Top with
onions, lettuce, and cucumber. Roll up and serve.
Makes 2 Servings.
