what's cooking wednesday - buffalo chicken lasagna

I'm just going to say it. I make good lasagna. Damn good lasagna. If I've invited you for dinner at my house and I want to impress you, I will make lasagna. If I've invited you over to my house for dinner and I really love you, I will make lasagna. I will make you lasagna and you will love it. I feel confident in saying this because Auntie Yoli's Italian Mother said I made good lasagna and I nearly died from the honour. Even still it occurred to me I could make it better. At least I hoped it would be better. Whenever I make lasagna I always make two so I played it safe and made one the "new and improved" version and one the regular old fashioned way.

Buffalo Chicken Lasagna


If you've never made your own lasagna before..... well you should it's super easy and that frozen boxed stuff is from the devil. Ahem. Anyway of you haven't go and learn how I make my Approved by Grandma Ritz lasagna.

You can go one of two ways here. Since I was playing it safe I layered my ingredients for my regular lasagna into one pan. Then to the leftover sauce (because you're making two trays with my recipe) I added 1/2 cup of buffalo wing sauce. (My addiction to all things Buffalo wing flavoured is a well documented fact.) Layer your lasagna as you normally would, but top with blue cheese crumbles (on top of the final mozzarella layer). Now throw it in the oven and bake for an hour at 350 degrees.

Now if you wanted to make both lasagnas buffaloed then add a cup of wing sauce to the tomato sauce and top both with blue cheese crumbles. Oh and I should mention that I used ground chicken instead of beef because ground beef just seemed wrong.

I know. Yum, right?

I made this for dinner when Grandma Linda and Papa were over for family game night (we played Disney Scene It and had a great time.... did you know there was a Seinfeld version out? .... must have it!) Anyway it was a big hit and it went fast. The batteries were dead in my camera when it came out of the oven and by the time I got around to taking a picture there was only one lonely piece left. Sounds like a hit to me.

Sounds great to me, Shan, and I love that you make one "regular" and the other "experimental." That's exactly what I'd have to do to get away with trying a new lasagna here ;)

Shan - I LOVE anything buffalo wings related, so this is getting added to the list of things I will be making :) I have a buffalo chili recipe somewhere -- let me know if you are interested. I will send it along :)

nyc - oh it really was!

Michelle - just covering my butt.

Normie - i used Franks Red Hot Buffalo Wing Sauce. It's with the tabasco sauce. I'm sure there's other brands, but that's what I picked up. You can also alter the amount to make it more/less spicy. And the lasagna was really nice with the chicken.
