The 80 Cent Sweet Potato Fry.

I paid seventy nine cents (.79) for almost three (3) pounds of sweet potatoes. I picked them up, as I always do, in the day-old grocery bin. Yes, a few of the ends had to be cut off, but I washed them very, very well. Without peeling them, I sliced them into circles, about 1/4 inch thick. In the interim, I pre-heated my oven to 400 degrees.
Once the potatoes were sliced, I placed them down on a thick baking sheet/pan. I poured a few tablespoons of olive oil over them and seasoned them to taste with chili powder. With a large spoon, I tossed all the potatoes until I knew all of them had been coated with both the olive oil and the seasoning. I put the tray into the pre-heated oven and baked them for about 45 minutes or so, till they turned a golden brown. I did not touch the potatoes once they were put in the oven. Depending on your own taste buds, the longer you keep these potatoes in the oven, the more the bottom ones toast and brown, almost to the perfection of crispy potato chips. I like these potatoes both ways: crispy and soft, so I kept them in the oven till I got both.

These sweet potato fries go quick. They are inexpensive, loaded with vitamins, fiber and beta-carotene.

Eating healthy never tasted so good.

Those look great! I am roasting a sweet potato in the oven as I type this. I mash it up for my daughter -- either sweet with raisins, butter and cinnamon or savory with cheese. Unfortunately, no such sweet deals on price for me -- sweet potatoes run at least a buck each here in France! Yikes.

We get lots of local produce year round. We get yams and purple sweet potatoes. The latter are what the old Hawaiians ate and are best simply boiled and eaten like a sweet.
The "luxury" for me is potatoes,which don't grow well here. I pay about $5.00 for a five pound bag of organic potatoes. But sometimes you just have to have a potato, you know?
