There are certain distilleries that consistently find their way back onto my shelf. Not because they're trendy. Not because they're impossible to find. And certainly not because they're backed by massive marketing budgets. They earn their place because they make whiskey that I genuinely enjoy drinking. For me, ASW Distillery falls squarely into that category.

Over the years I've tasted countless bourbons from every corner of the country. Some have been excellent. Some have been forgettable. A select few have become bottles that I actively seek out whenever I see them. ASW's Fiddler line belongs in that latter group. These bottles are nothing short of incredible!

What makes ASW so fascinating is that they're not simply following the blueprint laid out by Kentucky's legacy distilleries. They're creating something uniquely their own in Atlanta, Georgia while embracing both traditional whiskey-making techniques and a willingness to experiment that many larger producers simply can't match. Today, ASW stands as one of the most awarded craft distilleries in America, but their story began much more humbly than the accolades might suggest.

ASW traces its roots back to 2011 when founders Jim Chasteen and Charlie Thompson launched the company with a vision of creating world-class spirits in Georgia. At the time, Atlanta wasn't exactly known as a whiskey destination. Bourbon conversations revolved around Kentucky, Tennessee, and increasingly Indiana. Georgia wasn't on most enthusiasts' radar.

Instead of viewing that as a disadvantage, ASW embraced it as an opportunity. The company spent its early years establishing itself before opening its Atlanta distillery and beginning production of the whiskies that would eventually put them on the national map. Their arrival marked a significant moment for Georgia whiskey, helping revive a distilling tradition that had largely disappeared from Atlanta for generations.

Fiddler Toasted Bourbon

If you enjoy toasted barrel bourbons, Fiddler Toasted deserves your attention. I honestly thought I had written about these bottles many months ago. You can tell by the fill level that I thoroughly enjoyed this bottle, shared it many times, and could easily get lost in it.

This expression starts with ASW's high-wheat bourbon mash bill and receives additional maturation in toasted oak barrels. The result is a whiskey that manages to deliver richness and sweetness without becoming overly dessert-like.

Deep reddish brown in color with brown sugar, vanilla bean, toasted marshmallow, roasted pecans, cinnamon, and warm caramel immediately jump from the glass. Given a few minutes to open up, deeper notes of flaky pie crust and toasted cedar emerge. The mouthfeel, like all Fiddler expressions, is rich and coating. Sweet wheat character drives the profile initially, followed by layers of caramelized sugar, vanilla cream, cinnamon spice, and toasted nuts. The oak influence is substantial but never overwhelming. Long and warming with lingering baking spices, toasted oak, and sweet caramel popcorn.

Distilled by MGP with a mash bill of corn (51%), wheat (45%), and malted barley (4%) and aged for 6 years, 9 months in char 2 and char 3 American white oak barrels. Finishing took place for 3 years, 1 month in medium and heavy toasted barrels. Bottled at cask strength and non-chill filtered. Batch 25-001.

I told Mutt this morning if I could drink one bottle for the rest of my life, it might just be this one. And I'm not *%&$ing kidding!

Fiddler Georgia Heartwood

If there is one bottle that truly showcases ASW's creativity, it may be Georgia Heartwood. After aging, the bourbon is finished with Georgia oak that ASW harvests and chars specifically for the project. Rather than simply adding another barrel finish, the distillery is incorporating a piece of Georgia itself into the whiskey.

Western suede color to the rim with maple syrup, toffee, dark caramel, oak char, baking spices, and dried fruit create an immediately inviting aroma. Rich and concentrated. Brown sugar and caramel lead the way before transitioning into toasted oak, nutmet, ginger, and dark fruit. The Georgia oak influence provides a distinctive earthy spice that separates it from many wheated bourbons on the market. The finish is long, warming, and oak-driven with lingering sweetness and spice.

You're going to think I'm crazy here, but drinking this brought back floods of memories, both as a child and as an adult - Christmas at my grandparents, going to the movies, fishing in a farm pond. This bottle just has that magical ability and I wish I could explain in better. But believe me, this was real.

This particular bottle was part of the "The Big Green Egg" special release, called the Golden Ratio Release. The mash bill is corn (51%), wheat (45%) and malted barley (4%). This is a non-chill filtered, column-distilled whiskey from MGP. Aged in char 3 and char 4 American white oak barrels for about 4 years. The final few months of aging saw the introduction of white oak staves added that were specifically selected by the ASW team. Bottle #221.

Encore may be the most adventurous member of the family. ASW uses the Encore label for various cask-finished releases, often incorporating barrels that previously employed maple syrup, port, sherry, or other specialty finishes. Each release vaires, but the philosophy remains consistent: take an already solid wheated bourbon and build additional layers of complexity through finishing.

Slightly lighter in color than Georgia Heartwood, but still displaying inviting colors of polished mahogany. Dark fruit, maple sweetness, raisin, baking spices, and rich oak dance in the nose. The secondary cask influence adds depth without burying the underlying bourbon. Notes of blackberry preserves, caramel, baking spice, cocoa powder (think hot cocoa), and sweet oak create a profile that continually evolves as it sits in the glass. The finish is elegant and lingering with fruit, spice, and oak arriving in waves.

Encore showcases ASW at its most experimental. While finished whiskeys can sometimes feel gimmicky, Encore demonstrates how finishing can enhance a bourbon rather than overwhelm it. When executed well, this style creates an entirely new drinking experience. This one is spot on! The mash bill is the familiar corn (51%), wheat (45%) and malted barley (4%). The "Friends and Family Release" was aged 6 years, 11 months in char 4 American white oak barrels, and finished in Georgia Oak casks for 3 years, 2 months. MGP Distillate. Bottle #610.

ASW Distillery represents something I genuinely enjoy seeing in the whiskey world. They respect tradition without being constrained by it. They're willing to experiment with Georgia oak, toasted barrels, unique cask finishes, and entirely new approaches to maturation.

Most importantly, they're willing to take risks.

The result is a portfolio that consistently delivers character, originality, and quality. For me, Fiddler Toasted, Georgia Heartwood, and Encore aren't simply good craft bourbons. They're examples of what happens when a distillery focuses less on following established rules and more on making whiskey that people genuinely want to drink.

This wine is rich without being too heavy and it is sweet but certainly not syrupy. We tasted this neat and also with one ice cube. Good news for everyone at your party: this bottle is Kosher!

We've been Old Elk fans for several years, always interested in what was next for this brand. There were a few fleeting moments where we were seeing fewer and fewer selections on the shelves of our local liquor stores, and we were puzzled. After some investigating, we found that this non-distilling producer, founded in Fort Collins, Colorado, has sold to Middle West Spirits in Columbus, Ohio. We were immediatley thrilled about the new ownership, as the Ohio distillery produces some fantastic bottles under their own labels. Keep an eye out to see what becomes of this new marriage!

In today's bourbon landscape, everuy brand seems to be searching for a way to stand out. Some chas higher proofs. Others lean heavily into barrel finishes and limited releases. The term "slow cut" isn't marketing jibjab. It's the terminology coined to describe proofing down the whiskey over a slower period of time. Old Elk feels that the slower process helps preserve flavors and create a softer, more enjoyable drinking experience. Proofing down whiskey isn't new, but the delivery speed from Old Elk is different. Will other distilleries take note? This bottle replaced Old Elk's original Blended Straight Bourbon, so we think "slow cut" is here to stay. Maybe we will start to see this in their other releases. Time will tell ... (no pun intended).

Light amber gold in the glass with baked bread, honey, vanilla and delicate oak on the nose. This is a lower proof whiskey and we aren't mad at all. In a world where everyone is shooting the moon for hazmat-proof bottles, it's always enjoyable to come back to a daily sipper. There's a soft and creamy mouthfeel with light brown sugar, vanilla, baking spices, breakfast cereal and maple candy. A touch of spice on the finish is welcome and not over powering. The sweet characteristics dominate. This was tasted neat in a Glencairn and would be delicious in a cocktail.

Speaking of cocktails, the Cherry Bourbon Smash looks like it needs to be on the menu for our next gathering.

3 to 5 fresh mint leaves (for muddling)
1/4 cup fresh cherries, pitted and chopped. Do not use Maraschino cherries.

That resilience became the inspiration behind a whiskey designed to embrace fire rather than avoid it. The result is a Kentucky Straight Bourbon that doesn't simply rely on barrel char as a production necessity—it uses smoke, toasted oak, and secondary barrel finishing as part of its identity.

The original Burnt Tavern dates back to the late 1700s when settlers established a travelers' stop along the historic Wilderness Road and Zane's Trace routes through Kentucky. The tavern became a gathering place for pioneers, merchants, explorers, and travelers making their way through the frontier. After being destroyed by fire and rebuilt twice, locals eventually began referring to it simply as "Burnt Tavern." Rather than creating another straightforward Kentucky bourbon, Tate developed a finishing process intended to evoke the tavern's fiery history through subtle layers of smoke, oak, and caramelized sweetness.

This is a seven year expression featuring a mashbill of corn (70%), rye (21%) and barley (9%). But the finishing process is really the headline here. After traditional maturation, the bourbon spends additional time in custom toasted and charred barrels designed to build richer layers of caramelized sugars, oak influence, and a delicate smoky character.

Terracota and rust colors throughout. Concentrated vanilla leads the way to the nose, followed by brown sugar, toasted oak, baked fruit, and a gentle smoky note that never becomes overpowering. There are hints of blackberry preserves, baking spices, and a touch of char that add depth without overwhelming the sweeter notes. The smoke isn't campfire-heavy. Think toasted barrel staves rather than peated whisky.

The first sip opens with rich caramel and toffee before transitioning into vanilla cream, Bananas Foster, baking spices, and toasted oak and eventually showcasing a sweet candy cinnamon stick. There's just a hint of spice and smoky goodness that wraps everything up in a nice, neat package.

Burnt Tavern Bourbon succeeds because it doesn't try too hard. The story could have easily pushed the whiskey toward gimmick territory, but the liquid backs up the narrative. The subtle smoke, double-barrel finishing, and elevated proof create a bourbon that feels distinct without abandoning its Kentucky roots. The whiskey feels connected to its namesake. While the label may be familiar to whiskey enthusiasts who have followed Keeper's Heart since its launch, this release represents something entirely new for the Minneapolis-based distillery. Rather than blending sourced whiskey from multiple origins, American Pot Still Whiskey is the first expression distilled entirely in-house by O'Shaughnessy Distilling Co. More importantly, it serves as a statement of purpose from a distillery seeking to bridge the traditions of Irish and American whiskey making.

At the center of that vision is Brian Nation, a name that carries considerable weight in the whiskey world. Before joining O'Shaughnessy Distilling, Nation spent decades helping shape some of Ireland's most celebrated whiskeys. His career included stewardship of brands that helped define modern Irish whiskey for drinkers around the globe. When he left that role to help build a new distillery in Minnesota, many enthusiasts wondered what an Irish master distiller would create when given the freedom to work outside the traditional boundaries of Irish whiskey regulations.

This bottle may be the clearest answer yet. Chestnut brown color with flashes of gold in the glass. Dried fruits of apricot and dark cherry join with honeycomb and caramelized sugar on the nose. Rich, buttery toffee, island fruits, unctuous sweet caramel candy and baking spices cover the tongue. We love the fact this is not a high proof heat bomb, allowing this to be a daily sipper. But there is just enough noticeable spice to keep things interesting with the oak and vanilla in check.

What makes Keeper's Heart American Pot Still Whiskey interesting isn't simply where it was made, but how it was made. This expression was built on tradition. The whiskey begins with a mash bill consisting of equal parts malted and unmalted barley. That combination is a hallmark of traditional Irish pot still whiskey and contributes to the style's distinctive texture and character. Rather than relying on corn or rye as its foundation, the whiskey leans fully into barley as its grain of choice.

The spirit is then triple distilled in copper pot stills, another technique more commonly associated with Irish whiskey than American whiskey. Triple distillation often produces a spirit that balances richness and refinement, allowing grain character to remain present while smoothing some of the rougher edges that can accompany younger whiskey. Nearly all American whiskeys are distilled twice.

The result isn't an attempt to imitate Irish whiskey, nor is it trying to compete directly with bourbon. When Keeper's Heart first entered the market, its identity centered on blending Irish and American whiskeys into expressions that highlighted the strengths of both categories. Thirteen choice barrels were hand selected from prime maturation locations in Warehouse B, where temperatures regularly climb well over 100 degrees. The whiskey then spent six months in a secondary barrel - light char and medium toast new American oak barrel from Independent Stave Company - selected to bring wood sugars to the forefront.

Bottled at 115.1 proof, Toasted Double Oak Bourbon delivers a richer, more concentrated expression of Green River's core profile. Green River Distillery provided us with a media sample of this bottle so we could check out the excitement behind the new series. And it did not disappoint! Rich mahagany color in the glass with wafting aromas of vanilla, fruity chewy candies, bakery goodness and cocoa. Warm and covering mouthfeel brought initial flavors of toasty ciabatta bread, Andes mints, caramel, stone fruits and baking spices. The finish is completed with some lovely rye spice, caramel candy and the familiar Kentucky hug.

What immediately caught our attention was that this isn't trying to be the loudest rye on the shelf. Many older ryes lean heavily into oak and spice, sometimes at the expense of drinkability. Rendition takes a different path, offering maturity while still maintaining approachability.

In the glass, Rendition presents a rich copper-to-mahogany hue that hints at its extended aging. Swirling reveals slow-moving legs that suggest a whiskey with some depth and texture. The first impression is classic rye spice, but it quickly opens into something more layered. Baking spices lead the way—cinnamon, island fruits, and freshly cracked pepper—followed by distinct orange peel and toasted oak. After a few minutes in the glass, sweeter notes emerge. We found vanilla bean, dark honey, and a touch of caramelized brown sugar. What we appreciated most is that the oak doesn't dominate the aroma. For a whiskey carrying a double-digit age statement, the wood influence remains supportive rather than overwhelming.

The palate begins with a burst of rye spice before transitioning into richer flavors that develop across the tongue. Notes of cinnamon bark, toasted walnuts, and black pepper arrive first. Mid-palate, the whiskey shifts toward darker flavors—cocoa powder, espresso bean, and burnt sugar. There is also that subtle citrus quality that keeps the whiskey feeling lively rather than heavy.

The texture is where Rendition really shines. It carries enough weight to feel substantial without becoming syrupy. Each sip evolves naturally, revealing different layers as it opens. A mature, well-rounded rye that delivers complexity without sacrificing drinkability. Wildwood Spirits continues to show that thoughtful whiskey making isn't limited to Kentucky.

This RTP bottle contains blends of straight bourbon and rye whiskeys, orange bitters, and blackberry simple syrup. That's it. Sounds simple, right? But how can so few ingredients create something to delicious?

Medium amber color with fresh blackberry compote. You don't get the overly sweet, syrupy, candied flavors like other similar products. This tastes like mom's blackberries from the garden. Vanilla, orange zest, carmalized sugar and hints of oak join in the medley of aromas. The whiskey is still the solid foundation, with the sweet blackberry acting as an enhancer and not the star of the show necessarily. The aromas carry over to the flavors, but adding in rich baking spices towards the finish.

Is this an apertif? Is this a dessert? We don't think it needs to be pigeonholed into a label or category. We tasted this on the rocks, neat and with some homemade spongy chocolate cake. The results were all the same - pure satisfaction! Depending on your pour, you should yield 12-15 drinks per bottle. On a side note, this is the ideal bottle for those who don't want to take the time to muddle the fruit, zest the orange, add the syrup, stir the drink, etc.. We dare not call this a lazy man's drink. We call it the smart man's drink!

Penelope Bourbon is a brand that builds on success while stepping outside of the norm. They don't believe a glass ceiling - they shatter it. This bottle is an example of that philosophy. So keep your eyes focused on Penelope because the next incredible bottle is surely on the way!

The textured glass still gives off that old apothecary vibe, but Remy’s artwork adds a little swagger to it. It feels less like a gimmick and more like a bottle with actual character.

In the glass, this pours a warm polished bronze with flashes of copper around the edges. Not especially dark, but rich enough to suggest there’s real maturity underneath the softer wheated profile.

The nose opens sweeter than expected. You're met with a soft and welcoming sweetness with apricot, butterscotch candy, baking spices and a touch of mineratlity on the nose. After a few moments, softer notes start developing that include honey and orange peel. It doesn’t punch aggressively, but it’s layered in a way that keeps you coming back for another sip.

On the palate, this is exactly what a wheated bourbon should be: softer around the edges without becoming boring. The mouth is covered in the same baking spices, homemade biscuits, black forest cake and carmelized sugar. The lower proof offers a very easy and welcoming finish.

Packaging-wise, the refreshed label works especially well here. The deeper tones and vintage-inspired typography fit the whiskey naturally. The bottle has presence without trying too hard, and the rooster branding somehow manages to feel both playful and premium.
In the glass, the bourbon carries a darker amber hue with rich golden highlights. Good viscosity too — the legs cling slowly to the glass, hinting at a fuller texture than the 90 proof might suggest.
The aroma opens bright and expressive. Dried cherries, caramel corn, vanilla bean, and orange peel show up immediately. After some time in the glass, more spice starts coming forward — clove, cinnamon bark, and cracked pepper — along with a touch of toasted oak.
There’s a nice energy to the nose. Nothing feels overly heavy or over-oaked. The palate starts sweeter than expected before quickly transitioning into spice. Caramel, honey, and brown sugar arrive first, then the rye content starts flexing with cinnamon, baking spice, and pepper. Mid-palate is where the oak steps in and grounds everything.
What I appreciate most here is balance. Some 90-proof bourbons feel watered down or thin, but this still carries enough structure to feel satisfying. The texture isn’t massive, but it never feels hollow either. The finish leans dry compared to the opening sip. Oak tannin, cinnamon, light espresso bitterness, and lingering vanilla stay around longer than expected. It’s not a dramatic finish, but it’s polished.

Riley is the sharpest and most energetic bottle in the lineup — fitting for the rye expression.
The refreshed packaging works extremely well here because the slightly more aggressive branding matches the whiskey inside. The bottle still has that old-world medicinal aesthetic Chicken Cock has leaned into for years, but the updated label gives it more modern confidence.
In the glass, the rye shows a lighter copper-gold appearance with excellent clarity.  The nose immediately pushes spice forward. Fresh mint, cracked pepper, orange zest, and rye grain come charging out of the glass. There’s also a subtle sweetness underneath everything — honey, brown sugar, and a touch of milk chocolate.
After sitting for a while, herbal notes begin emerging too. Spearmint and faint eucalyptus give it a fresher profile than many heavier Kentucky ryes.  The palate starts bright and spicy with white pepper, cinnamon, mint leaf, and citrus peel. Midway through the sip, sweeter notes round things out — caramelized sugar, light toffee, and a little vanilla cream.
The texture is probably the only place where some drinkers may want more. It leans lighter-bodied than some modern high-proof ryes dominating the market right now. But honestly, that also makes this a very approachable rye for people who don’t normally gravitate toward heavily spiced pours.
The finish is crisp, peppery, and relatively clean. Mint, oak spice, and brown sugar linger without overstaying their welcome.  This isn’t trying to be a bruiser of a rye whiskey. It’s built more around drinkability and balance than intensity — and there’s something refreshing about that approach.

Chicken Cock Small Batch Bourbon (“Russell”)

Russell is where the Chicken Cock lineup starts feeling more serious.  The Small Batch expression immediately comes across as more refined both visually and in the glass. The updated packaging feels sharper here, and the higher proof gives the whiskey noticeably more depth and concentration.
Appearance-wise, this pours a rich burnt amber with deeper mahogany tones around the center of the glass.  The nose is fantastic. Orange zest, vanilla frosting, candied ginger, and clove rise immediately, followed by darker caramel and toasted sugar notes. There’s noticeably more richness here compared to the flagship bourbon.  The higher proof also helps carry the aromas more effectively without overwhelming the glass with ethanol.
On the palate, the texture becomes the star of the show. Thick caramel, butterscotch, vanilla custard, and honey coat the mouth immediately before transitioning into baking spice and toasted oak. There’s a really nice oily mouthfeel that gives the whiskey weight.  The orange peel note from the nose carries beautifully into the sip, keeping the bourbon lively rather than overly dense.
The finish is longer and more layered than the standard bourbon. Toffee, red apple skin, vanilla extract, and lingering spice stay with you well after the sip is gone.  This is the bottle in the lineup that feels most likely to impress experienced bourbon drinkers. It has enough proof, enough texture, and enough complexity to compete in a crowded premium bourbon category.

Chicken Cock Double Oak Kentucky Whiskey (“Rocco”)

Rocco is the heavyweight of the core lineup. He's the Double Oak, 10-Year Kentucky Whiskey that needs to be noticed!  Even before opening the bottle, the packaging signals that this is meant to be the richer, darker, more luxurious pour in the family. The refreshed label design fits perfectly here — bold without becoming flashy.
In the glass, this whiskey looks gorgeous. Deep copper bordering on mahogany with slow-moving legs coating the glass.  The nose immediately leans dessert-driven. Dark chocolate, toasted coconut, caramel espresso, and charred oak dominate upfront. There’s also a dark berry note underneath that keeps the whiskey from becoming too wood-heavy.  This smells mature, luxuirous.
The palate delivers a much rounder and oak-driven experience than the rest of the lineup. Vanilla bean, brûléed sugar, cinnamon, dark caramel, and toasted waffle cone arrive first before richer oak and baking spice start building.  What’s interesting is that despite the “Double Oak” name, it doesn’t become aggressively tannic or bitter. There’s a creamy softness underneath the char and spice that keeps the whiskey balanced.
The secondary maturation adds texture more than raw oak overload.  Mid-palate develops into darker flavors — mocha, toasted marshmallow, leather, and faint dried berries. It feels like a fireside whiskey built for slower sipping.
The finish is long, warm, and layered with lingering crème brûlée, toasted oak, cinnamon, and soft leather notes.  This is probably the most complete whiskey in the current Chicken Cock core lineup. It has enough sweetness for casual drinkers but enough oak depth and structure for experienced bourbon fans.  And unlike many double-oaked whiskeys chasing heavy wood extraction, this one still leaves room for the whiskey itself to breathe.

More Than Just a Label Refresh

What makes this redesign interesting is that it doesn’t feel like a company trying to erase its past in pursuit of a modern audience. If anything, Chicken Cock seems to be leaning further into its history.

This is still the whiskey brand that became famous during Prohibition-era nightlife. Still the whiskey once associated with the legendary Cotton Club in Harlem. Still the brand that disappeared for decades before being revived by a modern team determined to bring it back to relevance.

The new labels simply make the lineup easier to understand while giving each bottle more individual presence on the shelf. And in a whiskey world increasingly filled with copy-and-paste branding, that individuality matters.

Because while the labels may be new, the real question is still the same: ow good is the whiskey inside the bottle? The answer here is... incredible!

2021 Merryvale Cabernet Sauvignon Napa Valley

The Schlatter family has owned Merryvale Vineyards for about three decades and this property is rich in history. The iconic winery was the first winery built in Napa after the repeal of Prohibition in 1933. The European and Bordeaux-inspired wines are the heart of the brand, resulting in rich and luscious Cabernet Sauvignons. That is certainly the case here with the 2021 Merryvale Cabernet Sauvignon Napa Valley.

Smaller yields were the result of a second year of drought in Napa Valley, creating more robust flavors and highly concentrated wines. Overall, the 2021 vintage is highly rated with exceptional wines. This wine is raisin colored with eggplant streaks. Juicy blackberry, dried spices, stewed plum and flower bouquet on the nose. The full bodied mouthfeel is immediately noticeable with solid tannins and balanced flavors of black cherry, tomato leaf, clove, blackberry and freshly sawn cedar plank.

This wine spent 16 months in new French oak and is comprised of Cabernet Sauvignon (86%), Petit Verdot (12%), and Cabernet Franc (2%). This is not an "in your face" flavor bomb, but a more refined, reserved, classic feel that would be fun to revisit after cellaring for a decade. It's quite lovely!

Bardstown, KY (May 26, 2026) - Instead of leaving annual volume loss to the angels, Bardstown Bourbon Company has found a way to fill the empty space in its latest Distillery Reserve. Distillery Reserve Mars Single Malt Japanese Blend, is a pioneering release that bridges Kentucky bourbon and Japanese whisky traditions in an entirely new way. It is available in extremely limited quantities beginning May 29, 2026.

Developed in collaboration with Japan's Mars disilleries, this limited release represents a first-of-its kind co-aging proces, uniting two distinct whisky cultures within a single barrel.

Japanese single malt whisky from Mars Komagatake and Tsunuki distilleries was shipped to Bardstown, Kentucky, where it was introduced into barrels containing mature bourbon. Rather than a traditional finishing approach, the Japanese whisky and Kentucky bourbon were aged together in-barrel. This allowed the spirits to fully integrate and evolve, emerging twlve months later as one. The final year of aging allowed the products to develop and find balance together. It also added additional wood sugar and barrel character after a warm Kentucky summer.

The Japanese components - both crafted from 100% malted barley - bring distinctive character shaped by their original maturation. Komagatake single malt, aged in Umeshu (plum liqueur) barrels, contributes rich fruit and floral complexity, while Tsunuki single malt, aged in rare Sakura (cherry wood) barrels, imparts delicate spice and subtle wood influence. Aged together with a foundation of Kentucky bourbons aged ten and sixteen years, the end result is a layered and globally inspired whsikey unlike anything else.

"This product is about more than blending - it's about true integration," said Dan Callaway, Master Blender, Bardstown Bourbon Company. "By aging Japanese single malt whiskies together with Kentucky bourbon in the same barrel, we've created something entirely new. The result is a seamless conversation between two traditions, where neither overpowers the other, and both are elevated."

Some bottles earn attention because of age statements. Others because of rarity or allocated status. Then there are bottles like Charbay Doubled & Twisted — a whiskey that immediately makes you stop and ask, "Wait… they made this from what?"

Charbay has built a reputation around doing things differently, and this bottle might be one of the clearest examples of that mindset. While many distilleries spend years refining a traditional formula, Charbay seems perfectly comfortable stepping outside the lines and creating something that doesn't fit neatly into familiar categories. And after learning the story behind the distillery itself, that approach starts making a lot more sense.

Charbay isn't a new craft distillery chasing trends. The Karakasevic family traces its winemaking and distilling roots back to 1751 in Europe. Multiple generations were involved in the family trade long before Charbay ever existed in California. Founder Miles Karakasevic eventually brought those traditions to America, arriving with both practical experience and formal education in winemaking and viticulture before building what would become Charbay.

The family officially established their California operation in 1983, becoming one of the earlier craft distilleries in the United States — Distillery No. 177 at a time when the modern craft spirits movement was still years away from taking off.

Today the legacy continues through Master Distiller Marko Karakasevic, representing the 13th generation of family distillers. But rather than simply repeating old traditions, Charbay has become known for experimenting in ways many producers would never attempt.

What's interesting about Charbay is that they seem to balance old-world methods with a willingness to take risks. This is non-chill filtered and the barrel aging is aggregation of IPA, Pilsner, Stout and Single Malts. The fact all of those can be blended into something so tasty is mind-blowing!

Instead of following a standard grain-to-glass whiskey process, Charbay built Doubled & Twisted around a blend of whiskey components influenced by different beer styles and distillation techniques. The result isn't trying to become a traditional bourbon or classic single malt. It feels more like a whiskey created by people asking, "What tastes interesting?" rather than "What are we supposed to make?"

That philosophy alone makes this bottle stand out.

Light hazelnut and golden in the glass. Aromas of campfire smoke, espresso, vanilla and dried herbs. The whiskey is immediately approachable and is dominated by citrus fruits, grape leaf, crème frâiche and grilling spices. The finish is as smooth as satin.

Charbay Doubled & Twisted isn't a bottle we would describe as predictable — and that's probably exactly what the distillery intended.

There’s a growing category of whiskey that refuses to stay inside traditional boundaries — and Koopers Whiskey has quietly become one of the more interesting names leading that movement.

Founded in Texas, Koopers Whiskey built its reputation around blending and finishing American whiskey with a more culinary mindset. Rather than relying solely on age statements or proof points, the brand focuses heavily on secondary maturation — taking already mature whiskey and layering in additional complexity through carefully selected finishing casks.

And that philosophy is on full display with the Koopers Cognac Cask Finished Rye.

This bottle begins with a 7-year-old straight rye whiskey distilled in Indiana, built on a high-rye profile known for structure, spice, and intensity. The mash bill is Corn (45%), Rye (51%) and Barley (4%). After aging in new American oak barrels, the whiskey undergoes an additional 11-week finishing period inside French Cognac casks.

Unlike many wine or brandy finishes that overpower the base whiskey, the Cognac influence here acts more like a softening lens — rounding edges while adding layers of fruit, confectionary sweetness, and subtle elegance without stripping away the rye’s identity. The aroma immediately leans rich and dessert-like without becoming syrupy.

Cherry pipe tobacco leads the way alongside sweet praline and baked apples. There’s also an underlying warmth that feels somewhere between polished oak furniture and old-world confectionery. It’s the kind of nose that keeps evolving every time you revisit the glass.

The sip opens with classic rye spice before transitioning into deeper, softer flavors. Brown sugar and vanilla crème brûlée begin coating the palate while sandalwood and seasoned oak provide structure underneath the sweetness. The Cognac finishing influence becomes increasingly noticeable mid-palate, introducing a velvety texture that gives the whiskey an almost luxurious feel.

The finish lingers beautifully with caramelized fruit, cracked black pepper, and just enough lingering Cognac sweetness to smooth everything together. It’s bold without being aggressive. Refined without losing character. We suspect this is what Koopers does best.

One of the more fascinating aspects of this release is how restrained the finishing period actually is. Eleven weeks may sound short compared to some heavily finished modern whiskeys, but that shorter finishing window appears intentional — allowing the Cognac cask to enhance rather than dominate the rye. That restraint matters.

Many finished whiskeys lose their base identity entirely. This one still drinks like a rye first — just with significantly more dimension. There’s also a broader trend at play here. Cognac cask finishing remains relatively uncommon in American rye compared to port, sherry, or rum finishes, which makes bottles like this stand out immediately on a shelf crowded with more predictable finishing experiments.

Koopers manages to walk the line between innovation and drinkability exceptionally well here, creating something that feels both approachable and genuinely unique. And a huge nod to Koopers on this eye-catching and beautiful label!

2021 Baldacci Family Vineyards Fraternity Red Blend

There are bottles you plan to open for a special occasion, and then there are bottles that somehow disappear into the cellar, only to resurface years later at exactly the right moment. The 2021 Fraternity Red Blend from Baldacci Family Vineyards became our “lost bottle” — misplaced after arriving from a collaborative partner, then recently rediscovered and finally poured. As it turns out, some bottles are worth the wait.

What makes this one even more personal for us is that Baldacci was one of the very first wineries we visited during our inaugural trip to Napa Valley back in 2009. Long before Drink The Bottles existed, we still remember the warmth of the experience, the beauty of the property, and the feeling that Napa wine country was something truly special. Revisiting Baldacci all these years later through this bottle felt unexpectedly nostalgic.

The 2021 Fraternity Red Blend pours a deep garnet with rich ruby undertones, dense in the glass with slow, elegant legs, hinting at solid structure and concentration. Visually, it looks every bit as luxurious as its price tag suggests.

On the nose, this wine opens with expressive layers of black cherry, ripe blackberry, cassis, and dark plum. As it settles, secondary aromas emerge — cocoa powder, toasted cedar, vanilla bean, and a subtle touch of baking spice. There’s also a refined earthy undertone that keeps the fruit from becoming overly jammy, giving the wine balance and sophistication.

The palate is where this blend truly shines. Full-bodied and velvety, it delivers waves of dark fruit supported by polished tannins and beautifully integrated oak. Blackberry preserves, black currant, and dark chocolate dominate early, while hints of espresso, tobacco leaf, and warm spice build through the mid-palate. Despite its richness, the wine remains remarkably composed and elegant, never feeling heavy or over-extracted.

And yes — unapologetically — we paired this with a homemade chocolate chip cookie. Not because someone told us to. Not because it was textbook pairing etiquette. Simply because we wanted to try it.
