<p>It may not be pleasant to watch, but it is important to bear witness to the human rights violations that were exposed in the pulled 60 Minute segment on CECOT.  Thanks to Global TV running the segment, after 60 Minutes was pressured to pull it, and the <a href="https://archive.org/details/60minutes-cecotsegment" target="_blank" rel="noreferrer noopener nofollow">Internet Archive creating a copy of it</a>, we are able to bear witness.</p>

<p>Let&#8217;s not kid ourselves, what is happening in the US under the Trump regime with ICE grabbing people off the streets and forcibly detaining them, stripping them of their freedoms and human rights, amounts to violations on the <a href="https://www.un.org/en/about-us/universal-declaration-of-human-rights" target="_blank" rel="noreferrer noopener nofollow">Universal Declaration of Human Rights</a>, and that is before all the violation to human rights that these men were exposed to in CECOT.</p>



<p>What we are witnessing, and many in the US are experiencing first hand, echo what people in Europe experienced at the hands of Hitler&#8217;s Nazis leading to World War II.  This needs to be stopped.</p>



<p>If you are supporting the Trump regime, you are a part of this evil. </p>



<p>What side of history will you be on? How will you be remembered?</p>

<p class="has-background" style="background:linear-gradient(135deg,rgb(251,214,110) 0%,rgb(255,105,0) 100%)">Some of you may have noticed that about a decade ago, I started writing a lot less here.  That was due to a life changing event that left me living in constant pain and struggling with exhaustion. I&#8217;ve learned a lot in that time, and Brie&#8217;s been nudging me to write about it, but first I needed to understand and learn to manage my pain and exhaustion, and then I needed to get through the court case related to that life changing event.  Close to 10-years to the day, I am now ready to begin to share that story, and with that I give you the Chronic Pain Chronicles, beginning with a piece I wrote on a recent flight.</p>



<p>I am torn as I write this as to the title …</p>

<li>Ask permission before you take that that is not yours.</li>



<li>Just because I look fine doesn’t mean that I am.</li>



<li>If someone says they are in pain, listen.</li>



<li>I hate having to advocate for my disabilities, after telling someone I need preventative measures.</li>



<li>Just because I am quietly and politely advocating for my needs, doesn’t make them any less urgent.</li>

<p>Hopefully writing helps me answer this. I need to write just now to process.&nbsp; I know as I write this, that this is not the end of the world and likely I am just writing for myself, but I need to vent, I need to greave, and I need to be okay with not being okay in this moment. Who knows, maybe it also gives pause so that we start listening a little more when someone is quietly and politely advocating for their needs.</p>

<p>I deal with pain …. constantly.&nbsp; I look fine, I smile, I laugh, and I still enjoy a good jig, but I am also constantly in pain … ever since I was in a car accident 10-years-ago. I’m also an optimistic, hopeful person, but as I have learned over the past 10-years, that pain is not going away, rather I have had to learn to manage it.&nbsp; And managing it is somewhat like teetering along the high wire, of putting preventative and coping measures in place, so as to not fall. Sometimes even with that constant balance of preventative and coping measures, I fall anyway. Sometimes it is all just too much for me to handle.</p>



<p>The past few months has been such a fall for me, but rather than falling from the high wire, it has been a tumble down a mountain with me perpetually grabbing for hand holds, asking for helping hands, and having to holler for help, when those cries go unheard.</p>



<p>Why?&nbsp; As I’ve been dealing with the court case on the aforementioned car accidents, and the demands and intensity of that have thrown my system into an intense state of fight or flight.&nbsp; Meaning I’ve had to deal with the intensity of a court case, while in at times extreme pain.&nbsp; It hasn’t been easy, and while initially I thought I could continue to do it all, and I certainly tried, I started needing to admit I wasn’t okay, asking for help, and triaging preventative measures.</p>



<p>This should have been easy enough, as the people I was dealing with knew of these disabilities, but it wasn’t. Over the past couple of months I’ve had to ask, reiterate, explain, and ask again.&nbsp; I did get what I needed, but it was exhausting, and as someone that only asks for help when it is absolutely needed, it was at times disheartening that when I needed it the most, it unto itself became another climb.</p>

<p>Now I am on the other side of that court case, and have the hard work of picking up the pieces, and trying to get myself back to my previously well managed place.&nbsp; There is a sense of, “its over now, so all is well and you can get on with your life”. But that’s just it, its not over, I am still dealing with the pain … constantly …. and while the court case took a weight and exhaustive heaviness off me, I am still dealing with the most intense flare up in the last 10-years, and it is far from under control.</p>



<p>As I write this, I am on a flight to Maui to give myself a bit of needed TLC and try to begin to rebuild.&nbsp; This is good, but knowing that flights can be a challenge when my body is flaring up, I’ve been putting preventative measures in place all week, to the extreme &#8211; pacing my prep, getting plenty of sleep, drinking plenty of fluids, allowing myself to just curl up in a ball and hug the cat, checking my bag so as not to deal with a heavy carryon, and ensuring I had a window seat (giving me a wall to lean on).&nbsp; That all went well, until I got to my seat on the plane, to see it was taken.&nbsp; Seems a couple wanted to sit across the isle from each other, so they’d convinced another couple to shift down into my seat, leaving me with an aisle seat, one row back.&nbsp; I mentioned I’d booked that seat as I deal with pain, and needed the wall to lean on. The response, “I deal with pain too. That seat behind on the aisle declines.” Leaving me with that ever Canadian dilemma &#8211; politely take the aisle seat, or reiterate what I need.&nbsp; I of course, politely took the aisle seat.&nbsp; At least I emphasised that I’d try, but if I ended up in too much pain, I might need my window seat.&nbsp; The fact that I did that alone should have told me that I was not okay, and very much did need the window seat and it’s precious leaning wall.</p>

<p>Instead I rallied, told myself I could handle this, and tried, until I reached the worst I’ve ever felt on an airplane (about 2 hours in), and then continued to try until I reached vomiting level pain, compiled with a desire to burst into tears.&nbsp; With at least another 3 hours and 45 minutes of flying time, I realised what I should have done long before, and found the flight attendant to see if there was another window seat that I could slip into.&nbsp; There was not, but she did get me my originally assigned seat.&nbsp; It’s helped, but the damage was already done &#8211; meaning breathing hurts a lot, and all the nerves encircling my diaphragm are screaming in agony. Hoping the flight app is correct, and there is just another hour and a half to go.</p>



<p>“Breath in …. let go ….breath in …. let go ….” I can do this. Not long now.</p>

<p>I don&#8217;t know about the rest of you, but something I have dearly missed during the COVID-19 pandemic has been the much needed self care of a visit to a spa.  This might make me sound a bit pampered, but I deal with chronic pain from an accident.  This pain has made me recognize that such things as spa visits, which I once thought of as indulgences and luxuries, are really much needed self care that everyone should have access to.</p>



<p>A silver lining in the pandemic is that it has taught me that there are ways that I can give myself some of that much needed self care at home, in unexpected ways, including those that I thought were inaccessible to me.  One such treatment is the deep, relaxing heat of a Thai Herbal Message.  Now while I still have not figured out how to give myself, on my own, a Thai Herbal Message, thanks to <a href="https://www.tourismthailand.org/home" target="_blank" rel="noreferrer noopener">Tourism Thailand</a> and <a href="https://www.rakxawellness.com/" target="_blank" rel="noreferrer noopener">RAKxa Wellness Retreat</a>, I have learned how to make DIY Thai Spa Herbal Compresses at home!</p>

<p>In Thailand, this treatment is called ‘Ya-Pao’ and is to detoxify the body back to its normal equilibrium and boost the immune system. Typically this is focused on the stomach, but can be modified and used on the upper and lower back or wherever muscle groups need calming. RAKxa Wellness Retreat share more on this treatment in the video below, including details on how to do a Ya-Pao massage, beginning at 44:35 to 50:05.</p>

<p>For myself, Thai Herbal massages and the deep heat compresses have always helped to calm my nervous system and allow me to relax, helping to alleviate pain.  I always associated this with the deep heat and gentle massage, but in learning about the ingredients in the herbal compress, I suspect that they too are helping to calm my body and take the edge off the pain as turmeric and ginger are both natural anti-inflammatories.</p>

<p>It has been such a gift to learn how to make these Thai Herbal Compresses to use at home, while I&#8217;ve been unable to visit the spa (or travel to Thailand).  Here&#8217;s the recipe:</p>



<h3 class="wp-block-heading">Thai Herbal Compress Ingredients:</h3>

<ul class="wp-block-list"><li>200 grams (7/8 of a cup) of Dry Rice </li><li>Unbleached Cloth or Muslin Cloth </li><li>Yarn or Tread </li><li>1 Tbsp Turmeric Powder</li><li>1 Tbsp Cinnamon</li><li>1 1/3 cup Sliced Ginger </li><li>Microwave to heat the compress</li></ul>

<ul class="wp-block-list"><li>In a bowl, mix rice, turmeric, cinnamon, and ginger.</li><li>Place cloth in another bowl and pour the ingredients over the cloth.</li><li>Use the yarn to tie the ends of the cloth together, sealing the ingredients inside.</li><li>Place the compress in the microwave for 1 1/2 minutes to steam the ingredients, and apply to sore and stiff muscles and parts of your body, using gentle massage movements, while hot. As the compress cools to a comfortable temperature, leave it on problem areas of your body for 15 &#8211; 30 minutes.</li><li>Repeat as needed.  You can get multiple uses out of a single compress.</li></ul>

<h4 class="wp-block-heading">My adaptions:</h4>



<ul class="wp-block-list"><li>I utilized old face cloths and towels for my compresses, and if on the smaller side, made 1/2 sized compresses.</li><li>The suggestion is to utilize the compress 4 &#8211; 5 times before making a new one.  I&#8217;ve been making new ones whenever I smell rice beginning to burn.</li></ul>

<p>Long live the DIY project! When it became apparent that face masks were going to be needed on an everyday basis, and that laundering would be involved, I quickly realized that my family would need more than one each. Through some shopping around I found a pack of <a aria-label="undefined (opens in a new tab)" href="https://www.amazon.com/gp/product/B086ZHZY6T/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=storytogo00-20&amp;creative=9325&amp;linkCode=as2&amp;creativeASIN=B086ZHZY6T&amp;linkId=8a6c16902e4a7ad792a8e3218c566fc6" target="_blank" rel="noreferrer noopener">50 Fruit of the Loom face masks </a>with each one ending up at only $1 each.  To make these fun and cheerful to wear, we decided to tie dye them. Thinking that others might enjoy these too, we recorded our steps on how to tie dye face masks, so as to share the process with all of you! </p>

<h3 class="wp-block-heading">Shrinking Your Face Mask to Fit Your Face</h3>



<p>My daughter discovered this shrinking technique after ordering bikinis in the mail that were just a bit too big for her tiny little booty. </p>



<ol class="wp-block-list"><li>Fill pots with water to boil.</li><li>Rinse the masks under cold water.</li><li>Add masks to boiling water and turn off the heat completely.</li><li>Let the masks sit in the pots for 15 min.</li><li>Put them in the dryer for a full cycle or until completely dry.</li></ol>

<h3 class="wp-block-heading">Tie Dye Supplies</h3>



<p>In addition to white face masks, you will also need a tie dye kit. I found one that came with plastic containers for a method where you only need to microwave what you are making for 2 min, then let it sit for 15 min and it&#8217;s done! I used the <a aria-label="undefined (opens in a new tab)" href="https://www.amazon.com/gp/product/B0842CWQBT/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=storytogo00-20&amp;creative=9325&amp;linkCode=as2&amp;creativeASIN=B0842CWQBT&amp;linkId=87155c52659b3037009ed0930db7e11a" target="_blank" rel="noreferrer noopener">Tulip One-Step Tie Dye Party Kit</a>. Any tie dye paint will work, just make sure you read the instructions on processing times for what you have. Since masks are so small, you won&#8217;t need a lot of paint. You will likely have enough left over to dye some shirts too (or socks, pillow cases ~ and whatever your new tie dye passion desires)!</p>



<p>A few other items you will want to have on hand for the tie dye process:</p>



<ul class="wp-block-list"><li>gloves (to protect your hands from the dye)</li><li>a plastic sheet (like a plastic table cloth) to cover your work surface (protecting it from the dye)</li><li>elastic bands</li><li>paper towel</li><li>fork</li><li>spoons </li><li>bowls</li><li>vinegar</li><li>salt</li></ul>



<p>Depending on the tie dye kit you purchase, some of the above items might be in the kit.</p>

<p class="has-background has-very-light-gray-background-color">One of our Roamancing writer&#8217;s recently did the research and wrote a letter to a loved one about Systemic Racism, Police Brutality, and the positives that are coming out of the Black Lives Matter Protests and Marches to explain to them why the current Black Lives Matter protests and marches are needed.  As we feel this is an important issue and think she did an excellent job of both researching and addressing the problem, we are sharing her letter in 3-parts, here, on Roamancing.com, and on StoryToG.ca.  Her research is focused on the United States, but as is evident in the news in recent weeks, this is very much an issue that needs addressing here at home in Canada too. <h2 class="wp-block-heading"><strong>In regard to police brutality, I found these statistics:</strong></h2>



<p>In 2018, there were 996 fatal police shootings, and in 2019 this figure increased to 1,004. Additionally, the&nbsp;<a href="https://www.statista.com/statistics/1123070/police-shootings-rate-ethnicity-us/" target="_blank" rel="noreferrer noopener">rate of fatal police shootings</a>&nbsp;among black Americans was much higher than that for any other ethnicity, standing at 30 fatal shootings per million of the population as of June 2020.  In 2019&nbsp;<a href="https://mappingpoliceviolence.org/" target="_blank" rel="noreferrer noopener">data of all police killings in the country</a>, black Americans were nearly three times more likely to die from police than white Americans. Other statistics showed that black Americans were nearly one-and-a-half times more likely to be unarmed before their&nbsp;<a href="https://www.statista.com/topics/4178/hate-crimes-in-the-united-states/" target="_blank" rel="noreferrer noopener">death</a>.</p>

<p>Overall, in 2019, 24 percent of all police killings were of black Americans when just 13 percent of the U.S. population is black – an 11-point discrepancy.&nbsp;</p>



<p>Despite the large number of police killings annually, police are almost never charged for excessive force violations. Between 2013 and 2019,&nbsp;<a href="https://www.cnbc.com/2020/06/01/george-floyd-death-police-violence-in-the-us-in-4-charts.html" target="_blank" rel="noreferrer noopener">99% of killings resulted in no charges</a>.</p>

<p>This is because&nbsp;<a href="https://www.nytimes.com/2020/06/16/opinion/police-qualified-immunity.html" target="_blank" rel="noreferrer noopener">qualified immunity</a>&nbsp;shields government officials from personal liability in federal lawsuits unless they violate “clearly established” federal law. That means that even if a police officer violates someone’s constitutional rights, the victim can’t obtain damages from the officer unless he or she can show that the officer violated a right explicitly recognized by a prior court ruling.</p>



<h4 class="wp-block-heading">Examples of Innocent People Shot and Killed by the Police:&nbsp;</h4>

<h4 class="wp-block-heading">Examples of police records of officers who were involved in shootings:</h4>



<ul class="wp-block-list"><li>Derek Chauvin: 18 filed complaints against him, only two closed with discipline.</li><li>Tou Thao: 6 complaints, one still open, none closed with discipline.</li><li>Blane Salamoni and Howie Lake: 4 use of force complaints&nbsp;.</li><li>Aaron Dean: sexual assault charge before he was hired, reports of concern during his training.</li></ul>



<p>This isn’t to say all cops are bad, but that the system is broken as it immunizes the police from the law.&nbsp; Police, who no doubt have terrifying jobs, need proper training in de-escalation and how to behave under stress.</p>



<h4 class="wp-block-heading">Training in America:&nbsp;</h4>



<ul class="wp-block-list"><li>Louisiana: 360 hours to become a police officer. 500 hours to become licensed manicurist.</li><li>Florida: 770 hours to become a police officer. 1,760 to become interior designer.</li><li>North Carolina: 620 hours to become a police officer. 1,528 to become a licensed barber.</li></ul>



<p>And to your point that “black people kill more black people” while that is&nbsp;<a href="https://www.cleveland.com/news/2020/06/stop-using-black-on-black-crime-to-deflect-away-from-police-brutality.html" target="_blank" rel="noreferrer noopener">true</a>, it’s a somewhat misleading statement. White people also kill more white people because most people commit crimes to people they know or live near.&nbsp;</p>



<p>This also deflects from the real problem which is that police should not be killing people. Other murders do not excuse this fact. There is also no statistical correlation between violent crimes and police killing rates.</p>



<p>Regardless of all of that, even people who are &#8220;guilty&#8221; of crimes are not supposed to be killed by the police. Carrying a weapon (which is their right to bear arms from the Second Amendment in the United States), shouldn’t warrant a death sentence.&nbsp;</p>



<p>In one study, University of Colorado social psychologist Joshua Correll, brought in police officers to play a video game in which they were asked to shoot armed assailants. Half the targets were white, the other half black and some carried guns, the others phones or wallets. The results were that officers were quicker to shoot black people &#8211; both those who were armed and who weren’t.&nbsp;</p>

<p>“We rarely found the race of the officer to be a factor. Everybody shoots black people. It looks like a cultural stereotyping thing. These patterns are everywhere. In newspapers, they’ll show pictures more often if the subject is black and mention race more often if the subject is black. So, your brain starts to think that black people commit crimes.”</p>



<p>As a whole, from what I’ve read, this can be largely if not entirely be attributed to historical discrimination and current systemic racism.</p>

<p>At times in life we are so busy that we are not even aware of what all of our senses are taking in. It is vitally important to slow ourselves down now and then, to spend time in stillness, and release the extra so we can be open to the new. Inspired by the theme of love and connection in February, I have put together a series of heart opening yoga poses that will help to open us on a mindful level. These shapes are especially important for those of us who spend a lot of time hunched over computers and need a release within our chest and shoulders. Prepare to let go, heal and restore!</p>

<p>Put on a soothing playlist of your choice and begin on your mat, blanket or towel, in a Child&#8217;s Pose. Acknowledge that first and foremost, you are here for self-nourishment ~ to grow love towards yourself. Give yourself permission to fully sink into the next chunk of time devoted just to you. </p>

<p>Bring yourself down onto your belly and with forearms bent, press your chest away from the mat. There are two options shown here. The second one being a more restorative version. If you do not have a yoga block or bolster, you can use a pillow (perhaps a couple stacked up) and any little box, (get creative, look around your house and maybe drape a blanket over the top to make it soft.) Hold this and each pose moving forward for 3 to 5 minutes. Spend this time focused on the sensations of your breath. Feel the air as it comes into your nose and as it comes back out. When your time is up in this pose, lift yourself up into a table top position and invite some gentle movement in. If you are familiar with cat/cow movements, do some of those here. Match your movement to the pace of your breath.</p>

<p>Melt your heart to the floor next. Keep your hips high and sink your chest and shoulders down to the ground. The top version will be more edgy and Yin like, while the bottom one will be restorative. As you spend time here, know that it is normal for thoughts, emotions, memories, and sorts of feelings to arise. We are opening up your heart after all! As you sit in stillness you get to practice getting to know yourself better, while also practicing not reacting. Notice what you notice and then bring your attention back to your breath. When your time is up, lift up to table top again and before moving stop to be aware of what feels different. Bring some gentle movement in through cat/cow again, or your own free fluid flow of sways, rocks or circles. </p>

<p>Reach back for your heels for a camel next. Press your hips forward and your chest high. Let your heart shine up to the sky! You will need 2 blocks for the restorative version of this one. Camel is a little more intense so you might want to hold this one a little less than the others. As you come out of the pose, sit down on your knees and notice where you feel your circulation returning. Can you feel a rush of blood flow? Circle your shoulders in both directions. </p>

<p>Set up your bolster or pillows lengthwise under your spine, pushing the edge right up into your lower back. As you lay back make sure your head is supported, adding a folded blanket underneath for that extra dreamy sensation. Pull the soles of your feet together and let your knees hang out to the side. Your hips are like a warehouse storage place of stress within your body, so its appealing to open them along with your heart. Let your body melt here. As time passes, your muscles will move out of the way and you will get deep into your joints. Some wonderful gentle movement after this one is to lift your knees up to the sky. Open and close your arms and knees, bringing your arms across your chest for big self hugs of unconditional love! Inhale as you open your arms and knees, exhale as you close them.</p>

<p>Fish have hearts too! (I doubt they are as emotional as us though) This is a much deeper pose to follow your chest having been opened up by the bolster in reclined butterfly. Align yourself to lay over your block and make sure the top of your head is on the ground. Keep your legs straight for this one and continue with a nice natural breath. No fishy lips mouth breathing! When your time is up, remove the block and lay flat on your back. Hug your knees into your chest and come up into a little ball. Rock and roll around a little. </p>

<p>Just looking at this banana pose doesn&#8217;t make it seem like you will be feeling much of anything, but you will certainly feel the whole side of your body opening up. With your arms over your head, your heart and lungs are open and ready to receive the good loving of your yoga practice. After you hold this for your 3 to 5 minutes, lay straight and feel the difference between both sides of your back. Curve your body into the banana shape on the other side. Following that, bring your knees into your chest once again. Notice the changes within your spine. Take some big hip and knee circles here. They feel so good! </p>

<p>Counteract all that opening with a bit of closing. A chance for your heart to be in a reclined position. Two versions of snail (also called plow), are shown here, the bottom one being more supported. Carefully roll yourself out of this one when your time is up.</p>

<p>Curl up nice and cozy into a Child&#8217;s Pose again, but this time have your arms back by your heels like a little bug. For the bottom variation, place your bolster or pillow underneath your belly, chest and head. Make sure that your face is able to be supported. Half way through your time in this shape, turn your cheek to the other side. With your belly pressed up against your thighs or bolster, it is a great opportunity to feel your breath. Notice how your belly expands into your legs or bolster on your inhales, and releases away on your exhales. When your time is up, roll onto your back. Take any little movements you feel your body is craving. Lay out flat on your back for at least 5 minutes of complete rest. This is called Savasana. You don&#8217;t have to try, you don&#8217;t have to do anything, you don&#8217;t have to control anything&#8230;you just have to rest! Come out of this slowly by wiggling your fingers and toes, then circling your wrists and ankles. Eventually roll onto your side and sit up. Take a nice big breath and step into the rest of your day with your brand new open heart!</p>

<p>I love Swiss breakfasts!  One of my favourite Swiss breakfasts to tide me over for an active morning in my <a rel="noopener" aria-label="Swiss travels (opens in a new tab)" href="https://roamancing.com/category/travel/europe/switzerland/" target="_blank">Swiss travels</a> is Bircher Müesli. </p>

<p>For those of you unfamiliar with this healthy and filling Swiss breakfast it is a traditional Swiss food often made with oats,&nbsp;yogurt, milk, apples, nuts, berries, cinnamon, and honey, that was never intended to become a Swiss breakfast staple.</p>

<h2 class="wp-block-heading">History of Bircher Müesli</h2>

<p>Developed by Swiss doctor&nbsp;<strong><a rel="noopener" href="https://en.wikipedia.org/wiki/Maximilian_Bircher-Benner" target="_blank">Maximilian Oskar Bircher-Benner</a></strong>, Bircher Müesli was his Apfeldiätspeise (apple diet dish). The name muesli came later, derived from the German word &#8216;müs&#8217; for &#8216;porridge&#8217;.  Dr. Bircher-Benner&#8217;s recipe combined a small amount of oat flakes and water with chopped apples, lemon juice, condensed milk or cream, honey and chopped nuts, with the original main ingredient being apples as oppose to oats. &nbsp;<a rel="noopener" aria-label=" (opens in a new tab)" href="https://www.myswitzerland.com/en-ca/experiences/food-wine/recipe/birchermueesli/" target="_blank"><strong>The original recipe</strong></a> was served at the beginning of every meal at Dr. Bircher-Benner&#8217;s own health clinic (that came to be known as the Magic Mountain on Zürichberg), not just at breakfast time. Dr. Bircher-Benner found that much of the sickness experienced by his patients (starting with those he was treating tuberculosis) could be alleviated with fresh air, light exercise and a nutritious diet with raw foods.  While this makes perfect sense to many people with chronic illnesses today, at the time Dr. Bircher-Benner&#8217;s ideas were quite revolutionary and not at all popular among his colleagues.</p>

<p>I did not know any of this history of Bircher Müesli when I first started eating it and enjoying it, but it makes so much sense to me.  You see I have been living in constant pain for the last 6 1/2 years thanks to a car accident, and I have learned in that time that diet, light exercise, and time in natural settings help me with my pain management.  These are all reasons why I love visiting <a rel="noopener" aria-label="Switzerland (opens in a new tab)" href="https://www.myswitzerland.com/en-ca/" target="_blank">Switzerland</a>. Their healthy way of living does a lot of good for me &#8211; physically and mentally on my visits.  I&#8217;ve known the food in Switzerland has helped me feel good on my visits, but I always chalked this up to there being fewer preservatives in Swiss foods, as compared to foods in North America, along with fresh air and walking that I enjoy when I am there.  Now I am thinking that part of my feeling so good on my visits might also be due to starting my days with Bircher Müesli.  The Swiss even had a period where Bircher Müesli became a Schweizer Znacht (Swiss supper).  This makes tremendous sense, as it is healthy and filling, and much easier to digest before bed than a heavy meal that we so often eat in North America for dinner.</p>



<p><a rel="noopener" aria-label="Switzerland (opens in a new tab)" href="https://emmerogers.com/category/travel-2/europe/switzerland-travel-2/" target="_blank">Writing about Switzerland</a> as of late has made me crave a day that begins with a bowl of Bircher Müesli, so I decided to try my hand at making myself some.  In researching recipes for Bircher Müesli, I opted to make a version of this <a rel="noopener" aria-label="this recipe (opens in a new tab)" href="https://www.allrecipes.com/recipe/228025/bircher-muesli-swiss-oatmeal/" target="_blank">Bircher Muesli recipe</a> to suit both my desires and what I had at hand in the house.</p>

<p>There is nothing my taste buds love more than hot cheese!  Especially flavourful hot cheese. <p>So what better way than to save Christmas Day going awry, thanks to the flu, then by making a Christmas luncheon board containing not one, but two forms of HOT CHEESY GOODNESS. Those ooey gooey concoctions included Baked Brie with Ginger and Pears (<a rel="noreferrer noopener" aria-label="the recipe of which I shared here (opens in a new tab)" href="https://emmerogers.com/2019/12/baked-brie-with-ginger-and-pears-recipe/" target="_blank">the recipe of which I shared here</a>) and Baked Blue Cheese with Walnuts and Honey.  Read on below to find this latter super simple and oh so tasty recipe!</p>



<h2 class="wp-block-heading">Baked Blue Cheese with Walnuts and Honey Recipe</h2>



<h3 class="wp-block-heading">Ingredients</h3>



<ul class="wp-block-list"><li>blue cheese</li><li>walnuts</li><li>honey</li></ul>



<h3 class="wp-block-heading">Step-by-Step Recipe</h3>



<ul class="wp-block-list"><li>Pre-heat oven to 300 degrees Celsius.</li><li>Cut a chunk of blue cheese and crumble it into small bits in the bottom of a small oven proof dish.</li><li>Add a tablespoon or so of walnuts to the blue cheese in the oven proof dish.</li><li>Drizzle a teaspoon or so of honey over the walnuts and blue cheese. </li><li>Stick in oven until the contents have melted together in an ooey gooey mess. About 5 minutes.</li></ul>

<p>Sometimes the tastiest discoveries come from plans going awry. Such was the case with our Christmas Day, when I first concocted this Baked Brie with Ginger and Pear recipe.</p>

<h4 class="wp-block-heading">When Christmas Day goes awry, make a hot cheese dish!</h4>



<p>Our plan had been to join the Christmas Day festivities at sisters, but the flu got the better of our mom, transitioning Christmas into a quiet day for mom and I, of just the two of us and our furry family members.</p>



<p>I knew mom was not feeling much like eating, but to add a little festive atmosphere into our day, I decided to make up a little Christmas luncheon board of goodies that I hoped she may just eat or would at least put a smile on her face.</p>

<p>Simple, tasty, and gave mom and I that healthy, festive treat that we were both craving.</p>



<h3 class="wp-block-heading">Baked Brie with Ginger and Pear Recipe</h3>



<p>Here&#8217;s the recipe for the Baked Brie with Ginger and Pear, that literally took me just a few minutes to make.</p>



<h4 class="wp-block-heading">Ingredients</h4>



<ul class="wp-block-list"><li>brie cheese</li><li>ginger compote</li><li>pear</li></ul>



<h4 class="wp-block-heading">Step-by-Step Recipe</h4>



<ul class="wp-block-list"><li>Pre-heat oven to 300 degrees Celsius</li><li>Cut a chunk of brie and slice it in half (through the soft portion of the cheese).</li><li>Place half of brie in a small oven proof dish, curd side down.</li><li>Spread a dollop of ginger compote over the top of the brie in the oven proof dish.</li><li>Chop a slice of pear into small chunks and place on top of the ginger compote.</li><li>Place remaining half of the chunk of brie, soft side down, on top of the ginger compote and pear chunks.</li><li>Stick in oven until brie is nice and runny.  About 5 minutes. </li></ul>

<p>I have to admit, while I find the sight of Mount Rainier beautiful, it had never occurred to me to climb it. </p>

<p>Luckily for our viewing pleasure, that was not the case for this group of guys, who not only obsessed about climbing Mount Rainier, but decided to film the journey to preparing for the climb of a lifetime.</p>

<p>Certainly a tale that we can all learn from.  Not the least of which is that there is a direct correlation between swearing and testing your physical and sleep limits in the extreme cold. Then there&#8217;s the old proverb that its the journey that is important, rather than the destination.</p>
