Probably not an authentic recipe, but I've tried to stay faithful to the usual raita ingredients. It's very similar in taste and texture to the one at my favorite Indian restaurant. NOTE: we like it with a little bit of a kick (not much, though), but the jalapenos here usually taste like bell peppers. If your jalapeno isn't spicy, just use 1/2 of a serrano pepper. But I like the taste of jalapeno better in this.

She learned it from my grandmother, who learned it from her mother, and so on. And who knows how far back it goes. I know it goes back more than 100 years. I grew up on this soup. It has a pleasing, delicate flavor. Though my mom and ancestors have made it with rice and tiny pasta stars (found in Portuguese markets), I LOVE to use it with barley, so that is what the ingredients and method will list.

Once you make this recipe, you'll never go back to using a box mix again. It is so easy and foolproof, and will be completely authentic. This is the recipe I grew up with, but of course we never measured. Just threw in this and that. This would taste best with homemade chicken stock, but boxed is what most people have. You can replace the tomatoes with Rotel diced tomatoes. Use about a half cup of the drained Rotel tomatoes, but reserve the juice to top off the liquid in the recipe (see directions). This will give it a spicy kick! Directions are long, but it's simple - more method than recipe.

This is a scaled-down recipe that makes about 40, depending on how big you make them. I use the screw band of a wide-mouth mason jar lid to cut the dough into circles. If you are freezing these for future use, make sure you freeze them on a cookie sheet first, without crowding them; once frozen, you can toss them together in a freezer bag. If you toss them into a freezer bag before freezing them, they will stick together into a big clump.
